Si potrebbe chiudere così, in poche immagini e suggestioni, la descrizione di un mese, quello di novembre, che nel Salento è tempo di feste, di tradizioni, di nuovi assaggi. Non potevano, perciò, mancare, in questo numero di Salento Dove, i rimandi alla festa di San Martino, che nasce come momento di celebrazione dell’inizio dell’annata agraria, che nel Salento leccese va proprio dal 12 Novembre all’11 Novembre dell’anno successivo, e che oggi è un appuntamento ricco di storia, tradizione e folclore che celebra il vino novello. E poi tutti i piatti tipici della tradizione culinaria salentina, che ben si sposano con i calici rossi. Tra tutti, un posto d’onore meritano le pittule, frittelle di pasta lievitata in diverse varianti a seconda degli ingredienti a disposizione. Ma poi tanto altro, dalle tradizioni locali alle degustazioni, dallo sport al teatro, dai mercatini solidali alle feste popolari, non c’è veramente pericolo che nel Salento ci si possa annoiare. Neppure a Novembre. Stories of witches and thieving saints, pictures of lit barbecues and laid tables, the scent of pittule, new wine and roasted chestnuts. These impressions could be enough to describe the month of November, which in Salento is a time of holidays, tradition, and the taste of the new. So in SalentoDove of this month we could not avoid to talk about the holiday of Saint Martin, that originates as a celebration of the new agricultural year that around these parts starts on the 12th of this month and runs until the 12th of November of the following year. Today Saint Martins is a tradition rich in history, tradition and folklore celebrating the new wine. Not to mention all the typical dishes of the Salentine cuisine that goes so well with those glasses of red. The varieties of fried dough pittule based on what ingredients you have at your disposition, certainly deserve the place of honour. But there is so much more to enjoy, from local traditions to tastings, from sport to theatre, from farmer markets to folk festivals, in Salento you never have to fear to be bored. Il Santo nasce nel 316 ed è figlio di un ufficiale dell’esercito romano. Egli si arruola, giovanissimo, nella cavalleria imperiale, prestando poi servizio in Gallia. Appartiene a quegli anni l’episodio che tutti conoscono. Durante una ronda notturna, infatti, Martino incontrò, in pieno inverno, un povero seminudo e, non avendo più denari, prese la spada, tagliò in due il proprio mantello e ne donò metà al povero. La notte seguente egli vide in sogno Cristo, avvolto in quel mantello, che gli sorrideva riconoscente e che diceva ai suoi angeli: “Ecco qui Martino, il soldato romano che non è battezzato, egli mi ha vestito”. Quando Martino si risvegliò il suo mantello era intero. L’anno successivo Martino ricevette il battesimo e rimase nell’esercito per circa vent’anni, durante i quali condusse una vita da vero cristiano. A quarant’anni lasciò l’esercito e si fece monaco. Fu poi consacrato vescovo il 4 luglio del 371 e il suo episcopato durò 26 anni. Egli fu un vescovo attivo ed energico The most important celebration of Saint Martin of Tours in Salento, is the one in Taviano. The Saint is born in 316, son to an officer of the Roman army. At a very young age he enrols himself in the imperial cavalry doing service in Gaul. And it is in those years that the episode we all know takes place. In the middle of winter, during a night patrol, Martin met a poor half-naked man. Being out of change he took his sword and cut his mantle in two, giving one half to the poor man. The following night in a dream he saw Jesus wrapped in that same mantle. Jesus is smiling at him and says to his angels: “Here you see Martin, a Roman soldier and not even baptised, and he has dressed me”. When Martin woke up his mantle was whole again. The following year he was baptized and he stayed in the army for about twenty years living the life of a true Christian. At the age of forty he left the army to becoma a monk and on the 4th of july 371 he was consecrated as a bishop and his episcopate lasted 26 years. He was an active and energetic propagator of faith. La Città di Taviano rende onore al suo amatissimo santo patrono con un intenso programma religioso, che parte da venerdì 4 novembre. Il programma Civile di festeggiamenti comincia invece giovedì 10 novembre con la Processione accompagnata dalla Banda “Città di Taviano”. Venerdì 11 il Concerto Bandistico “Città