Nei ricci, le castagne sono di solito tre, solo una particolare varietà di castagno presenta un solo grande seme nel riccio, gli altri due si atrofizzano; è il pregiatissimo “marrone” che trasforma la castagna da “cibo da poveri” in una preziosa ghiottoneria: il “marron glacé”, uno dei dolci preferiti da Casa Savoia già nel XVI secolo. La varietà più diffusa nelle valli del preappennino alessandrino è la montanina ottima per la farina. Oggi, in queste zone, i mulini di castagne sono scomparsi e i piatti che con questa farina si preparavano, sono in via di estinzione. Ad Arquata Scrivia e nei paesi circostanti alcune famiglie preparano ancora eccellenti gnocchi che chiamano “trofie” probabilmente originari dell’entroterra ligure e della Lunigiana (da non confondere con gli omonimi recchesi di farina di grano duro). There are usually three chestnuts inside one chestnut husk, only one variety of chestnut tree produces husks with one large chestnut inside, the other two dry up. It is the high-quality marrone variety which transforms chestnuts from a poor man’s food into a prize delicacy: marron glacé (candied chestnut), one of the favourite sweets in the Royal House of Savoy in the XVI century. The most common one found in the Apennine region in the far south of our province is the so-called “Montanina” which is excellent for grinding into flour. Nowadays, in these areas, the chestnut mills have gone and the dishes made with this flour are disappearing from our tables. There are still some families in the Arquata area however, who prepare chestnut flour dumplings called “trofie” which probably originated in the nearby Ligurian hinterland. It should be pointed out that they should not be confused with trofie from Recco that are made from plain flour. L’acqua deve essere bollente, (l’operazione si chiama “sgaientà”, in effetti, si corre il rischio di scottarsi le mani!). Preparate dei rotolini di pasta grossi un dito mignolo e tagliateli non più lunghi di un centimetro e mezzo. Infarinate abbondantemente la spianatoia e premete le trofie con il pollice per svuotarle internamente in modo che cuociano uniformemente. Lessatele questi gnocchetti in acqua salata per qualche minuto (un attimo in più degli gnocchi di patate) e scolateli delicatamente con una schiumarola disponendoli su un ampio vassoio. Cito due varianti non classiche ma meritevoli di menzione: l’aggiunta di un uovo nell’impasto e l’impiego di castagne secche molto cotte e passate nel passino al posto della farina di castagna. Il condimento tradizionale prevede semplicemente molto formaggio grattugiato e burro fuso, ma possono gradevolmente essere accompagnate con il pesto o un sugo di funghi secchi. The water must be boiling hot and for this reason is called “Sgaientà” in the local dialect, which means scalding, and this could well happen to your hands. Shape the dough into small cylinders about the same width as a little finger and cut them into one and a half centimetre lengths. Sprinkle the pastry board with flour and press the trofie with your thumb in order to release any air and ensure they cook evenly. Boil these mini-dumplings in salted water for a few minutes (a little longer than for potato dumplings) and use a skimmer to remove and drain them. Place them in a serving dish. There are two variants which are worthy of mention. The first is the addition of an egg to the dough, the second is the use of dried chestnuts, well cooked and put through a sieve, instead of chestnut flour. Whether you choose the classic method or the variants, the most common seasoning is melted butter and grated cheese. Otherwise, pesto or a mushroom sauce may be used. Versate la farina di castagne priva di grumi (setacciatela per sicurezza), mescolatele e riformate la fontana, salate e versate acqua caldissima sino a formare un impasto da poter lavorare con le mani, più morbido di quello abitualmente preparato per le tagliatelle e simile a quello utilizzato per gli gnocchi di patate. Heap the plain flour on a pastry board and make a well in the centre. Mix the chestnut flour (which should have been sieved beforehand to eliminate any lumps) into the plain flour and reshape into a well. Add the salt, and then pour in just enough hot water to make a malleable dough of a softer consistency than the one for making either tagliatelle or gnocchi.
