And what I have to say I say purely because of the great esteem I have for you. I am justa priest whose only family is the,one I was born into. I never ereatCd a new family of my own and because of this I constantly pray to Our Lord God that He may instil in me His feelings and sentiments of a Good and Mereiful Father. . I have never been a teaeher, 'nor has it ever been my intention to be one; all I want is to live and.be part of the life we all live in. To do' this wc must always help eaeh other because then we will be in a better posilion to talk about things eoncerning families, and also because, we are called upon by Our Lord God to live and co-cxist peacefully not only within our families but with other families in the world as well. Our Good Lord God will give us the graee to help everybody, bUI we must at all times be full of humility and willingness to pray. Even though it may never enter into our minds there is no doubt that if wc are blessed wilh a family it is because of God's will, and we should feel proud to have been ehosen to receive the gill of ereating our very own family. Insomma. preghiamo e pensiamoci: se faremo eosi', sieuramente le nostre famiglie diventeranno migliori: e ei sentiremo santamente orgogliosi perehc' . Capiremo quanto e' bella e importante la vita delle nostre Famiglie. Coraggio. parents, sons, falhers, mothers, brothers and sisters. Every member of the family has rcceived a special grace from God so that all families can go through life successfully. BUI to become aware of all this it would hi: so nice' to pray eonstantly, to go to Mass on Sundays, to say one's morning and night prayers, to receive the Saerame:lls and to carry oul good works. On this last point I would like to dwell a little and ponder deeply: how wonderful it would be if the'whole family, together with other friendly. families, could gel together and make themselves sponsors of some good work, sueh as taking under one's proteclion some other family in desperate need of help, inviting home a few poor people, or buying things for the poor and needy. But it has to be a good and generous aet that unites not only the family or families, but one that springs forth for saerifices made by various members of the family. There is no need for you to give money to"the priest. I, Father Russo, can help you in this way, but it is you who must directly meet with those you wish to help. Let us therefore give plenty of thoughth to this and continue as usual to pray; if we do so our families will eertainly be all the belter for it and we will also feel proud, in a saintly way, because it is then that wc will ultimately understand and grasp the significance and importance of family life. Take Heart. May 94 :t:~EUA COMIJNITA'ITALIANA Agrigento Visited Forty one other people and I booked a long weekend in Agrigento organised by Cav. Franco Sistina, president of the Italiani nel Mondo in conjunction with Alitalia. I had always been told how beautiful Sicily is but what I, and many others in the group, did not exeept was what awaited us. Our party arrived at Catania and we travelled to Agrigento through ~~,?.o(~!'.'?..!1!ost spectacular countrysIde Imagmable. There were groves upon groves or orange and olive' trees that gave way to rugged mountains and vivid green fields only to be followed by well kept vineyards that went on for miles. We were warmly welcomed on arrival at the Collcverde Park Hotel. This smart new hotel was built on a hill where the panorama was spectacular. Two of the five temples we were to visit were elearly visible. Our first tour began on Friday morning at the Valley of the Temples where our guide explained that th6 temples were built in the time <if the early Greek domination. There were tyrannieal as well as demoeratic regimes. The first of the tyrants was Phalaris and he was well known for being particularly cruel to his enemies by pUlling them inside a large bronze bull and lighting fires undernc.~th it. Their cries, as they roasted to dc.~th, gave the impression of the bull roaring. The temple of Juno surmounts a rocky ridge which formed the city rmllp.~rts. Juno was the proteetor of engaged or married couples. The Temple of Concordia seemed almost perfect: built over 200 years ago it has stood the test of time. Originally built by the Greeks the temple was later converted into a Catholic Church. Pcople are no longer allowed inside due to the r.~ct that parts of the structure may r.~1I away. The Grecks did not use ccment of any type to build their temples or walls. The pillars of the temple were made in a 'Iego' r.~shion with c.~ch section of pillar being as if sliced with a nail protruding undernc.