3° ISTITUTO SUPERIORE “ALAIMO” sede di Lentini Itinerario ArcheologIco Archaeological Itinerary Step 1 2 Step 2 Leontinoi Colonia calcidese, fu fondata nel 729 a.C. sul margine di un territorio fittamente interessato da insediamenti indigeni. La città occupò due alture parallele, con l’interposta vallata, affacciate sulla fertile piana di Catania e collegate al mare attraverso il fiume (Terias) S. Leonardo. Una cinta muraria racchiudeva la città correndo lungo il ciglio dei colli ed includendo anche la vallata, alle cui estremità erano situate due poderose porte a tenaglia. Di queste ultime, quella meridionale è stata integralmente messa in luce insieme alle poche tracce delle aree sacre urbane (sulla sommità dei colli), di un santuario extraurbano (in pianura in contrada Alaimo) e di parte delle necropoli che si estendevano ad arco a nord ed a sud della città. Sull’omonimo colle, si conservano anche tratti delle piazzaforti erette da Dionisio I nel 396 a.C. Leontinoi Leontinoi was a Chalcidian colony founded in 729 B.C., located on the edge of an area densely populated with indigenous settlements. The city occupied two parallel hills with a valley in the center, overlooking the fertile plains of Catania and connected to the sea through the river (Terias) St. Leonardo. A wall enclosed the city running along the side of the hills, and into the valley, where two strong gates were located. Of the latter, the southern one has been fully brought to light along with a few traces of the sacred urban areas (on top of the hills), a suburban sanctuary (in the plains of the Alaimo district) and parts of the necropolis which extended to the north and the south of the city. On the homonymous hill are also preserved sections of the fortresses built by Dionysius in 396 BC. 3 Villaggio Protostorico sul colle “Metapiccola” Il colle Metapiccola si trova tra il colle San Mauro ad ovest ed il colle Meta Grande ad est ed è raggiungibile da Carlentini seguendo la segnaletica che conduce al Parco Archeologico di Leontinoi; giunti all’ingresso del parco sulla destra un viottolo ci porta direttamente sul colle Metapiccola. Numerose campagne di scavi, dal 1955 al 1989, hanno messo in luce nove capanne dal fondo rettangolare, incassato nella roccia. La particolare tipologia edilizia, ed i manufatti rinvenuti nell’area del villaggio ed all’interno delle abitazioni, richiamano l’insediamento di Ausonio di Lipari, e datano la sua frequentazione fra i secoli XI e IX a. C. Sul colle sono visibili anche le tracce di un tempio arcaico, pertinente alla città greca. Protohistoric village on the “Metapiccola” hill The Metapiccola hill is located between the San Mauro hill to the west and the Meta Grande hill to the east and can be reached from Carlentini following the signs leading to the Archaeological Park of Leontinoi; from the park entrance a path on the right side leads directly to the Metapiccola hill. Numerous excavation campaigns, from 1955 to 1989, revealed nine huts with rectangular structures, encased in a rock. The particular building typology, and artifacts found in the area of the village and within the houses, are reminescent of the settlement of Ausonius of Lipari, and date from between the 11th and 9th centuries B.C. On the hill are also visible traces of an archaic temple, referring to the Greek city. Ceramics and ornaments found in the huts place life phases of the settlement between the 11th and 9th centuries B.C. 4 Il museo archeologico Il Museo Archeologico di Lentini illustra la storia della città e del suo territorio a partire dalla preistoria fino all’età medievale, attraverso l’esposizione di materiali provenienti dall’antica città e dai principali siti archeologici del comprensorio; in particolare dalle zone di Valsavoia, Cugno Carruba, S. Mauro, con Metapiccola, materiali da tombe sicule come quelle di S. Eligio, fino a quelli greci, in particolare dalla stipe votiva di Metapiccola, dalle zone santuariali di San Mauro, C.da Alaimo e Scala Portazza, dalle necropoli di Piscitello e San Mauro, dalle abitazioni rupestri del Crocifisso e Caracausi. Fra gli altri, si segnalano materiali medievali dal Castellaccio e dagli strati più recenti del sito della Porta Nord. Archaeological Museum of Lentini The Archaeological Museum of Lentini illustrates the history of the city and its territory from prehistory to the Middle Ages, through the exhibition of materials from the ancient city and the main