Si è formata nel Giurassico, tra i 190 e i 130 milioni di anni fa, quando la Val di Non era caratterizzata da scogliere marine. Lo scopritore di questa roccia fu il naturalista e geologo francese Déodat de Dolomieu (1750-1801), per il cui onore fu universalmente dato il nome a questa tipologia di roccia. La parte superiore della dolomia affiorante a Tuenetto fu denominato dal Prof. Andrea Fuganti ‘dolomia di Torra’, dall’omonimo paese ed è una stratificazione regolare paleontologicamente caratterizzata da Lamellibranchi, Gasteropodi e Alghe. THE DOLOMITE The dolomite is a carbonate sedimentary rock composed of the dolomite mineral, a double calcium and magnesium carbonate. It was formed in the Giurassic period, between 130 and 190 million years ago, when Val di Non was characterized by sea cliffs. The discoverer of this rock was the French naturalist and geologist Déodat de Dolomieu (1750-1801): therefore the name of this rock was universally given to his honour. The upper part of the dolomite emerging in Tuenetto was called ‘Dolomia di Torra’ by Professor Andrea Fuganti, like the village having the same name and it is a regular stratification paleontologically characterized by Gastropods and Algae. La frigoconservazione ipogea sperimentata dal 2011 a Mollaro da Tassullo, Melinda e Fondazione E. Mach, permette invece di unire assieme i vantaggi della conservazione naturale e della moderna frigoconservazione mantenendo elevati standard con consumi ridotti di energia. Gli studi scientifici del Prof. Frivik e del Prof. Broch della Norwegian University of Science and Technology – NTNU e dei collaboratori della Foundation for Scientific and Industrial Research - SINTEF di Trondheim (Norvegia) confermano come la roccia attorno alla cella ipogea sia assimilabile ad una massa infinita in grado di funzionare da perfetto isolamento naturale. The scientific studies of Prof. Frivik and Prof. Broch of the Norwegian University of Science and Technology – NTNU and of collaborators of the Foundation for Scientific and Industrial Research - SINTEF in Trondheim (Norway), confirm how the rock around the underground cold stores is comparable to an infinite mass that functions as a perfect natural insulation. Una volta portata la cella dai 10° C costanti della roccia alla temperatura di 1° C è sufficiente una minima quantità di energia per mantenere la temperatura costante. Once the temperature of the cold stores decreases from the constant temperature 10° C of the rock to 1° C,a minimum amount of energy then is enough to maintain the temperature constant. Queste performance sono possibili grazie all’esistenza di un ammasso roccioso completamente asciutto; lo strato di dolomia è infatti sovrastato da marne impermeabili che fungono da ‘ombrello’ al giacimento. This performance is possible thanks to the existence of a completely dry rocky mass; the layer of dolomite is infact covered by waterproof Marnes that act as an ‘umbrella’ to the mine.
