Coravin Selections
The Coravin is a unique device that allows you to pour wine from the bottle without actually opening
the bottle. This is accomplished through the use of a pressurized gas system and a hollow titanium
needle that punctures the cork allowing wine to flow out and Argon gas to flow in replacing the
remaining Oxygen in the bottle. This essentially arrests any oxidation from occurring in the bottle.
The Coravin allows us to offer these exciting wines by the glass for your pleasure. The Coravin
selection will change regularly so follow us to find out what’s pouring next week.
Gaja Alteni di Brassica Sauvignon Blanc 2012
Angelo Gaja has long been considered one of the greatest red wine producers in Italy.
What many people may not know about Gaja is that he also makes one of the best
Sauvignon Blanc wines in the world as well. The Alteni di Brassica Sauvignon Blanc is
taken from a small hillside vineyard high in the hills of the Langhe Valley. Only a small
amount arrives here in the US and we are very happy to be able to offer it by the glass
for a limited time.

Antinori Tignanello 2007
Antinori Tignanello is the original Super Tuscan. Born from the soul of Chianti Classico,
the Tignanello expresses the purity of Tuscan terrior. Tignanello is comprised of 80%
Sangiovese, 15 % Cabernet Sauvignon, and 5% Cabernet Franc taken from the best
vineyards in the Antinori holdings. The wine is one of the most sought after of all Super
Tuscans and is testament to the great winemaking house of Antinori vintage after
vintage. The 2007 is opulent and rich with sleek lines and intense, ripe fruit. A great
wine from an excellent vintage.

representation of the various wine regions where they are produced.

Bolgheri we will highlight two wineries that embody the spirit of the Super Tuscan from
these towns.
Sapaio
winery produces an eponymously named Bolgheri Superiore DOC that is one of the
stunning and pure representations of the terrior and microclimate of this unique
production zone. The wines are full-fruited and rich with a clean and balanced density
on the palate and elegant through to the finish. These are serious wines built for

been working on their “shop” to share with you authentic Italian food. After finding the
best neighborhood and an excellent chef, we’ve made our dream into a reality.
We share our love of Italy, our expertise of Roman and all Italian food and our pleasure of
enjoying a meal with your family and your friends. We expect the best and our quality
and freshness is a must when tasting food from our home country.
Tony, who grew up in Rome, has lived in Los Angeles for nearly two decades. He stems
from Café Defini and is an owner of a exceptional Italian restaurant in Playa Del Rey.
