81 Formazione Training di Massimo Bomprezzi Conoscerli e utilizzarli come frutti stagionali Seasonal berry fruits: how to recognise and use them frutti di bosco sono tanto belli e accattivanti all’occhio, ma sono anche estremamente delicati. In cucina vengono utilizzati freschi nel loro periodo di maturazione soprattutto per guarnire i dessert, ma spesso mi è capitato di vederli anche su antipasti, formaggi e secondi piatti di carne o selvaggina vista la loro versatilità nei possibili abbinamenti e la loro eleganza visiva. Il loro sapore dolce, acido e aspro nello stesso tempo, è ottimo anche nella didattica per far conoscere sensazioni che fanno riflettere e conoscere sapori nuovi e stimolanti agli allievi. E’ perciò importante insegnare agli alunni a conoscerli e a consumarli utilizzandoli come frutti stagionali, nel pieno della loro freschezza; infatti se congelati, pur essendo validi per diversi utilizzi, perdono la loro fragranza. Credo che bisogna battersi sempre più per far crescere la conoscenza della differenza tra prodotti naturali, utilizzati nel rispetto della stagionalità, e prodotti di serra o di importazione che falsano un po’ il mercato, i gusti e le tendenze, creando grande confusione nei clienti consumatori. Tornando ai piccoli frutti, non dimentichiamo la loro importanza nutrizionale come apporto vitaminico, zuccheri naturali, sodio, antiossidanti, etc. Ben vengano nelle nostre scuole le visite d’istruzione per aumentare le conoscenze gastronomiche con escursioni guidate volte alla raccolta di questi frutti nei campi o nei boschi. Spesso al momento dell’acquisto è difficile perfino ricordarsi i nomi ed è molto facile fare confusione al momento dell’ordinazione per il lavoro di ristorante. La prima indicazione è comunque la classificazione: morbidi, come fragole, lamponi ect. e duri, come uva spina, mirtilli, ribes, ect. I frutti di bosco appena acquistati vanno controllati, eliminando quelli danneggiati o mollicci, lavati rapidamente e ricomposti in frigorifero in un contenitore forato, appoggiati senza schiacciarli su della carta per alimenti che ne assorbe l’acqua e l’umidità che ci garantisce una più lunga conservazione. Importante quindi prenderli dal frigorifero solo al momento di servirli. La tecnologia in cucina ci permette di passarli nell’albume pastorizzato con miele, sciroppo di zucchero o succo di limone e poi nello zucchero semolato, successivamente nell’abbattitore, ottenendo un effetto brinato che a me piace molto. Ottimi anche passati al cutter per ottenere una base per mousse, bavarese, semifreddo, o per una salsa. Fantastica la fragola glassata con il cioccolato sciolto al microonde e poi abbattuta e servita con un ciuffo di panna montata neutra e delle mandorle filettate e tostate in forno. La notevole varietà dei frutti di bosco coltivabili per l’alimentazione umana consente di accostarsi a sapori, colori e aromi sempre diversi e che cambiano con le stagioni: tutti elementi importanti per il mantenimento della salute fisica e mentale. I 82 Berry fruits are incredibly attractive but they are also extremely delicate. In the kitchen they are used fresh in season, especially as a garnish for desserts, but I also frequently see them used with hors d’oeuvre, cheese and meat or game dishes because they are so versatile and appealing to the eye. They are at once sweet, bitter and tart, making them ideal in a teaching situation as they provide thought-provoking sensations for the students, and stimulating new flavours. It is therefore important that students be taught to recognise and use berry fruit in season, when it is freshest. Although frozen berry fruits are suitable for a range of applications, they really are much less fragrant. We need to make a growing effort to increase people’s awareness of the difference between natural produce grown in season and hot-house or imported produce that distorts the market, tastes and fashions, causing confusion amongst consumers. But I diverge. On the subject of berry fruit, I should point out that berry fruits also high in nutritional value, providing vitamins, natural sugars, sodium, and antioxidants, etc. It is really good that schools hold lessons to improve culinary knowledge with guided visits to pick berries in the wild or on berry farms. When people buy berry fruit they often have trouble remembering the name of a given variety and berry fruits are often