Abbiamo una domenica in eui
Gesu' ehiacchiera con noi; parla in
un modo generale, poi ad un tratto
ci fa la domanda personale. Gesu' ei
fa spesse vo)te qUeS~toschei'Zetto,' ma
non ei lascia mai soli a rispondere.
Vediamo insieme le cose.
La prima domanda ehe
Gesu' fa e questa: "La
gente ehi dice ehe sia?".
Naturalmente la domanda
e' rivolta agli Apostoli, ma
possiamo dire benissimo
ehe e' rivolta anehe a noi,
perehe' siamo
noi che ora

che incontriamo Gesu' nel
Vangelo, Noi sappiamo
benissimo rispondere; sappiamo infatti ehe la gente,
alcuni credono in Gesu',
altri non ci credono. Altri
ei credono' a modo loro e
cosi' via. Poi pero' arriva la
seconda domanda di Gesu':
"E voi chi dite ehe io sia?",
Anche questa frase e'
rivolta agli Apostoli, ma da
loro, passa a noi. Diventa la
domanda personale che ci
fa Gesu', anzi ehe mi fa
Gesu', "E tu che dici che io sia?"
Per sentire questa domanda in
un modo ancora piu', profondo nella
mia vita, sentiamola in questo

Che posto ho nella tua vita?" Noi
vogliamo tanto bene a Gesu', ma
proprio non ci viene una bella'

vedere chiaro dentro di me: vorrei
che tu mi aiutassi a sapere il piu'

Let me take you back to just
over a couple of months ago in the
exciting saga of my life. I had just
finished the dreaded "GCSEs" and
was looking forward to almost three
months of pure unadultered Fun
(with a capital "F')!- little did I
know. Admittedly it started off well
enough with a Karaoke party (the
little Japanese man who invented
this embarrassing form of "entertainment" should be lock in a room
and made to listen to the results of
his invention), a couple of sleepovers, a few more evenings out, a
couple of cinema trips and endless
shopping sprees to London.
After the first couple of jampacked weeks I needed a couple of
days to recover .-. and so did my
purse! I consulted my friends and
found that the majority of them
either had summer jobs or were
going on holiday for most of the
summer break. As my summer holi-,
day amounted to a week in Torquay,
there was nothing else for it 'Franccsca would have to get herself
a job.
I deeided this for two reasons.
Firstly, although my mother promised to keep a roof over my head,
a bit of extra cash always comes in
handy. And secondly, while my best
friend was on holiday I ran the risk
of, dare"Lsay it, becoming a teensy
bit bored.
So after endless weeks of scour-'
ing the job scction in the local
newspaper, and writing dozens of
begging letters to local companies, I
consider myself to be somewhat of
an expert on teenage job-hunting.
Therefore I have compiled a list of
"dos" and "don'ts" for any prospee-,
tive teenager wanting part-time
employment:
1. Don't aim too high. Although
ambition is a good thing, remember
to keep your feet on the ground and
only apply for jobs which you know
you arc capable of: Mind you, I
don't think there's a huge demand
for people who can sing "You's Lost
That Loving Feeling" all on one

2. Do be realistic - no,one is
going to pay you thousands of
pounds for doing a couple of weeks'
work in the local greengrocers" no
maller how well you choose carrots!
,3. Don't be too choosey. I started
off wilh the idea that I would only
work for the best department store
in London - one of last jobs I
applied for was an all dancing, all
singing wailress '. that's the effect
K.3raoke has on you!
4. Do tell the truth on application forms especially regarding age
and experience - there's no point in
saying that you are a 2O,year,old
barmaid when in realily you a a
16.year.old who can just about
manage a bOllle opener - believe me
you will be found out.
.5. Do write relevant informaiton
only on application forms .-; an
achievement or award does not
mean lhe bade you got in Top
Infants for swimming 10ms dog-,
paddle (unless, of course you're
a pplying for a position as life·
guard).
6. Don't phone up any friends
wbo already have a summer job -
they will only gloat and tell you how
wonderful it is to be in employment
a nd how rich they are now, while
you grow greener by the minute and
wish you could wrap the telephone
cable around their neck.
7. Don'l stick cards advertising
your services and 'phone number in
newsagents' windows. The only res·.
ponse you'll receive will be men
ringing up and asking for Cheryl's
Massage Parlour!!
8. Don't take any notice of your
Mum or any other relative who tells
you for the umpteenth time that it is
only because of, the recession and
the current state of the country's
economy that you can't find a job.
It's a pack of lies - the reason you
can't find a job is because you'r a
failure: remind your mother of this
constantly and eventually she will
fell so sorry for you that she'll pay
you £5 for ironing ten socks - they
are the only things that she will trust
you with.
9. Do remember to remind your
mother that it's all her fault that you
can't find a job as she doesn't have
any useful contacts ',' this usually
gains the same response as the
above.
10. Don't give up. Although you
may have your heart set on one
particular application, don't abandon all hope if you don't get the job
.- as the old saying goes: "There are
plenty more jobs in the employment
section".
Finally, if and when you do strike
lucky and seeure a job do remember
to boast like hell to all your friends,
pretend to make £4.50 an hour and
don't let on that it costs you more in
stamps and writing paper for all the
applications you sent off, than you
aClually earn in a day!
Oh, and in case you were wondering which of the many job appli.
cations I actually managed to secure,
well as of yet, (I mean there is still
plenly of time and I do believe that
our 'phone was out of order for a
while), as of yet, I haven't definitely,
not at this moment in lime... got a
job!
Still, any moment now I'm sure
that the telephone will ring regard·
ing a singing waitress!! Meanwhile

