Château de la Tour Le famiglie Labet e Déchelette, presenti negli annali del vino borgognone dal XV secolo, costruirono il castello nel 1890. Proprietari di 6 ettari, detengono così la più grande percentuale di vigneti dell’appéllation. Château de la Tour resta oggi l’unico domaine a raccogliere, vinificare, affinare e imbottigliare il Grand Cru all’interno del famoso Clos, come accadeva ai tempi dei Cistercensi. Il patrimonio di parcelle con vigne la cui età media è di oltre 40 anni, con l’aggiunta di vecchie vigne piantate nel 1910, permette al domaine di vinificare due cuvée, la Classique e la Vieilles Vignes. Alla cura maniacale del vigneto, le cui uve sono raccolte ancora in cesti di vimini, per evitare ossidazioni dovute al succo fuoriuscito e fermentato, si unisce un protocollo di vinificazione a grappolo intero di stampo classico. I vini esprimono con razza aristocratica l’essenza del terroir del Clos Vougeot, con le sue espressioni di tartufo, menta, liquirizia e si candidano per invecchiamenti ultradecennali. Con i suoi 5,5 ettari si tratta di una dell proprietà più estese all'interno del Clos de Vougeot. Tratto dal Sito Ufficiale dell’Importatore Domaine Jacques Prieur Fondato alla fine del XVIII secolo, questo domaine che conta oggi ben 22 ettari di vigneti (tra i quali molti grand cru prestigiosi, come; Montrachet, Musigny, Chambertin, ecc) in tutta lo Borgogna, ha avuto grande importanza nell’affermazione della Borgogna nel mondo. Tra l’altro, Jacques Prieur, che ha il proprio nome all’azienda negli anni ’50, è stato uno dei fondatori dell’associazione degli Chevaliers du Tastevin. Attualmente la proprietà è in gran parte della famiglia Labruyere, ma i Prieur confermano la loro presenza e la continuità nelle scelte dell’azienda. Dal 1990 la responsabilità della vinificazione è nelle mani dell’enologa Nadine Gublin che, con stile delicato ed intenso, ha portato una ventata di novità nei vini del Domaine. La parcella di Clos Vougeot di proprietà del domaine si estende per 1,28 ettari, su suolo argilloso ed è piantata esclusivamente a Pinot Noir. Le uve vengono raccolte a mano, selezionate e completamente diraspate. La macerazione si è protratta per 24 giorni in tini di rovere aperti a temperatura controllata. Fermentazione malolattica svolta. Maturazione in barriques nuove per 20 mesi. Domaine Ponsot È William Ponsot che nel 1872 acquista un domaine viticolo e vi si installa a Morey-SaintDenis. Le parcelle più importanti dell’azienda in quel momento sono nel Clos de la Roche e il Clos des Monts-Luisants. Nei secoli l’azienda si ingrandisce con l’acquisizione di altre parcelle, molto spesso situate in vigneti Grand Cru, costituendo un patrimonio, anche se non di dimensioni impressionanti, sicuramente di qualità molto elevata. Dai primi anni ’30 del ‘900 i vini vengono venduti in bottiglia con il nome dell’azienda in tutto il mondo. La filosofia di vinificazione è particolarmente attenta al rispetto del lavoro fatto in vigna. Le uve vengono raccolte quando si ritiene che sia giunta la corretta maturità fenolica. Quindi, dopo la raccolta manuale delle uve, tutte le operazioni sono ridotte al minimo per ottenere il massimo della naturalezza del vino. La maturazione è lunga, circa 24 mesi, e non vengono effettuate filtrazioni. I vini vengono messi in bottiglia senza l’aggiunta di anidride solforosa. Il controllo dell’ossidazione in momenti delicati come l’imbottigliamento è effettuato attraverso l’utilizzo di azoto e anidride carbonica. Il Clos de Vougeot è un'acquisizione recente dell'azienda, ma si basa comunque su vecchi impianti. Dominique Laurent Dominique Laurent is a negoçiant-eleveur. He has only tiny vineyard holdings of his own and buys grapes or new wine from various growers, focussing only on old vines and low yields from almost every appellation on the Côte d'Or and occasionally from the Côte Chalonnaise. The word éleveur indicates that he 'raises' the wine. Initially he only bought young wine, taking delivery soon after vinification in the cellars of the growers with whom he is working. Now, in some cases, he buys the grapes and does the fermentation himself. What sets him apart from most other negoçiants is that he works very closely throughout the year with his growers, most, if not all, of whom are the most important names in Burgundy. He buys the wine, or part of the wine from specific plots of old vines. He involves himself in the viticulture, right through to the harvest and fermentation. He