di Squinzano” e alle ore 21:00 i Fuochi Pirotecnici. Sabato 12 ancora la Banda “Città di Taviano” e, a seguire, una frizzante serata musicale con “Peccati di Gola” e “Lu Rusciu nosciu”. Le luminarie con accensione musicale sono a cura della ditta “Fabrizio Beatrice” “Il messaggio centrale di tale festa” spiega il Sindaco di Taviano Giuseppe Tanisi “non ha altro scopo se non quello di stigmatizzare uno stile di vita, quello del nostro Protettore, caratterizzato dal tratto della solidarietà e della concordia. È, quello della solidarietà, uno dei valori che intendiamo rendere vivo e pulsante del vivere civile della nostra Taviano, unitamente a quello, ad esso propedeutico, della concordia quale condizione di progresso umano e sociale del nostro popolo. Benché ormai vecchio, il nostro San Martino non morì a Tours, ma a Candes, dove si era recato a profondere le residue energie della sua tarda età per mettere pace nel clero locale; un modello di uomo, ancorché di santo, cui ispirarci per un fattivo e generoso impegno alla promozione di tali valori quale fecondo servizio alla nostra comunità cittadina cui apparteniamo e che amiamo, e doveroso e gradito omaggio ai 10 | Novembre 2016 of evangelization lead him to create what can be defined as the first centre of clerical training of Gaul in Marmoutier. he died on November 8 397. San Martino sia per tutti icona di santità non solo da venerare, ma immagine viva di Cristo, esempio da imitare. Abbiamo voluto quest’anno dedicare più tempo alla preparazione della festa, dandoci l’opportunità di gustarla meglio, con un Settenario di preparazione che vivremo insieme a tutte le realtà, parrocchiali e cittadine. Tra gli eventi più attesi dall’autunno salentino c’è proprio “Vino Novello in Festa”, a Leverano, giunto quest’anno alla sua 19esima edizione. Lasciandoci alle spalle la periferia di Lecce godiamo della vista degli olivi, delle pagghiare - i tradizionali edifici di pietra - e degli orticelli disseminati sul paesaggio. Qua e là ecco un uomo anziano che zappa la terra rossa o raccoglie cicorine spontanee e rucola. Un trattore passa tra gli alberi. Le stazioni dei paesini di campagna si susseguono alla vista e i vagoni si separano a Zollino, dove i binari prendono direzioni diverse. A merenda finita è arrivato il momento di provare a realizzare il sogno delle mie figlie appassionate di treni, così ci spostiamo verso il primo vagone. Il personale del treno è molto gentile: proviamo la vera ospitalità del Salento quando ci permettono di entrare nella cabina del capotreno. Uscendo dalla stazione di Gallipoli veniamo accolte da una spaziosa piazza verde. Dopo averla attraversata ci dirigiamo verso la strada principale, Corso Roma, e andiamo verso il porto e la città vecchia. Da entrambi i lati del Corso vediamo di sfuggita il mare dalle strade laterali e mi assale la strana sensazione di camminare su una barca. Ci spostiamo dalla luce all’ombra, dove l’aria è ancora fresca, e poi di nuovo al sole, quando sentiamo presto il bisogno di toglierci le giacche. I gabbiani volano sopra di noi mentre ci avviciniamo al porto e superiamo un matrimonio dopo l’altro: gli stupendi edifici sul lungomare fanno da sfondo perfetto per un album di nozze. L’acqua chiara attrae immediatamente le ragazze, che si fermano ad ammirare i banchi di piccoli pesci attorno alle barche da pesca attraccate al molo. Attraversiamo il ponte ad arco del XVII secolo, che collega l’isola fatta di pietra calcarea dove 24 | Novembre 2016 the horizon. Stepping out of the main station of Gallipoli, we are greeted by a spacious green square. Crossing it we make our way to the main street, Corso Roma, and head towards the harbour and the old town. To both sides looking down the streets we see glimpses of the sea and I have the peculiar sensation of walking on a ship. We move from sun to shadow, where the air is still cool, and from shadow to sun, where soon we need to remove our jackets. Seagulls swing above us as we approach the port and we pass one wedding party after the other, the beautiful buildings on the waterfront being the perfect wedding photo backdrop. The clear waters instantly attracts the girls who admire the schools of small fish circling the docked fishing boats. We cross over the 17th century arched bridge connecting the limestone island carrying the old town to the rest of Gallipoli, and linger on the wooden walkways of the port in the shadow of the