confused in orders for restaurants. Berry fruits are first distinguished by whether they are soft (strawberries, raspberries, etc.) or firm (gooseberries, blueberries, blackcurrants, etc). Berry fruit should be checked over when it is first purchased to remove any damaged or soggy berries. The berries should then be rinsed briefly and stored in a breathable container in the fridge on food-grade paper to absorb any excess water and humidity in order to improve their storage results. It is important that they be removed from the fridge just prior to serving. Modern technology offers a range of serving possibilities. I particularly like frosted berries, which are achieved by dipping the individual berries in pasturized egg white with honey and sugar syrup or lemon. They are subsequently dipped in granulated sugar and blast chilled to achieve the frosted effect. Berry fruit is also very good when chopped in the mixer to use in mousses, bavarois, frozen desserts and sauces. Chocolate-dipped strawberries are fantastic: dip stawberries in chocolate melted in the microwave and blast chill. Serve with a spoonful of plain whipped cream and toasted slivered almonds. An enormous variety of berry fruit can be cultivated for human consumption, offering a wonderful bouquet of flavours, colours and aromas that evolve with the seasons. Berry fruits are great food for the body and the soul! Antonio Zamprota, di Agordo, schiacciò il suo corpo contro la china di terra che lo proteggeva dal tiratore scelto dell’imperiale esercito degli Asburgo. - Aspetto che spari ancora e poi faccio un salto. Preparatemi il reticolato aperto. - Antonio, per l’amor di Dio, non fare lo stupido. Il tenente di fanteria Artemio Sinifredi gridava i suoi ordini al giovane fante tra di due dossi: in mezzo una valletta di pochi metri dove passavano sibilando gli spari dei cecchini. - Zamprota, se ti muovi prima di notte, ti spacco le gambe! Se non ti centra il cecchino, ci penso io a sistemarti appena arrivi in trincea. Sta là, è un ordine! - Ma, signor tenente, sono solo pochi metri, ce la faccio! - Zamprota, scemo! Non è Franz quello che spara: c’è Triduo. Lo sai che quello ha sempre tre fucili carichi... e non perdona. Aspetta lì: al massimo mancano un paio d’ore al buio. Antonio tacque e si rassegnò. Si stese meglio nel terreno e si mise a guardare il cielo. Le nuvole correvano bianche, a gruppetti. - Signor tenente! - Che c’è? - C’è una nuvola in cielo che le somiglia. Stette immobile per cinque minuti poi, si girò di fianco e si rese conto che gli stava venendo sonno. “Se dormo un po’, forse è meglio. Così dimentico la fame” Antonio era stato svegliato nel cuore della notte per portare urgentemente un messaggio al comandante della sezione dell’Ortigara, che stava giù, vicino alla malga di Marcesina. Ci aveva impiegato più di due ore per arrivare a destinazione. Lo avevano rispedito di corsa in prima linea con la risposta: era urgente. Aveva fatto a tempo a bere una tazza di brodaglia nera che avrebbe dovuto essere caffé, con una galletta dura come il marmo. Nella strada di ritorno s’era dovuto riparare sotto una sporgenza di roccia perché l’artiglieria austriaca aveva iniziato un bombardamento che era durato per almeno tre ore. Quando era arrivato vicino alla trincea, aveva avuto la sgradita sorpresa di trovare al posto di tiro Triduo. Un po’ aveva pazientato, poi la fame aveva cominciato a farsi sentire: a diciannove anni, non si sta in piedi con una parvenza di caffé ed un pezzo di pane raffermo per quasi una giornata. Aveva deciso di tentare il tutto per tutto ma il tenente lo aveva bloccato. - Porca vacca, che fame! Chiuse gli occhi per dormire ma qualcosa gli prudeva il naso. La cacciò con la mano ma tornò, insistente. Ricacciò il fastidio ma niente: il prurito tornava, insolente. Aprì gli occhi: un rametto di una pianta di mirtilli gli sfiorava la punta del naso. Lo prese per spezzarlo ma si accorse che sotto c’era un mirtillo blu e viola, tondo, grasso e turgido. Lo staccò delicatamente e se lo mise in bocca. Fu un attimo sublime: quel frutto del bosco aveva tutti i sapori della terra! Si fece più accorto, ne pescò un altro e se lo mangiò. Si scostò leggermente e ne vide altri. Affannosamente li prese e li divorò. Tah – pum, tah – pum: Triduo aveva sentito muovere e faceva capire che era all’erta. Antonio Zamprota, fattosi acuto, si rese conto di essere in mezzo ad un mare di mirtilli. Ne prese finché la fame lo lasciò in pace; poi prese sonno. Verso le nove, con pochi balzi, rientrò nei ranghi. Come lo videro, al comando di trincea dove era andato per portare l’ordine, scoppiarono a ridere: aveva la faccia e le mani colorate di viola. Rise anche lui per lo scampato pericolo. Poi dal tascapane tolse un fazzoletto e offrì a tutti un trionfo di mirtilli. Il tenente Sinifredi ne mangiò più di tutti. 