~th the ccntre which is Ihen slotted into the Pia PeJlicd specially carved hole in the centre of the section on which it was placed. The Temple of lous, which was never finished even after 80 years of building by the Greeks, and whose blocks of stone were latcr used in the building of another kind, was originally constructed with 38 Giganti holding up the entablature of the temple with their raised arms. Unfortunately just one remains and is in safe keeping in the Archaeological Museum. As we walked further on we were shown the underground catacombs originally used for water storage and channels, but later they had another use as burial chambers. Our tour lasted a lot longer than expected. These magnifieent structures just left you in awe of their height. size and beauty. To think that over 2000 years earlier people had walked where I was standing nowl Having tom ourselves away from the Valley of the Temples we were taken to the house of Luigi Pirandello, NobCl Prize Winner for Literature in 1934. Pirandello's house is now a museum of his books, photographs and letters. The house is just outside Agrigento in the hamlet of Caos. Pirandello used to laugh and say he was born in "chaos"! He had asked that when he died he should be taken back to his beloved Agrigento and buried under a solitary pine tree; it is exactly what happened. On the Saturday morning we were taken by coach to the centre of town. Here. those who were 'able (this tour meant a lot of walking uphill and numerous stairs as most of the streets were. in fact, stairs), alighted from the coach and began our tour of the older part of to\\n. The houses or apartments were built close together to give each other shade in the hot sun. As we were cunous to sec C\'Cl)1hing so the people of Agrigento \\'Cre just as curious to sec us and many eame out onto their balconies to say hello. Our first stop was at the Cistercian Convent of Santo Spirito. Outside the church looks very plain but on entering one would have a hard he.~rt not to take a sharp intake of breath at the beauty. The decoration is Baroque. White plaster reliefs make the setting for the altar and four large pictures on the walls depicting The Annunciation, The Nativity, The Magi and The Flight into Egypt. These stuecos area attributed to Sepotta and date from the early 17th century, (the church was actually founded in the 13th century). The Sisters of the Convent of Santo Spirito are very famous for their cakes and biscuits which they make from a secret recipe but which consists of pistachio and. almonds shaped like flowers, snakes and shells. Moving on \\'0 came to the Cathedral which is the fourth largest in all Italy. It was founded by a Norman bishop called San Gerlhando in the 14th century. Part of the original Norman ceiling which is painted with pictures of the saints still remains and. believe me. it is really stunning. Again as in the church of Santo Spirito the decoration around the altar is that of the Baroque stueco reliefs of chcrubs, but this time in such quantity as to be overpowering. There is a glass cabinet on the wall as you enter the Cathedral and this houses a mummified Crusader, it is not kno\\n who he is or why he was place there. Saturday afternoon \\'0 all went to the beaeh. You cannot go to an island and not sec the beach. It was also an cxcuse to have an ice-<:ream (although who nceds an excuse anywayl). Saturday evcning was to be a special onc at the hotel and it really was. A group of about 20 young peoplc all dressed in national costume came to perform a ,"Folk Evening". These young people played their own instruments and from the first very exciting and energetic song and dance to the last their energies and smiles did not ebb. They looked as though they enjoyed every minute of it - \\'0 certainly didl It is true that many of the little 'commedie' they performed was not undcrstood by all, but the atmosphere was set and people \\'Cre carried along by their excitement. On Sunday \\'0 travelled back to London sad to leave such a beautiful place so packed full of history. The only thing which eased the journey back to the airport was that \\'0 \\'Cre able to feast our eyes on the stunning scenery one last time. Would I go back to Sicily? Without a doubt. RIVISl'A DELLA COMUNITA'ITALIANA The Hill Olive Besagni For this month's article, it was my intention to write a feature on Famiglia Terroni. Famiglia Terroni were .the well known proprietors of the delicatessen situated next door to St. Peter's Italian Church in Clerkenwell Road 'from 1878 until 1980. I called on Luigi and Bruna Terroni at their home in Bounds Green where I received