L’anno che ci siamo lasciati alle spalle è stato il più ostico per l’Italia dal dopoguerra, non solo in termini di risultati finanziari ed economici, ma soprattutto per un comune clima di pessimismo e sconforto generalizzato in tutti noi. Le nostre imprese, piccole o grandi che siano, sono luoghi in cui le persone si mettono all’opera per rendere quel pezzo di realtà a loro affidato più consono ai bisogni dell’uomo, in un’ottica di miglioramento e costante desiderio di evoluzione. Così Tecnoeka promuove quest’assunzione di responsabilità quotidiana nel mare magnum di questo turbolento mercato globale, in un Paese che ancora è migliorabile in tanti aspetti. Urge modificare e resettare il nostro modus pensandi se vogliamo ricominciare a credere, a pensare, a fare, nella speranza che qualcosa cambi..e cambierà se noi tutti lo vogliamo. A good dose of creativity combined with a pinch of courageous realism: these are the virtues that have and are still accompanying the majority of entrepreneurs, collaborators and professionals along the rough road of obstacles, which is our world economy in this delicate period in history. Last year was the most difficult for Italy since after the Second World War, not only in terms of financial and economic results, but above all due to a climate of pessimism and discouragement felt by all of us. Our businesses, small or large, are places where people work to make that piece of reality they are responsible for comply more with people’s needs, from the viewpoint of improvement and the constant desire to evolve. Therefore Tecnoeka promotes taking on this daily responsibility in the enormous sea of this turbulent global market, in a country that can still improve in many ways. Our way of thinking needs to be modified and reset if we want to start believing, thinking and doing again, in the hope that everything can improve, that everything must improve. Thanks to the sponsorship of Tecnoeka, the national team of pastry chefs participated in the World Pastry Team Championship held in Phoenix, Arizona from July 5 - 7, 2010. For the first time Italy stood on the podium with Diego Crosara, Fabrizio Galla and Davide Malizia, together with the team manager Iginio Massari and the second juror, Biagio Settepani. The theme of the championship was childhood and the pastry chefs competed with entremets, an ice cream cake, a plate dessert, three types of single servings and three types of chocolates, as well as an artistic creation in sugar and chocolate and a creative tray made of icing. The project also enabled Tecnoeka to get to know and collaborate with the Cast Food School in Brescia, which the team trained at, providing a KF 1010 E UD oven for their stand at the SIAB fair. The SIAB fair - International Techno Bake Exhibition dedicated to the baking and pizza sector, held in Verona from May 22 - 26, was an occasion for Tecnoeka to present new products alongside the key ones already presented and known on the market. The company business card was immediately recognizable by the stand design predominated by the company colours of black and yellow, a strong impact that makes Tecnoeka immediately stand out, also thanks to the 4-meter high wall sporting the company’s graphics. The stars were two large 10-pan ovens, the KF 1010 A UD in the electric version and the KF 1010G E UD in the gas version. For the first time the new module with proofer, intermediate support, oven and hood was also presented: the response to users’ needs to be able to concentrate various work equipment in little space. Another preview was the KF 725 E UD 2/3 GN oven: a compact product that concentrates the technology of the Tecnoeka range of electronic products. Apart from a series of reference models for the sector, the exhibition was also complete with the KL 898 and KL 1010 proofers. Mai nome fu più appropriato a presagire il ruggente futuro della città. Efficienza quasi surreale, treni che spaccano il secondo, evoluzione continua e torri skyline al limite della spavalderia. Grazie al traffico di oppio e alle attività dei pescatori di perle, Singapore ha potuto partecipare ad uno straordinario sviluppo edilizio ed economico, passando dalla nebulosa immagine di città attraversata dai risciò all’attuale modello di moderna puntualità e funzionalità. Suo tratto fortemente caratterizzante è la multietnicità, mix di razze e culture differenti che vivono in pace ed armonia: già negli anni ’20 Singapore era crocevia e punto d’incontro per i mercanti provenienti dalla Cina, da Giava e dall’India, dando vita ad una città asiatica arricchita