Byzantine castle with its fortified walls before entering the fish market on the opposite side of the street. The stalls are closing, but there is still time to relish the sight and scent of freshly fished mussels, clams and oysters on display in big ceramic bowls and the collections of colourful shells. I banchetti stanno per chiudere, ma c’è ancora tempo per godere della vista e del profumo delle cozze appena pescate, delle vongole e delle ostriche in mostra in grandi coppe di ceramica bianca e della collezione di conchiglie colorate. Ci fermiamo in uno dei ristoranti attorno al porto per dar riposo ai piedi e per riempirci la pancia con un pranzo di pesce fresco a base di “fracaia” (pesciolini fritti) e pasta ai ricci di mare. Continuiamo il nostro breve viaggetto di un solo giorno, perciò non entriamo né nel castello per vedere la mostra allestita in questo periodo, né nel Museo Civico con la sua ampia collezione di animali e manufatti; ci siamo limitate a passeggiare tra gli stretti vicoletti dell’intricata mappa stradale, traccia del dominio islamico della città nel 900 a.C. Le ragazze giocano in piazza mentre io ho il tempo di ammirare la “Fontana Greca” del XVI secolo, scolpita meravigliosamente, e dare una sbirciatina all’imponente cattedrale barocca prima di tornare indietro per prendere il treno pomeridiano. Questa volta il treno è puntuale e noi facciamo giusto in tempo a gustare un gelato artigianale prima del “tutti a bordo”. Ormai le ragazze sono stanche e il viaggio di ritorno trascorre velocemente, mentre si addormentano sui sedili marroni. Il nome “Gallipoli” deriva dal Greco e significa “città bella”, ciò che effettivamente è. Ma la bellezza, si sa, risiede negli occhi di chi guarda e in Salento va trovata ovunque – anche nei graffiti, nei ritardi del treno e negli arredamenti degli anni ’70. the restaurants surrounding the port to rest our feet and fill our bellies with a lunch of fresh fish composed of “fracaia” (tiny fried fish) and pasta with sea urchin. This being just a short day trip, we do not enter the castle, as we continue our visit, to see the exhibition currently on display or the Civic Museum with its broad collection of animals and artefacts, but limit ourselves to slandering about the narrow alleys of the tortuous street plan remnant of the 900 AD Islamic dominance of the city. The girls play on the square as I admire the beautifully sculpted “Greek Fountain” from the 16th century, and we have a peak into the imposing baroque cathedral before heading back to catch the afternoon train. This time the train is on time and we just have the time to enjoy a homemade ice cream before it’s “all on board”. By now the girls are tired and the journey home passes quickly as they fall asleep on the brown seats. Gallipoli comes from Greek and means “beautiful city” and indeed it is. But beauty as we know, lies in the eye of the beholder and is to be found everywhere you look in Salento – even in train delays, graffiti and interiors of the 70ies. Era una mattina di novembre di cui ricordo ancora il pungente vento di tramontana e il calore insolito del sole. Uno di quei giorni in cui metteresti i calzoncini corti sul pullover senza sentirti troppo a disagio. Mia nonna era indaffarata in cucina. Nessuna novità. In ogni ricordo che oggi preservo di mia nonna compare la sua cucina. Sullo sfondo, accanto, sopra, sotto. Mia nonna e la sua cucina erano indissolubili. Come un’unica entità. “Cosa fai di buono, nonna”? Un odore di frittura si impossessò dei miei seni paranasali, diffondendosi in breve attraverso ogni apparato vitale, compreso quello digestivo, dove incontrò il latte che avevo appena bevuto a colazione. E dall’incontro nacque un conato di vomito. “La tramuntana è signura comu a tie” mi disse con il suo solito sarcasmo. Acqua tiepida Nonna Anna tempera l’impasto col cucchiaio e con la mano, finché questo non si trasforma in una sostanza filamentosa, ectoplasmica. Lascia riposare la massa così ottenuta per tre ore, coperta da una tovaglia pulita e da una coperta di lana. Così, per essere più sicuri che stia al caldo. Trascorse le tre ore, si prepara l’olio bollente e abbondante e si immergono le pittule. La forma delle pittule si ottiene stringendo la massa e facendo fuoriuscire dalla mano piccole palline che saranno staccate e immerse nell’olio bollente dall’altra mano, precedentemente inumidita per rendere più semplice l’operazione.