archaeological sites of the area, especially from the areas of Valsavoia, Cugno Carruba and St. Mauro, with Metapiccola; materials from Sicilian tombs such as those of St. Eligio and those of the Greeks, in particular from the votive deposit _ Metapiccola from sanctuaries areas of St. Mauro, Contrada Alaimo and Scala Portazza, from Piscitello’s and San Mauro’s necropolis, from cave dwellings of the Crucified and Caracausi. Among others, materials from medieval Castellaccio and the more recent layers of the site of the North Gate stand out. C Archaeological Museum of Lentini 5 La Porta Nord Lo storico ci descrive Leontinoi come una città costruita in una valle, rivolta a settentrione, con edifici ed aree sacre sui fianchi e sulle alture, un fiume, il Lisso, ad occidente, e soprattutto racchiusa da due porte. Una di queste, a meridione della valle, conduceva a Siracusa, l’altra, all’estremità settentrionale, verso i campi Leontini e la regione coltivabile. Mentre la porta meridionale venne messa in luce già dalle prime campagne di scavo, risalenti agli anni’50, condotte nell’area del Parco Archeologico, la porta Nord venne individuata solo dal 1987, attraverso una serie di indagini archeologiche che continuano ancora oggi. Nei pressi dell’odierna piazza Vittorio Veneto sono stati individuati blocchi che costituiscono mura di sbarramento di diverse fasi, ed in particolare una struttura a blocchi che sembrerebbe una torre quadrangolare, il tutto distrutto già nel III-II secolo a.C. The North Gate The historians describe Leontinoi as a city built in a valley, facing north, with buildings and sacred areas on the sides and on the hills the river Lisso, to the west, and above all enclosed by two gates. One of these, in the south of the valley, leads to Syracuse, the other, at the northern end, to the Leontini fields and the farmland region. While the southern gate wasu unearthed in the earliest excavations, dating back to the 1950s, conducted in the Archaeological Park, the northern gate was identified only in 1987, through a series of archaeological investigations that continue to this day. Near today’s Piazza Vittorio Veneto blocks were identified that form wall dams of several stages, and in particular a block structure that appears to have beeen a square tower, all already destroyed in the 3rd to 2rd century BC. Porta Nord North Gate 6 Il Castellaccio Il Parco Archeologico “Castellaccio” si trova nel quartiere “Roggio”, nel centro storico di Lentini. L’area abbraccia due colli, Tirone e Castellaccio. Le testimonianze presenti in questo luogo vanno dall’età del bronzo ad epoca tardo medievale. In particolare, sul colle Tirone si trovano i resti del convento di Santa Chiara, fondato nella prima metà del XIV secolo, e completamente distrutto dal terremoto del 1693, e la chiesa di Santa Lucia al Tirone. Quest’ultima, una chiesa rupestre con affreschi che risalgono alla prima metà del XIII secolo, conserva ancora i suoi dipinti. L’edificio, ricavato nell’arenaria, ha forma rettangolare allungata in senso N-S, con tre absidi rivolte a Nord. L’abside centrale ospita un Cristo Pantocratore, assiso in trono, mentre in quella est, la più importante e meglio conservata, è raffigurata Santa Lucia. Sulla parete est sono rappresentati un Santo Vescovo, probabilmente Nicola, una Mater Domini, un Santo o Santa sconosciuto/a, ed un santo a cavallo, di cui oggi è riconoscibile solo l’animale su cui montava. Anche la parete ovest è dipinta, ma rimangono solo lacerti di affresco. Il parco prende il nome dal colle e dalla fortezza che vi insiste, il “Castellaccio”, o Castrum Vetus. Il castello, in epoca sveva, venne ristrutturato dall’architetto Riccardo da Lentini, per conto e sotto le direttive di Federico II di Svevia. L’anno del completamento dei lavori è il 1239. Il fossato del castello è un lungo e largo taglio artificiale nell’arenaria, che separa i colli Tirone e Castellaccio. Le pendenze naturali del colle vennero utilizzate ed enfatizzate per isolare il cuore della fortezza e renderla imprendibile. Le pareti del colle Castellaccio hanno infatti una forma obliqua e lasciano intravedere le 7 tracce degli assedi che vi si sono succeduti. Ancora su, si incontra l’Arx Triquetra. Si tratta di una torre di forma triangolare, che è sempre stata il simbolo del Castellaccio per gli storici ed i viaggiatori che hanno narrato del Castello nei secoli, e che costituiva, con le sue mura alte più di 10 m ed il suo sistema