Unite, sulla base del loro Statuto,
restano una romponente rosi' centrale. Chiediamo ai Leader di altre
nazioni di unirsi a noi in questo.

Golfo, il Consiglio di
Sicurezza delle Nazioni
Unite, appoggiato dalla
comunita' internazionale, abbia mostrato di essere in grado
di adempiere la sua funzioni: di agire per ripristinare la pace e la

e' motivo di speranza ed
inroraggiamento. ' Lasciatosi ormai alle spalle il ronfronto

ronsolidare I'ordine internazionale.
Ci impegniamo a rendere I'ONU

La nostra scoperta di Dio e', in
un ceno senso, la scoperta di noi
fatta da Dio. Noi non possiamo
andare in Paradiso per trovare Dio
poiche' non sappiamo dove sia ne'
cosa sia il Paradiso. Egli scende dal
Paradiso' per trovarci. Noi con·
osciamo Lui quanto Egli conosce
noi, e la nostra contemplazione per
Lui e' una partecipazione alIa Sua
contemplazione per Se Stesso.
E' vero che Dio si riconosce in
tutte le cose che esistono. Egli le

Raffaelle Russo affectionately
known as "Bubbles". I wish to say,
as my own foreword, the Russo
family, which lived in "i1 quartiere"
for many years was onc· of the
families that helped to bring the
Italian tradition to our "Liule
Italy".
From those who knew the family,
condolences to relatives and friends.
To Ken Kulith (who sent the tri·,
bute) - thanks for your contribution.
In closing I wish also through
BACKHILL to remember the following deceased since our June edition: Joe Piacenti, Antonio Negri,
Joe Faceini and Gloria, young sister
of Nina Mevo.

On 24th June the Russo family
laid to rest Raffaelle, the beloved
head of their family. He is now at
peace having joined his life companion, Felicia Romano, with whom
he spent so many happy years.
Raffaelle Russo, or "Bubbles"
was onc of the few remaining
characters of the old Italian community. At 86 years of age he
remembered "i1 quartiere" well,
many times he kept us enthralled
with the stories he had io tell. Onc
of ten children he lived and worked
all his life in Clcrkenwell, where he
raised his own family of five and

before he was so sadly taken from us
he knew the joy of becoming a
great-great-grandfather twice over.,
Bubbles and his wife will be
remembered by so many because of
the family cafe in Rosebery Avenue,
which they ran with his sisters
Teresa and Violet. One of life's
rough diamonds, Bubbles was a
kindly man and when times were
hard many an elderly person had
him to thank for a warm meal.
Bubbles never asked anything of
life for himself, he worked hard and
was dedicated to his family. Old
fashioned in his outlook, but not
wrongly so, for him the family was
everything. He will never fade from
our memories because he taught us
the value and strength of unity and
love, and this is reflected amongst
even the youngest members of the
family. No man could leave his
loved ones a finer legacy.
So many came to St. Peter's to
show their respect as he started his
last journey. This was a source of
comfort to all of us, his brother
Tony, sisters Gina, Pam and Rosie,
his children and his grandchildren.
We would like to thank everyone
who sent such lovely floral tributes
and cards of condolence and those
who allended the mass.
He will be sadly mis·
sed, but so warmly
remembered.·

When my wife and I look back
over the years, the family reunions
stand out: it gives us the greatest
pleasure to see the whole family

Capannelle Cricket Club of Rome, the
Italian cricket champions, visited England
at the end of July. Their tour, which
coincided with that of the Italian National
Under-25 side, took in games against
English club sides such as Tring, Eton &
Windsor, and Basingstoke.
The Italian' cricketers were well entertained by their hoslS and were also offered
a reception by Ministro Livio Muzi·Falcone of the Italian Embassy.

