In 1967 they finally decided to set up a medium-sized grocery supermarket called Joe’s Produce, which today still remains a masterpiece in store design and in the field of marketing-at-retail. This story is so peculiar because Joe’s Produce is a living proof that even in a market so huge and free as the American one, it is still possible to live and thrive 52 Fresh Point Magazine n.1 – january/gennaio 2012 N el 1945, Gaspare Maiorana riuscì a comprare un frutteto, a Livonia, un paese di noivemila abitanti, distante 32 km da Detroit, a NordOvest. Come in tutte le “business tales” che alimentano il sogno americano, il suo tentativo di vendere frutta e verdura nel capanno sulla West Seven Miles che delimitava la sua proprietà avrebbe avuto un seguito sorprendente che vado a raccontare. Per più di vent’anni, Maiorana e il figlio Joe Sr. continuarono a vendere frutta nel grande mercato della capitale e direttamente ad una schiera crescente di affezionati clienti del luogo. Nel 1967 maturarono, infine, la decisione di aprire un supermercato alimentare di medie dimensioni cui venne data l’insegna Joe’s Produce: la stessa che, ancor oggi, marca un piccolo capolavoro nel campo del marketing-at-retail e dello store design. Many Italian experts seem to ignore that, right in the country of distribution gigantism, stores of each format can actually find their own space. They only need to respect a fundamental principle: an extreme specialization and a correct positioning. It doesn’t mean doing weird and bizarre things, it means to do what your customers actually ask for. The loyal customers who nowadays do their shopping at Joe Maiorana Jr.’s shop belong mainly to the middle and upper class. They live both in Livonia, which is now a city with 100thousand inhabitants and has become a suburb of Detroit, and in the ‘motown’ itself, that has produced and spread wealth, even though it now undergoes a severe economic crisis which seems difficult to overcome. americano, si può vivere e prosperare gestendo ancor oggi anche un solo (!) negozio. Ciò a condizione che si rispetti un principio fondamentale: l’estrema specializzazione e un corretto posizionamento. Che non significa fare cose strane e bizzarre, ma semplicemente quelle che la propria clientela pretende. Gli shopper che oggi frequentano fedelmente il punto di vendita di Joe Maiorana Jr. appartengono soprattutto a ceti medi e benestanti. Abitano a Livonia, trasformatasi in una città con 100mila abitanti che si è praticamente unita in un continuum urbano con Detroit, ma anche nella “motown” che tanta ricchezza ha prodotto e distribuito, pur vivendo ora le pene di una crisi economica lunga da guarire. Freshness, selection, and customer service What do Joe’s customers actually ask for? There are basically three things that lie at their heart: the quality and freshness of produce, selection, and customer care. All this for prices only 20% higher than the market average, although the quality factor doesn’t make them easily comparable. This proves that even in a hyper-competitive market that counts aggressive ‘monsters’ like two WalMarts, two Targets, two Costcos and one Meijer, there are ‘decadent’ consumers who look for the sensory experience of food and are not content with the volumetric offer of the above mentioned category killers. Already from the embrasure at the entrance, at Joe’s Produce’s one is literally dipped into 35thousand sophisticated and most importantly fresh grocery products. ‘Fresh’ means here that they are guaranteed by the company which produce them daily from scratch und er the eyes of its customers. Such approach contributes to spread a different meaning of the concept of private label as opposite to that of industrial standardized brand. Joe’s miracle lies in the originality of an almost 3000 square meters supermarket whose layout breaks theoretical rationalism and emotionless French symmetries so popular in Italy. Il tutto a prezzi che non superano il 20% della media di mercato, sebbene il maggior fattore qualitativo non li renda facilmente comparabili. Ciò significa che in questa piazza resa ipercompetitiva dalla presenza di “mostri” aggressivi come due WalMart, due Target, due Costco e un Meijer, i consumatori “decadenti” che cercano sensazioni di piacere gastronomico più intenso non si accontentano della proposta volumetrica dei category killer menzionati. Infatti, Joe’s Produce propone loro, fin dalla strombatura dell’entrata, un’immersione, nel senso letterale della parola, tra 35mila prodotti alimentari raffinati e