Le Isole Pelagie: The Pelagie Islands Le Isole Pelagie (Ìsuli Pilaggî in siciliano) sono un arcipelago dell’Italia, nel Sud della Sicilia. Si tratta dell’arcipelago più meridionale d’Italia. Le isole che costituiscono l’arcipelago delle Pelagie sono Lampedusa, Linosa e Lampione. Lampedusa è la più grande delle tre. Essa è estesa per circa 20 km², è anche la più popolosa con circa 6.000 abitanti. La seconda per estensione è Linosa e conta una popolazione di 500 abitanti e prettamente di origine vulcanica. La terza e l’unica a non essere abitata è Lampione, la più piccola delle tre, dove su di essa a risiedere c’è solo un semplice faro di segnalazione. Lampedusa e Lampione fanno parte della placca geologica continentale Africana, infatti le coste sono alte e frastagliate e la vegetazione e autoctona del continente a Sud di esse. Mentre un po’ più a Nord/Est abbiamo Linosa, isola di origine vulcanica. Attualmente rappresentano, insieme alla Calabria ionica, l’unico sito, in Italia, di regolare riproduzione delle tartarughe marine Caretta Caretta e luogo dove risiede una delle spiagge più belle del Mondo “L’Isola dei Conigli”. Le loro posizioni strategiche, al centro del mediterraneo, collocano Lampedusa e Linosa, distinguersi per la loro folta Marineria, uno dei punti di forza delle isole e per il Turismo, grazie alle loro acque cristalline, che rendono paradisiaci questi posti. The Pelagie Islands (Ìsuli Pilaggî in Sicilian), located in the south of Sicily, form the southern-most archipelago in Italy. The archipelago consists of three islands: Lampedusa, Linosa and Lampione. At about 20km, Lampedusa is the largest of the three. It is also the most populated, with around 6000 inhabitants. The second largest island is Linosa, which has a population of 500 inhabitants and has purely volcanic origins. The only uninhabited island is Lampione, the smallest of the three, where there is just a simple lighthouse. Lampedusa and Lampione are geographically situated on the African Continental plate, as a result of which the coastline is high and jagged and the vegetation is indigenous of the continent to the south. While a little further north-east we have Linosa, the island of volcanic origins. These islands, along with the Ionian coast in Calabria, currently represent the only site in Italy where the ‘Caretta Caretta’ marine turtles regularly lay their eggs. Il “pesce azzurro”: è un gruppo di pesci che, pur appartenendo ciascuno di essi a specie e generi diversi, ha una comune caratteristica, che è quella relativa al particolare ambiente marino di vita e che, con termine tecnico, viene denominato “PELAGICO”. Pelagico non significa soltanto che vive nel mare (altrimenti tutti i pesci marini sarebbero pelagici), ma significa che la zona del mare abitata è quella distante dalle terre emerse o sommerse. In altre parole, i pesci pelagici vagano nell’immensità del mare e non si avvicinano né alle coste né al fondo salvo che in rare e particolari circostanze. I pesci pelagici sono, in generale, potenti nuotatori e si presentano quasi sempre con forme affusolate e idrodinamiche per eccellenza; hanno una livrea caratteristica dove sono dominanti il colore azzurro acciaio più o meno scuro del dorso e il bianco argenteo del ventre…da qui il nome. Salvo qualche eccezione sono “gregari”, e cioè si riuniscono in branchi più o meno grandi; inoltre sono tutti migratori, cioè si spostano periodicamente in gruppo, per ragioni che in genere li spingono alla ricerca di un ambiente più favorevole per il nutrimento o per riprodursi. Una delle teorie più plausibili formulate dagli scienziati, secondo cui questi pesci vivono in banchi, sostiene che il nuoto di questi enormi gruppi fittissimi, per motivi idrodinamici, un consumo d’energia assai inferiore rispetto a quello necessario allo spostamento individuale. Il Pesce Pelagico, oltre a distinguersi per la colorazione azzurra del dorso e per le abitudini di vita, gregaria e pelagica, hanno anche un’altra particolarità che le accomuna ed è quella che in termini scientifici viene detta “fototassi positiva”. In parole povere significa che sono attirati dalla luce, probabilmente in relazione con la loro nutrizione. Questa loro abitudine viene sfruttata dai pescatori che li attirano sotto le lampare e li rinserrano in gigantesche reti di circuizione. In genere, è considerato “pesce povero” perché ha un prezzo di mercato inferiore a quello di altre varietà, ritenute (spesso a torto) più “nobili”, ed è consumato pochissimo rispetto al pescato potenziale dei nostri mari, una risorsa naturale che sarebbe anche in grado di dare sollievo alla bilancia dei pagamenti. Tutti i “pesci Pelagici”, quelli di piccola taglia, hanno carni facilmente deteriorabili per due ragioni. La prima è che le loro squame sono estremamente caduche e quindi si distaccano facilmente lasciando il corpo nudo ed esposto all’azione deteriorante degli agenti esterni, e la seconda è che le loro car- ni, molto molli, sono particolarmente ricche di sostanze grasse, e che a contatto con l’ossigeno dell’aria si irrancidiscono e si alterano facilmente. Dato poi che la cattura di questi pesci avviene con reti di circuizione dove si ammassano quintali e quintali di esemplari, la desquamazione è grandemente agevolata dagli attriti e dal peso e quindi la loro conservazione diviene ancora più difficile del pesce di grossa taglia. Storicamente, in cucina, il Pesce azzurro prometteva fin troppo bene. Nel primo secolo dopo Cristo, il celebre Apicio, che di cucina, a Roma, se ne intendeva, nel suo citatissimo ricettario nominava l’uso di servire pesci di carne bianca, cotti sulla brace, con una salsa di pesce ottenuta facendo macerare in sale, aceto e vino (tipica salamoia piccante) piccole acciughe e sardine. Ma è la cucina regionale, quella tipica che nasce dai cibi di un luogo e dai gusti alimentari della gente che vi abita, a sancire l’ingresso ufficiale del pesce azzurro nella “Grande Gastronomia” in Sicilia, terra di mare, le sarde entrano alla grande come condimento della pasta o preparate “a beccaficu”, come vuole la tradizione. The ‘Pesce Azzurro’: The ‘Pesce Azzurro’ is a group of fish which, while each fish is of a different species or type, have one characteristic in common, related to the marine environment in which they live and, in technical terms, is called ‘Pelagico.’ Pelagico does not mean just what lives in the sea (otherwise all saltwater fish would be of this type), but means that the area of the sea in which the fish live is a long way from lands either emerged or submerged. In other words, these fish roam the middle of the deep sea and don’t go near neither the coast nor the seafloor expect for in rare and special circumstances. These fish, in general, are powerful swimmers and almost always have excellently hydrodynamic, tapered shapes. They have a shoal dominated by a steely blue colour, more or less dark on the back with a silvery white colour on the belly… from which the name comes the name Salvo. An exception is the ‘gregari’ which namely gather in shoals more or less large. Also, they are also migrating fish, for which they periodically move in groups, for reasons such as the search of a more favourable environment for both nutrition and reproduction. One of the more plausible scientific theories, in which these fish live in groups, supports the idea that the migration of these fish in dense groups, for hydrodynamic reasons, consumes far less energy than the individual movement of each fish would require singularly. The ‘Pelagic’ fish, other than being distinguished for the azure colouring of the back and its living habits, gregaria and pelagica, have another communal particularity which in scientific terms is called ‘positive phototaxis.’ In real terms this means that the fish are attracted to light, probably in relation to their nutrition. This habit is exploited by fishermen, who attract the fish under lamps and catch them in giant nets. In general, this fish is considered ‘poor fish’ because they have a low market price with respect to other varieties, considered (often and wrongly) more desirable, and is consumed very little with respect to the potential catch of our seas, a natural resource which would also be able to give relief to the economic climate. All of the ‘pelagici’ fish, those of small size, have an easily deteriorated meat for two reasons. The first is that their scales are extremely delicate and so easily fall off, leaving the fish naked and exposed to the detrimental actions of external agents, and the second is that their very soft meat is particularly rich with good fats, which when in contact with oxygen go bad very quickly. Given that the fishing of these fish is done with large nets in which hundreds and hundreds of kilograms of fish are amassed, damage to the fish is greatly increased by friction and the weight of the fish, and so their conservation is even more difficult than that of larger fish. Historically, in the kitchen, the ‘pesce azzurro’ was very promising. In the first century AD in Rome, the famous chef Apicio, appointed in his well-loved recipe book the use of fish with white meat, cooked on the grill, with a fish sauce made by marinated in salt, vinegar and wine (a typical spicy brine), small anchovies and sardines. However, it is the regional cuisine, that which is born from the food of one place and of the tastes of the people who live there, to sanction the official entrance of the ‘pesce azzurro’ into the great cooking of Sicily, land of the sea, sardines make a grand entrance used in pasta sauce or prepared ‘a beccaficu’, as tradition would have it. Il Pesce Azzurro e le sue proprietà nutritive: The ‘Pesce Azzurro’ and its nutritional properties: Il pesce è un alimento indispensabile in un’ alimentazione sana ed equilibrata. In particolare il pesce azzurro è ricchissimo di sostanze benefiche per il nostro organismo. Con il termine “pesce azzurro” si indicano tutte le specie ittiche caratterizzate da colorazione dorsale tendente al blu e argentea nella parte ventrale. Le tipologie più diffuse e conosciute nel mercato ittico sono: la sardina, l’alice o acciuga, lo sgombro, l’aguglia, l’alaccia, il pesce spada, la ricciola e il tonno. Il pesce azzurro ha carni generalmente molto digeribili caratterizzate da un’altissima concentrazione di grassi insaturi in particolare del tipo omega 3, che svolgono effetti benefici sul cuore e la circolazione in generale, abbassando il livello di colesterolo, è inoltre un’ ottima fonte di proteine e di una serie di macronutrienti come potassio (che aiuta la contrazione muscolare) e fosforo (utile per scheletro e cervello), di sali minerali (tra cui il selenio, un efficace antiossidante, calcio, fosforo, ferro e iodio) e vitamine (in particolare A e B). Ottimo nell’ alimentazione dei bambini e degli anziani per la masticabilità e la leggerezza, è consigliato almeno 3 volte alla settimana. Le proprietà organolettiche, le capacità nutritive e l’apporto calorico variano molto a seconda del metodo di cottura, quindi bisogna imparare a cucinare questo tipo di pesce in modo adeguato seguendo i consigli degli esperti per non alterarne le caratteristiche. Cuocere il pesce per poco tempo, preferibilmente al cartoccio, in forno o marinato nel limone, evitando le fritture, in cui a causa dell’elevata temperatura raggiunta dall’ olio si deteriorano facilmente sia i grassi polinsaturi che le vitamine. Inoltre, nelle nostre acque, oltre al pesce azzurro, non manca il pesce pelagico, con carni finissime, per palati raffinati, che tendono a dare un tocco in più, alle nostre ricette, rendendo unici i sapori delle nostre cucine. Il Calamaro è uno degli esemplari marini che possiamo trovare nei nostri mari e immancabilmente nei nostri piatti. Il Calamaro è un mollusco dalla carne magra, utilizzato in cucina per fritture, in umido, arrosto e ripieno. Fish is indispensable to a healthy and balanced diet. In particular, the ‘pesce azzurro’ is very rich in beneficial substances for our bodies. The term ‘pesce azzurro’ indicates all of the fish species characterised by the blue dorsal colouration with silver on the stomach. The more common and well-known in the commercial fish market are: sardines, anchovies, mackerel, garfish, shad, swordfish, amberjack and tuna. The ‘pesce azzurro’ has a generally digestible meat, characterised by a very high concentration of unsaturated fats and in particular omega three, which has beneficial effects for the heart and circulation in general, lowering cholesterol levels, and also an excellent source of protein and a series of macronutrients such as potassium (which helps muscle concentration) and phosphorous (useful for the skeleton and the brain), mineral salts (of which selenium, an effective antioxidant, calcium, phosphorous, iron and iodine) and vitamins (in particular A and B). Excellent for the diet of children and the elderly for its easy chewiness and lightness, consumption of ‘pesce azzurro’ is advised at least three times a week. The organismic properties, the nutritive capacity and the calorific intake greatly varies depending on the cooking method, therefore one must learn to cook this type of fish in a way that adequately follows expert advice so as to not alter the characteristics. Cook the fish for a short amount of time, preferably baked in the oven or marinated in lemon, avoiding frying, through both the poly-saturated fats and the vitamins deteriorate due to the high temperature of the oil. Otherwise, in our waters, other than ‘pesce azzurro’, ‘pelagico’ fish is never missing, with very fine meat, for refined palates, which tend to give a touch more to our recipes, rendering unique the flavours of our cuisine. Squid is one of the marine specimens that we can find in our seas and is never missing from our plates. It is a mollusc of thin meat, which can be eaten fried, stews, roasted and stuffed. IL CARPACCIO DI SPADA Swordfish Carpaccio INGREDIENTI: Ingredients: - 4-5 fette di pesce spada tagliate molto sottili e senza pelle - succo di un limone grande - uno, due cucchiai di olio extravergine d’oliva - prezzemolo fresco - sale con fiori di hibiscus di Orodorienthe. - 4-5 skinless very thin slices of swordfish - The juice of one large lemon - 1-2 tablespoons of extra-virgin olive oil - Fresh parsley - Salt with Orodorienthe hibiscus flowers PREPARAZIONE: Method: Il carpaccio di pesce spada è un antipasto delicato e buonissimo, un crudo di pesce in realtà cotto dal limone, che lascia la carne tenerissima e con un gusto speciale. Creiamo un emulsione con il succo di limone e l’olio extravergine d’oliva, aggiungiamo il prezzemolo fresco tagliato al coltello e immergiamoci dentro le fette di pesce spada, provate della pellicina esterna. Lasciamo marinare almeno una o due ore, rigirando il pesce, soprattutto se non è coperto totalmente dal salmoriglio. A questo punto, quando il pesce sarà diventato bianco e morbido, il nostro carpaccio di pesce spada è pronto! Togliamo il salmoriglio di troppo e aggiungiamo qualche fiocco di sale con fiori di hibiscus, delicatissimo e perfetto per questa ricetta, sia per il gusto sia per il colore. Swordfish Carpaccio is a delicate and delicious hors d’oeurve, a raw fish marinated with lemon, which leaves the meat very tender with a special taste. Create an emulsion with the lemon juice and extra-virgin olive oil, add the freshly chopped parsley and immerge the slices of swordfish in the liquid. Leave to marinate at least one to two hours, turning the fish, especially if it is not completely covered by the liquid. At this point, which the fish has turned white and soft, the carpaccio is ready! Remove any excess liquid and add a pink of salt with hibiscus flowers, very delicate and perfect for this recipe, both for its flavour and its colour. PREPARAZIONE: Per preparare l’insalata di polpo prezzemolata iniziate con la pulitura del polpo: sciacquatelo sotto acqua corrente, trasferitelo su uno strofinaccio pulito e asciutto e tamponatelo con carta da cucina. Mettetelo su un tagliere e con un coltello incidete la sacca all’altezza degli occhi per eliminarli; eliminate anche il becco, dopodiché frollate la carne battendo con un martelletto o un batticarne. Sciacquate nuovamente il