L'Associazione di Santa Franca si e' celebrata
l'annuale dinner and dance sabato 6 aprile presso il
Marriott Hotel di Grosvenor Square.
Alia manifestazione sono intervenute circa 250
persone, soci e amici della associazione presieduta
dal signor Francesco Repetti. 11 Parroco di Morfasso Don Gianni Quartaroli ha portato dall'Italia il
saluto e la riconoscenza dei morfassini per quanto

e la parrocchia. Parte del ricavato della festa infatti
e' stato destinato alIa casa degli Anziani di Mor·

ceglie presso I'Istituto Italiano di Cultura giovedi' 30
maggio e da S.E. I'Ambasciatore Boris Biancheri nella sede
dell'Ambasciata venerdi' 31 maggio. In ambedue le occasioni I'Ambasciatore Bianchieri ha consegnato le onorificenze che il Presidente della Repubblica Cossiga ha

a lovely white marble statue of our founder, Saint
Vincenzo Pallotti, a Roman. It was he who wanted
this Church, and this Church is the first Italian
Church built anywhere in the world outside of Italy.,
This is a first, therefore, which fills us with great joy.
Saint Vincenzo Pallotti ·also founded the Societa'
dell'Apostolico Cattolico, i.e. we Pallotine Fathers
and Sisters. It is over 150 years since our founda·
tion, and we would like to take this opportuniy of

Meeting my Diva
16th June 1991 was a red letter
day 'for lovers of Italian opera. A
rare chance to meet the last true
prima donna of the lyrical theatre.
They had been there since 6 a.m.
From Virginia Waters to weSt Vir':
ginia USA Renata T~baldi was back
in London for the first time in 15
years making a personal appearance
at the Musie Discount Centre in the
Strand, for at last Decca had launched' their Tebaldi edition which
included previously unavailable
recordings on CD.
Some of you Ir.<lY be fortunate
enough to comprehend my trepidation, my excitement, my anticipation
• what the hell, my life time ambition at the prospect of meeting th~
great Diva: How do I put into words
what this voice means to me? How
to use mere mortal words to
describe something divine? And now
I was to meet in person, my goddess.
As my friend said "It's like the
Angel Gabriel coming down and
blowing his trumpet in your ear".
Something one dreams about but
never believes possible.
"Are all these people here for
me?" she she gasped in amazement
as the crowd surged forwards to
meet her stepping from the limo.
Cries of "Brava Diva" ,and spontaneous applause greeted her as she
stepped in the store .(0 be met by
Alee Gouland, owner of MDC.
She was due to stay only an hour,
but four hours later she was still
signing everything placed before her
and her smile had not wavered. She
belied her 70 years both in her face
and her stamina. Always a polite
word for those who wished to hear.
To the singer looking for advice
"You're still very young. You have
time to mature. But don't sing
everything". About the Traviata
recording "It's like somone else
singing - not me. Whenever I hear it
I cry". To those who expressed their
pleasure that her absence from Lon-'
don had come to a'n end "I like the
contact with the people and I don't

have performances - so this is
lovely".
Terri Robson from Decca admitted the recordings had been "long'
overdue" for Tebaldi's recordings
have always been '''the mainstay of
the Decca'opera'catalogue".
And then it was my turn. After
being introduced' to her as 'her
number one fan and 'hearing her
respons'e of i'ah, that't wonderful, to
hear", all I could think of as she
held my' trembling hand was "It's
Tebaldi. I'm shaking hands with
Tebaldi. Any second now someone's
going to wake me from my dream".
.
Thank God! No·one did.
• Though she has now returned
home I have her still in my front
room. Her picure looks down at me
and her voice envelops me, courtesy
of the Decca reCordings.
The first thing to be said about
these recordings is the overall excellence of the sound. Even the very
earliest stereo recording of La Traviata, from 1954 has little to apolog·ise for., The stereo sound is very,