soprattutto freschi. “Freschi” significa, nello specifico, garantiti dall’insegna che li produce quotidianamente sotto gli occhi della clientela, “from scratch”, cioè partendo dalle materie prime. Si tratta di un approccio che attribuisce un senso diverso al concetto di marca privata in sostituzione di quella industriale massificata. Il miracolo di Joe è stato quello di concepire un ambiente di circa 3000 mq il cui layout infrange il presunto razionalismo e le schematiche fredde simmetrie alla francese che prevalgono, invece, nel nostro Paese. Other wise, why would they put such an effort in dressing and undressing the store front everyday with a hundred pumpkins, flowers, and straw bales to celebrate H alloween (or another event), if not to underline its diversity based on attention for appearance and care for details? However, it is well known that for a food specialty store care for details means primarily deep assortment, that not only pays attention to a rational rotation of the items, but it’s also easily readable and stimulating for the shoppers. Indeed, it is the project on which this store is founded that takes you by the hand and leads you through the aisles towards the islands of cheese, delicatessen, and fresh-cut produce, each of them differentiate itself from the others through form, color, and lighting. A good case in point This model store was planned by architect Nick Gianmarco, an Italian-American who moved to the US when he was very young in order to fulfill his vocation. Once he fully reached his maturity as an artist, he eclectically designed stores that vary from each other in positioning and mission, but are all textbook examples and were all planned together with the customer’s marketing specialists. In this case the context is effectively allusive to many different references: a (true!) farmer market, a classy cake shop, a wine shop … All these elements merge into a whole where the standardization of goods never expresses the vulgarity of a discount store and the highlighting of sophisticated specialties doesn’t exclude a share of customers. But even more importantly, the mix originated from this concept passed the decisive test – that of truly encouraging incremental sales. Not only high level store design; Joe’s Produce can also count on its offer. Particularly impressive are the party-trays that combine fruit, vegetables, meat and cheese in a palette of captivating tastes still almost unknown in Italy. Che senso avrebbe, infatti, sobbarcarsi la fatica di allestire e disallestire ogni giorno l’esterno del punto di vendita con un centinaio di zucche, fiori, balle di paglia per celebrare Halloween (o un altro evento), se non allo scopo di sottolineare la sua diversità fondata sulla cura dell’estetica e del dettaglio? Tuttavia, è risaputo, dettaglio per un food specialty store significa, in primo luogo, assortimento profondo non solo razionale dal punto di vista delle rotazioni del prodotto, ma anche chiaramente leggibile e stimolante per gli shopper. È, infatti, il disegno sottostante a questo straordinario punto di vendita a prendervi per mano e ad accompagnarvi per i suoi meandri verso le isole dei formaggi, della gastronomia, dell’ortofrutta di IV e V gamma, ognuna delle quali si distingue per forme, colori e illuminazione. Un punto vendita da manuale Artefice di questo punto di vendita da manuale è l’architetto Nick Gianmarco, un italo-americano trasferitosi giovanissimo negli Usa per realizzare la propria vocazione. Si tratta di una personalità che, raggiunta la piena maturità creativa, ha concepito ecletticamente punti di vendita molto diversi tra loro come posizionamento e missione, tutti da manuale e studiati fianco a fianco con il marketing dell’azienda cliente. Nel caso di Joe’s Produce il contesto risulta efficacemente allusivo a molti riferimenti diversi: un farmer market (vero!), una pasticceria di classe, un’enoteca … Questi elementi si fondono in un tutto dove la massificazione della merce non esprime mai la volgarità del discount e l’evidenziazione di raffinate specialità non assume un significato di esclusione di una parte della clientela. Il mix che è scaturito da questo concept ha comunque superato il test più importante: quello delle vendite incrementali davvero incoraggianti. Oltre allo store design di livello superiore, i punti di forza di Joe’s Produce sono costituiti dalla sua offerta. Da segnalare i party-tray che accostano frutta, ortaggi, carni e formaggi in un palette di nuovi gusti accattivanti, tuttora pressoché sconosciuti in Italia.
