After 2 days of skin contact follows 6 months of ageing on lees - the dead yeast cells leftover from the fermentation process and is bottled without filtering. This is a wine with texture and complexity balanced by acidity to complement risotto and fish stews. 2012 Greco Cantina Giardino Campania 65 eyards in Campania, at 650 metres above sea level. Some time on skins lends grip, while a few months on the lees offers flesh.
