Si consiglia di girare il cibo una sola volta a metà cottura. La cottura diretta è ideale per cibi sottili o a fette, non troppo grassi, che richiedono una cottura veloce: bistecche, braciole, filetti o tranci di pesce, spiedini, verdure, frutta, etc. This method is recommended for steaks, fish fillets, vegetables and fruit. Cooking times are short and the cooking grid should be very hot. 1. Accendi il carbone e sistemalo sulla griglia inferiore. Appena i bricchetti di carbone saranno ricoperti da uno strato di cenere bianca, potrai procedere con la cottura. 2.Distribuisci il carbone in modo uniforme su tutta la griglia. Light the charcoal on the charcoal bottom grate or use a chimney starter to decrease the amount of time it takes to the coals to light and ash over. 2.Once the coals are ready, simply tip the coals onto the grate arranging them for grilling. 3.Place the food on the cooking grate, cover with the lid and cook directly over the heat source. It is very important to keep the lid close as much as possibile to mantain a consistent grilling temperature. The food will result crispy outside and jucy inside. 5 6 TOTANI GRIGLIATI GRILLED SQUIDS 600g di totani puliti 30g di prezzemolo 1 spicchio di aglio 60g di pane grattugiato sale e pepe nero macinato al momento olio d’oliva 600g gutted squids 30g parsley leaves chopped 1 garlic clove minced 60g bread crumbs salt and freshly ground black pepper olive oil 1. Taglia i tentacoli dei totani e tritali insieme alle foglie di prezzemolo lavate e asciugate e allo spicchio di aglio. Mescola questo battuto con il pane grattugiato e condisci con sale, pepe e un po’ di olio. 1. Cut the tentacles of the squids and chop them along with the parsely leaves and the garlic clove. Combine this mixture with the breadcrumble and season with salt, freshly ground balck pepper and a little olive oil. 2.Riempi i totani con questo composto e chiudi con uno stecchino. 2.Stuff the squids with this filling and fix with a toothpick. 3/4 3.Condisci con sale pepe e olio e appoggia i totani sulla griglia ben calda. 3.Season with salt and pepper and drizzle with olive oil. Place one slice of cheese on each slice of mortadella and use a toothpick to close. 2.Prepara il barbecue per la cottura diretta a calore medio/alto. 2.Get the barbecue ready for direct cooking (hot/ medium) 3.Appoggia i ravioli sulla griglia ben calda e cuoci per 1 minuto. Gira e cuoci ancora per un minuto. Completa la cottura per ottenere le caratteristiche rigature a rombi della cottura alla griglia, ripetendo l’operazione. 3.Place the appetizers on the hot grid of the barbecue and cook for 1 minute (just the time to melt the cheese) Turn and cook for another minute. (Chef: Giacomo Galeazzi) 9 10 BISTECCA alla fiorentina BISTECCA alla fiorentina 1 costata di manzo del peso di circa 800g sale e pepe nero macinato al momento olio extravergine di oliva t bone steak 800g salt and freshly ground black pepper extravirgin olive oil 1. Porta la carne a temperatura ambiente e prepara il barbecue per la cottura diretta con abbondante carbone. Elimina il grasso in eccesso dalla carne, potrebbe essere causa di fastidiose fiammate durante la cottura. Puoi, se lo desideri, marinare la carne per ottenere una texture più morbida e una carne più saporita. 2. Ungi bene la griglia con un po’ d’olio oppure utilizzando il grasso della carne. In questo modo eviterai che il cibo si attacchi durante la cottura. 3. Posiziona la carne sulla griglia ben calda. Dopo due minuti girala e cuoci per altri due minuti. Gira di nuovo la bistecca ruotandola di 90° per due volte e cuoci per due minuti ogni volta al fine di ottenere la classica rigatura a rombi. 4. Togli la carne dal barbecue e appoggiala su un tagliere pulito. Copri con un foglio di carta di alluminio e lascia riposare per qualche minuto. I tempi di cottura variano a seconda dello spessore e del peso della bistecca. Per indicazioni più precise consulta la tabella a pagina 33. 