di conci che seguivano l’andamento del colle, rastremandosi via via verso l’alto, il sistema di difesa più avanzato in quest’area, ed andava a controllare e proteggere la valle San Mauro e l’omonimo colle prospiciente, sul quale doveva sorgere il solacium dell’Imperatore. In cima al colle c’è il cuore della fortezza. Ad oggi, sono visibili un gruppo di ambienti di servizio e rappresentanza sul lato sud, una basilichetta, ed a nord tratti di mura. Al centro della spianata oggi visibile, vi è l’ingresso alla cosiddetta Sala Ipogea. Si tratta di una costruzione sotterranea sulla funzione della quale ancora si dibatte. Certo è che la sala, accessibile mediante una ripida scalinata, rettangolare dall’andamento nord-sud, venne curata nell’esecuzione, fino ai minimi dettagli, e certamente in epoca federiciana. The “Castellaccio” The Archaeological Park “Castellaccio” is located in the district “Roggio”, in the historic center of Lentini. The area is characerized by two hills, and the Tirone Castellaccio. The present testimonies in this place go from the Bronze to the late medieval era. In particular, on the Tirone hill are the remains of the convent of Santa Clara founded in the first half of the 14th century, and destroyed completely by the earthquake of 1693, and the church of Saint Lucia Tirone. The latter, a cave church with frescoes dating back to the first half of the 13th century, still retains its paintings. The building, built in the sandstone, has a rectangular shape elongated in the north-south direction, with three apses facing north. The central apse houses a Christ Pantocrator, seated on a throne, while in the east, the most important and best preserved, depicts Saint Lucia. On the east wall are represented a Saint Bishop, probably Nicola, a Mater Domini, an unknown saint, and a saint upon a horse, who today is recognized only by the animal which he was riding. The west wall is also painted but only fragments of those frescoes remain. The park takes its name from the hill and fortress built there, the “Castellaccio”, or Castrum Vetus. In the Swabian period, the castle was renovated by the architect Riccardo from Lentini, on behalf of and under the direction of Frederick II of Swabia. The year of completion was 1239. The castle moat is a long and wide artificially cut in the the sandstone and separating the hills Tirone and Castellaccio the natural slopes of the hill were used and emphasized to isolate the heart of the fortress and make it impregnable. The walls of the Castellaccio hill indeed have a slanding configuration and offer a glimpse of the traces of sieges that have taken place. 8 Still above, we see the Arx Triquetra, it is a triangular tower, that has always been the symbol of Castellaccio for historians and travelers who have written about the castle over the centuries. With its over 10 meters high walls and its system of blocks that followed the trend of the hill, gradually tapering upwards, it was the most advanced defense system in this area, because it checked and protected the San Mauro valley and namesake hill facing, on which the ‘Emperor’s solacium’ was to be built. At the top of the hill is the heart of the fortress. Today, a group of service and representation areas on the south side, a basilica, and to the north parts of the walls are visible. At the center of the esplanade visible today, is the entrance to the so-called Hypogeum Hall, an underground construction the function of which is still under debate. What is certain is that the room, accessible by a steep staircase and rectangular on the northsouth axis, was treated in the execution, in the minutest detail, and certainly in the era of Frederick. Sala Ipogea Hypogeum Hall 9 Itinerario SAcro holy Itinerary Step 1 10 Step 2 Chiese rupestri Il territorio di Lentini, per la sua particolare conformazione idrogeologica, offre le condizioni ideali per l’impianto di insediamenti, ma anche di oratori, cenobi, romitaggi e luoghi di culto di questo genere. In particolare, due sono più accessibili ed hanno resistito, per quanto possibile, agli attacchi del tempo e dell’uomo. Rock churches The territory of Lentini, due to its particular hydrogeological shape, offers ideal conditions for the installation of settlements, but also of oratories, monasteries, hermitages and places of worship of this kind. In particular, two are more accessible and have resisted, as far as possible, to the attacks of time and