da note cinesi, malesiane ed indiane, dal feng shui al culto degli Avi. La politica singaporiana ha scelto di privilegiare la coabitazione armoniosa delle varie culture piuttosto che un’omogeneizzazione forzata a favore di una delle tre grandi etnie, correndo tuttavia qualche rischio in termini di rigore e censura, talvolta estremi. Basti pensare al divieto di consumare gomme da masticare in tutto il Paese, sigarette nei luoghi pubblici, attraversare la strada al di fuori di un passaggio pedonale può costarvi 50 $. Il consumo di droghe è punibile con 10 anni di prigione e/o un’ammenda di 20.000 $. Quest’anno, giunta alla XVII edizione, si è svolta a Singapore la fiera biennale Food Hotel Asia 2010 - FHA - una delle più importanti manifestazioni asiatiche del settore Alimentare, Vini, Bevande ed Attrezzature Alberghiere. Tecnoeka, presente nel padiglione ICE che celebra come di consueto l’eccellenza della produzione Made In Italy nel settore delle attrezzature per la ristorazione, coglie la grossa opportunità legata alla manifestazione: considerando la posizione strategica di Singapore quale hub internazionale e porta d’ingresso alle regioni del Sud Est Asiatico, la partecipazione a FHA consente ai mercati internazionali di accedere ed incrementare i consumi interni del paese legati al settore ICE, ancora scarsamente sviluppato. Its most distinctive feature is its multiethnicity, a mix of different races and cultures that live in peace and harmony: already back in the 1920’s Singapore was a crossroads and meeting point for merchants coming from China, Java and India, giving life to an Asian city enriched by Chinese, Malaysian and Indian notes, from feng shui to the cult of ancestors. Singapore has chosen to favour the harmonious cohabitation of its various cultures rather than the forced homogenization based on one of the three large ethnicities, however running the risk in terms of rigor and censorship, at times extreme. Just think of the ban on chewing gum throughout the country, as well as smoking cigarettes in public places; jaywalking can cost you $50. Drug use is punishable with 10 years in prison and/or a $20,000 fine. Trafficking is sanctioned, in the best of cases, from 20 to 30 years in prison and 15 strikes with a cane, in the worst scenario, with the death penalty. Despite such internal restrictions, Singapore affirms an international economic and financial supremacy that mainly derives from commercial trade with foreign countries, with a percentage of exports equal to 191% of the GDP. This year, Singapore hosted the 17th edition of the biennal fair Food Hotel Asia 2010 - FHA - one of the most important Asian events in the Food, Wine, Beverage and Hotel sector. Tecnoeka, present in the Institute for Foreign Trade pavilion, which celebrates the excellence of Made In Italy production in the sector of catering equipment, took advantage of the huge opportunity tied to the event: considering the strategic position of Singapore as an international hub and port of entrance to Southeast Asian regions, participating in FHA permits international markets to have access to and to increase the internal consumption in the country tied to the Institute for Foreign Trade, still little developed. Il settore distributivo, per i prodotti di largo consumo, vale all’incirca 100 miliardi di euro, confermandosi come uno dei più rilevanti del nostro sistema economico. Dal 2004 ad oggi il comparto della GDO ha mostrato un trend decisamente negativo: ciò che maggiormente ha influito sulla crisi, situazione mondiale a parte, è stata la dinamica dei prezzi esaltata dall’impatto del change-over dell’euro, la saturazione di alcuni mercati geografici, le modifiche delle abitudini e dei modelli di consumo, nonché una variazione dei fenomeni socio demografici dei consumatori. Nell’offerta dell’industria alimentare, c’è la tendenza da parte del consumatore a cercare un maggiore contenuto di servizio, che riduce i confini di settore tra distribuzione, ristorazione ed industria alimentare. Le imprese eccellenti stanno ridefinendo nuove modalità di approccio e comunicazione verso il consumatore, in direzione di un consolidamento delle dimensioni di rassicurazione. Troppo spesso le relazioni tra brand e consumatore sono state improntate a forme di anonimato, senza incrementare il coinvolgimento, la soddisfazione e le aspettative dei consumer. Le aziende devono avvicinarsi e riconsiderare la relazione con il cliente, per soddisfare le sue reali attese facendo capire quanto sia importante il suo punto di vista, per rendere efficace il consumo