5. Condisci con abbondante olio extravergine di oliva italiano e aggiusta di sale e pepe nero macinato al momento. Aggiungi eventualmente le tue erbe aromatiche fresche preferite, tritandole finemente. 1. Bring steaks at room temperature for even cooking. Get the barbecue ready for direct grilling with a good amount of charcoal. Trim excess fat from the steaks in order to avoid flare-ups while grilling. If you want, you could marinate the meat to get a tender texture and more taste. 2. Brush grids with olive oil or with the meat fat, to avoid food from sticking. 3. Place the meat on the hot grid. Turn it after two minutes and cook for other two minutes. Turn again the steak at 90° for two times and cook for two minutes each time in order to get the best searing. 4. Remove the meat from the barbecue, allow to rest for 5 minutes on a clean board and cover with aluminium foil. Grilling times vary according to the weight and thickness of the meat. Please look up at the grilling guide at page 33. 5. Season with extravergin Italian olive oil, salt and freshly ground black pepper. Sbuccia due delle sei pere, cuocile sul barbecue, frullale con lo zucchero e setacciale. Unisci la panna alle pere setacciate e in una piccola parte del composto sciogli la colla di pesce. Metti tutto il composto nel sifone e caricalo con le due cariche. Fai riposare in frigo fino a che il composto non assume una consistenza spumosa. Preparazione della millefoglie di panettone: griglia sul barbecue le dodici fette di panettone, tutte precedentemente tagliate della misura di 10x10 cm e metti da parte. Sbuccia e taglia a metà le quattro pere rimaste, grigliale al barbecue e tagliale a fettine. Composizione del piatto: adagia sul piatto la prima fetta di panettone e procedi a strati con le pere alternate alla spuma andando avanti così per altri 2 strati di panettone. Spolverizza la millefoglie con zucchero a velo, metti la spuma di pere a fianco e decora con il dattero e la foglia di erba luigia. (Chef: Igles Corelli) Pear foam: put the fish glue in cold water and set aside. In the meantime, peel two of the pears, grill them on the barbecue (direct cooking), whisk with the sugar and sieve. Add the cream and (in a small part of the mixture) melt the fish glue. Put the pear smooth puree in the siphon (with 2 gas reloading) and keep in the refrigerator until softened. Layered panettone: quickly grill the 12 panettone slices (10x10cm) and put aside. Peel the remaining pears, grill them on the barbecue, with direct cooking method and slice them. Presentation: on the dessert plate put the first panettone slice and keep on with pears and pear foam between other two panettone slices. Dust the top with icing sugar and decorate with a quarter of date and some lemon verbena leaves. If you do not have the siphon, just use the grilled fruit (every kind of ripe fruit is good with this recipe and can be grilled on the barbecue). You can substitute panettone with sponge cake. La brace non è a diretto contatto con il cibo. La cottura indiretta è ideale per cibi di grosse dimensioni, come arrosti, pollame intero, pesci interi e altro, o per cibi molto grassi, come pancetta, salsicce di maiale, etc. This cooking method is a slow technique to cook at a low temperature. The food is not grilled directly over the heat. The heat rises around the food and cooks evenly on all sides. This method is recommended for larger cuts of meat, such as roasts, poultry, big fishes and fatty food, such as bacon, sausages and so on. 1. Accendi il carbone e sistemalo ai lati del braciere utilizzando gli appositi contenitori o i binari di supporto. Inserisci una leccarda raccogligrasso al centro. Appena i bricchetti di carbone saranno ricoperti da uno strato di cenere bianca potrai procedere con la cottura. 