very good.
This Traviata has Tebaldi in
ravishing voice. She gives an excel-,
lent account of the role. The full
glorious tone is at its richest. Her
heartfelt "dite alia giovine" tells
much about this poor tormented
Renata Tebaldl today...
woman that many a lesser soprano
leaves uncovered. And teH me has
one very surig "Alfredo, Alfredo" di
questo core" with such beauty of
tone and meaning? The same
applies to her supporting "Addio del
passato". I wish the same could be
said of her supporting men. Protti as
Giorgio Germont is a conventional
if dull performance of the role. But
what really spoils the apple cart is
Alfredo of Gianni Poggi. God, what
a wooden singer he was! At times it
can turn in a phrase which is so pure
and golden it makes you wonder
where it came from for the rest he is
so graceless. Still this is a must for
Tebaldi in one of her greatest roles.
The Manon Lescaut also dates

from '54 and again it is excellent
sound. Here her support is as good
as Traviata is bad. As Des Grieux
we have Mario del Monaco. At
times he does tend to over do things
a bit. He misses the humour of his
act one aria "Tra voi, belle", but
who cannot thrill to the full golden
tone? And in the last act he an"d
Tebaldi give a pasionate account of
the final duet the like of which we'll
never be lucky enough to hear in an
opera house. Tebaldi too may miss
some of the girlish charm of act one,
but for the rest she turns in a most
moving performance of Manon. Her
"Sola, perduta, abbandonata" has to
be one of the best on reco'rd. With
excellent support from Olrena,
Boriello and De Palma this is the
Manon to have on one's shelf.
Del Monaco is her partner for
the recording of Tosca. Here his full
tone is at once thrilling and moving.
And never let it be said he could not
turn in a pianissimo phrase. Listen
to the way he sings "0 dolce mani"
in the final act. And his cry of
"Vittoria" leave you in no doubt as
to what this man is
going through in this
act. George London's
Scarpia too is an all ", "',
round characterisation.
Of course he does not
have the insight that
made Gobbi so unique
in this role. But he has
an oaken tone that
carries much authority
to it. He knows what
the role is about. His
sneer at the line
"Quanto" warnes you
what this villan has in
mind. As to Tebaldi's
Tosca this has to be
the best italianate
sung performance of
the role. Olmparisons with Callas's
Tosca do not dimminish Tebaldi's
account of the role. Where Callas's
can thrill for the dramatic insight
and danger she brought to her
singing Tebaldi does the same but
for different reasons. You thrill at
the wondcrful full golden tone, her
way with words without distorting

much darker instrument. The chest
tones more fuller, like burnt copper.
Her dramatic insight into the role is
a thing of wonder. Time and time
again she illuminates a phrase as
only she can. Her supporting cast is
excellent. As Enw Grimaldo, Carlo
Bergonzi turns in, even by his high
~taitdard; a performance of such
golden beauty of tone and dmnatic
insight that I think will never be
bettered ever again. Strong words I
k"iiilw, but you just listen to his
singing of the great aria "Cielo e
mar" and tell me if you have every
heard it sung so well. As Gioconda's
rival in love we have Marilyn Home
as Laura. For her also the above
applies. One of the best things she
has ever done of record. The glori.,
ous full tone of hers. And when she
joins Tebaldi for their great act two
duet, it will leave you breatheless.
One of the most thrilling duets ever
put onto record. Again with Robert
Merrill one is left with the feeling
here is one of the greatest baritone
voices ever, captured at his peak of
voice and dramatic insight. His duet
with Bergonzi another highlight of
the set. With excellent support from
their conductor Gardelli and stun·,
ning sound, this set is a must. It will

the vocal line. And in terms of pure
singing her "Vissi d'arte" is the best
ever on record.
Adriana Lecouvrcur was
Tebaldi's favourite role and when
you hear her recording of the role
you'll know why. Based on the true
life story of the 18th Century, eelad·
ing actress, it offers many challanges
to a singer. 1\\'0 glorious arias,
declamatory passages, a duet with
her rival love; mini Amneris·Aida
scene here. Tebaldi rises to the
challange and Wins hands down. Her
insight into the role are one of the
best things she has ever done. The
feeling she puts into the work leave
you with no doubt of her love of the
opera. Her singing of her two big
arias "10 son I'umile ancella" and
"Poved fiori" show you just what
was missing in the Joan Sutherland
recording last year. Simionato as
Adriana's rival, the Principessa di
Bouillon, is one of the set's great
strengths. Her confrontation .duet
with Tebaldi is what great singing is
all about. 1\\'0 great artists joining
together, supporting and challenging