a most· cordial' welcome. "I've got something to show you that I know will please you" said Lou. He produced the eentre page spread of an old news'paper "The Grapie" dated 17 February 1923. '''Look'' he said pointing to a photograph, one of several feaentitured in the artiele which tled, "The Italian Colony in London and' i!S many activitiCs". I was deMaestro Giolighted, there he' vanni 'Ferrari, my grandfather in a group of "Staff of the Italian School", I was' so' intrigued by the ph~tographs ,and accompanying lit,erature I thought that' you might enjoy them as much as I did. I'm sure you'll agree that it's a fascinating glimpse back in ,time to "n Quartiere,Italiano" in the year 1923. "We are a very human people, and if the first thought that comes to mind rclating to Italian life in London ,is the memory of, happy evenings in Soho - well it is, a weakness whieh does not call forapology. The Italian restauranteurs, between Oxford Street and Shafiesbury Avenue" have given the English a new appreciation of 'the pleasures of the table. The dainty and' well was was, 8 cooked food, the light and sparkling wines, and the cheerful diningrooms of the quarter have contributed much to our pleasure. Add to this 'the animation and courtesy of the quick Italian waiter, and the bright eyes and musical voice of Signorina, and you may be sure that many English folk have received their first call to what Alice Meynell has deseribed as "the unfolding South'" from a visit to Soho. In actual fact, of course, in Soho it is only a glimpse, one gets of the Italian life of London., The subjeets of King Victor Emmanuel, while they have their special haunts, are to be found in all parts of the Metropolis. They have become diffused, in a greater measure than used to be the ease amongst the crowds that make up the grcat eity. We have to go farther east from Soho to find such a '''Colony'' as still exists. Go through Hattlm Garden, where the diamond merchants ,are, and cross over to the northern side of Clerkenwell Road, and you find yourself in "Little Italy!;. In half a dozen typical strcets houses and' shops are all occupied by lta)ians. It looks' a poor neighbourhood, but I got a suspicion that the neigh- bourhood is not as, poor as it looks. The laughing and boisterous children ,romping in thci roadway had dirty faces and mostly worc ragged clothes, but their health and vitality were unmistakable. In their games Italian boys and girls givc vent to tremendous lung power. I' was assured that thc ratc of infantilc mortality in the colony is rcmarkably low: a tribute to thc carc and devotion, of Italian' mothers to their children. To sce a characteristic' Italian scenc onc should go to "Little lIa.Iy" on the Sunday following July 16. This is the fcast day of Our Lady of Mount CarmeJ, to whom' all Italians render devotions. On that day thc people of the colony walk in procession. and carry with rcverence thc statuc of the Madonna' through the district which they have madc their own. The drab thoroughfares of Clerkenwell Ro.1d, Eyrc Street Hill, Great Bath Street, Farringdon Road, Cross Street and Hatton, Garden 'present a scene of animation and colour, Priests,' acolytes, thurifiers, cross-bearers, boys and girls in national costume, and banners and bands make up a notablc spectacle. ' . , Saffron Hill is in this neighbourhood, too, and it is herc that one finds St. Peter's (now LCC) School rieh . in memories of Mazzini - in whieh morc than two-thirds of the nine hundred scholars bear Italian names. Special evening classes arc May 94 :t::.* DWA. CoMuNrrA'ITAlJANA held for the teaching of the language. The Italian Chureh of St. Peter's built sixty years ago. faces Clerkenwell Road. Its interior is very beautiful and its staff of clergy, including both English and Italian priests, minister to the spiritual needs of the people of the colony. It is by some supposed that most Italians get a livelihood by selling ice-cream or by taking round barrelorgans. They may have been so at one time, but it is difficult to find an Italian organ-grinder today. One or two Italian firms, I learn. let out organs on hire - to' Englishmen. The ice-cream trade still has its headquarters in the district, but it is now a highly organised and ehiefly English business. with its strong trade organisation - a development which has led to great advances in the conditions under which the delicacy is made. Generally speaking the Italian workman has taken a step upward in recent years. The Society of Italian Workmen in London. with a thousand members. was founded by Mazzini and Garibaldi nearly sixty years ago, and has its headquarters at the Garibaldi