“Pepparkakor” Ricetta ORIGINALE dei biscotti allo zenzero svedesi Con queste dosi potrete preparare circa 300 biscotti. Sono tanti perché è tradizione regalarne ad amici e parenti! Se è la prima volta che li fate, il consiglio è dimezzarne le dosi. – 300 g di burro (consigliato quello danese non salato) – 400 gr circa di zucchero semolato – 1 dl di melassa chiara (se non la trovate potete usare sciroppo d’acero) – 1 cucchiaio di zenzero macinato – 2 cucchiai di cannella in polvere – 1 cucchiaio di chiodi di garofano pestati nel mortaio – 2 cucchiaini di cardamomo macinato – 1 cucchiaio di bicarbonato di sodio – 2 dl di acqua – 1 kg di farina 1. Portate il burro a temperatura ambiente, tagliatelo a cubetti. Usando una forchetta mescolatelo allo zucchero e allo sciroppo fino ad ottenere una consistenza liscia. Si può eventualmente usare un miscelatore elettrico. 2. Unite lo zenzero, la cannella, i chiodi di garofano, il cardamomo e infine il bicarbonato. Aggiungete quindi l’acqua e la farina. Impastate in una ciotola fino a che la consistenza non vi permetterà di trasferire tutto sul piano. All’inizio il tutto sarò molto appiccicoso ma mano a mano che aggiungerete la farina lo sarà sempre meno. Alla fine dovrà risultare una pasta liscia che non si attacca né alle dita né al piano. 3. A questo punto fate un panetto dell’impasto ed avvolgetelo nella pellicola trasparente. Tenetelo in frigorifero per 24 ore. 4. Il giorno dopo prendete l’impasto e tagliatene una fetta (sì, esatto, come se tagliaste il pane). Stendetela con un matterello molto sottile direttamente sulla carta forno. Per stenderla meglio potete usare un foglio di carta forno sotto e uno sopra, in modo che la pasta non si attacchi al matterello. 5. Con gli stampi create le figure (se non ne avete usate un bicchiere), eliminate dalla carta forno i pezzi eccedenti ed infornate sul ripiano di mezzo a 200-225 gradi per 4-5 minuti (il consiglio è di usare la carta forno). Se avete preparato molto impasto ad un certo punto vi accorgerete che si è scaldato troppo perché farete fatica e togliere la pasta eccedente (soprattutto se lo avete steso molto sottile). Rimettete tutto in frigo (anche gli scarti) e riprendete dopo qualche ora. Gli Svedesi sono soliti conservare per 1-2 mesi questi biscotti, a temperatura ambiente in una scatola di latta con coperchio Eccellenza svedese, passione italiana... Dolcissime feste a tutti! If it is the first time you do them, the advice is to halve the doses. - 300g of butter (the best would be the unsalted Danish butter) - 400 gr of caster sugar - 1 dl molasses clear (if you don’t find it you can use maple syrup) - 1 tablespoon ground ginger - 2 tablespoons ground cinnamon - 1 tablespoon ground cloves in a mortar - 2 teaspoons ground cardamom - 1 tablespoon baking soda - 2 dl of water - 1 kg of flour 1. Bring butter to room temperature, cut into cubes. Using a fork, blend the sugar with the syrup until the consistency is smooth. You can use an electric mixer. 2. Combine with the ginger, cinnamon, and cloves, cardamom and finally the baking soda. Add the water and the flour. Mix in a bowl until the consistency will allow you to move it on the table. Initially it will be very sticky but when you add the flour it will be even less sticky. At the end it will be a smooth dough that does not stick to your fingers or to the table. 3. After this you will make a loaf of dough and wrap in plastic film. Keep it in refrigerator for 24 hours. 4.The day after, take the dough and cut a slice (yes, that's right, as if you cut the bread). Roll out with a rolling pin, a very thin phyllo dough, directly on the baking paper. To roll out better, you can use one sheet of baking paper on top and one below, so that the dough does not stick to the rolling pin. 5. Create the figures with the molds (you can also use a glass), remove from the baking paper the pieces in excess and bake on the middle shelf at 200-225 degrees for 4-5 minutes (the advice is to use the baking paper). If you have prepared a lot of dough at some point you will find that it is heated too much because you will struggle to remove the excess dough (especially if you have it stretched very thin). Put everything in the refrigerator (including waste) and resume after a few hours. The Swedes are used to store these cookies for 1-2 months, at room temperature in a can with a top.