man. San Giuseppe il Giusto La piccola chiesa di San Giuseppe Giusto si trova sulle pendici del colle Ciricò, a sud ovest di Lentini, affacciata sulla valle S. Eligio e prospiciente da est il colle San Mauro. Oggi in rovina, ma molto suggestiva, essa è costituita da un ambiente scavato nella roccia, a pianta rettangolare ed orientato in senso N-S, con ingresso a nord, con soffitto voltato a botte in muratura. La facciata è sicuramente posteriore e sembrerebbe una ricostruzione post terremoto del 1693. Una particolarità, è la finestra circolare al di sopra S. Giuseppe Giusto. del portale. L’interno della chiesa è completaSt. Joseph Justus mente affrescato, in particolare si segnalano l’altare, ricavato direttamente dal banco roccioso, nella cui abside si riconoscono angeli e santi, e la volta, con angeli musicanti ed un cartiglio al centro. 11 St. Joseph Justus The small church of San Giuseppe Giusto is located on the slopes of the hill Ciricò, southwest of Lentini, facing the valley S. Eligio and overlooking the San Mauro hill from the east. Today in ruins, but very charming, it consists of a room carved into the rock, with a rectangular plan and oriented in north-south direction, with an entrance to the north and with a barrel vaulted brick ceiling. The facade is definitely a later addition, and it would seem a reconstruction after the earthquake of 1693. A special feature is the circular window above the portal. The interior is completely frescoed, of particular interest are the altar carved directly in to the bedrock, in whose apse angels and saints can be recognized, and the vault, with musical angels and a cartouche in the center. La Grotta del Crocifisso Con questo nome viene indicato un oratorio rupestre fra i più importanti della Sicilia orientale. Esso è situato sul versante ovest della valle Ruccia, che guarda a nord a Lentini e ad est a Carlentini. Essa oggi appare nella sua ristrutturazione settecentesca, ma il luogo di culto era frequentato da tempi molto più remoti. Crucifix Cave sight Il complesso è costituito da due vani simmetrici ed affiancati, con ingresso ad est, più una serie di altri ambienti ad essi collegati. La decorazione della chiesa presenta almeno cinque fasi decorative. Sulla parete est si trovano una Crocifissione ed un Cristo Pantocrator, nel catino absidale. Probabilmente sono questi, attribuibili al XIII secolo, gli affreschi più antichi. La parete nord è interamente decorata da una teoria di soggetti mariani. Sulla parete ovest, più grandi rispetto a tutti gli altri, sono rappresentati due santi. Nell’ambiente sud si riscontrano più rimaneggiamenti e diverse fasi pittoriche sovrapposte, fino ai secoli XIV-XVII. Notevoli sono San Leonardo, Santa Chiara, 12 Santa Elisabetta e S. Giovanni Battista. Crucifix Cave This name refers to one of the most important rock oratories in eastern Sicily. It is located on the west side of the Ruccia valley, which faces north towards Lentini and east towards Carlentini. Today it appears in its 18th century restructuring, but the place of worship was also very popular in even more ancient times. The complex consists of two symmetrical compartments which are placed side by side, with the entrance to the east, plus a series of other Crucifix Cave Pantocrator environments connected to them. The decoration of the church shows at least five decorative stages. On the east wall are a crucifixion and a Christ Pantocrator, in the apse. These are belived to bee the oldest frescoes attributable to the 13th century. The north wall is entirely decorated by a series of Marian subjects. On the west wall, larger than any other, are depicted two saints. In the southern part more alterations and different stages of overlapped paintings can be found created until the 19th to 17th centuries. Noteworthy are San Leonardo, Santa Chiara, St. Elizabeth and St. John the Baptist. Chiese Lentini conta numerose chiese, piuttosto importanti, sia dal punto di vista architettonico sia da quello storico. Churches Lentini has numerous churches that are rather important, from an architectural and a the historic point of view. Chiesa Madre di Sant’Alfio. L’Ex Cattedrale di Santa Maria la Cava e Sant’ Alfio, così chiamata perché dopo il terremoto del 1693 le due parrocchie vennero unificate, fu edificata tra il 1700 e il 1750. Ha impianto basilicale, a tre navate, secondo lo schema tradizionale delle Basiliche Memorie o Funerarie edificate, sin dall’epoca