polpo sotto acqua corrente fredda ed estraete le interiora dalla sacca lavandola poi accuratamente all’interno; lavate e strofinate con le mani testa e tentacoli per rimuovere il più possibile la patina che li ricopre. Sbucciate la carota con un pelaverdure, poi tagliatela a pezzetti grossolani insieme al sedano. Ponete sul fuoco una pentola capiente con l’acqua; versate le verdure, le foglie di alloro, l’aglio e aggiungete il pepe e il sale. Quando l’acqua avrà sfiorato il bollore, per arricciare le punte dei tentacoli del polpo, immergete i tentacoli nell’acqua bollente poi fateli riemergere e proseguite così per 4-5 volte: in questo modo l’estetica delle preparazioni sarà più gradevole. Quindi immergete nella pentola il polpo e fate cuocere a fuoco molto basso per 30-35 minuti, coprendo con un coperchio. Mentre cuoce, con una schiumarola potete eliminate dall’acqua di cottura i residui e la schiuma che si creano in superficie. Prima di scolarlo, infilzate la carne con i rebbi di una forchetta per verificare la cottura. Quando sarà pronto, scolatelo e ponetelo in una ciotola con acqua e ghiaccio per bloccare la cottura. Trasferitelo su un tagliere: con un coltello separate la testa dai tentacoli, dividetelo a metà , poi tagliate i tentacoli a pezzettini, mettendoli in una ciotolina. Spremete un limone e tritate finemente il prezzemolo. Aggiungete il succo di limone e il prezzemolo tritato al polpo. Condite con l’olio, regolate di sale e pepe, poi mescolate il tutto con un cucchiaino. Servite la vostra insalata di polpo prezzemolata in un piatto da portata guarnendola con fettine di limone. Octopus Salad Ingredients: For the salad: - 850g octopus - 1 garlic clove - 150g carrots - 1 stick of celery - 3 bay leaves - 6 black peppercorns - 4g salt For the dressing: - Parsley, extra-virgin olive oil, lemon, salt & black pepper. Method: To prepare the octopus salad with parsley, begin by cleaning the octopus: wash under running water, place on a clean and dry cloth and dab with kitchen towel. Place on a chopping board and with a knife cut the sack at egg level to remove it; also remove the mouth, after which beat the meat with a tenderiser. Rinse the meat again under cold running wash, paying particular attention to fully remove the internal sack; scrub the head and tentacles to remove as much possible dirt. Peel the carrots then cut into large pieces along with the celery. Place a large pan on the heat filled with water, put in the vegetables, bay leaves, garlic and salt and pepper. When the water is about to boil, to enrich the ends of the tentacles, immerge the tentacles in the water for a few seconds, do this 4-5 times: in this way the dish with be more aesthetically pleasing. Immerge the octopus in the water and leave to cook on a very low heat for 30-35 minutes, leaving the lid on the pan. While cooking, skim the surface of the water to remove any dirt that rises. Before draining, place a fork into the meat of the octopus to be sure that it is cooked. When it is ready, drain the octopus and place in bowl with water and ice to stop the cooking. Transfer to a chopping board, with a knife spate the head from the tentacles, divide it in half, then cut the tentacles into pieces and place in a bowl. Squeeze the juice of one lemon over the octopus and add finely chopped parsley. Season with oil, salt and pepper, then mix everything together. Serve your octopus salad with parsley on a serving dish and decorated with lemon slices. ALICI AGLI AGRUMI Citrus anchovies INGREDIENTI: Ingredients: - 600 g di alici piccole diliscate - 4 arance - 4 limoni - 1 mazzetto di prezzemolo - peperoncino - olio - sale - pepe PREPARAZIONE: Lavate le alici, asciugatele e mettetele in un recipiente in un unico strato, irroratele con il succo di tre limoni e lasciatele marinare per circa un’ora in modo che il succo degli agrumi le “cuocia”. Trascorso questo tempo sgocciolatele molto bene eliminando tutto il liquido scuro che si sarà formato. Disponetele a raggiera in un piatto da portata. Preparate la salsa: in una ciotola emulsionate il succo di tre arance con olio, sale, pepe e peperoncino, quindi versatela a filo sulle alici. Tagliate dalle restanti arancia e limone tre fettine asciando loro la buccia, da ogni fettina ricavate dei piccoli triangoli e adagiateli sulle alici, poi cospargetele con un trito finissimo di prezzemolo, lasciatele riposare alcuni minuti e servitele. - 600g small de-boned anchovies - 4 oranges - 4 lemons - 1 small bunch of parsley - 1 chilli - Oil - Salt - Pepper Method: Wash the anchovies, dry and place them in a container in one line, spray with the juice of three lemons and leave to marinate for around an hour, through which the lemon juice will ‘cook’ the fish. After an hour drain the anchovies very well, making sure to remove all the dark liquid that will have formed. Arrange radially on a serving tray. Prepare the sause: in a bowl mix the juice of three oranges with oil, salt, pepper and chilli, and pour over the anchovies. Slice the remining oranges and lemons, and into each slice cut small triangles place them with the anchovies, then cover with very finely chopped parsely, leave to rest for a few minutes and serve. POLPETTE DI SGOMBRO PREPARAZIONE: Mackerel meatballs Method: INGREDIENTI: Pulite gli sgombri, eliminando testa, budella, spina centrale, coda e apriteli a libro. Sbollentateli per un paio di minuti, quindi eliminate la pelle, sminuzzateli e metteteli in un’insalatiera. Aggiungete una manciata di parmigiano grattugiato, l’uovo, un pizzico di sale, un po’ di pepe e il pangrattato (non troppo però: il composto deve risultare molto morbido, ma consentirvi però di fare delle polpette che non si disfino). Aggiungete la menta, i pinoli e la passolina che avrete prima fatto ammorbidire in un bicchiere con acqua tiepida. Adesso fate le polpette: con le mani inumidite, formate delle palline del diametro di 5 cm circa, infarinatele e riponetele in un piatto. Preparate quindi una salsa al pomodoro semplice: soffritto di cipolla, aggiungete la passata, un pizzico di sale e fate andare qualche minuto a fuoco lento. Se avete del basilico fresco, aggiungetene una foglia, quindi spegnete il fuoco. Friggete le polpettine in una padella antiaderente e poi passatele direttamente dalla padella alla pentola con la salsa di pomodoro. Riaccendete il fuoco della salsa e lasciate andare qualche minuto perché le polpette e la salsa si amalgamino. Ecco pronte le vostre polpette di sgombro. Ingredients: Clean the mackerel, removing the head, guts, spine, tail and butterfly the fish. Boil for a few minutes, then remove the skin, chop and place in a salad bowl. Add a handful of grated parmesan, the egg, a pinch of salt and pepper and the breadcrumbs (be careful not to add too much or the mixture with become too soft, but allow enough so that the meatballs don’t fall apart). Add the mint, the pine nuts and raisins that have been pre-soaked in tepid water. Now make the meatballs: with moistened hands, form balls of around 5cm diameter, coat in flour and place on a plate. Then prepare the simple tomato sauce: fry the onion, add the passata, a pinch of salt and cook for a few minutes on a low heat. If you have fresh basil add a leaf, then turn off the heat. Fry the meatballs in a non-stick frying pan and then pass them directly into the pan of sauce. Put the pan with the sauce and meatballs back on the heat and leave to cook for a few minutes so that the meatballs and the sauce amalgamate. Your mackerel meatballs are ready to be served. Via Favaloro – Lampedusa - Tel 0922/970272 - ax: 0922970786 www.albadamore.it - [email protected] CAPONATA DI PESCE SPADA INGREDIENTI: - 2 melanzane - 300 gr di pesce spada - 1/2 bicchiere di vino bianco - 2 steli di sedano - 100 gr olive verdi snocciolate -siciliane - 1 cipolla - un pugno di capperi - 1 tazza da caffe’ di aceto di -vino bianco - 1 cucchiaio di zucchero - 1 bicchiere di polpa di pomodoro - sale q.b - olio extra vergine oliva PREPARAZIONE: Per prima cosa eliminare dal trancio di pesca spada la pelle e ridurlo a dadini . Metterlo in padella con un filo di olio mezzo bicchiere