Le palazzine liberty, circondate da macchia mediterranea, fanno intuire un passato balneare ed elegante. Pegli, più nota come crocevia portuale, nasconde bellezze insospettabili, come Villa Pallavicini ed il suo giardino romantico. Quella che un tempo era una trattoria, oggi è un locale accogliente quanto sorprendente. Al Ristorante Teresa la gestione è quasi tutta al femminile ed il filo conduttore si chiama qualità. La carta non nasconde le origini ed il legame al territorio, ma l’interpretazione è di Tina Cosenza, chef e anima creativa insieme alla cognata Cinzia, con Mariella e Tonino in sala. Le porte battenti della cucina delimitano un gineceo gastronomico, dove prendono vita piatti dalla memoria antica come il Cappon magro, che esprime tutti i profumi ed i sapori della Liguria. La piccola flotta di pescatori locali garantisce un pescato quotidiano, anche se è il mare a decidere pezzature e quantità. Le ombrine o le orate di questa stagione sono appena sufficienti ad una porzione, ma il loro sapore è indimenticabile, come i San Pietro e le Gallinelle della zuppa. Un mix essenziale quanto evocativo di tutto il Mediterraneo che si può immaginare. The Liberty-style villas, surrounded by Mediterranean maquis, hint at a glorious past as a smart seaside resort. Pegli, now better-known as the heart of Genoa’s port, is home to some unexpected treasures, such as Villa Pallavicini and its romantic gardens. Over the years what was once a humble trattoria has grown to become a fully-fledged fine dining destination. This is a restaurant run mainly by women, and the accent is definitely on quality. The menu reflects and respects its origins and emphasises local produce and traditions, DECEMBER-JANUARY 2013/2014 NUMBER 111 but behind the swing doors of the kitchen chef Tina Cosenza weaves her creative magic with her sister-in-law Cinzia, while Mariella and Tonino hold the fort in the dining room. The result is a series of dishes in line with Liguria’s proud culinary heritage, like the famous Cappon magro, redolent with the savoury delights of the sea and succulent local vegetables. The fish is freshly caught by the tiny local fishing fleet and it is the sea which decides the ingredients of the day. The Shi Drum and Sea Bream in this season are barely large enough for a single portion, but their flavour is absolutely unforgettable, as are the John Dory and Tub Gurnards in the fish soup. An essentially evocative mix of all the Mediterranean has to offer. Spazio
