Imported from the Greek world, they were a gift to man from the goddess Athena, useful for the number of purposes they could fulfil and a symbol of eternal life. The olive tree is also synonymous of longevity, as the famous nutritionist Ancel Keys testified following the research on the Mediterranean diet. The Cilento area boasts several varieties of olive, but in Licusati the most common variety is also the oldest: the Pisciottana. The oil produced from these olives is protected by the PDO label and is known for its deep golden colour. Licusati, die Ölmühlen und die Geschichte des Öls im Cilento Licusati, its olive presses and the history of Cilento oil It is a majestic route that takes you, along the SP 66, to the town of Licusati, past rocks, watercourses, ancient fortifications and centuriesold olive groves. The town lies at the foot of the Calvario hill, in a valley surrounded by olive groves, and boasts medieval origins. The name Licusati probably comes from the Latin “Li accasati”, referring to the married inhabitants who resided in a different place from the celibate monks, who were living in the nearby Abbey of San Pietro. As you walk through the streets of the town, leading to the church of San Marco, you can follow a fascinating itinerary to discover the ancient olive presses of Licusati. The charming tour of the town enables you to learn about the various techniques for extracting oil, and to visit the 17th century “capoforca” press, the 19th century water press, ending up at the ruins of the hydraulic press from the late 1800s and the modern “cold-press technique” models. The “capoforca” press required the use of a huge oak trunk, moved by means of an endless screw, which with its weight created the necessary pressure to squeeze the oil from the flesh of the olives, crushed beforehand by a stone roller driven by a donkey. The water press can be found along the course of the “Sant’Elia” spring, whose waters drove the millstone in the press. The water used was rechanneled and taken to another building, accommodating a mill. The hydraulic press, on the other hand, represents the final step in a technological evolution which has led to the invention of the modern-day presses, which still use the same physical principle to extract by means of pressure. Die Terrakotta Terracotta Strolling through the streets of the town of Camerota you will find workshops in which an ancient craft has been handed down through the generations: pottery. Even though technology has accelerated the production processes, the cunzàri (potters) of Camerota jealously guard their original working methods, the origins of which go as far back as Ancient Greece. The cunzàri mostly create the vessel shapes of the past: the mummuli (jars with two handles used for carrying water and wine in the fields) and the quartucce (big containers usually carried on the head), using wheels. But there are also those who still work the clay using the coiling technique, according to methods used by Neolithic man. A tour of Camerota can be arranged either by visiting the few and highlyrecommended potteries, or by exploring, in the outlets scattered around the town, the typical ceramic objects created in the ancient tradition. Also known as lucignolo, this technique goes right back to the prehistoric era, when clay was worked by forming sausage shapes, all with the same diameter, which, when placed on top of one another, were joined together and smoothed out to obtain a compact surface. Prior to the use of the wheel, this technique was used mainly for modelling pots and bowls. Paläontologische Höhlen Paleontological caves The Marina di Camerota caves, a subject of research since the last century, enable us to reconstruct the changes that have taken place along the coast and the activities of prehistoric man, dating right back to the Neanderthal, who inhabited this area. Easily accessible on foot, with a footpath leading from the centre of Marina di Camerota to the beach of Lentiscelle, you will come across the first caves. The first is the Cala cave, from which there have been some interesting finds such as pebbles and weapons made from bone. As you continue, you will come to the cave and refuge of the Poggio, a place inhabited from the Lower Palaeolithic period to the Bronze Age. Of interest are the remains of bones from deer, the brown bear, rhinoceros, lion and elephant, all signs of man’s intensive hunting activity. A little further on is the Serratura cave, which takes its name from the characteristic keyhole shape of its mouth and which was once under water.