di vino bianco e lasciare cuocere a fiamma vivace girandolo e evitando che si sfaldi. Cuocere per circa 8/10 minuti e quando sara’ cotto metterlo da parte. Prepa- rare la caponata di melanzane tradizionale :tagliatele a cubetti le melanzane e tenetele in ammollo con acqua e un cucchiaio di sale per 15 minuti in modo che siano tutte coperte dall’acqua. Scolatele strizzatele in un canovaccio e friggetele in 4 cucchiai di olio extravergine d’oliva utilizzando una padella antiaderente di circa 20 cm circa. Appena dorate metterle da parte su carta assorbente per togliere l’eccesso di olio. In una padella fate soffriggere una bella cipolla tagliata fine e appena dorata unire 1 etto di olive verdi , le coste di sedano tagliate a pezzetti , i capperi e la polpa di pomodoro pelato preferibilmente fresca e il sale quanto basta . Fare addensare il composto così ottenuto a fiamma dolce per circa 15 minuti. Unire le melanzane , un cucchiaio di zucchero e l’aceto di vino bianco per creare l’agrodolce tipico di questo piatto lasciando evaporare a fiamma sostenuta per 5 minuti circa .Unire i tocchetti di pesce spada precedentemente cotto e lasciare cuocere per altri 5 minuti ancora e dosare l’agrodolce secondo i propri gusti aggiungendo se necessario altro zucchero o altro aceto. Spegnere e servire fredda la vostra la caponata di pesce spada. Swordfish caponata Ingredients: - 2 aubergines - 300g swordfish - Half a cup white wine - 2 celery stalks - 100g Sicilian pitted green olives - 1 onion - A pinch of capers - An espresso cup of white wine vinegar - 1 tablespoon sugar - 1 cup of chopped tomatoes - Salt - Extra-virgin olive oil Method: The first thing to do is to remove the skin from the swordfish and dice the fish. Put it in a frying pan with glug of oil and half a cup of white wine and leave it to cook on a high heat, turning the fish and not letting it fall apart. Cook for 8-10 minutes and when it is cooked leave to one side. Prepare the traditional aubergine caponata: dice the aubergines and place in a bowl of water with a tablespoon of sale for 15 minutes, making sure that all the aubergine is covered. Drain and squeeze in a cloth, then fry in 4 tablespoons of extra-virgin olive oil, using a non-stick frying pan of around 20cm diameter. One the aubergine is browned, put it on kitchen towel to get rid of any excess oil. In a frying pan, fry one finely chopped one and once browned add 100g green olives, the chopped celery, the capers, the peeled tomatoes (preferably fresh) and salt. Cook on a low heat for around 15 minutes until the sauce is dense. Add the aubergine, a tablespoon of sugar and the white wine vinegar to create the typical sweet and sour flavour of this dish by leaving to evaporate on a medium heat for 5 minutes. Add the chunks of pre-cooked swordfish and continue to cook for another 5 minutes, meanwhile taste and if necessary adjust the sweet and sour flavour to your taste by adding more sugar or vinegar. Turn off the heat and serve your swordfish caponata cold. RAGU’ DI TRIGLE Mullet ragu INGREDIENTI: Ingredients: - 200 gr. di triglie sfilettate - olio evo - 1 spicchio di aglio - 1/2 bicchiere di vino bianco -secco - 200 gr. di salsa di pomodoro - basilico - 200g filleted mullet - Extra-virgin olive oil - 1 garlic clove - Half a cup dry white wine - 200g tomato sauce - Basil PREPARAZIONE: Method: Mettere a cuocere per una mezzoretta la salsa di pomodoro con un po’ di olio evo, basilico e uno spicchio di aglio salando a piacere con un pizzico di zucchero per togliere un po’ di acidità. Una volta aver raggiunto un’ottima fase di ebbollizione del sugo, iniziate a tagliare le triglie a piccoli quadrettini e metterle a rosolare in una capiente padella con un po’ di olio evo e sfumando con un po’ di vino bianco. Dopo aver raggiunto un’imbiancatura prima e una doratura della triglia in cottura, aggiungere la salsa e lasciare cuocere una decina di minuti. Amalgamate bene entrabe le preparazioni e lasciate sposare i preparati per qualche altro minuto. PREPARAZIONE: In una padella antiaderente scaldare dell’olio extra-vergine di oliva, non appena è ben caldo soffriggervi la cipolla tagliata a velo. Lasciarla imbiondire e aggiungere un po’ di prezzemolo tritato e le uova di ricciola facendo attenzione a togliere accuratamente la pellicina del sacchetto in cui sono contenute. Mescolare con un cucchiaio di legno, salare poco e sfumare con mezzo bicchiere di vino bianco. Dopo circa tre minuti, quando il vino e l’acquetta delle uova si saranno asciugati, unire la salsa di pomodoro. Salare, mescolare e aggiungere il restante mezzo bicchiere di vino bianco. fare cuocere ancora un paio di minuti finchè la salsa sarà ristretta. Portare a ebollizione l’acqua di cottura per le bavette, cuocere la pasta in acqua salata lasciando che trascorra il tempo di cottura indicato sulla confezione. Rimescolare di tanto in tanto. Scolare la pasta, condire col sughetto preparato. Cospargere su ogni piatto una manciata di prezzemolo fresco tritato con un coltello. Ricetta ottima, facile da preparare ma diversa dal solito piacerà a tutti anche ai palati più fini. Fate un soffritto con cipolla grattugiata, aglio schiacciato e peperoncino, quando la cipolla si è imbiondita aggiungete i tocchetti di pesce e rosolate un minuto, sfumate con mezzo bicchiere di vino bianco e fate evaporare. Unite i pomodori salate e fate cuocere fino ad avere un sugo bello denso. Spegnete e aggiungete il trito di prezzemolo e menta. Cucinate le caserecce in abbondante acqua salata. Scolate e saltate in padella insieme al sugo, impiattate e servite con un giro di olio evo. - 300g casarecce pasta - 400g grouper - 500g peeled tomatoes - 1 chilli - 1 small onion - 1 garlic clove - Parsley - Mint - Extra-virgin olive oil Method: Put a pan on the boil water for the pasta. LA MILANISA INGREDIENTI: - 400 gr di bucatini o pasta lunga, - 400 gr di sarde fresche o condimento per pasta con sarde 410 gr - 50 gr di filetti d’acciuga sotto sale - 20 gr di uva sultanina - 20 gr di pinoli - 3 mazzetti di finocchietto selvatico - 2 spicchi d’aglio - 1 cipolla - 1 bustina di zafferano - 1 ciuffetto di prezzemolo - olio extra vergine d’oliva PREPARAZIONE: Mettete in un tegame 1 cucchiaio di olio extra vergine d’oliva, 1 spicchio d’aglio, qualche cucchiaio d’acqua, lo zafferano e 1/2 mazzetto di finocchietto; salate e pepate. Fate imbiondire, quindi unite i filetti di sarde (o aprite e versate il condimento per pasta con le sarde dei Fratelli Contorno), che avrete ottenuto pulendo, sfilettando, lavan- do con cura e asciugando il pesce fresco. Lasciate cuocere per alcuni minuti a fuoco moderato, poi togliete l’aglio e spegnete il fuoco. Sbollentate per circa 15 minuti il finocchietto rimasto, scolatelo, tritatelo e ponetelo da parte (questa fase potete farla anche per il condimento in scatola), avendo cura di conservare anche l’acqua di cottura. Tritate poi la cipolla e mettetela a soffriggere in padella con l’altro spicchio d’aglio. Aggiungetevi il finocchietto tritato, i pinoli, l’uva sultanina, precedentemente ammollata e asciugata, i filetti d’acciuga, dissalati e pestati in un mortaio con il prezzemolo tritato, e 1 mestolo di acqua di cottura del finocchietto. Fate insaporire a fuoco molto basso per circa 5 minuti. Utilizzate l’acqua di cottura del finocchietto per cuocere la pasta, aggiungendo se necessario altra acqua salata, e scolatela ancora al dente. In una teglia, leggermente unta di olio, fate un primo strato di pasta e conditela con le sarde e con la salsa di finocchietto. Proseguite così fino ad esaurimento degli ingredienti, avendo cura di terminare con della salsa. Infornate alla temperatura di 180° C per 20 minuti circa, quindi sfornate e servite ben caldo. The Milanisa Ingredients: - 400g bucatini or other long pasta - 400g fresh sardines (or 410g pasta sauce with sardines) - 50g salted anchovy fillets - 50g sultanas - 20g pine nuts - 3 bunches of wild fennel - 2 garlic cloves - 1 onion - 1 sachet of saffron - A few sprigs of parsley - Extra-virgin olive oil Method: Put in a pan: 1 tablespoon extra-virgin olive oil, a garlic clove, a few tablespoons of