EQUILIBRIO E NATURA! gli ingredienti CEREALI Il malto, derivato della lavorazione dei cereali, costituisce l’ingrediente fondamentale della birra apportando gli enzimi naturali necessari per la fermentazione. L’orzo conferisce alla bevanda un gusto morbido e pulito, il frumento dà una nota fruttata e rinfrescante, l’avena aggiunge un carattere speziato, il riso e il mais alleggeriscono il gusto finale. LUPPOLO Il luppolo è un rampicante molto simile alla canapa, della stessa famiglia dell’ortica, del gelso e dell’olmo. La parte utilizzata è il fiore; costituisce il principale aromatizzante per completare il gusto finale della birra. ACQUA E LIEVITO Come per il vino, anche per la birra è l’acqua l’ingrediente principale. A differenza dell’uva però, ricca di succo, nel caso dei cereali è l’uomo a doverne aggiungere in abbondanza (insieme al lievito) per consentire la fermentazione degli zuccheri. LE PRINCIPALI TIPOLOGIE ALE: Birra prodotta con fermentazione a caldo (con lievito ad alta fermentazione). Si distingue in: • Mild: Solo leggermente luppolata, di gusto dolce e di grado alcolico modesto. • Bitter: Molto luppolata e di grado alcolico medio • Pale: Mediamente luppolata, di grado alcolico elevato e di colore che va dal bronzo al rame. • Brown: Mediamente luppolata, di grado alcolico elevato e di colore scuro. India Pale Ale: Originariamente prodotta per l’esportazione in India durante il dominio britannico; grado alcolico e amaro del luppolo molto marcati. • LAGER: Birra fermentata e maturata a bassa temperatura, di colore e grado alcolico variabili. WEIZEN: Birra di frumento, chiara, a grado alcolico ridotto e normalmente molto schiumosa. BOCK: Birra extra-forte, generalmente scura (può essere di tipo Lager o Weizen forte). PILS/PILSNER/PILSENER: Birra di tipo Lager chiara, di solo malto, di grado alcolico medio e con deciso aroma di luppolo fiorito. STOUT: Birra di colore scuro intenso (dal marrone al nero), prodotta con cereale torrefatto e lievito ad alta fermentazione. KRIECK: Birra aromatizzata con omonime ciliegie acidule. FRAMBOISE: Birra aromatizzata al lampone. TRIPEL: Birra extra-forte chiara, fortemente aromatica e luppolata. preparazione? un gioco da ragazzi! 1. Sterilizzare l’attrezzatura che verrà utilizzata per preparare la bevanda. 2. Scaldare il barattolo e versare il contenuto in 3–4 litri d’acqua bollente e 1 kg di zucchero, quindi mescolare fino al completo scioglimento. 3. Versare il mosto ottenuto nel contenitore e aggiungere acqua fredda fino a raggiungere i 23 litri totali. 4. Mescolare e portare a una temperatura di circa 22°, quindi aggiungere immediatamente il lievito mescolando energicamente. 5. Mettere il coperchio sul contenitore, riempiendo il minifermentatore a metà con acqua bollita o distillata. 6. Dopo 2/3 giorni si innescherà il primo processo di fermentazione segnalato dal caratteristico “gorgoglìo”; processo che, mantenendo la temperatura corretta, si concluderà dopo 5-7 giorni, e comunque una volta raggiunto il peso specifico di 1005 (verificabile tramite l’uso del densimetro). 7. Aggiungere lo zucchero necessario direttamente nelle bottiglie sterilizzate (o nel secondo contenitore nelle versioni dotate di questo) e imbottigliare. La bevanda finale è consumabile già dopo poche settimane, anche se la qualità aumenta più a lungo rimane in maturazione (sempre alla temperatura corretta). n.b. in periodi di particolare umidità o forti sbalzi di temperatura, può determinarsi il blocco o il non-innesco della fermentazione; per ripristinare il meccanismo, togliere il cappuccio dal minifermentatore e aggiungere una nuova dose di lievito. NATURE AND BALANCE! ingredients CEREALS The malt, by-product of the processing of the cereals, is the fundamental ingredient of beer, bringing the necessary natural enzymes for the fermentation. Barley gives the drink a smooth and clear flavour, wheat gives a refreshing fruity taste, oat adds a spicy character while rice and corn lighten the final flavour. HOP Hop is a climbing plant very similar to the hemp, of the same family of the nettle, the mulberry and the elm. The flower is the used part and is the main flavouring essence to complete the beer’s final taste. WATER AND YEAST As for the wine, also for the beer water is the main ingredient. Unlike the grapes, very rich of juice, for the cereals it is the Man that has to add plenty of it (together with the yeast) to allow the fermentation of the sugar. MAIN TYPES ALE: Beer produced with warm fermentation (with high fermentation yeast). It distinguishes in: • Mild: lightly hopped with a sweet taste and moderate alcoholic content. • Bitter: strong hop taste with a medium alcoholic content • Pale. Medium hop taste, high alcoholic content and with colour from bronze to copper • Brown: Medium hop taste, high alcoholic content and dark colour. • India Pale Ale: Originally produced for export to India during British rule; high alcoholic content and strong hop taste LAGER: Beer produced at low temperature fermentation and ripening, variable colour and alcoholic content.. WEIZEN: Wheat beer, pale with reduced alcoholic content, normally very frothy. BOCK: Extra strong beer, generally dark colour (can be Lager or Weizen strong). PILS/PILSNER/PILSENER: Lager pale colour, produced only with malt, medium alcoholic content and with well defined hop flower fragrance. STOUT: Intense dark colour beer (from brown to black) produced with roasted cereals and high fermentation yeast. KRIECK: Aromatized beer with Krieck cherries. FRAMBOISE: Raspberry aromatized beer. TRIPEL: Extra strong beer, pale highly aromatized and hopped flavoured preparation? a kid’s game! 1. Sterilize the equipment that will be used to prepare the beer 2. Warm up the can and pour the content in a pot filled with 3-4 l of boiling water and 1 kg of sugar, then mix till total melting. 3. Pour the obtained wort in the container and add cold water till you reach totally 23 l. 4. Mix and bring to the temperature approximately of 22°,then add immediately the yeast mixing energetically. 5. Put the lid on the container, half filling the airlock with boiler or distilled water. 6. After 2/3 days will start the phase one of the fermentation marked by the characteristic “bubbling”; process that, maintaining the correct temperature, will end after 5-7 days, and in any case once reached the specific weight of 1005 (verifiable with the densimeter). 7. Add the necessary sugar directly in the sterilized bottles (or in the secondcontainer in the versions where it included in the kit and bottle the beer. The beverage can be drank also after few weeks, even though the quality increases the more it is left in maturation (always at the correct temperature). p.s. periods of particular humidity o sudden changes in temperature, may determine the block or the non-trigger of the fermentation; to restore the process, remove the top of the airlock and add a new dose of yeast.
