Il pollo alla cacciatora è un classico della cucina piemontese ma è cucinato in molte altre regioni italiane. La qualità della materia prima è essenziale alla buona riuscita di questo piatto. Evitate i galli e le galline troppo adulti e coriacei, ma anche i giovani polli di allevamento non ruspanti. È un piatto che viene preparato in ogni stagione: in autunno e in inverno viene rifinito e aromatizzato con un trito di erbe “forti” quali la salvia e il rosmarino e accompagnato con la polenta o un purè di patate, in estate viene rifinito con un trito di erbe “gentili” quali il basilico, la maggiorana e la menta e accompagnato da verdure cotte e saltate in padella o da un riso lesso scondito.
