BIRRA CECI 1938 CAMOU BIRRA BIONDA Saison Colore: Giallo dorato velato. Profumo: Sentori floreali ed erbacei, ual naso arriva una piacevole fragranza data dal malto e dai lieviti. BIRRA CECI 1938: CAMOU Cod.Q-3 Gusto: Di medio corpo, fresca e con un finale di bocca sciutto ed equilibrato. La morbidezza dei malti è perfettamente bilanciata da un uso sapiente dei luppoli che regalando a questa birra una beverinità caratteristica. Grado Alcoolico: 5,9% vol Temperatura di servizio 8°-10° Tipo di bicchiere: Calice a chiudere. Da un’idea della famiglia Ceci, una birra non filtrata, non pastorizzata, rifermentata in bottiglia. ABBINAMENTO: Primi piatti strutturati, risotti, pasta ai cereali, ravioli con condimenti importanti. Secondi piatti strutturati con erbe aromatiche. Carni bianche arrosto o grigliate, formaggi stagionati a pasta dura e caprini. Pasticceria invernale anche con aromatizzazioni al caffè. PROCESSO PRODUTTIVO: Il Blend dei cereali utilizzati comprende cereali europei maltati e una parte di grano Senatore Cappelli, una delle cultivar italiane più pregiate, che viene aggiunta a crudo in modo da conferire al prodotto una spiccata aromaticità ed un’alta digeribilità. Il primo processo fermentativo viene svolto ad alta temperatura, circa 32°, nel periodo invernale da novembre a dicembre, come vuole la tradizione centenaria della produzione delle Saison. Si ottiene così un prodotto ricco di struttura con ottima bevibilità. La fermentazione termina in bottiglia, in camera calda, dove riposa circa un mese. Taste: Mid-body, fresh and with a dry and balanced aftertaste. The softness of the malts is perfectly balanced by a skilful use of the hops, giving this beer a pleasant-drinkable characteristic. The nose feels a pleasant fragrance given by the malt and the yeasts. From an idea of the Ceci family, an unfiltered beer, unpasteurized, fermented in the bottle. PAIRING: strongly flavoured first courses, risotto, pasta with cereals, ravioli with important seasonings. Strongly flavoured main courses with aromatic herbs.White meats roasted or grilled, hard seasoned cheeses and goats cheese. Winter pastry also with coffee flavouring. PRODUCTION PROCESS: The blend of cereals used includes European malted cereals and Senatore Cappelli wheat, one of the most valuable Italian cultivar which is added raw to give a spicy aroma and high digestibility to the product. The first fermentation process is carried out at high temperature, around 32°, during the winter period from November to December, according to the centennial tradition of the production of the Saison. Thus is obtained a product rich in structure with excellent drinkability qualities. Fermentation is completed in bottles in a warm room, resting for about one month.