only buys when the fruit, or the young wine, meets his demanding standards. He applies his minimalist methods of élevage, which of course varies from wine to wine and vintage to vintage. He has raised eyebrows with his use of 100% new oak in the top grands crus. Despite criticism from some quarters that his earlier wines were too oaky, this has not been our, now extensive, experience since the 1993 vintage (his first vintage was 1992). It's worth mentioning that the calibre of the oak used by Laurent is the highest possible (see below) and the wines integrate perfectly with time (no one makes grand crus for early drinking!). Recent outstanding reviews of his '93s by Clive Coates (The Vine) and Revue du Vin de France would seem to have vindicated Laurent's early experimentation and even the early critics are now full of praise. Laurent is complex and driven and he is without a doubt creating remarkable wines. He is now acknowledged as a major influence upon Burgundy and its wines in the midst of what is clearly the most exciting time in this regions long history. Growers who began by viewing his work with skepticism are now proud of their association, even though their name is never put on the label. The key to the Laurent wines is old - sometimes exceptionally old - low yielding vines, combined with an élevage that produces richness and complexity, while at the same time retaining the fundamental elements of terroir. We have found his wines have a depth and dimension that transcends most other producers, be it a generique, village wine, premier cru or grand cru. All the wines are bottled by hand without fining or filtration. They are richly flavoured, textural Burgundies that drink well throughout their lives, regularly overdelivering on the reputation of the vintage. They are the glorious result of a very natural, 'minimal intervention' winemaking process, that is to say, the wines are made very gently, next to no sulphur is used (typically only a small dose at bottling), and the wines are bottled by hand without filtration or fining. This approach combined with the natural ripeness achieved from old, low yielding vines leads to the generosity of flavour for which these wines have become famous. Laurent is constantly seeking to refine and improve his methods. As each year goes by it is clear that his wines are becoming more refined, without diminishing their authority and power. Certainly his wines have a "Dom Laurent" stylistic stamp on them - full flavoured, rich, creamy texture, concentrated - but each one makes a clear statement of its origin, each one speaks of its terroir. NOTE: All Dom Laurent wines require decanting prior to being served. If the wines are young we recommend this occurs half an hour prior to serving. MAGIC CASKS: Laurent has his own cooperage and makes what are widely regarded as some of the world's finest barrels. These have been nick-named "magic casks", by renowned French wine taster Michel Bettane. Laurent goes into the Tronçais forest to select the trees (typically around 300 years of age) and transports them back to the cooperage himself, thus guaranteeing provenance (a very rare thing these days). He only uses the top section of the trunk, the staves are split by hand and air dried for 52 months. The staves are much thicker, due to their hand splitting, compared with commercial barrels, (40-45mm as opposed to 25-30mm approx). The barrels were developed for Dominique Laurent, and Tardieu Laurent's top cuvees but a few of the barrels are sold to (only) the best French and international producers including DRC, Zind Humbrect, Clos Mogador, Pingus and Robert Parker's Beau Freres in Oregon. A few barrels even make it to Australia! Tratto dal Sito www.bibendum.com.au Alain Hudelot-Noellat Domaine Hudelot-Noëllat wines have been amongst the best in Burgundy for generations — always full of charm and exuberance, but with considerable depths, purity and finesse. The domaine was run by Alain Hudelot-Noëllat for over 30 years until 2007, when Alain turned 67 In 2008 he stepped down when his grandson, Charles van Canneyt completed his formal wine studies in Dijon University and the following stage and took over the domaine. Since 2005 Alain has been helped by Vincent Meunier, who continues to work with Charles. It turned out that this fantastic domaine further excelled from being one of the best in the entire Cote d’Or to the highest level, with its top wines — Richebourg, Romanée st Vivant, Vosne