paleocristiana, sulle tombe dei martiri. Nella navata di destra, infatti, sono visibili tre arcosolii paleocristiani 13 affrescati, da tutti indicati quale sepolcro dei Santi martiri, che sono ciò che rimane di un vasto complesso catacombale. Notevoli sono il grande portone ligneo, ed il sagrato, decorato da ciottoli bianchi e neri in motivi geometrici. La facciata, tardo barocca, è composta da tre ordini, l’ultimo è costituito dalla torre campanaria, in cui, nella nicchia centrale, è visibile la grande campana, fusa nel 1595. All’interno, la Chiesa è divisa in tre naSt. Alfio’s cathedral vate da due file di sei colonne per lato (numero simbolico indicante i 12 Apostoli). Sull’Arco trionfale è posta una scritta nella quale si dichiara che la Chiesa lentinese per prima, precedendo il Concilio di Efeso, riconobbe Maria come Madre di Dio. Alle spalle dell’altare maggiore, si trova un organo a canne della seconda metà del XVIII secolo. Gli affreschi della volta centrale e del transetto del secolo XVII, i quadri degli altari laterali e del vano presbiterale (altare maggiore), dei secoli XVII e XVIII raffigurano i tanti martiri della chiesa lentinese (altari laterali), storie di miracolati, cammino della Chiesa lentinese (altare maggiore). Nell’altare del Sacramento è custodita una tavola lignea duecentesca, di impronta orientaleggiante, raffigurante la Madonna Odigitria. Nella cappella di sinistra è custodita una statua marmorea di Madonna con bambino, attribuita alla scuola del Gagini, una volta nella Chiesa di Santa Maria della Catena. Nella navata di sinistra è conservato anche un pregevole crocifisso ligneo. St. Alfio’s cathedral 14 St. Alfio’s cathedral The former Cathedral of Santa Maria la Cava, and Sant ‘Alfio, so called because the two parishes were united after the earthquake of 1693, was built between 1700 and 1750. It has a basilican plan with three naves, according to the traditional scheme of the Memories or Funerary basilicas built, since the days of the early Christians, on the graves of martyrs. The right aisle, in fact, shows three frescoed early Christian arched niches, which all indicate as the tomb of the Holy Martyrs, which are what remains of a vast catacomb complex. Notable are the large wooden door, and the churchyard, decorated with white and blacks pebbles in geometric patterns. The late Baroque façade is composed of three orders, the latter is formed by the bell tower, where, in the central niche, we can see the great bell, cast in 1595. Inside, the church is divided into three naves by two rows of six columns on each side (symbolic number indicating the 12 Apostles).On the triSt. Alfio’s altar umphal arch is a sign stating that the Lentini Church was the first to recognize, Mary as the Mother of God, ahead of the Council of Ephesus. Behind the main altar is a pipe organ from the second half from the 8th century. The frescoes in the central vault and the transept of the 17th century, the paintings of the side altars and the presbytery (main altar), of the 17th and eighteenth centuries, depict the many martyrs of the Lentini church (side altars), stories of miracles and the church’s history (main altar). In the altar of the Sacrament is kept a wooden panel from the 13th century with oriental characteristics, depicting the Madonna Odigitria. In the chapel on the left is housed a marble statue of the Madonna with Child, attributed to the school of Gagini, once in the church of Santa Maria della Catena. In the left aisle is preserved a precious wooden crucifix. 15 SS. Trinità e San Marziano La chiesa si trova sul colle Evarco, nella zona nord ovest del centro storico, in posizione panoramica. Dopo il terremoto del 1542, le Chiese di S.S. Trinità e S. Marziano, distrutte, vennero incorporate in un unico sito, dove venne edificato un nuovo convento di Santa Chiara, al posto di quello, distrutto, del colle Tirone. Poco dopo, vi venne annessa la chiesa. Il sisma del 1693 danneggiò gravemente chiesa e convento, che però continuarono ad esistere. Secondo molti studiosi, la Chiesa, come si presenta oggi, mantiene ancora parti antecedenti il 1693. La facciata unisce, infatti, tratti rinascimentali ad altri tardo barocchi. Notevole il portone liSS. Trinity and St. Marziano church gneo ed i due orologi solari esterni. All’interno, St. Chiara’s glory particolarmente pregevole è l’antico pavimento in ceramica di Caltagirone. La chiesa, a navata unica, decorata da stucchi, conserva