e la selezione dei prodotti offerti. Over the past few years consumers, both Italian and foreign, have greatly modified their purchasing processes, indifferently choosing from different sales formats according to the category of goods, the brand or the product they are looking for. The distribution sector, only for large-scale consumer goods, is worth around 100 billion Euros, making it one of the most important divisions of our economic system, even though the recent trend has not been that comforting. In fact, from 2004 till today the division of the organized large-scale distribution has shown a decisively negative trend: that is, what has most greatly affected the crisis, the world situation aside, in particular has been the price dynamic intensified by the impact of the change-over of the Euro, the saturation of some geographic markets, the changes in consumer habits and models, as well as a variation in sociodemographic phenomena of consumers. On the subject matter, looking at food industry supply, a trend can be noted in which the consumer searches for an increasingly greater service content, an element that tends to exponentially decrease the sector divisions among distribution, restaurants and catering and the food industry. Excellent companies are therefore redefining new ways to approach and communicate with the consumer, in the direction of a substantial and concrete consolidation of the dimensions of reassurance. Too often the relations between brand and consumer have been marked by anonymity, that is without having foreseen mechanisms and processes aimed at increasing consumer involvement, satisfaction and above all expectations. In this moment companies are therefore obliged to get closer to the client and reconsider their relationship, in view of satisfying the client’s real expectations with the intention of making him understand how important his point of view is, how much is being done to make his approach to consumption and to the selection of products offered useful and efficacious. TASTE OF MILANO La tendenza deL temporary restaurant TASTE OF MILANO the temporary restaurant trend Nuova tendenza in arrivo da Stati Uniti e Gran Bretagna sono i Temporary Restaurants, locali creati ad hoc per celebrare eventi, kermesse o manifestazioni, in ambienti fashion e grandi città, aperti per breve tempo: uno, tre, sette giorni, un mese, terminato l’evento, il ristorante chiude i battenti. Il primo è stato, a New York, il Bon Appetit che, per una settimana, ha selezionato 18 new talent della cucina dando via ad un get taste internazionale in edizione limitata. Inizialmente i temporary restaurants erano illegali, con il passare del tempo e la diffusione del fenomeno, l’allestimento di ristoranti a tempo limitato con orari particolari e in location alternative, è divenuta una vera e propria moda tanto che nella preparazione di un evento gastronomico di questo tipo vengono coinvolti architetti, designer, grafici e chef stellati. La prima temporary cooking experience italiana è andata in scena a Milano, parco Sempione dal 23 al 26 settembre: Taste of Milano, ha raccolto i 12 migliori chef della città - da Carlo Cracco a Davide Oldani - che per quattro giorni hanno lavorato e messo a disposizione del pubblico la loro maestria, divertendosi a cucinare en plein air e tenendo lezioni e corsi di cucina. Il Teatro degli Chef, le Lounge con i bar esclusivi, il palco della Musica, la Scuola di Cucina, l’Accademia del Vino sono solo alcune delle attrazioni che, insieme ad altre attività divertenti ed educative sul tema enogastronomico, hanno formato la sostanza di questo incredibile appuntamento, una vera e propria festa dei ‘’foodies’’. Tutto, dagli arredi, ai dipinti e decori, rievoca un periodo storico contraddistinto da splendore, grazia e raffinatezza: un viaggio nella storia e nell’arte curato da Leopoldo Montresor, padrone di casa insieme alla moglie Maria Evelina Acampora, esperto viaggiatore e pronipote del celebre scrittore Emilio Salgari che nei suoi romanzi di avventure descrisse l’oriente magico e incantato senza esserci mai stato. Intorno alla Villa colline, alberi da frutto ed una distesa di vigneti, fanno da sfondo ad un paesaggio bucolico e sconfinato, rilassante i sensi, appagante i desideri culinari e capace di concretizzare recondite passioni. Grazie infatti al progetto “Pure Experience” il sogno di diventare vigneron può diventare a tutti gli effetti realtà, per un anno. Gli ospiti della Villa avranno a disposizione un filare di circa cento viti per ciascuno, da prendere in affido con la garanzia di un