water, the saffron and half a bunch of fennel, add salt and pepper. Soften the mixture, then add the sardine fillets (or add the ready prepared sauce), which you will have cleaned, filleted and dried carefully. Leave to cook for a few minutes on a moderate heat, then remove the garlic and turn off the heat. Boil for around 15 minutes the remaining fennel, drain, chop and put to one side making sure to also keep the cooking water (you should do this even if using the preprepared sauce). Chop the onion and fry in a frying pan with the other garlic clove. Then add the fennel, pine nuts, soaked and dried sultanas, anchovy fillets, the chopped parsley and one ladleful of the fennel cooking water. Cook for about 5 minutes on a low heat in order to absorb the flavours. Use the fennel cooking water to cook the pasta, adding extra salt if needed, and drain while it is al dente. In a try light brushed with oil, make a layer of pasta and cover with the sardine and the fennel sauce. Continue until all the ingredients are finished, making sure to finish with the sauce. Place in a preheated oven at 180 degrees for around 20 minutes, remove from the oven and serve hot. CALAMARI RIPIENI INGREDIENTI: - 7 calamari (peso complessivo - 700 gr, già puliti). Per il ripieno: - 4-5 cucchiai di pan grattato, - un tuorlo d’uovo, - una manciata di uvetta e pinoli, - uno spicchio d’aglio tritato, - menta, basilico, prezzemolo, - un pizzico di sale, olio evo. Per la salsa: - 800 gr di polpa di pomodoro pelato, - uno spicchio d’aglio, - un quarto di cipolla tritata, - olio evo, sale, basilico e menta. PREPARAZIONE: Pulire i calamari, tagliare i tentacoli a pezzettini. In una padella far dorare uno spicchio d’aglio con olio evo e soffriggere i tentacoli fin a quando cominceranno a “scoppiettare”. Nel mentre preparare in una ciotola il ripieno mescolando il pangrattato con uvetta e pinoli, aglio tritato, menta, prezzemolo e basilico tritati, due cucchiai di olio e un pizzico di sale, mescolare bene per insaporire. Quando i tentacoli sono soffriti aggiungere questo condimento e per un minuto mescolare. Spegnere il fuoco e far raffreddare, quando è già freddo aggiungere un tuorlo d’uovo e mescolare bene. L’uovo serve per legare meglio il tutto, non guasta il gusto ma volendo si può anche omettere. A questo punto riempire i calamari ma non fino all’orlo, lasciare un po’ di spazio per poi chiuderli con uno stecchino. Quando sono tutti pieni scaldare dell’olio in una padella e soffriggerli fino a quando saranno dorati da ogni parte e cominceranno a scoppiettare, sfumare con mezzo bicchiere di vino. Nel mentre in un tegame soffriggere la cipolla con l’aglio in olio evo, aggiungere il pelato e del basilico e menta, far sobbollire per una decina di minuti, a questo punto aggiungere i calamari soffritti (con l’eventuale olietto che si è prodotto) e far cuocere per mezz’ora circa. Stuffed squid Ingredients: - 7 squid (total weight 700g when cleaned) For the stuffing: - 4-5 tablespoons of breadcrumbs - 1 egg yolk - A handful of raisins and pine nuts - 1 garlic clove finely chopped - Mint, basil, parsley - A pinch of salt - Extra-virgin olive oil For the sauce: - 800g peeled tomatoes - 1 garlic clove - Quarter of an onion finely chopped - Extra-virgin olive oil - Salt - Basil and mint Method: Clean the squid and chop the tentacles into small pieces. In a frying pan brown a garlic clove with extra-virgin olive oil and fry the tentacles until they begin to crackle. Meanwhile prepare the stuffing in a bowl, mixing the breadcrumbs with raisins and pine nuts, chopped garlic, chopped mint, parsley and basil, 2 tablespoons of oil and a pinch of salt, mixing well. When the tentacles are fried, add the mixture to the pan and mix well for one minute. Turn off the heat and leave to cool, when the mixture is cold and the egg yolk and mix well. The egg yolk is used to bind the mixture together, it will not affect the flavour but you can choose to omit it. At this point, stuff the squid, leaving enough space to close them with a cocktail stick. When all the squid is stuffed heat oil in a frying pan and fry the stuffed squid until they are browned all over and begin to crackle, add and evaporate half a cup of white wine. Scolarle e metterle da parte. Quando saranno tiepide, ungere una te- glia da forno che contenga i pesci con olio e disporre il letto di patate Ai quattro angoli della teglia mettere aglio e rosmarino e ai bordi della teglia la foglia spezzata di alloro ( gli aromi in questione non devono toccare il pesce per non conferirigli un sapore troppo deciso degli stessi). Irrorare d’olio le patate , pepare e cospargere con un po’ di prezzemolo tritato ( il sale già c’era nell’acqua di bollitura). Mettere i pesci sulle patate Spruzzare i pesci con il brandy, oliare, salare pepare e cospargere di abbondante prezzemolo. Unire un fiocchetto di burro. Coprire e mettere in forno gia caldo a 240° per 40 minuti. Pulire il pesce e servirlo con patate e sughetto che si sarà formato durante la cottura. San Pietro in sea water bed of potatoes. Splash the fish with brandy, brush with oil, add salt, pepper, a knob of butter and lots of parsley. Cover and place in a pre-heated oven at 240 degrees for around 40 minutes. Clean the fish and serve with the potatoes and cooking juices. CERNIA ALLA LAMPEDUSANA INGREDIENTI: - un trancio di Cernia fresca di 200 gr circa di peso - 5 pomodori pachino - 5-6 olive nere - 50 gr di provola fresca (di solito preferisco la provola stagionata perché quella fresca tira fuori troppo latte in forno ma questa ricetta fa eccezione ) - prezzemolo a volontà - olio evo (io Sabina DOP) - 30-40 ml di vino bianco (2-3 cucchiai) - sale, aromi per pesce PREPARAZIONE Lavare il trancio di Cernia e togliere eventuali spine rimaste. Mettere le fette, su un foglio di alluminio spennellato bene di olio, salato con l’aggiunta delle varie spezie per condire il tutto. Dopo avere tagliato il pomodorino pachino in quattro spicchi, posizionatelo sopra le fette di cernia, insieme alle olive disossate e tagliate in due parti. Tritate il prezzemolo e aggiungetelo insieme ad un po’ di vino con ancora un filo di olio. Mettete tutto in forno a 180° per 1015 minuti. Il risultato finale sarà che le cernie resteranno morbide ed e super saporite. CONSIGLI: La preparazione è di circa 10 minuti e 10-15 minuti per la cottura a 180° in forno statico. Essendo i forni diversi e i tranci di Cernia di spessore variabile controllate il pesce dopo 10 minuti, se risulta ancora crudo proseguite altri 5 minuti. Lampedusan grouper fish Ingredients: - 200g fresh grouper fish - 5 cherry tomatoes - 5-6 black olives - 50g fresh provolone (I usually prefer asonal provolone because the fresh cheese pulls out too much milk in the oven, but this recipe is an exception) - Parsley - Extra-virgin olive oil (I use Sabina DOP) - 30-40ml white wine (2-3 tablespoons) - Salt - Spices for fish Method: Wash the fillet of fish and remove any bones. Put the fillet on aluminium foil and brushed with oil, salt and spices. After having quartered the cherry tomatoes, position them on the fish, together with the halved olives. Finely chop the parsley and add to the fish with a little wine and more oil. Place in the oven at 180 degrees for 10-15 minutes. The final result with be that the fish remains soft and full of flavour. Advice: The preparation time is around 10 minutes and 10-15 minutes cooking time at 180 degrees in a static oven. For other ovens and dependent on the thickness of the fillet, check the fish after 10 minues and if it is still raw continue to full cooking time. RICCIOLA ALLA FANESE Fanese amberjack INGREDIENTI: Ingredients: - 200 gr. di Ricciola a fette; - 20 gr. di Pan Grattato; - Mezzo aglio; - 3/4 filetti di acciuga - Prezzemelo - 200g sliced amberjack - 20g breadcrumbs - Half a garlic clove - 3-4 anchovies - Parsley PREPARAZIONE Method: Riscaldiamo il forno a 200 gradi. Tritiamo aglio e acciughe e mettiamoli in una ciotola assieme al prezzemolo e al pangrattato. Aggiungiamo 2 cucchiai di olio, saliamo e mescoliamo bene. Questa è la panatura con la quale ricopriremo i filetti di