Con l’evoluzione e il progresso della tecnologia si sono perse le loro tracce. Il bue di razza Chianina era nel nostro appennino quello più pregiato e in ogni stalla che si rispettasse, non doveva mai mancare! Il nonno Santoin e lo zio Dauro erano due esperti e già da piccoli riuscivano a capire se con il crescere, quel vitello poteva diventare toro, oppure era da lavoro e castrarlo per usare i suoi muscoli. Oggi, grazie a chi ancora crede nella qualità della carne, per due volte all’anno riusciamo a far assaggiare le carni di questo animale. I periodi sono Pasqua e Natale riuscendo sempre a lasciare i nostri clienti senza parole! For over 100 years, oxen (castrated male cattle) were used as draught animals rather than reproduction. But over time, as technology evolved, the tradition was lost. A Chianina breed ox used to be the most prized in our region, and every self-respecting cattleshed had to have one! Grandpa Santoin and uncle Dauro were both experts, and even from a young age they could tell if a male calf was going to grow up to be a bull, or whether it was a working animal and would be castrated and its muscles put to use. Today, thanks to those who still believe in quality meat, we can still offer beef from these animals twice a year, at Christmas and Easter. Diners are always left speechless! La no$tra $toria “Santoin, basta tota sta zinta at chèsa, quest un è mega un risturènt!” La nostra storia inizia proprio così, la nonna Margherita, presa dalla disperazione per la gente che ogni giorno arrivava a casa per mangiare “qualcosa”, si rivolgeva così al marito Sante, detto Santoin, e lui, che non mancava di iniziativa e forse non aspettava altro, pensò di intraprendere una nuova avventura. Con la sua prima affettatrice rossa “Bizerba” sul piccolo piazzale adiacente la casa, il nonno iniziò a servire piada con prosciutto e qualche formaggio, insalata e contorni. Il nonno era commerciante di bestiame e acquistava i formaggi da quei bravi contadini sparsi nelle campagne, li portava a casa e li distribuiva, con molta parsimonia. A questo ben presto si aggiunse l’eccezionale salsiccia dello zio Dauro, il macellaio del paese, e... i clienti aumentavano, così come aumentavano le loro richieste. “Al dmandèm ma Dauro se us dà enca è castred da cos sla gradèla?” La nonna Margherita, da vera “azdora romagnola” iniziò le sue grigliate, ma si mise a fare anche tagliatelle, cappelletti, arrosti e sughi che dovevano sobbollire per ore... Intanto il figlio Vittorio cresceva e con lui anche il ristorante; fu proprio in quel periodo che si presentò a chiedere di lavorare una ragazzina di nome Luciana, alla quale servivano i soldi per studiare e diventare maestra. Fra Vittorio e Luciana nacque l’amore ed iniziarono la loro avventura insieme nella vita e nel lavoro, ma chi comandava era la nonna Margherita che dalla cucina non mancava di dispensare consigli difficilmente discutibili, uniti a pillole di saggezza. Con il tempo i ruoli sono cambiati e Vittorio dotato di grande intuito, non sbagliava mai una mossa, Luciana (per tutti la Margherita) dal canto suo sapeva sapientemente completare la sua opera. Insieme erano una forza, hanno raggiunto traguardi difficili da migliorare e ancor di più da mantenere; è proprio vero il detto: accanto ad un grande uomo c’è sempre una grande donna! Da questa unione sono nati due figli: Michele e Marta, la loro strada è certamente in discesa, dovranno però avere la stessa abilità dei loro genitori cercando di non sbagliare le loro scelte, forti delle loro radici che affondano nelle tradizioni, le stesse che da 50 anni portano il nome del RISTORANTE LA ROCCA in tutto il mondo! Our hi$tory “Santoin, enough of all these people at the house, it’s not like this is a restaurant!” That’s how our story begins, with grandma Margherita, despairing at all the people who came to the house every day to eat “something”, complaining to her husband Sante, known as Santoin. Not lacking initiative, and perhaps waiting for nothing more, he decided to set out on a new adventure. With his first red “Bizerba” meat slicer set up in the small square next to the house, grandfather began serving piada flatbreads with prosciutto and some cheeses, salad and vegetables. Grandfather was a livestock trader and bought cheese from hard-working farmers dotted around the countryside, brought it home and distributed it, with great thrift. This was soon joined by the excellent sausages made by uncle Dauro, the village butcher, and as the number of customers grew, so did their demands. “Can’t we ask Dauro if he’ll give you some mutton to cook on the grill?” Grandma Margherita, a true romagnola “azdora” (housewife), began preparing her grilled meats, but she also started making tagliatelle, cappelletti, roasts and sauces that would simmer for hours… Meanwhile their son Vittorio grew and with him so did the restaurant. One day a girl called Luciana came asking for a job, as she needed to pay for her studies to become a teacher. Vittorio and Luciana fell in love, and their adventures together in life and work began, though there was no doubt that grandma Margherita was still the one in charge. From the kitchen she would dispense advice that was hard to dispute, along with pearls of wisdom. Over time, however, the roles changed, and Vittorio, with great intuition, did not put a foot wrong. For her part, Luciana (the new Margherita) was skilfully able to complement his work. Together they were a force of nature, achieving incredible milestones that would be hard to match. The saying that next to every great man is always a great woman is really true! Two children were born out of the union, Michele and Marta, and while their path was certainly easier, they still had to have the same skill as their parents, seeking always to make the right decisions. Along the way, though, they were always able to rely on their roots and the traditions that for 50 years have taken the name of RISTORANTE LA ROCCA around the world.