certificato ufficiale. Si seguiranno tutte le fasi della produzione vinicola, dalla fioritura alla crescita dei grappoli, dal momento della vendemmia sino alla vinificazione assistita da esperti viticoltori, che sboccerà nel riposo in barrique e dunque nell’imbottigliamento finale. Un’esperienza unica nel suo genere, in virtù del risultato: circa trecento bottiglie per ogni filare con etichetta personalizzata - e relativa annata di produzione - che saranno spedite direttamente a casa. Altro punto forte della Villa è il suo ristorante, Arquade, dal nome arcaico della località - in latino arquadis - accreditato da due stelle Michelin e premiato con tre forchette dal Gambero Rosso nel 2005, entrato da poco a far parte a pieno titolo della ristretta cerchia dei Relais Gourmands della catena dei Relais & Chateaux. Per una pausa pranzo veloce e informale ecco invece il Quar 12 , nuovo concept di ristorazione più veloce e informale, con piatti della tradizione culinaria estera e vini in abbinamento al bicchiere. Presente in entrambe le strutture è lo chef Massimo Sola, classe 1966. Dopo pochi anni di apprendistato e una cultura affinata dalla frequentazione di colleghi blasonati in Italia, Francia e Paesi Baschi, è riuscito ad ottenere una stella Michelin nel 2008 con il ristorante “I Quattro Mori” di Varese. La sua cucina è gentile, come ama lui stesso definirla, peculiarità che trova riscontro nel suo carattere. Un’abilità, la sua, capace di evolversi nel corso degli anni e trovando equilibrio in giochi di sapori talvolta forti, talvolta più gentili, ma sempre apprezzabili nelle consistenze. Più personalità e meno accessori per esaltare tutti gli ingredienti in modo netto e preciso al palato. Ecco la filosofia della cucina di Massimo: “Credo nella qualità della materia prima, nella sua continua ricerca e nella potenzialità della reinterpretazione per far rivivere i gusti e le ricette di un tempo.” Materia, tecnica, pensiero, i tre concetti cardine che identificano Massimo nei suoi piatti, e permettono agli ospiti del relais di godere, assaporando intensamente, un piacevole mix di tradizioni culinarie, storiche e artistiche, scrupolosamente conservate a Villa del Quar. Not far from Verona, surrounded by the Valpolicella hills and vineyards and reached by an ancient Roman road is the Villa del Quar, an elegant mansion dating back to the Napoleonic period and today an five-star luxury hotel, a charming place of timeless beauty. Everything, from the furniture and paintings to the decorations, faithfully follows and evokes a historical period marked by splendour, grace and refinement: a journey through history and art curated by Leopoldo Montresor, the owner together with his wife Maria Evelina Acampora, an expert traveller and great grandson of the famous write Emilio Salgari, who described the magical and enchanted Orient in his adventure stories without ever having been there. The Villa is surrounded by only hills, fruit trees and endless vineyards, which make up the backdrop of a bucolic and endless landscape, and relaxes the senses, satisfies culinary desires and realizes hidden passions. Thanks in fact to the project “Pure Experience”, the dream of becoming a vigneron can become reality, even if only for a year. Guests at the Villa will have a row of about one hundred vines at their disposal, with the possibility of taking care of it guaranteed by an official certificate. The client will also have the opportunity to follow all the phases of grape production, from the blossoming to the growth of the grapes, from the moment of harvesting them to the winemaking process assisted by expert grape-growers, which will lead to resting in barrique and then the final bottling. A unique experience of its kind, above all considering the result: in fact, around three hundred bottles will be produced from each row with a personalized label - and the relative year of production - which will be directly shipped to the client’s home, ready to be proudly tasted for the occasion of a meal with friends and family. Another strength of the Villa is its restaurant, Arquade, from the ancient name of the place – in Latin Arquadis – which boasts 2 Michelin stars and has been awarded three forks by the Gambero Rosso in 2005, recently joining the tight circle of the Relais Gourmands in the Relais & Chateaux chain. For a quick and informal lunch there is Quar 12, a new restaurant concept that is faster and more informal, with traditional foreign dishes and paired glasses of wine. The host in both structures is the chef Massimo Sola, born in 1966, essentially