tonno. Ungiamo una pirofila di olio, disponiamoci il tonno e cospargiamolo col trito. Mettiamo in forno a 200 gradi per 15 minuti circa rigirandolo a metà cottura. Serviamo con limone e prezzemolo. Preheat the oven to 200 degrees. Finely chop the garlic and anchovies and put them in a bowl together with the parsley and breadcrumbs. Add two tablespoons of oil, add salt and mix well. This is the mixture to cover the fillets of amberjack. Grease the baking tray with oil, place the fillets of amberjack and cover with the mixture. BISCOTTI AI FICHI INGREDIENTI: - kg 1 farina di grano duro - gr. 300 strutto - gr. 300 zucchero - n.1 bustina di vaniglia - n.1 bustina di ammoniaca l- atte quando basta per impastare. Farcitura: - gr. 500 fico rimacinata. - n. 1 fiala arancia - n.1 confettura arancia o miele - gr. 100 mandorla frantumata - g r 100 gocce cioccolato da forno - n.1 bustina cannella - g r 100 diavoletti colorati. PREPARAZIONE Procedimento della pasta frolla: impastare il tutto fino ad ottenere un composto omogeneo. Mettete in una ciotola la farina di grano duro aggiungete lo strutto,lo zucchero l’ammoniaca, impastare con il latte a poco la volta,fare diventare un composto omogeneo. Quando l’impasto e pronto farlo riposare per circa un ora, l’impasto non e altro che una pasta frolla dove voi andrete a fare. Prendete un panetto e stendete la frolla fino ad uno strato sottile, con l’aiuto di un mattarello ricavate tanti strisce,6 cm di larghezza,su ognuno di essi disponete due cucchiaini di ripieno e chiudete a cerchio. Con un coltello affilato potete praticare dei tagli nella pasta per rendere ancora più caratteristica l’estetica siciliano. Un modo più semplice per comporre il biscotto è quello di stendere la frolla in un rettangolo,formate un salsicciotto con il ripieno e disponetelo per tutta la lunghezza ripiegate, sigillate, arrotolate leggermente con le mani e con il coltello tagliate trasversalmente i biscotti di pasta e fare dei cerchi. Aggiungete i diavoletti,e infornate a 220 gr alla fine avrete ricavato dei biscotti gustosi e pratici da mangiare. Put the whole wheat flour in a bowl along with the lard, the sugar, the vanilla and the ammonia and mix well, adding the milk a little at a time so as to allow the dry ingredients to come together. This dough is nothing more than a simple shortbread. Thinly roll out the dough using a rolling pin and cut into lots of strips of 6cm width, on each strip place two tablespoons of the filling and close in a circular shape. With a knife you can practice some of the biscuits decorations that will make your biscuits more characteristically Sicilian. The easiest way to make up the biscuit is to roll out the pastry in a rectangle, form a sausage shape with the filling and place it in the middle of the pastry, close and seal the pastry, roll gently between your hands and with a knife cut across the biscuits and make circles. CANNOLI CON LA RICOTTA INGREDIENTI: Per le cialde: - Farina 250 g - Zucchero a velo 30 g - Strutto 50 g - Cacao in polvere amaro 5 gr - Sale 1 cucchiaino raso - 1 cucchiaino raso DI Cannella in polvere - Caffe in polvere 1 cucchiaino raso - Uova medie 1 (dal peso di 50 gr sgusciato) - Aceto di vino bianco 30 ml - Marsala secco 30 ml Per il ripieno: - Ricotta di pecora 750 gr - Zucchero 300 g - Cioccolato fondente in gocce 75 gr o canditi PREPARAZIONE: Prima di iniziare a preparare le cialde, mettete la ricotta a scolare in un colino poggiato dentro a una ciotola e riponete il tutto in frigorifero. Mettete in una ciotola capiente la farina setacciata, il sale, la cannella, il caffè in polvere, il cacao e lo zucchero a velo setacciati. Aggiungete lo strutto, l’uovo e poi, a filo, l’aceto mischiato con il marsala; questi ultimi liquidi, devono essere aggiunti piano piano, impastando, perché potrebbe non essere necessario aggiungerli interamente, a seconda di quanto assorbirà la farina da voi utilizzata. Tenete presente che l’impasto dovrà risultare morbido ed elastico ma consistente, un po’ più duro dell’impasto del pane. Impastate il composto per almeno 5 minuti su di un piano di lavoro, fino a che non sarà elastico, liscio ed omogeneo poi avvolgetelo nella pellicola trasparente e mettetelo a riposare per almeno un’ora in frigorifero. Ora dedicatevi a preparare la crema per la farcitura: prendete la ricotta ben scolata e ponetela dentro ad una ciotola dove aggiungerete lo zucchero. Mescolate delicatamente gli ingredienti senza insistere troppo, poi coprite la ciotola con della pellicola e ponetela in frigorifero per almeno un’ora. Trascorso il tempo indicato, prendete un setaccio a maglie molto fini, poggiatelo su di una ciotola e con l’aiuto di una spatola schiacciate il composto di ricotta e zucchero verso il basso per farlo fuoriuscire; setacciate in questo modo tutto il composto. Una volta ottenuta una crema molto fine, aggiungete le gocce di cioccolato (oppure, se preferite, dei cubetti di zucca candita, come tradizione vuole): conservate la crema di ricotta in frigorifero dentro ad un contenitore col coperchio. Prendete l’impasto per le cialde dei cannoli e tiratelo in una sfoglia sottile 1-2 mm (potete utilizzare la macchina per la sfoglia oppure tirarla col mattarello). Prendete un coppapasta rotondo del diametro di 9 cm, quindi ricavate almeno 24 sagome che allargherete con le mani rendendole ovali e poi arrotolerete sugli appositi cilindri di metallo, avendo cura di spennellare le estremità con l’albume d’uovo prima di sovrapporle. In alternativa alla forma tonda, potete anche ritagliare con una rotella tagliapasta a bordo liscio dei rombi di pasta per poi utilizzarli nello stesso modo, cioè avvolgendoli ai cilindri di metallo. Scaldate lo strutto (o l’olio) in un pentolino non troppo grande fino ad arrivare a 170-180° e poi friggete tutte le cialde, mettetele a perdere l’olio in eccesso su di un paio di fogli di carta assorbente e quindi fatele raffreddare completamente prima di estrarre i cilindri di metallo. Una volta fredde, riempite le cialde con la crema di ricotta che avrete messo dentro ad una tasca da pasticciere con bocchetta liscia e larga. Completate il dolce guarnendolo con mezza ciliegia candita posta su entrambe le estremità (oppure scorze di zucca o arancia candita o pistacchi tritati) e una generosa spolverata di zucchero a velo e servite. Ricotta cannoli Ingredients: For the shells: - 250g flour - 30g icing sugar - 50g lard - 5g dark cocoa powder - 1 teaspoon salt - 1 teaspoon cinnamon powder - 1 teaspoon coffee granules - 1 medium egg - 30ml white wine vinegar - 30ml dry Marsala For the filling: 750g sheep ricotta 300g sugar 75g dark chocolate chips or candied fruit Method: Before you begin to prepare the shells, put the ricotta in a colander to drain, place the colander inside a bowl and put it in the fridge. Put the sieved flour in a large bowl, with the salt, the cinnamon, the coffee granules, the cocoa and the sieved icing sugar. Add the lard, the egg, and pour in the vinegar mixed with marsarla; these must be added slowly, this is important because it may not be necessary to add the entire volume given, depending on the absorbency of the flour. Keep mixing until the dough is soft and elastic, but consistent, a little firmer than bread dough. Knead the dough on a flat, clean surface for at least 5 minutes, until it is elastic, smooth and homogenous, the place the dough in cling film and leave to rest in the fridge for at least an hour. Now you can prepare the cream filling: take the drained ricotta and place it in a bowl along with the sugar. Delicately mix the ingredients without over-mixing, cover the bowl with cling film and leave to rest in the fridge for at least an hour. After this time, take a sieve with very small holes and place it over a bowl, pass the ricotta mixture through the sieve using a spatula. Once the cream is very fine, add the chocolate chips (or, if you prefer, cubed candied pumpkin, as is traditional): conserve the cream in a covered container in the fridge. Roll the dough for the cannoli shells into a sheet around 1-2mm thick (you can use either a pastry machine or a rolling pin for