My very dear friends in MusiC,
In BACKHILL, February 1990, I
introduced to you my exciting
"find". A treasure indeed!! • a little
soprano with an Italian name, .whom
I had seen several years previously
in a special televised "callas Award"
competition. I said then, I repeat
again now - here is a soprano with a
voice of such delicate beauty, of
pure bel canto, of exquisite quality,
that fair takes the breath away. I
prediCted then that we now had·tne
Aida who could perhaps in time don
the wig and drapes left sadly empty
by the irreplaceable Tebaldi. No
person can ever replace another, but
a place once vacated can and must
be filled. The Christmas before .last
my prediction was realised, for 10

and behold from the Met. New
York, we were sumptously treated
to a lavish Aida with - yes- Aprile
Millo - my little find described
above, in the title role. I effused
long and loud about this promising,
greatly gifted, artist and wondered
when she might grace some London
venue. Well, we did not have to wait
too long, for she did, on 2nd July at

the Festival Hall, in the latest production of Verdi's Requiem. Every
time I hear it, every time I play it, I
am convinced that it really must be
my favourite among favourites.
We all have our personal' taste,
feelings; reactions and opinions
about all things in life. Musie is nei
exception. I haven't much time for
pontificating critics who, for quite a
great part, dole out' fastidious words
so- blase', so long-winded, as if we
were all idiots, without any ears,
brains or musical knowledge of our
own. Remarkable. How very wrong
they can so often be. Of the critics
who wrote about this performance
the only one with whom I can agree,
at least to a limited extent, is
Richard Fairman of the Observer.
The offering was by no means
the best, overall, performance of
this colossal, inspiring prayer that I
have heard. The conducting of Giu-.
seppe Sinopoli, though no doubt
well.meaning was, for me, too bold,
too energetic, in fact quite frenetic
1\t times and sadly not the slightest
bit prayerfuI. For this whole work,
from first pulsating chords to the
last peaceful, trimphant "et lux perpetua luceat eis", is an immensely
dediCllted homage to the Glory of
our God; It is a work which bespeaks a steadfast, unshakeable Faith
against all odds, incorporating in its
varioUs stages penitence, of entreaty
for forgiveness and surety of this
forgiveness. It also speaks of hope
and of love, interlaced with momentary sadness at earthly death, but
full of expectancy for Judgement
Day to come and then ultimately,
Divine Triumph, with the certainty
of salvation and eternal happiness.
Aprile Millo never, for one instant, forgot this. Every note, every
syllable was devout, full of pOignancy and restraint - void of any
histrionics. She was not performing,
she was simply praying. Yes, there
was a slight hiccup or two perhaps,
due I am sure to nerves, always a
good sign of that most important
prequisite, imperative for all men in
all ihings - humility. However, these
certainly didn't worry me, or my
companions, or the opera buffs
around me. No way could anyone
deny the natural talent.and potential
of this lovely creature singing as she
did against all the odds. I hope to
the Good God that she will not be
iII·advised by the many charlatans
who pervade the music scene.
The contralto Waltrand Meier,
was most pleasing to the ear,
extremely polished, 'with a lovely,
clear, expressive voice, but she
would perhaps be more at home
with Wagner than this Verdi prayer.
Dear, lovable Denis O'Neill was a
little out of his depth,' but he
certainly gave his all and some
passages were rendered with fervour
and sounded quite lovely.
Feruccio Furlanetto was a very
exciting surprise for me. I had never
heard of him before and his really
moving; lovely sounding bass, so
easy, so sonorous fell as balm upon
mine ears. I do hope to hear much
more of this first class voice.
As usual and where the English
invariably excel, with their strict
discipline and complete and utter
togetherness, the Philharmocia
chorus Was excellent. The members
of -the orchestra suffered a little
from the brutal baton but for this I
am certain they would have been
their usual competent selves. The
visual, overall elegance of complete
black with just a hint of white with
the men's dress Shirts pleased my
strict fashion sense. Perhaps the
green taffetta of Ms Meier's gown
jarred a little, but perhaps I am just
a little obsessed with my passion for
uniformity and symmetry, espeeially
when it comes to team work.

early Christmas present of the tickets • my gratitude. To you, my dear

when I will hopefully have more
gems to share.

