You can, of course, let yourself be guided by the taste. It is easy enough to identify the characteristic, unique and personal flavour of a good craft beer. But to really understand the difference, we need to look further. Take the raw materials for example. Water, cereals (barley and wheat), hops and yeast are the only basic and natural ingredients of a true craft beer. The production process is different too: craft beer is not pasteurised like its industrial counterpart because pasteurisation kills the yeast microorganisms necessary for fermentation. In the same way, craft beer contains no preservatives and is unfiltered, another two peculiarities that make a big difference. And last but not least comes the expertise of the master brewer, whose passion and skill give the finished product its unique flavour and identity. Distinctive features: very similar to tuber brumale vitt. but with lighter coloured flesh. Emanates a strong smell of musk. TUBER AESTIVUM VITT. (SUMMER TRUFFLE) Local names: “tartufo d’estate”, “scorzone”, “maggengo”, “maggiolo”, “statereccio”. Period of maturity: from May to December. Distinctive features: blackish, lumpy skin, hazelnut coloured flesh with white marbling. Smells of mushrooms. TUBER UNCINATUM CHATIN VITT. (HOOKED TRUFFLE) Local names: “tartufo uncinato”, “tartufo nero di Fragno”, “tartufo grigio di Borgogna”. Period of maturity: autumn/winter. Distinctive features: very similar to tuber aestivum vitt. TUBER MACROSPORUM VITT. (SMOOTH BLACK TRUFFLE) Local names: “tartufo nero liscio”. Period of maturity: from October to December. Distinctive features: blackish skin with rustcoloured markings; flesh varies from whitish to brown-purple on maturity. TUBER MESENTERICUM VITT. (ORDINARY BLACK TRUFFLE) Local names: “tartufo nero ordinario di Bagnoli”. Period of maturity: from October to January. Distinctive features: black in colour and spherical in shape with a deep cavity in the middle. Flesh ranges from whitish to brown-purple with white marbling.