Club in Laystall Street A social centre of Italians. founded in 1919 is the Italian Co-operative Club in Greek Street. Soho. In work of benevolencc and philanthropy the Italians are second to none in caring for their compatriots. and how the Italian Hospital began is an interesting example of this. More th3l1 forty years ago a successful Itali,!n business man in London. Commendatore G.B. Ortelli, and his wife visited a poor Italian in an English hospital. They noticed that although he was receiving every eare and attention he was not happy. No one eould speak his tongue. nor could he make himself understood in English. Mr. Ortelli decided that the Italian in London should have a hospital of their own, where doctors and nurses would be able to talk with the sufferers in their own language. He provided the house and spent thousands of pounds on its equipment and expansion. and the Italian Hospital in Queen Square. W.C. stands today as the first lIalian Hospital founded outside. Italy by one of her sons. The cost of the building and equipment. whieh he defrayed. was £23.000. A bronze tablet in the entranee hall of the hospital testifies the gratitude of Italians to the generous founder. Sick and injured lIalians have the first claim to the serviees of the hospital. but non-. lIalians are also cared for. The lIalian Benevolent Society and Home for the aged lIalian poor in London is doing a noble work in caring for a poorer members of the lIalian communi!)' - a benefieent mission begun more than sixty years ago, 11 repatriates distressed and destilule compatriots back to lIaly. and conducts a small home for the aged poor of the colony at 2 Parton Street. Un pesce d'aprile in anticipo ma assolutamente pieno del suo tipico senso bcffardo. Ma e' stato anchc una sorpresa per tutti. Per tutti? Proprio per tutti. Infatti nessuno volcva quei risultati, ma tutti hanno votato per loro. Nessuno avcva mai pensato ad un simile scherzo, ma tutti sono stati attori protagonisti di questo "colpo di sccna". Sembrerebbc come se ad uno ad uno ogni votante avessc voluto tirare un tiro mancino' al prossimo elettore, non eonsapCvole ehe iI prcccdente e iI seguente aveva avuto la stessa idea.. Sounds like perfect conditions for clay pigcon shO!ltingll I am not surc this was, precisely what the Associazione Italiana Tira a Volo (AITAV) had in mind whcn they organised the Grand Premio d'Italia Nonh v. South at Nuthampstead Shooting Ground on Friday 1st April. As onc 'competitor was heard to remark: "I felt enough of a fool standing'out there'" ' particularly the competitors, that despite the atrocious conditions the spon was the winner on the day. The tournament comprised of each . person shooting 100· clays in the Olympic Trench disciplinc. This is by far the hardest discipline with the clays flying past at over 120 m.p.h.. (Add that to the strong winds!). The best 6 scorcrs of each team were added together to determine the team winners. This year it was a very close run thing. Winners ofthe North v. South Cup. As far, as I am concerned this was the first courageous decision by the organisers. Can you imagine 45 Italians armed with shotguns disputing a decisionl To counteIbalance this two independent referees with impeccable qualifications were called in: ex-World Champion and England no. I Peter Boden and cx-European Champion Chris Cloke. Both were.so impressed with the competitive but friendly atmosphere that they have already booked themselves the referees spot for .next year's tournament. The AITAV committcc must also have been pleased to see not only everyone shooting the clays and not each other but also the manner and spirit of the competition. It seemed from everyones reaction to the day, 14 Of the 600 clays shot at, only 3 targets separated the two teams. NcVenhelcss this year's honours went to the Nonh. . Next, the top 3 marksmen of each team went forward for the individual title. Here they had 25 flash targets. In, conditions more suitable for trick shooting the scores were to be admired. Again only 4 clays separated the six with Claudio Capaldo defeating Salvatore di Franccsco by onc clay and picking up a traditional shooting prize of a Tag watch. Cups, medals and other prizes were duly distributed after, the wine and polenta had been Consumed and Robeno Mancuso walked away with the booby prize. Like any well organised serious sponing event, sponsors play a vital role in the proceedings and therefore AITAV must have been delighted when Salvo CFS Limited agreed to sponsor . the entire event from ]oanna Giacon breakfast to shooting venue and have also pledged 'their continuing suppon for the event. Salvatore