della politica agricola europca: i
contribuenti della Comunita' pagano
per assicurare agli agricoltori un
rcddito decente, anche quando i
prezzi del mercato diminuiscono; in
effetti, gli agricoltori producono
nuovamente quantita' di prodotti
difficili da vendere; i rcdditi di molti
di loro si degradano, come anche la
qualita' "ecologica" delle nostre
campangne. Data la situazione, iI 9
luglio scorso, la Commissione ha
proposto ai Dodici una riforma che,
se verra' adottata, sara' la piu'
radicale dalla crcazione della pOIi.

and it is imponant they build on the
base they have laid. Indeed they do
so. On the following day Robin
Smith scores lOO, Lewis has another
very' creditable knock and .Botham
reaches 31 before hitting his own
wicket.
West Indies go into bat and
overnight there is no real reason to
believe that they will not save the
follow on. saturday belongs to Phil
Tufnell, however, and six wickets
wreek West Indies who fail to reach
180. It must be a marvellous
moment for Graham Gooch when
he invites Viv Richards to bat again.
As you might expect, the West
Indies show'considerab~ more resilience in their second innings and
Viv Richards is determined that his
last Test Match at the Oval will not
be an anticlimax for him. He grafts
his. way to a 50 but then lashes out
and is caught at mid on. His distress
is obvious for all to see. Richie
Richardson confirms himself as one
of the great batsmen of the .present
day having now overcome his fallibility in English conditions as demon-"
strated on previous tours. He

morning, two wickets by Philip
DeFreitas break the back of the
resistance. England are left chasing

At lunchtime, I am at the Golf
Club underneath Cannon ,Street
station watching the game on television and . England are 40 for 2.

Crespelle di Gamberetti e Salmone

Shrimp, Prawn or Salmon Pancakes
Pancakes:
100 gr farina
1 uovo
300 mllatte

40z flour

1/2 pint of milk

Amalgamate insieme la farina, il sale, l'uovo e meta' Mix together flour, salt, egg and half the milk.. Bcat
del latte. Sbattete energicamente. Aggiungete iI resto thoroughly. Stir in remaining milk. Heat 2 teaspoons of

Cucinate insieme iI salmone, la cipolla, iI sedano, iI
sale,n pepe e l'alloro in 600 ml d'acqua per,15 minuti.
Lcvate iI salmone e privatelo dalla pelle. e ossa.
Rompetelo in pezzi piecoli. Mescolate insieme iI
salmon~, i gamberetti, la ricotta, il patmigiano I'erbe,
I'uova, iI sale, la noee moscata e 3 cucchiai di brodo di
pesee. Riempite ogni crespelle con iI composto.
Disponeteli in una priofila imburrata.

1 egg
1 teaspoon mixed dried herbs
salt/nutmeg
Cook salmon, onion, celery, salt, pepper and bayleaves
in 1 pint of water for 15 minutes. Take out salmon and
remove skin and bones and break into. small pieces.
Drain the liquid and reserve it. Mix together the
salmon, shrimps, ricotta and parmesan cheese, herbs,
egg, salt, nutmeg and 3 tablespoons of fish liquid. Stuff
each pancake with the mixture. Place side by side in
greased ovcn·to·table dish.
Sauee:
Salsa :
50 gr burro
10z butter
50 gr farina
300 ml brodo di pesce
300 mllatte
sale/noce moscata
1&1/2 cucchiai coneentrato di pomodoro
2 cucchiai panna
1 cucchiaio parmigiano
Sciogliete il burro mescolate insieme con la farina e
togliete dal fuoco. Aggiungete il latte e liquido di
pesce, mescolando che non si formano dei grumi. Unite
iI sale, la noce moscata e concentrato di pomodoro.
Cuciilate' sempre mescolando finche' avete ottenuto
una crema non lrOppO densa. Togliete dal fuoco e
aggiungete la panna ed il parmigiano. Versate sopra le
crespelle e passatele in forno pre·scaldato 190Clno. 5
per 25 minuti.

1/2 pint milk
salt/nutmeg
1&1/2 tablespoons tomato puree
2 tablespoons double cream
1 tablespoon parmesan cheese
Melt the butter in a saucepan. Stir in the flour. Remove
from heat and add the milk and fish liquid. Stir until
there are no lumps left. Add the salt, nutmeg and
tomato puree. Return to heat and continue cooking
until mixture has thickened a little. Remove from heat.
Stir in double cream and parmesan cheese. Pour sauce
over pancakes.
Place in prc-heated oven 190Clno.5 for 25 minutes.