self-taught. After a few years as an apprentice and a refined culture from associating with title-winning colleagues in Italy, France and the Basque Countries, he succeeded in obtaining a Michelin star in 2008 with the restaurant “I Quattro Mori” in Varese. His cuisine is kind, as he loves to define it, which fully reflects his personality. His skill has been able to evolve over the years, finding balance with at times strong flavours, at others softer, but they can always be appreciated in their consistencies. More personality and fewer accessories to clearly and precisely exalt all the ingredients on the palate. This is Massimo’s cooking philosophy: “I believe in the quality of the ingredients, in constant research and the potential to reinterpret to revive the flavours and recipes of the past.” Material, technique, thought: the three fundamental concepts that identify Massimo with his dishes and permit guests at the relais to enjoy, intensely tasting, a pleasant mix of culinary, historical and artistic traditions, scrupulously preserved at Villa del Quar. www.tecnoeka.com Ricetta consigliata: risotto al rosmarino, tartare di crostacei e bouillabaisse ridotta ADVICE RECIPE: Rosemary risotto, crustacean tartar and reduced bouillabaisse Quattro domande a MASSIMO SOLA Qual è il piatto a cui si sente più legato, e che meglio la rappresenta, e perché? “Risotto, tartare di crostacei all’arancia e bouillabaisse ristretta perchè mi è costato più di due anni di lavoro, un piatto apparentemente molto semplice... apparentemente.” La più grande emozione gastronomica della sua carriera? “Dopo due anni di cucina da autodidatta... la telefonata di Paolo Marchi per dirmi: Massimo, hai preso la stella Michelin (ancora adesso tremo mentre sto scrivendo).” Cosa consiglierebbe ai cuochi “della domenica” per ottenere un buon piatto? “Niente elucubrazioni mentali... pulizia nel piatto, pochi elementi e conoscenza del prodotto che si intende utilizzare.” Un aneddoto divertente capitato in cucina… “Chef... chef... il signore singolo che ha prenotato è sicuramente un ispettore... ho visto la macchina... una Renault con pneumatici Michelin, è certo! A fine cena i complimenti non sono arrivati da lui (anzi se ne era andato pure frettolosamente), ma da un altro signore seduto in sala il quale al momento di pagare estrae la carta di credito e paga..., cade il mio occhio sulle generalità... il suo nome era Fausto Arrighi. Per chi non lo sapesse, il direttore Michelin Italia.” Four questions to MASSIMO SOLA Which dish do you feel most tied to, which best represents you and why? “Risotto, crustacean tartar with orange and the reduced bouillabaisse because it took me more than two years’ of work, an apparently very simple dish... apparently.” Ingredienti • 70 gr riso vialone nano • 10 gr brodo • 10 gr parmigiano • 250 acqua • 100 gr gamberi di Sicilia • mezza arancia • 2 gr salsa di soia • 10 gr olio extra vergine di oliva • rosmarino in polvere • sale qb Preparazione Procedere come per un normale risotto per la cottura, e dopo 13 minuti mantecare il riso con il parmigiano e il rosmarino. Mettere nel piatto, aggiungere la bouillabaisse a cerchio sul riso. Fare una tartare con i gamberi condita con olio, succo di arancia, soia e sale, e disporne poi un cilindro al centro del piatto. Ingredients • 70 gr vialone nano rice • 10 gr broth • 10 gr parmesan • 250 water • 100 gr Sicilian shrimp • Half an orange • 2 gr soy sauce • 10 gr extra-virgin olive oil • ground rosemary • salt to taste Preparation Cook as a normal risotto and after 13 minutes whisk the rice with the parmesan and rosemary. Put on the plate, add the bouillabaisse in a circle on the rice. Make the tartar with the shrimp mixed with the oil, orange juice, soy sauce and salt, and place in a cylinder in the centre of the plate. The greatest gastronomic emotion of your career? “After two years of working as a self-taught chef... the phone call from Paolo Marchi to tell me: Massimo, you got a Michelin star (I still tremble today while I’m writing this).” What would you recommend to amateur cooks to make a good dish? “No mental elaborations... a clean dish, few ingredients and knowledge of the products you want to use.” A funny anecdote from the kitchen … “Chef... chef... the single man who booked is definitely an inspector… I saw his car…a Renault with Michelin tires, it’s obvious! At the end of dinner he didn’t compliment me (in fact, he left in quite a hurry), but from another man sitting in the room, who pulled out a credit card to pay…, and the name on the card was Fausto Arrighi.
