Trittico® Club in sede Bravo Lo scorso 25 Giugno, la sede di Bravo SpA ha ospitato uno speciale Trittico® Club, condotto dal maestro Sergio Priotti: “Trittico® è creatività”. Numerosi ospiti da tutta Italia hanno potuto apprezzare gli insegnamenti e le dimostrazioni di gelateria e pasticceria, che hanno valorizzato le peculiarità di Trittico®. La poliedricità di Priotti ha infatti messo in luce la multifunzionalità della macchina, il cui programma libero gli ha permesso di sbizzarrirsi in diverse creazioni, davanti ad ospiti entusiasti.... gelato alla polenta, gelato al cioccolato con latte d’avena, crema bianca per mousse, cupcake, biscotti e torte. BRAVO premia i Campioni del Mondo con un giro in Ferrari Platinum sponsor della Coppa del Mondo della Gelateria (Sigep 2012), Bravo ha scelto di omaggiare il team vincitore: l’Italia. Dopo la premiazione ufficiale del 24 gennaio, Giuseppe Bravo ha offerto ai componenti della Squadra Italiana un secondo speciale “premio”, mantenendo così una promessa fatta ancora nel 2011: “Se vincerete la Coppa del Mondo della Gelateria 2012, Bravo vi porterà a fare un giro in Ferrari”. E così è stato: prima la visita alla sede Bravo, per suggellare l’amicizia ma anche per approfondire la conoscenza delle macchine con un focus sulla nuova temperatrice continua K24 Evo, e sulla filosofia che caratterizza la produzione. Poi, finalmente, l’attesissima visita a Maranello, città della Ferrari, per un eccitante, adrenalinica corsa in Ferrari seguita da una visita al Museo e da un pranzo con gradita sorpresa... In un pittoresco ristorante – con foto e tute esposte, e tanto di tovaglioli firmati – sono arrivati due campioni di Formula 1: Fernando Alonso e Jacques Villeneuve, omaggiati dalla Squadra e dal team Bravo con... dei meravigliosi cioccolatini firmati Knam, come poteva essere altrimenti?! Many guests from all over Italy could appreciate his lessons and demonstrations of gelato and pastry, that have enhanced the peculiarity of Trittico®. The versatility of Chef Priotti has in fact highlighted the multifunctionality of the machine, whose free program let him work for making different products, before delighted guests...polenta gelato, chocolate gelato with oat milk, white cream for mousse, cupcake, biscuits and cakes. BRAVO awards a Ferrari ride to the World Champions Sponsor of the Gelato World Cup (Sigep 2012), Bravo decided to pay homage to the winning team... at full speed. After the official award ceremony, January 24th, Giuseppe Bravo offered to the members of the Team a second, special “prize”, keeping a previous promise: “If we win the Gelato World Cup 2012, Bravo take us on a Ferrari ride”. And so it happened. First a visit to Bravo, to seal the friendship but also to deepen the knowledge of machines, focusing on the new continuous tempering machine K24 Evo and on the philosophy behind the production activity. Then, finally, the highly awaited visit to Maranello, the city of Ferrari, for a thrilling, full of adrenaline race followed by a visit to the Museum and a lunch with a well-appreciated surprise. Diego Crosara Bravo porta la qualità nel mondo Bogotà e Santiago: Bravo SpA porta la sua professionalità in tutto il mondo, per diffondere la cultura del dessert Alimentec, Bogotà – A Bogotà in Colombia, Bravo ha partecipato all’Alimentec mettendo l’arte di Pino Scaringella a disposizione del concessionario Feco, garantendo così continue e gustose dimostrazioni a tema gelato presso il suo stand. Trittico® Club Bogotà e Santiago - continua l’impegno di Bravo SpA nel sostenere i professionisti, offrendo loro occasioni di crescita e confronto attraverso gli eventi organizzati dal Trittico® Club. Tutti si domandano che cosa siano i Pop Cake perché dal qualche tempo non si parla d’altro nel mondo del dessert. E’ molto semplice, sono delle deliziose palline di gelato o di torta, ricoperte con cioccolato e decorate nei modi più disparati (zuccherini colorati, noce di cocco grattugiata, granella di nocciole, ecc.), che ricordano per la loro forma, dei golosi leccalecca! Un trend del momento che la Bravo SpA, come successo per i Macaron de Paris, ha saputo cogliere in anticipo attraverso ricerche di mercato e proporre come nuova alternativa di business. Con Trittico® infatti, il primo ed unico laboratorio completo racchiuso in una sola macchina, che in meno di 1 mq pastorizza e manteca gelato artigianale e prodotti di pasticceria di alta qualità, è un gioco da ragazzi prepararli. Perché un gelatiere dovrebbe proporre i Pop Cake alla propria clientela? Semplice, innanzitutto si tratta di una novità e le novità è evidente attirano l’attenzione del consumatore. La preparazione dei Pop Cake si può dividere in poche e semplici fasi, di cui ci si appropria comunque in fretta. Innanzitutto bisogna preparare la parte interna del Pop Cake che può essere composta ad esempio da gelato. Successivamente si realizzano delle palline (è possibile utilizzare degli stampi), alle quali bisogna introdurre uno stecco di plastica, e le si mette in abbattitore. Nel frattempo con Trittico® Executive oppure con la nuova temperatrice di Bravo SpA, K24 Evo, si prepara la tempera del cioccolato per la ricopertura. Estratte le palline di gelato dall’abbattitore le si immerge nel cioccolato facendo bene attenzione a coprire interamente la pallina fino allo stecco. Indeed it is very easy to prepare them with Trittico®, the first and unique complete laboratory in one machine only, that in less than 1 m2 pasteurizes and freezes artisan gelato and high quality pastry products. Why should a gelato chef propose Pop Cakes to his clients? First of all it is a novelty and all the novelties obviously draw the attention of the consumer. Products easy and fast to prepare and widely customizable. They let the gelato chef enrich his offer and distinguish himself from the competitors. The preparation of Pop cakes can be easily divided into a few and easy phases, very easy to learn. Firstly you have to prepare the inside part of the Pop cake, that can be made, for example, of gelato. With Trittico® this operation is carried out in very quick time with a definitely higher quality. After this you prepare some scoops ( you can use some moulds), to which you need to insert a plastic stick, then you can put them into the blast chiller. In the mean time with Trittico® Executive or with the new Bravo chocolate tempering machine K24 Evo, you can prepare the chocolate tempering for the coating. Once taken out the gelato scoops from the blast chiller, you can dip them in the chocolate, paying attention to entirely coating the scoop till the stick. Finally, just decorate the Pop cake at pleasure! Il Maestro ha fornito spunti e idee ai gelatieri e non solo, focalizzando sull’importanza di personalizzare il proprio lavoro. Ecco cosa sono i “gelati di carattere” al Trittico® Club: prodotti che si contraddistinguono per gusto e qualità, perché Trittico® si adatta perfettamente alle ricette e alle modalità esecutive di chi lo usa. Tra le tante ricette “di carattere” proposte durante l’incontro, sono state particolarmente gradite le creme realizzate con latte condensato, il gelato prodotto con caffè espresso e sorbetti particolari come liquirizia, menta e cioccolato.