84 The Sniper Bang!: a sharp shot. An instant later came another: bang! - Antonio! - Eh? - Antonio, stay there! Don’t move. Antonio Zamprota from Agordo pressed his body against the sloping ground that was protecting him from the marksman of the Imperial forces of the Hapsburgs. - I’ll wait for him to shoot again and then I’ll run for it. Get ready to open the barbed wire. - Jesus Christ Antonio, don’t be stupid. The lieutenant of the infantry, Artemio Sinifredi, barked his orders to the young infantryman lying between two knolls in the middle of a small valley just a few metres wide while the bullets of the snipers whistled passed one after another. - Zamprota, if you move before nightfall, I’ll break your legs! If the sniper doesn’t get you in his sights, I’ll sort you out as soon as you get in the trench. Stay where you are. That’s an order! - But, Lieutenant, it’s just a few metres, I can make it! - You idiot, Zamprota! It’s not Franz shooting you know: it’s Triple-shot. And you know that he always has three loaded rifles… and he doesn’t take mercy. Wait there: it’ll be dark in a couple of hours. Antonio stopped complaining and decided to wait. He got into a more comfortable position and began to gaze at the sky. The white clouds drifted by in little clusters. - Lieutenant! - What is it? - There’s a cloud in the sky that looks like you. He stayed still for five minutes, and then turned onto his side. He started to feel tired. “Maybe it’ll be better if I go to sleep for a little while. A least I’ll forget how hungry I am” Antonio had been awakened in the middle of the night to take an urgent message to the commanding officer of the Ortigara section, that was downhill, close to the Alpine hut of Marcesina. It had taken him more that two hours to get there. They had immediately sent him back to the front line: it was urgent. He only had just enough time to drink some disgusting black liquid that was supposed to be coffee, and eaten a cracker that was as hard as marble. On his way back, the Austrian artillery had started a bombardment that lasted for at least three hours and so he had had to protect himself by hiding underneath a rocky overhang. As he approached the trench, he had received the unpleasant surprise of finding Triple-shot in firing position. He had waited for a little while, but then his hunger started to get the better of him: a semblance of coffee and a piece of stale bread is simply not enough to keep a nineteen year old going for a whole day. He had decided to try everything to get back to the trench, but the lieutenant had stopped him. - Jesus Christ, I’m so hungry! He closed his eyes and tried to sleep but something was tickling his nose. He kept sweeping it away with his hand but it kept coming back. He opened his eyes to find out what it was. It was a branch of a bilberry tree that was touching the end of his nose. He grabbed hold of it in order to snap it, but in that moment he noticed that there was a blue and violet bilberry lying underneath that was round and juicy. He picked the fruit carefully and placed it in his mouth. It was a sublime experience: the fruit seemed to contain all the flavours of the earth! As he started to look around, he began to see more and more, he picked another and ate it. He then began to pick more and more devouring them hungrily. Bang – bang, bang – bang: Triple-shot had heard him moving and wanted to let them know he was on the look-out. Antonio Zamprota realised that he was in the middle of a sea of bilberries. He ate and ate until his hunger pangs faded away, and then he fell asleep. At around nine o’clock, he made it to the trench in just a few steps. When the others saw him at the command station where he had gone to deliver his order, they burst into laughter: his face and hands were bright purple. He laughed along with them, happy to have survived. He then pulled a handkerchief out of his haversack and offered everyone a feast of bilberries.