Cumbo of Salvo (CFS) Limited hopes, in the future, to place this tournament on the European 'shooting ealendar. . .' The second potentially daring decision by the Committcc was the choice of venue. Nuthampstead (near Cambridge) is relatively new ground. But if the smooth and efficient shoot that Martin Barker and his team put together is anything to go by, it seem to have a bright future ahead of it. I am sure you, as well as the major British and Italian shooting magazines that covered the tournament, would be forgiven for asking just who are,AITAV? Well, it is a club that has been in existence for some 20 years made up of about twenty serious,. some would say fanatical (especially their wives), shooters. Shooting has gone beyond the stage of being just a hobby for them. They Will travel the country (and Europe when possible) not only representing themselves and their club but the Italian ,Community as well. President of the AITAV Flavio Mazzi and Captain Leonardo Rastelli are typical of the clubs commitment to foster an interest of the spon within the Italian Community. Hence they will soon be working with the Associaiione Italiani dei Cacciatori (A.I.C.) in giving their considerable experience and knowledge frCe-<lf-charge in training others. (On a personal note I find it heanening to find a group 'vithin our community that is not only thinking of the future but genuinely willing to work with others' for a common interest). For those that are curious Nillo Alu', the Junior CO-<lrdinator of A.I.C., is organising a training course for anyone over the age of 12 who is interested in clay pigeon shooting. The instructors will be two AITAV members, Miehele and Leonardo Rastelli who have competed internationally for Grcat Britain. and have themselves been trained by World Champions. The. altar of Repose was empty - just like the tomb, the Pascal candle was lit from the burning ashes, the Chureh was full of flowers reminding us of Christ risen from the earth. E', quindi, indispensabile alle famiglie umane la parola pronunciata da Cristo risorto: "Abbiate fiducia: io ho vinto iI mondo" (Gv 16,33). Alla grande famiglia dei popoli giunga oggi quest'annunzio della Risurrezionc, irruzione di luce e di vita per ogni abitante della terra. Continued from last month Unit-Linked Policies: These policies were introduced in the late 1970s as a way of offering investors polieies where values arc directly linked to prevailing market conditions and, therefore, investment performance. This is achieved by linking the value of the policy to units in a special unitiscd fund run by the life office or, alternatively, to a unit trust. The values of the unitS will directly reflect the values of the underlying assets of the fund. and fluctuate daily according to the performance of these investments. A variety of funds are available to which the policy can be linked, each offering a varying exposure of risk and return to the policyholder. In practice it is possible for the policyholder to use any combination of funds to match the degrec of risk acceptable. The most usual funds are as follows:(a) Building Society Fund (low risk) - inv~ted in building Society deposits. A good way to save money that is surplus to your normal spending .requirements. As with a normal building society deposit account, your money is accessible, but you are able to obtain higher rates of interest because of the bulk deposits that the fund can make. (b) Cash Fund (Iow risk) invested in short term money markets such as bank deposils and treasury bills, usually to provide a temporary refuge for the investor who requires a high degree of security. They therefore invest in cash or near cash (i.e. short· term fixed interest securities) and represent, as in (a), a way for small savers to get "wholesale" rates of interest and at the same time have easy access to their money. It invests in all types of deposit-taking institutions in order to secure the most attractive rates available and provides a useful short term haven for capital awaiting other investment decisions. (c) Index-linked Gill Fund (low risk) - invested in U.K. government 34 indeX-linked securities, with returns expected to be similar to increases in the Retail Priec Index, whieh is a measurement of rate of inflation. (d) Fixed Interesl/Gilt Fund (Relatively Low Risk): invested in securities which carry a fixed rate of interest, such as U.K. government securities and local authority stocks. The aim of the fund is to achieve competitive and relatively secure returns, although the value of the traded fixed interest securities may fluctuate. (e) Managed Fund (Balanced Risk): combines U.K. bonds (i.e.