It consists in cutting the fruiting cane about two weeks before the harvest itself. It is called double maturation because besides the maturation due to the increase of the concentration of sugars, a breathing of the grape’s organic acids occurs and it gives the fruit a very intense flavour, sweet and savoury. These grapes are rarely used in purity, because they are imbalanced by a chemical and organoleptic point of view. For this reason the system is not applied on the entire vineyard, but only on a portion. The collection is done once the technological maturity of the grapes is reached.