this). Take a round pastry cutter of 9cm diameter and cut at least 24 circles which you will then form into ovals with your hands, once the ovals are made wrap them individually around metal cylinders, making sure to brush the edges with egg white before overlapping. Alternatively, you could cut the dough into squares and continue with the same procedure. Heat the lard (or oil) in a small pan until it arrives at 170-180 degrees, then fry the shells, then leaving them to drain any excess oil on a metal plate. Once the shells are cold, fill them with them with the ricotta cream using a piping bag with a large and smooth nozzle. Complete the cannoli by decorated with half a glace cherry on each end (or pumpkin peel, candied orange or chopped pistachios) and a generous sprinkling of icing sugar, and serve. CASSATA SICILIANA INGREDIENTI: Per il ripieno: - Cioccolato fondente in gocce 100 gr - Arance candite 50 gr (facoltativo) - Ricotta di pecora 1,2 kg - Zucchero a velo vanigliato, 280 gr Per il Pan di Spagna: - Uova medie 10 - Farina 300 g - Zucchero 300 g - Sale 1 pizzico - Zucchero (per la bagna), 50 gr - Acqua (per la bagna), 150 ml - Maraschino o altro liquore, mezzo bicchierino - Limoni la scorza di mezzo (per la bagna) PREPARAZIONE: Iniziate la preparazione della cassata siciliana il giorno prima di servirla. Realizzate un Pan di Spagna con gli ingredienti sopra indicati e seguendo il procedimento che trovate cliccando qui. Cuocetelo in una teglia rettangolare delle dimensioni di 35 cm x 25 cm e lasciatelo quindi raffreddare (lo prepariamo un giorno prima in modo che si possa tagliare senza sbriciolarsi troppo). Sgocciolate per bene la ricotta di pecora dentro ad un colino e poi mischiatela in una ciotola assieme allo zucchero a velo vanigliato: coprite la ciotola con pellicola trasparente e mettete il tutto in frigorifero per una notte. L’indomani, passate due volte al setaccio la ricotta fino ad ottenere una crema liscia e soffice. A questo punto unite alla crema il cioccolato a gocce (e, se vi piace, l’arancia candita tagliata a piccoli dadini) e ponete la farcia ottenuta in frigorifero dentro ad una ciotola coperta con pellicola trasparente. Preparate il marzapane verde impastando il marzapane assieme alla pasta di pistacchi (se non la trovate potete utilizzare del colorante verde per alimenti), spolverizzando il piano di lavoro con poco zucchero a velo. Se volete preparare da voi la pasta reale, mettete in un tegame 125 gr di zucchero e 50 ml di acqua. Portate ad ebollizione e non appena lo zucchero inizierà a filare (112°-115°), togliete il pentolino dal fuoco; incorporate 125 g di farina di mandorle pelate (che otterrete frullando le mandorle pelate con un macinino da caffè con piccoli intervalli per non surriscaldarle e fare fuo- riuscire l’olio) , la pasta di pistacchi e 1 bustina di vanillina. Mescolate fino ad ottenere un impasto omogeneo e poi versatelo su di un tavolo di marmo freddo. Appena la pasta reale sarà raffreddata, lavoratela fino a farla diventare liscia e compatta (se dovesse servire, utilizzate dello zucchero a velo alla stessa stregua della farina). Stendete il marzapane in una sfoglia larga 12 cm e spessa 1/2 cm, quindi tagliatela in due nel senso della lunghezza (otterrete due strisce larghe 6 cm) e ricavate dei pezzetti di pasta dalla forma simile ad un trapezio. Per la cassata si utilizzerà una particolare tortiera tonda dai bordi svasati alti circa 5 cm e dal fondo leggermente rialzato, tipica di Palermo: quella utilizzata in questa ricetta ha un diametro di 30 cm nella sua parte più larga. Tagliate il pan di spagna in strisce alte almeno 6 cm dalle quali ricaverete anche in questo caso dei trapezi (proprio perchè i bordi della tortiera sono svasati). Spolverizzate la tortiera molto bene con zucchero a velo e poi foderate i bordi alternando i trapezi di pan di spagna a quelli di marzapane verde, pressando bene verso i lati e stando attenti a non lasciare spazi tra uno e l’altro. Se il pezzetto appena poggiato avrà il lato superiore più largo di quello inferiore, il seguente dovrà avere le caratteristiche opposte. I trapezi possono essere posizionati sia con la parte scura verso l’esterno, sia verso l’interno (vedi video). Una volta completato tutto il perimetro della tortiera, si potrà poggiare il fondo, con la parte spugnosa verso il basso. Premete bene i bordi del pan di spagna per farlo aderire meglio alla sagoma della tortiera. Ora, con un coltello dalla lama liscia e affilata, potete pareggiare i pezzetti che fuoriescono dai bordi laterali della tortiera. Se volete potete preparare una bagna per inumidire il pan di spagna: sciogliete 50 gr di zucchero in 150 ml di acqua, assieme alla scorza di mezzo limone (o arancia) e mezzo bicchierino di liquore a scelta (maraschino, cointreau, alchermes, strega, ecc) e fatela raffreddare. Poi versate la bagna sul pan di spagna Ora potete riempire la base con la crema di ricotta, che livellerete con una spatola. Sbriciolate sul fondo della cassata i rimasugli di pan di spagna avanzato, coprite con della pellicola trasparente e mettete in frigorifero per almeno due-tre ore (meglio se tutta la notte). Quando la cassata sarà ben compatta e i profumi mischiati, capovolgetela su di un piatto e preparate la glassa fondente, mettendo in un pentolino lo zucchero a velo assieme a poca acqua, quanta ne servirà per ottenere un composto cremoso e ancora bianco. Non appena sfiorerà il bollore, il fondente sarà pronto per essere colato al centro della cassata e spalmato con una spatola. Fate la stessa cosa anche sui lati della cassata: come noterete, il fondente si asciugherà quasi istantaneamente non appena spalmato e dovrà avere una consistenza lucida e trasparente. Ora potete passare alla decorazione della cassata: tagliate delle strisce di zuccata (zucca candita) e della frutta candita a pezzetti. Poggiate le fette di zuccata sulla cassata incurvandoli come per formare i petali di un fiore al centro del quale metterete, per esempio, un mandarino candito tagliato a metà. Divertitevi a decorare la cassata con la frutta candita a vostra disposizione alternando vari colori e cromie. Il tocco finale sarà dato dalla decorazione con la ghiaccia reale, che realizzerete sbattendo un albume a neve e aggiungendo poco alla volta lo zucchero a velo fino ad ottenere una consistenza molto densa. Con una tasca da pasticciere munita di bocchetta con foro piuttosto sottile, create delle decorazioni sia sulla frutta che sui bordi della cassata, per renderla ancora più ricca e sontuosa. Ora la vostra magnifica cassata siciliana è pronta per essere gustata. Sicilian cassata Ingredients: For the filling: - 100g dark chocolate chips - 50g candied orange (optional) - 1.2kg sheep ricotta - 280g icing sugar with vanilla For the sponge: - 10 medium eggs - 300g flour - 300g sugar - A pinch of salt - 50g sugar (for the liquid) - 150ml water (for the liquid) - Half a cup of Maraschino or another liquore - Zest of half a lemon (for the liquid) Method: Begin the preparation of the Sicilian cassata the day before you want to serve it. Make the sponge using the ingredients above to your usual recipe. Bake in a rectangular 35 x 25 cm tin and leave to cool (it must be prepared a day before so that the sponge is not too crumbly when it is cut). Drain the sheep ricotta in a colander and then mix in a bowl with the vanilla icing sugar: cover the bowl with cling film and place in the fridge overnight. The next day, pass the ricotta through a sieve twice, until the cream is smooth and soft. At this point, add the chocolate chips to the cream (and, if you like, the diced candied orange) and place in the fridge, again covered with cling film. Prepare the green marzipan by mixing the marzipan with the pistachio dough (if you can’t find this you could also use green food colouring), then sprinkle a clean, dry surface with a little sugar. If you want to prepare homemade marzipan, put 125g sugar and 50ml water into a pan. Bring to the boil and when the sugar begins to spin (112-115 degrees), take the pan off the heat; incorporate 125g almond flour (which you can make by milling the peeled