>gilts and fixed interest securities) and, mainly, U.K. equities in order to provide a greater degree of security than a fund that invests exclusively in shares. The fund manager will actually make the investment decisions for you, and will aim to invest in various sectors that give the best return at any given point in time. The aim of the fund is to produec a consistent real return, over and above the rate of inflation, over the medium to long term. It has an element of risk as the capital value of equities can fluctuate, ~ particularly in the short term. However, the diversity of the fund aims to minimise this risk and reduce the overall volatility . of. equities. (I) Property Fund (Risky): invests in real property such as offices, shops and industrial premises occupied by tenants, as commercial investments, as well as development projects. The fund aims to achieve good long term growth, although the value of the fund may fluctuate in the short term due to a downturn rental and capital values. (g) Domestic Equities Fund (Risky): invests in ordinary shares quoted on the Stock Exchange. One of the advantages of investing in equities is that, over the medium (i.e. 3 to 5 years) to long (i.e. 5 years or more) term, they usually will provide a growing income as well as increasing capital values, which outpaec the rate of inflation and can, therefore, generate substantial real investment returns. Equities therefore offer excellent prospects of achieving real growth by exceeding the rates of inflation over the medium to long Richard Si/via term. Although the capital value of eqnities can fluctuate, especially over the short term (i.e. 1 to 3 years), the diversity of shares within the fund aims to minimise risk and volatility. (h) International Equities Funds (Very risky): invest in equities on foreign stock markets. They are subject to the same' short term volatility and market sentiment as for (g), but also include the added risk of adverse exchange rates and currency fluctuations. ~ The funds exist on a geographic basis (e.g. the Far East, Pacific, Europe or North America). The above is only a brief reference to some of the funds that·exist overall, the various funds available can be listed under 23 or so different categories! Ncedless to say, there is a vast choice of funds available, offering differing potential for both income and/or growth, and catering for both the cautious and highly speculative investor. It is possible for an investor to switch between funds, for a small charge, to reflect any change in his attitude to risk and return that he may have at any time. Although unit-linked funds vary in their strategy and objectives, they all operate on the same principle. All or part of the premiums will"be applied to purchase unitS in -the fund at the price ruling at the time of payment. The future value of the policy will then fluctuate with the value of units allocated to it. The units are allocated when the premium is paid at the "offer price" and eventually encashed or paid in the event of a claim at the "bid price". At the time of purchase, when the units are allocated, the "offer price" will always exceed the "bid price"~ by about 5%. This represents a charge made by the life office to cover expenses in setting up the policy. There will also be an annual management charge, which is deducted from the fund before the prices are calculated. The value of units can fall as well as rise, and past performance should not be relied upon as an indicator for the future. Thus, it is possible for the policy to fall in value (unlike conventional with-profits policies). It has previously been stated that the main feature of unit-linked policies is that the link with investment performance is direct. A unit-linked policyholder is able to monitor and value his fund on-a daily basis because unit prices arc published in the national newspapers such as "The Financial Times" and "The Daily Telegraph". In order to value the fund all you need to do is to ascertain the number of units allocated and multiply them by the prevailing ,"bid price". It is usual for the life office to periodically issue siatements to unit-linked investors showing the number and value of units allocated. Unitised With-Profits Policies: These are similar to unit-linked plans insofar as the premiums buy units in an underlying fund, but differ insofar as the growth of the fund is distributed as a bonus (as with conventional with.profits policies) to policyholders at the end of each year. Also, in unit·linked policies prices can fluctuate up or down, as previously explained, in line with the underlying investments. This risk