un prezioso altare in pietra d’agata, con tabernacolo e decorazioni in lapislazzuli. E’ ancora visibile la cantorìa, propria di chiese annesse a conventi di clausura. Fra le opere d’arte conservate nella chiesa, si segnalano un Polittico ligneo rinascimentale, ed una pala raffigurante S. Antonio, del XVI secolo. St. Chiara’s glory 16 SS. Trinity and St. Marziano church The church is located on the Evarco hill in a panoramic position, in the north west of the city center. After the earthquake of 1542, the destroyed churches of S.S. Trinity and St. Marziano, were incorporated into a single site where a new convent of Santa Chiara was built in place of the destroyed on , of the Tirone hill. Shortly after, the church was annexed to the convent. The earthquake of 1693 severely damaged the church and monastery, which continued to exist. According to many scholars, the Church, as it is today, still retains parts prior to 1693. Indeed the facade combines Renaissance sections and others late Baroque ones. Noteworthy are the wooden door and the two sundials outside. Inside, the old tiled floor of Caltagirone is particularly valuable . The church has a nave, decorated with stuccos, a precious altar in agate stone, with decorations and tabernacle in lapis lazuli. There is still a chancel visible, typical of the churches attached to cloistered convents. Among the works of art kept in the church, there are also a wooden Renaissance altarpiece, a 16th century altarpiece depicting St. Anthony, and an oil painting on canvas, that represents the Glory of St. Chiara, painted by Giuseppe Velasco. Trinity and St. Marziano church St. Chiara’s glory 17 Itinerario Naturalistco Naturalistic Itinerary 18 Il biviere Il Lago di Lentini, meglio noto come Biviere, fu realizzato probabilmente tra il XII e il XIII sec. sbarrando l’alveo del fiume Trigona, come riserva di caccia e pesca. Poichè la sua natura paludosa era foriera di malaria, nel 1923 fu prosciugato e bonificato. Tuttavia, negli anni ‘70 fu rocstruito, più piccolo ma più profondo, come serbatoio di acqua per uso agricolo e industriale per far fronte all’emergenza idrica del territorio. Oggi il lago Biviere di Lentini è, come allora, l’habitat ideale per una moltitudine di piante, uccelli e pesci, tanto da essere una preziosa oasi naturalistica. L’invaso ospita una notevole varietà di pesci e di uccelli e dai censimenti svolti dalla LIPU si evince che ben 25000 volatili, appartenenti a 150 specie diverse (15 delle quali nidificanti), vivono in questa zona. Per la posizione geografica e per la portata, il lago è diventato una vera e propria oasi naturalistica e presenta un habitat eccellente per la sosta e l’alimentazione di una notevole quantità di uccelli. Molti uccelli, in sosta sulla rotta che unisce l’Africa alle zone nordiche, nidificano qui abitualmente. Tra queste la moretta tabaccata, la marzaiola, il germano reale, la folaga, la gallinella Airone bianco maggiore d’acqua, l’occhione, il cavaliere d’Italia. Great white heron La presenza più interessante è, però, quella degli aironi bianchi maggiori, specie sino a pochi anni fa particolarmente rara in Europa, ma ora in espansione. Sono comuni anche l’airone rosso e l’airone cinerino, la garzetta, oche, anatre e cigni. Le cicogne, invece, con la loro naturale eleganza, sono l’elemento più spettacolare dell’avifauna nidificante del lago. Il cormorano, uccello pescatore di grandi dimensioni, nidifica in colonie e si riunisce, in affollatissimi dormitori. Tra i rapaci hanno trovato riparo in queste 19 sponde il falco pescatore, il falco di palude e il falco pellegrino; mentre folaghe, gallinelle d’acqua e porciglioni, benché nidifichino spesso in questi luoghi, sono poco visibili per la loro abitudine di costruire il nido tra i canneti. Falco pescatore Fish harrier Cormorano Cormorant 21 Itinerario gastronomico Food Itinerary 22 Il pane di Lentini Il pane di Lentini è stato incluso nella lista dei presidi Slow Food come articolo della gastronomia tipica siciliana degno di tutela per via dell’elevato carico di conoscenza e di tradizione insito nel suo complesso protocollo di produzione. Prodotto nei comuni di Lentini e Carlentini (Sr), un tempo era preparato dalle donne, che portavano l’impasto da cuocere nei forni in pietra alimentati con fuoco di legna; parte del pane era poi lasciata al proprietario del forno in pagamento del suo utilizzo. L’aggiunta alla semola di grano duro di una parte di farina