1. Light the charcoal and put the briquettes at the side of the kettle using charcoal rails or the stainless steel charcoal dividers. Place a drip pan in the middle. As soon the coals are covered with a layer of grey ash you are ready to cook. 2.Posiziona la griglia di cottura. Il barbecue è pronto per cucinare. Appoggia il cibo direttamente sopra la leccarda. 2.Place the food in the centre of the cooking grate over the drip pan. 3.Chiudi il coperchio con il regolatore dell’aria aperto e attendi il tempo previsto per la cottura. Per una cottura ottimale è bene controllare la temperatura interna del cibo con un termometro a sonda. 3.Cover with the lid and keep the air regulator open. Cooking times are indicated in the recipe. There is no need to turn the food. You can regulate the temperature inside the kettle closing the air regulator. For a perfectly cooked food a meat thermometer is a great aid to check the internal temperature of food being cooked. 15 6 10’ 1° 30’ Costolette al barbecue Pork ribs Per il condimento aromatico: 3 cucchiai di sale grosso 2 cucchiai di paprica 1 cucchiaio di cumino macinato 1 cucchiaio di origano fresco 1 spicchio d’aglio tritato finemente 1/2 cucchiaino di cannella in polvere 1 cucchiaino di pepe nero macinato al momento 1 cucchiaino di pepe della Giamaica macinato al momento For the rub: 3 tablesoopns kosher salt 2 tablespoons paprika 1 tablespoon ground cumin 1 tablespoon fresh oregan 1 clove garlic finely chopped 1/2 teaspoon cinnamon 1 teaspoon freshly ground black pepper 1 teaspoon freshly ground Jamaica pepper 1kg e 1/2 di costolette di maiale in un unico pezzo 1kg e 1/2 pork ribs 1. Prepara il composto aromatico. Metti il sale, la paprica, il cumino, l’origano, l’aglio, il pepe nero, il pepe della Giamaica e la cannella in una ciotolina e mescola molto bene. Make the rub in a bowl mix paprika, salt, cumin, oregan,garlic,black pepper, Jamaca pepper and cinnamon. Rub this seasoning on the ribs on both sides patting it on with your fingers. Put the ribs in a no metal dish and refrigerate for at least two hours. 2.Preheat your barbecue at 150°C. 2.Preriscalda il tuo barbecue a 150°C. 3.Cuoci le costolette sul barbecue con cottura indiretta a calore medio per 1 ora e mezza circa. Lascia riposare le costolette per 10 minuti prima di servirle. 16 3.Cook the ribs on the barbecue with the indirect method. The ribs will be done after 1 ¼ - 1 ½ hours. Let rest for 10 minutes before serving. They will be tender enough to pull apart with your fingers. 17 ROUND Cooking Cottura CIRCOLARE 18 Sistema di cottura INDIRETTA CIRCOLARE CIRCULAR INDIRECT cooking method È una variante del sistema di cottura indiretta che è consigliata per cibi di forma rotonda. Il calore avvolge il cibo in modo uniforme su tutta la superficie. Il risultato sarà una cottura che rende i cibi croccanti all’esterno e morbidi all’interno. È la cottura ideale per cuocere pane, pizza e altri prodotti lievitati. Il pollo alla birra è una delle ricette di sicuro successo utilizzando questo tipo di cottura. It is a different version of the indirect cooking and is great for round shaped food. The heat rises around the food that is cooked evenly on all sides. The result is a grilling method to get crispy (outside) and tender (inside) foods. It is wonderful for cooking bread, pizza and other baking products. Beer can chicken is a successful recipe you can try using this cooking method. 1. Accendi il carbone, sistema una leccarda rotonda al centro e versa il carbone tutto intorno. Appena i bricchetti saranno coperti da un leggero strato di cenere bianca, potrai procedere con la cottura. 1. Light the charcoal and put a round drip pan in the middle of the cooking grid and spread the briquettes all around. As soon as the coals are covered with a layer of grey ash you are ready to cook. 2.Posiziona la griglia di cottura e appoggia la pietra o la piastra al centro. Procedi con la cottura seguendo le istruzioni della ricetta. 