Romanée les Malconsorts, Les Beaumonts and Les Suchots gaining the status of amongst the best in their appellation, both by wine critics and Burgundy enthusiasts around the world. Vine age is kept high by systematic grubbing up and replanting. The Romanée St Vivant wines were planted in 1920, and most other crus including Richebourg were planted between 1920-1950. As common among the young, top new generation wine makers in Burgundy these days, no work is spared in the vineyards. The philosophy of having healthy vines to lead to healthy grapes in order to make better wines is carefully followed. During vintage, careful sorting is done in the vineyards followed by detailed further sorting in the winery before the juice is carefully brought into the concrete enameled fermentation tanks. Charles’s philosophy is to keep up to 20% of the stems with the juice, especially in vintages and appellations where the fruit can support the extra tannins. The wines are aged in casks particularly from Allier, with some from the Vosges and local Citeaux. Hudelot-Noëllat Richebourg and Romanée st Vivant represent the summit of Charles’ considerable achievements and follow, though in a more complex and powerful manner, the general Hudelot-Noëllat line. Although the 93 year old vines in Romanée st Vivant give it an extra dimension of depth, neither wine is overbalanced by clumsy fruit, which might threaten the underlying finesse. The Richebourg is altogether bigger than the Romanée st Vivant, with great power and majestic depth. The Romanée st Vivant, in contrast, has more obvious refinement and elegance yet with underlying, restrained power. Hudelot — Noëllat Clos de Vogeot is one of the best from this variable Grand Cru. The quality of this wine improved significantly after the Alain sold its lower parcel which was located at the lower slope of the vineyard near the RN 74, thus reducing its total production by 40% but remaining only with the two parcels near the Chateau, neighboring Domaine Leroy’s parcel. The Premiere Crus, Vosne Romanée Les Beaumonts, Les Suchots and Malconsorts all consist of almost 100 year old vines and produce the finest examples. La storia che si porta dietro lo rende unico, anche se oggi, l'estrema frammentazione delle proprietà, ne rende meno facile l'identificazione. I puristi sostengono che non si può più parlare di “un” Clos de Vougeot, ma di “tanti” Clos de Vougeot. Tanti quanti sono i proprietari. Ma qualche tratto comune rimane e, soprattutto, rimangono alcuni produttori di riferimento, come lo Château de la Tour; l'unico che possiede anche la cantina all'interno delle mura del Clos. L'assaggio dei vini è stato molto interessante, anche se sono mancate le emozioni che ci si potrebbe aspettare da vini di questo lignaggio. Tutti i vini erano molto giovani, alcuni veramente troppo, ma questo non basta a giustificare la mancanza di uno slancio in più, assolutamente richiesta a un grand cru di Borgogna. Abbiamo iniziato con Jacques Prieur. Vino fascinoso, con una notevole precisione stilistica, che, però, concede un po' troppo allo stile internazionale. Bella esplosione di tannini delicati. Una sensazione di volume calibratissima, che lascia spazio all'evoluzione del vino. Un finale abbastanza lungo e piacevole, ma poco significativo. A mio parere... Cocente delusione per il vino di Dominique Laurent. Un vino spoglio, sorretto quasi esclusivamente da una vena acida buona, ma segnata anche da una presenza di volatile che fatica a dileguarsi, rendendo il vino a dir poco grossolano. Forse questa volta il grande pasticcere, ha fatto il pasticcio! La Cuvée Classique dello Château de la Tour è magica! È forse l'unico vino della serata ad emozionare veramente con una dinamica eccelsa e una lunghezza estrema e complessa. Veramente un grande vino. Era la prima volta che assaggiavo il vino di Hudelot-Noellat e devo dire che non mi ha impressionato. Certo, l'estrema gioventù non aiuta, ma mi sembra che manchi la grinta di un grand cru a questo vino. Fresco e teso, non si espande e non cattura l'attenzione. Troppo giovane? Infine il vino di Ponsot. Come al solito, grande spessore per i vini di questo produttore. Una forza della natura... ma civilizzata, un po' troppo civilizzata. Per l'azienda il Clos de Vougeot è un'acquisizione recente, per cui voglio sperare che sia solo un problema di aggiustare il tiro... Per carità, siamo di fronte a un vino notevole, ma, visto il prezzo, un supplemento di emozione me lo aspetto!
