PRODUCTION TECHNOLOGY :
After pressing, maceration for 12 days with daily pumping.
Fermentation with selected yeasts at a controlled temperature.
In barrique of 1 and 2 level.
ORGANOLEPTIC CHARACTERISTICS :
Intense ruby red colour, consistent flavour and rich in fruits, the
alcoholic strength blends into an aftertaste of wood and liquorice
with a fresh and ripe bouquet and at the same time with a fruity
and leathery blend.
RECOMMENDED CUISINE :
Savoury soups, red meats and medium term aged cheeses.
SERVING TEMPERATURE : 16 - 18°C