di timilia, un grano tardivo coltivato ormai solo in esigue zone della Sicilia, conferiva al pane una più lunga conservabilità. L’impasto odierno è costituito da farina di semola di grano duro, sale e acqua (sette litri ogni dieci chili di farina). Il lievito usato comunemente è quello di birra, anche se non pochi fornai stanno tornando al lievito madre, il cosiddetto “crescente”. L’impasto riposa per una-due ore, secondo la stagione e la quantità di lievito impiegata. I pani, del peso di mezzo chilo, sono modellati a forma di esse e cosparsi di semi di sesamo in superficie. La cottura, della durata di circa 45 minuti, avviene in forni di pietra con fuoco diretto di legna (gusci di mandorle e, in misura minore, rametti di olivo e arancio). Il prodotto che si ottiene presenta mollica compatta con alveoli di piccola dimensione, crosta sottile e morbida. La laboriosità del processo produttivo limita la produzione a una decina di laboratori artigianali; da qualche anno si sta assistendo a un rinnovato interesse da parte dei consumatori, favorito da una ristrutturazione dei vecchi forni e da una maggiore attenzione agli aspetti igienici della lavorazione. Lentini Città delle arance Basterebbe solo un bicchiere di succo di arancia a colazione a far fronte alle necessità energetiche dell’organismo nella prima parte della giornata. E una spremuta d’arancia è in grado di ripristinare velocemente buona parte delle risorse energetiche consumate durante l’esercizio di una attività sportiva. Le arance rosse contengono le antocianine, che conferiscono alle arance il caratteristico colore rosso più o meno intenso a seconda della varietà, del grado di maturazione e delle condizioni pedoclimatiche. Appartengono a questa categoria solo le arance di qualità Tarocco, Moro e Sanguinello. Le “antocianine”. sono state riconosciute essere dei potenti antiossidanti, in grado di apportare numerosi benefici all’organismo. Grazie dunque alle antocianine, le arance rosse di Sicilia si pongono ai vertici della classifica dei frutti salutari e della sana alimentazione. 24 Lentini City of oranges A glass of orange juice for breakfast would be enough to satisfy the body’s energy needs in the first part of the day. Una volta che avrete sbucciato le arance, tagliatele a fettine alte circa 1 cm (o se preferite a tocchetti), e riponetele su di in un piatto da portata, eliminando gli eventuali semi. Mondate la cipolla rossa (o il cipollotto), affettatela finemente e riponetela in una ciotola (se volete addolcirla, lasciatela in ammollo in abbondante acqua fredda per almeno 10 minuti, poi scolatela e asciugatela per bene). In una terrina a parte, sbattete con una forchetta l’olio, il sale ed il pepe, creando un’emulsione. Mettete in una ciotola le fette di arance, la cipolla unite le olive e condite il tutto con l’emulsione di oilo, sale e pepe : lasciate riposare l’insalata di arance così condita per 10 minuti a temperatura ambiente e poi servite. Let the orange salad flavored this way stand for 10 minutes at room temperature before serving. 26 “CUDDURUNI” E’ una sorta di pizza coperta e farcita di tante squisitezze che ci offre la nostra terra. Lo si può farcire con broccoli, che vengono prima soffritti e si può aggiungere anche la salsiccia a tocchetti e l’estratto di pomodoro, strisciato con le dita direttamente sulla pasta base. Si può farcire anche con cipolla soffritta, anche questa con aggiunta di un pò di passata di pomodoro, insaporita dall’estratto di pomodoro. Una verdura tipica sono gli “anciti” una sorta di spinaci nostrani che, nella ricetta originale vengono messi a crudo, tagliati finemente e messi ad asciugare con il sale in uno scolapasta (per eliminare totalmente l’acqua) poi si aggiunge abbondante prezzemolo e si dispone il tutto sulla pasta base. Ancora è possibile farcirli con le patate, tagliate a fettine sottili e fritte. Una volta disposta la farcita che più si preferisce sulla base, viene coperto il tutto da un secondo strato di pasta che viene poi accuratamente chiuso formando una sorta di bordino con le dita, che sembra quasi un ricamo e che tutte le brave donne lentinesi sanno fare benissimo. per la pasta la ricetta è:1 kg di farina di semola,300 gr di farina “00”, 30 gr di sale, 1 panetto di lievito, 1 bicchiere di olio…e alla fine non resta che gustare tutte queste prelibatezze!!! 27 “CUDDURUNI” This is ‘a kind of pizza covered and stuffed with so many delicacies that our land gives us.