2.Place the cooking grid and put the pizza stone or plancha in the middle. Go on and cook following the recipe direction. Attenzione: per la ricetta del pollo alla birra non devi utilizzare la griglia ma lo speciale supporto che va posizionato al centro della griglia del carbone. Take care: cooking the beer can chicken do not use the grid, but the special chicken roaster, that will be placed in the middle of the charcoal grid. 3.Chiudi il coperchio con il regolatore dell’aria aperto. Mantieni il coperchio chiuso il più possibile per ottenere una cottura perfetta. Per ridurre la temperatura puoi utilizzare il regolatore dell’aria sul coperchio. 3.Cover with the lid and keep the air regulator open. Cooking times are indicated in the recipe. You can regulate the temperature inside the kettle closing the air regulator. For best results always cook with the lid on. 19 Il pane 4/5 20’ 50’/80’ 20 Preparazione della biga*: 200g di farina forte oppure 150g di farina e 50g di Manitoba 1dl di acqua 2g di lievito Basic white bread Preparazione del pane: 500g di farina 2,5dl di acqua 10g di lievito di birra 15g di sale 1. Per preparare la biga impasta per qualche minuto la farina con il lievito sciolto in acqua fredda. Copri il composto e lascia lievitare a 18 - 20°C per 18 - 24 ore oppure in frigo a 4 - 6°C per 36 - 48 ore, lasciandolo a temperatura ambiente nelle ultime ore di lievitazione. 2. Per preparare il pane disponi la farina a fontana e cospargila di sale. Sbriciola il lievito, scioglilo in acqua tiepida e versalo al centro della fontana. Inizia quindi ad impastare e dopo qualche istante aggiungi la biga. Lavora a lungo l’impasto (almeno 15 minuti) e sbattilo con forza sul tavolo affinché acquisti elasticità. 3. Sistema la pasta ottenuta in una terrina. Con una lama pratica sulla superficie un’incisione a forma di croce, copri il tutto e lascia lievitare almeno un’ora. Puoi dividere l’impasto in più parti . 4 Posiziona l’impasto sulla griglia di cottura del barbecue, preriscaldato a 200°C circa. I bricchetti vanno sistemati per utilizzare il sistema di cottura indiretto circolare. Chiudi bene il coperchio e non aprirlo troppo spesso per non impedire la lievitazione. Cuoci per 50 - 80 minuti. For the first dough*: 200g high gluten flour or 150g flour and 50g Manitoba strong flour 1dl water 2g yeast For the bread dough: 500g flour 2,5dl water 10g yeast 15g salt 1. For the first dough: slowly pour yeast into cold water while stirring. In a large bowl mix the flour and the yeast . Cover the bowl with a kitchen towel and put aside to rise at 18 - 20°C per 18 - 24 hours or in the refrigerator ta 4 - 6°C for 36 - 48 hours, leaving at room temperature during the last two or three hours. 2. For the bread dough: begin mixing the bread flour, salt and yeast (poured in warm water) Continue adding more flour and kneading the flour into the dough until the dough is smooth, not sticky. Add the first dough and keep on kneading for 15 minutes or more until smooth and resiliant. 3. Place the dough in al large bowl . With a knife cut a cross on top, cover with a kitchen towel and leave to rest for at least one hour. You can divide the dough. 4. Preheat barbecue (200°C) arranging the coal briquettes for circular indirect cooking. Place the bread on the grid and bake for about 50 - 80 minutes or until golden brown. Keep the lid close for a better rising. Remove bread from oven and turn out loaves onto a rack or a clean kitchen towel. Allow to cool before cutting (*) composto lievitato da aggiungere all’impasto (*) to add to the bread dough 21 22 La vera pizza napoletana Pizza napoletana: the original recipe 1kg di farina 00 450g di acqua tiepida 100g di latte a temperatura ambiente un filo di olio extravergine di oliva un pizzico di sale 25g di lievito di birra (un cubetto) 600g di passata di pomodoro 2 mozzarelle 1kg plain flour 450g warm water 100g milk (at room temperature) 2 tablespoons extra vergin olive oil a pinch of salt 25g dried yeast 600g chopped plum tomatoes 220g mozzarella cheese 1.
