This is the reason of my extraordinary passion, the reason that makes me wandering through restaurants. What is a great cook without a great restaurant? Hospitality, elegance, savoir faire of the staff meet the ability of the chef. And then is the cellar. All these factors are combined to create a unique experience at restaurant. Below, I introduce my 10 favourite restaurants. Those who drew my attention during my long wandering through restaurants (a few thousand over the past 20 years), sometime just for a detail. Because details sometime make the difference. Each of them is important for me, for the great service that was coupled with a unique cooking (for example at Francescana in Modena or at the Cathedral of Alba), with a unique and unrivaled master (Pinchiorri, Dal Pescatore and Don Alfonso) or its history (La Maison Troisgros, awarded with three Michelin stars for three generations). They are places where history, culture, tradition and elegance are combined, where cooking is the most impor- 46 tant aspect but not the only one. Mi sarebbe piaciuto più parlare di cuochi che di ristoranti. Perché il sommo artigianato di questi uomini straordinari mi affascina tantissimo. E’ questo il motivo che mi fa vivere questa passione straordinaria, l’errare per ristoranti. Appunto, cos’è un grande cuoco senza un grande ristorante? Ecco allora che accoglienza, eleganza, savoir faire del luogo, della sala, del personale si intrecciano con i destini del Cuoco. E poi la cantina, un aspetto tutt’altro che insignificante. Tutti fattori che concorrono a rendere unica l’esperienza di un ristorante. Che non sono solo ed affatto mera cucina. Di seguito vi riporto i miei 10 luoghi del cuore. Coloro che mi hanno colpito, nel mio lungo girovagare per ristoranti (qualche migliaio negli ultimi 20 anni), per un dettaglio, a volte. Perché i dettagli fanno la differenza. Ognuno di loro per me è importante, per un grande servizio accoppiato ad una straordinaria cucina (Ad Esempio in Francescana a Modena o al Duomo di Alba), per un padrone di casa unico ed inarrivabile (Pinchiorri, Dal Pescatore e Don Alfonso) o per il respiro della storia (La Maison Troisgros, ininterrottamente da tre generazioni tri-stellato francese). Una attenzione, un sentire, un assaporare. Normalmente luoghi in cui si fonde storia, cultura, tradizione ed eleganza. In cui la cucina è un aspetto fondamentale della deriva emozionale, ma non l’unica. Ama la semplicità, lo stile, i tocchi raffinati che fanno la differenza. 1° 2° 3° Auener Hof Le Suite di Peppe Zullo Il San Pietro di Positano 4° La certosa di Maggiano 5° Venissa 6° Relais villa d’Amelia 7° La Rosa 8° Arnolfo 9° Chalet Eden 10° Palazzo Senaca Una grande passione mi porta a fondere i desideri della mia anima da gourmet errante nello stesso luogo: prima soddisfo la gola, poi cerco il rifugio dove riposare. Da anni cerco e annoto questi indirizzi unici, la cui qualità è premiata normalmente dalle guide con la frase “vale il viaggio”: per me, spesso, vale anche la “notte”. Ebbene si, ci sono luoghi per cui vale la pena mettersi in macchina e fuggire. Salire fino a 1.600 metri, raggiungere a Sarentino il più alto ristorante stellato d’Italia, e proseguire nel sogno e riposare in una delle suite dell’Auener Hof. Solo così è possibile godere appieno della sensibilità di questo luogo, momenti indimenticabili da trascorrere tra gusto e relax. Il prezzo a cui è offerta una qualità incomparabile: ecco l’unico tentennamento quando consiglio il “San Pietro” a Positano. Ma siamo di fronte ad una eccellenza del nostro paese, come si fa a dare un prezzo a quella vista mozzafiato? Non è lo sfarzo che mi rapisce i sensi: basta ricordare i memorabili soggiorni trascorsi nelle suite di Peppe Zullo a Orsara di Puglia, dove tutto è impareggiabile. La sosta fuori casello, quando passi da una parte all’altra del Po, è “La Rosa”: la famiglia Malaguti ti accoglie, ti fa sentire come a casa, come un figliol prodigo che ritorna ai suoi affetti. La regione dove questo binomio è declinato ai massimi livelli è la Toscana, decine i posti che riempirebbero più di una classifica, al pari di Venezia. La lista potrebbe continuare anche senza classifiche di merito, qui a vincere è solo il bien n vivre. For years, I have been looking for and noting down these unique addresses, where quality is usually rewarded by guides with the phrase "it is worth the trip": for me, often, it is also "worth the night". There are places that make me get in the car and flee. Climbing up to 1,600 meters to reach in Salentino the highest star awarded restaurant in Italy and continuing this dream relaxing in one of the suites of the Auener Hof hotel is an example. This is the only way to really enjoy this place, where guests are rewarded with unforgettable moments of tasting and relaxation. The price at which an incomparable quality is offered may be the only reason for hesitation when I recommend the San Pietro restaurant in Positano. Though, this is a point of excellence of our country, how can we put a price on that breathtaking view? Not only luxury drew my attention, but also the unforgettable moments spent in the suites of Peppe Zullo in Orsara di Puglia, where everything is perfect. Another unmissable stop, this time in the north of Italy, is La Rosa, where the Malaguti family welcomes you and makes you feel at home like a prodigal son who returns home. The region where food and relax are combined at the highest level is Tuscany, where dozens of places that would fill more than just one ranking are found, like it happens in Venice. This list could go on even without rankings, since good life is the only winner. 47