is lessened in unitised with profits policies because the annual policy bonus (like that of a traditional with·profits policy) cannot, once allocated, be taken away and its nominal value remains fixed. Also, the rate of growth within the fund is variable and terminal bonuses reflect the life company's capital gains - just as you would expect with a conventional with.profits policy. Like unit-linked policies, unitised with-profits policies, have a bid/offer spread and annual management charges. Hence the hybrid nature of such policies, which aim to make the best use of "both worlds" as follows:(a) Ensure that the value of the underlying fund never falls in value (as in the case with conventional with.profits policies); (b) Whilst permitting the investor to have a direct link with the investment performance of the fund (the main feature of unit-linking). Since it was launched in 1942, the film has grossed $500 million, ranking it among the top five Disney films of all time. I am sure Disney are hoping for such things from their next new feature film. Red Cabbage, Cauliflower,and Broccoli Bake Ingredienti: Ingredients: Salsa: 1/2 Iitro di latte 1 porro 0 1/2 eipolla 1 foglia di alloro acini di pepelsale 25 grburro 25 gr farina 140 gr gorgonzola 0 dolcelatte, salclnocc moscato Vegetali: 1 cavolfiore 1/2 cavolo rosso 170 gr broccoli Sauce: 1 pint milk 1 leek or half an onion 1 bay leaf peppercorns/salt 1 1/2 oz butter 1 1/2 oz flour 5 oz gorgonzola or dolcelatte chccsc (cut into small pieces) nutmeg/salt Veg: 1 cauliflower 1/2 red 'cabbage 6 oz broccoli (tagliato a pczzi) Metodo: Salsa: Mcttcte il latte in una casseruola col porro, pepe e alloro. Portatelo all'cbollizionc e cucinatelo per 2 minuti. Levatelo dal fuoco. Laseiatelo riposare per circa 20 minuti. Filtratelo. Scioglicte il burro e aggiungctclo al latte c alia farina. Mcscolate bene per non formare grumoli. Rimettete sui fuoco c sempre mescolando cucinatc finche' ottenetc una salsa abbastanza densa. Togliete dal fuoco c aggiungete meta' dcl forrnaggio. Vegetali: Tagliate il cavolfiore ed i broccoli a cimetti e cucinate in acqua salata bollente per circa 10 minuti. State attenti a non cueinarli troppo. Tagliate il cavolo rosso a fette grosse e cucinatelo'in acqua salata. Mettete i vegetali in una pirofill! imburrata. Ve':S3tevi sopra la salsa e poi il restante forrnaggio. Passatela nel forno pre-scaldato 180Cl no.4 per 20 minuti. Cavolini di Bruxelies alia Gorgonzola Method: Sauce: Put milk, leek, bay leaf, salt and peppercorns in saucepan and bring to boil. Cook for 2 minutes. Remove from hcat. Leave for about 20 minutes. Strain. Mclt the butter then add to the milk and flour. Stir thoroughly to get rid of any lumps. Add salt and nutmeg. Return to the heat and cook, stirring until the sauce thickens. Remove from heat and stir in half the cheese. Vegetables: Cut the cauliflower and broccoli into florets. Cook in boiling Salty water for about 10 minutes. Do not overcook. Cut the red cabbage into thick slices and cook separately in salty water. Drain. Place vegetables into an oveJ)proof dish and cover with sauce. Top with the rest of the chccsc and bake in a pre-heated oven 180/no.4 for 20 minutes. Brussel Sprouts and Gorgonzola Bake Ingredienti: Ingredients: 500 gr di cavolini 300 gr di gorgonzola 0 dolcelatte 50 gr panna Iiquida . 30 grburro 15 gr farina salclpepe lib Brussels sprouts 1/21b gorgonzola or dolcelatte chccsc 2 fI oz single cream 1 oz butter 1/2 oz flour salt/pepper Metodo: Method: Incidete un taglio suI torsolo dei cavolini. Cuoccteli in acqua salata e bollente per 20 minuti. Scolateli. Tagliate il gorgonzola a dadini. Meltetele in una casscruola. Aggiungete la, crema, la farina, il burro, pepe e, sale. Amalgamate insieme tutti gli ·ingredienti, Cucinate a bagno-maria, sempre mcscolando finche' il gorgoniola si seioglie. Mettete. i cavolini in una pirofila imburrata. Versatevi sopm il restante gorgonzola. Coprile con carta argentata. Cucinate in fuoco pre-scaldato' 200Clno.6 per 15 minuti. Togliete la carta e cucinatc per altri 5 minuti. Servile. Make a cut into the base of thc Brussels sprouts. Cook in salty boiling water for about 20 minutes. Drain. Cut the gorgonzola into small cubes. Put the cheese into a saucepan and add the cream, flour and butter, salt and pepper. Mix the ingredients. Cook bagne-marie (in a bowl. over saucepan of boiling water), stirring every now and then until the chccsc has· melted. Place the Brussels sprouts into a greased oven-to-table dish. Pour the sauce over them. Cover with silver foil and bake in pre-heated oven 200Clno.6 for 15 minutes. Remove silver foil and cook for a further 5 minutes.