almonds a little at a time so as to not over mix and force the oil out), the pistachio dough and vanilla powder. Mix until the dough is homogenous and then place on a cold marble board. Once the mixture has cooled, work it until it becomes smooth and compact (if needed, use a little icing sugar on the marble instead of flour). Roll out the marzipan until it is 12cm large and 5mm thick, then cut it in half lengthways (so as to obtain to pieces 6cm large) and reshape the marzipan into a trapezium shape. For the cassata you should use a particular round cake tin with flared edges around 5cm high and with the bottom gently raised, typical of Palermo: the tin used in this recipe has a 30cm diameter in its largest part. Cut the sponge into strips at least 6cm tall of which you should create trapeziums (because the edges of the cake tin are flared). Sprinkle well the cake tin with icing sugar and then line the edges alternating the trapeziums of sponge and those of green marzipan, pressing well against the sides and making sure to not leave any space between the one and the other. If the last piece placed has the larger side towards the inside of the tin, the following piece should be opposite. The trapeziums can be place with the darker side either on the outside or the inside. Once the perimeter of the tin has been covered, place the remaining sponge in the base, with the more spongey side touching the bottom of the tin. Press down on the edges to make the sponge stick well to the edges. Now, with a pallet knife, you can trim the edges if necessary. If you want, you can prepare the liquid to moisten the sponge: dissolve 50g sugar in 150ml water, together with the zest of half a lemon (or orange) and half a liquor glass of your choice (maraschino, Cointreau, alchermes, Strega, etc.) and leave to cool. Once cool, pour the liquid over the sponge. Now you can fill the base with the ricotta cream using a spatula. Break over the top of the cassata the remaining sponge, cover with cling film and place in the fridge for at least twothree hours (even better if overnight). When the cassata is well compacted and the flavours are mixed, turn it out onto a plate and prepare the glaze, putting the icing sugar with a little water in a pan on a low heat, just enough water so the mixture is creamy and remains white. Just before it begins to boil, the glaze is ready to be poured over the middle of the cassata and spread with a spatula. Do the same for the side: as you will see, the glaze with dry almost instantly once it has been spread and should be shiny and transparent. Now you can decorate the cassata: cut candied pumpkin into strips and dice the candied fruit. Place the pumpkin on the cassata, curved so as to form petals of a central flower, at the centre of which you could put, for example, half a candied mandarin. Enjoy decorating the cassata with the candied fruit as you wish, perhaps alternating colours. The final touch is given using royal icing, which you can make by whisking one egg white and adding, little by little, icing sugar until you reach a very dense consistency. Using a piping bag with a gentle nozzle, create decorations both on the fruit and around the edges of the cassata, to make it even more rich and sumptuous. La Quarta Isola RAVIOLI CON RICOTTA INGREDIENTI: Per 20 Ravioli: - Farina 500 g - Zucchero 100 g - Burro 100 g - Uova 1 tuorlo - Vaniglia bacca 1 - Sale 1 pizzico - Latte 200 ml Per il ripieno: - Ricotta di pecora 400 gr - Zucchero a velo 100 gr - Scorza di un arancio - Uova tuorlo 1 - Vaniglia i semi di 1 bacca - Cannella mezzo cucchiaino - Cioccolato gocce di cioccolato 100 gr - Limoni scorza di un limone PREPARAZIONE: Mettete la farina in una ciotola grande e disponete al centro lo zucchero, il burro morbido a pezzetti,i semi della bacca di vaniglia e un pizzico di sale. In una caraffa unite il tuorlo nel latte ed emulsionate bene. Iniziate a lavorare la pasta con le mani aggiungendo il liquido a poco a poco e continuando ad impastare fino a che gli ingredienti si saranno amalgamati. Trasferire l’impasto sul piano di lavoro e continuate a lavorare con le mani per circa 10 minuti, fino a quando sarà omogeneo e compatto. Avvolgete l’impasto nella pellicola e lasciatelo riposare per almeno un’ora in un luogo fresco a asciutto (non in frigorifero). Nel frattempo dedicatevi alla preparazione del ripieno: per prima cosa setacciate la ricotta di pecora con un passino d’acciaio per eliminare eventuali grumi. Aggiungete quindi lo zucchero a velo a sua volta setacciato, la scorza del limone e dell’arancio precedentemente grattugiata, il tuorlo, i semini della bacca di vaniglia, la cannella e infine le gocce di cioccolato. Amalgamate bene il tutto. Stendete bene la pasta con un mattarello (o con l’apposita macchinetta) fino ad ottenere una sfoglia sottile (spessa 1 mm) e tagliatela con una rotella dentellata ottenendo rettangoli di 10 X 20 cm circa. Spennellate i bordi dei rettangoli così ottenuti con gli albumi che avrete messo da parte e riponete sul lato di ogni rettangolino un cucchiaio di ripieno alla ricotta. Richiudete i ravioli a metà e premete delicatamente i bordi per farli aderire. Scaldate abbondante olio di semi di arachide in una casseruola (180/200°C), iniziate e friggete i ravioli, tre alla volta, per circa 3 minuti, fino a quando saranno dorati e avranno una consistenza croccante. Scolate i vostri ravioli alla ricotta con cioccolato e metteteli su carta assorbente per asciugare l’olio, prima di servirli spolverizzateli con dello zucchero a velo. Ricotta ravioli Ingredients: For 20 ravioli: - 500g flour - 100g sugar - 100g butter - 1 egg yolk - 1 vanilla pod - A pinch of salt - 200ml milk For the filling: - 400g sheep ricotta - 100g icing sugar - Zest of one orange - 1 egg yolk - 1 vanilla pod - Half a teaspoon of cinnamon - 100g chocolate chips - Zest of one lemon Method: Put the flour in a large bowl and place the sugar, the soften butter in pieces, the vanilla seeds and a pinch of salt in the middle. In a carafe mix well the egg yolk and milk. Being to mix the dough with your hands, adding the liquid little by little and continue until all the ingredients are well amalgamated. Transfer the dough onto a clean, dry surface and continue to knead for around 10 minutes, until the dough is homogenous and compact. Place the dough in cling film and leave to rest for at least one hour in a cold, dry place (not in the fridge). In the meantime, prepare the filling: sieve the ricotta through a metal sieve to remove any lumps. Add the sieved icing sugar, the lemon and orange zest, the egg yolk, the vanilla seeds, the cinnamon and finally the chocolate chips. Mix well. Roll out the dough using a rolling pin (or a machine) until it is very fine (1mm thickness) and cut into rectangles of around 10 x 20cm. Brush the edges with the egg yolks that you have reserved and place one tablespoon of the ricotta filling on one side of each rectangle. Close the ravioli in half and gently press the edges to make them stick. Heat a good amount of peanut oil in a saucepan to around 180-200 degrees, begin to dry the ravioli three at a time for around three minutes, until they are brown and crisp. Drain the ravioli and leave on kitchen towel to dry the excess oil, before serving sprinkle with icing sugar. ZUPPA DI LENTICCHIE Ingredienti: - 300gr lenticchie linosane, - cipolla di Tropea - sedano - carote - patate - pomodorini - olio e sale. Lentil soup Ingredients: - 300g lentils - Tropea onion - Celery - Carrots - Potatoes - Tomatoes - Oil & Salt Preparazione: Method: Portare ad ebollizione 2 litri d’acqua e sale q.b. Montare le verdure e preparare le lenticchie. Mettere tutti gli ingredienti nell’acqua e lasciare cuocere per un’ora e mezzo a fuoco lento. Appena le lenticchie saranno cotte aggiungete un filo d’olio d’oliva e servite il piatto caldo. Bring to the boil 2 litres of water with salt. Chop the vegetables and prepare the lentils. Put all the ingredients into the boiling water and cook for an hour and a half on a low heat. Once the lentils are cooked, add a splash of olive oil and serve the dish hot.
