Eppure, al posto di un editoriale, vogliamo lasciare spazio ad un’immagine che racconta l’atmosfera che respiriamo nei nostri uffici, con la speranza che possa trasmettervi gli auguri di un Natale di serenità e di gioia da parte di tutto lo staff della redazione di SalentoDove e di Protem Comunicazione! Oltre agli eventi, tantissimi, che si terranno in concomitanza con la suggestiva accensione del falò alto 25 metri con un diametro di 20, tra i più grandi del bacino del Mediterraneo, Dicembre ospiterà “Un mese di fuoco”, eventi collaterali che accompagneranno il percorso di costruzione del falò, che inizierà domenica 11 dicembre p.v. con la Festa della Vite e la posa della prima fascina. “Musica, arte e cultura – afferma Gianmaria Greco, sindaco di Novoli - si intrecciano nel corposo programma di eventi che segnano il percorso verso l’accensione della fòcara. A partire dalla tradizionale “festa della vite”, Novoli diventerà teatro di gradi spettacoli musicali, artistici e culturali, senza dimenticare l’aspetto devozionale del Santo che rappresenta un elemento 8 | Dicembre 2016 The “Fòcara”, is yet again lighting up the winter in Puglia. Aperta al pubblico dalla fine di settembre 2016, nella splendida struttura dell’ex anagrafe dove ha sede anche il Dajs (Distretto Agroalimentare di qualità Jonico Salentino) in Piazzetta Panzera, incorniciata dalle splendide alte palme a un passo dal Duomo e da Porta Napoli, la scuola di enogastronomia del gambero Rosso sta riscuotendo un grande successo. Fin dalla mattina le sue sale brulicano tra i grembiuli e i profumi dei corsi di cucina del Gambero Rosso. A partire dal pomeriggio le attività si diversificano: al successo dei corsi di cucina per appassionati, tenuti dai sei chef resident, si affiancano il “Cineforum del gusto” – una serie di proiezioni curate dal critico e docente universitario Luca Bandirali, accompagnate dai piatti a tema dello chef e un calice di vino o birra -, gli eventi di degustazione di oli e vini, le “cene letterarie” e quelle “storiche”, gli showcooking, la pasticceria per adulti e bambini. In attesa del Natale, il calendario di attività si arricchisce. In particolare, con il patrocinio del Comune di Lecce e la collaborazione del Dajs, la piazza si illuminerà di luci che irradieranno le installazioni fotografiche del pluripremiato Daniele Coricciati e il mercatino che ospiterà la vendita e degustazione dei migliori prodotti locali – allestita anche presso Palazzo Celestini con la collaborazione di Salento d’Amare Point, gli spazi di Città del gusto si riempiranno degli eventi legati al progetto “Arte e Cucina”, luci e albero di Natale accoglieranno i visitatori anche all’interno. Il 4 dicembre si svolgerà la Pasticceria per bambini: con la guida della chef pasticcera i bambini realizzeranno i biscotti che decoreranno l’albero. On the 4th of December there will be the pastry baking course for kids. Guided by a pastry chef, the kids will make biscuits to decorate the tree. On the 10th and 29th of December during the Dicembre 2016 | 15 EVENTI Pasticceria” lo chef pasticcere Francesco Pellegrino preparerà dolci e torte ispirati ai quadri di artisti contemporanei. Una installazione scenografica ospiterà le sue creazioni. I visitatori, accompagnati dai ragazzi dell’associazione Swapmuseum (che creerà i contenuti multimediali e relativi qrcode), impegnata ad avvicinare i giovani dai 16 ai 25 anni ai musei, potranno degustare oltre che ammirare le sue creazioni, con un vino in abbinamento. L’appuntamento con il Cineforum del Gusto, ormai immancabile, del 15 dicembre si declinerà in versione natalizia, sia nella proiezione che nel menù, nel quale ovviamente non mancheranno le tipicità tradizionali natalizie del Salento. Il 20 e 21 dicembre, gli chef di scuola realizzeranno, a partire dai prodotti esposti all’esterno, cibo da strada in versione gourmet. Il 3 gennaio l’appuntamento è con Don Pasta, ormai famoso esperto enogastronomico e scrittore che dedicherà un’intera giornata agli appassionati di enogastronomia presso la Città del gusto di Lecce. A partire dalla mattina terrà due corsi di cucina per appassionati. Dalle 19 alle 22, una degustazione di vini associati alla musica, in un percorso interattivo, didattico e ludico, con i partecipanti. Dopo le 22, e fino alle 24, un incontro aperto a tutti in Piazzetta Panzera. 16 | Dicembre 2016 event “Art and Pastry” the chef Francesco Pellegrino will be preparing cakes and deserts inspired by paintings by contemporary artists. Both the projections and the menu will be Christmas themed, and the latter will be short of none of the typical Christmas specialties of Salento. On the 20th and 21st of December the chefs of the school will make gourmet street food based on the products on sale in the stalls outside. On January 3rd you’ll get the chance to meet Don Pasta, the famous culinary expert and writer, who will dedicate the entire day to appassionatos at Città del Gusto in Lecce with two cooking courses in the morning and from 7 pm to 9 pm a learning and playing interactive wine tasting with music. From 22 pm to midnight everybody will be welcome in Piazzetta Panzera for an open encounter. Scenari incantevoli faranno, quindi, da sfondo a suggestive casette in legno, presso le quali sarà possibile degustare, in un clima di festa e di magia, alcuni fra i prodotti più caratteristici della produzione enogastronimica salentina. Un mercato per volersi bene, per conoscere, informarsi, chiacchierare con i contadini e acquistare i loro prodotti tutti rigorosamente a km0. Un mercato, a cadenza periodica, che mira a valorizzare la produzione e il consumo di prodotti derivanti dall’agricoltura organica locale e sia allo stesso tempo, presidio per la salvaguardia dell’agro-biodiversità del territorio, laboratorio di condivisione dei saperi e luogo vivo di incontro e socializzazione. Questo è il “Mercato del Giusto”, uno spazio che prenderà vita a Melpignano l’8 e il 18 dicembre, arricchito da incontri sul tema della sostenibilità, dibattiti con esperti, tecnici e attori della realtà agricola locale. L’8 dicembre i dialoghi saranno dedicati ai nuovi materiali di origine vegetale, sostenibili ed eco-compatibili, tipo canapa, tessuti derivanti da scarti alimentari, fico d’india e altro. Tra i relatori, la Fondazione Le Costantine, Katia Botrugno, ricercatrice sul tema ed Enrica Saracino, preside dell’istituto comprensivo di Corigliano. Il 18 dicembre l’incontro sarà invece in- 18 | Dicembre 2016 A market in defence of biodiversity and the care of the land. A market to pamper yourself, to learn, to inform yourself and chat with the farmers while purchasing their products, all home-grown right here in Salento. A reoccurring market with the mission of giving value to the production and consumption of products of local organic farming and in the same time a protection of the agricultural biodiversity and a place to share knowledge, a living place to meet and socialize. This is the Fair Market (“Mercato del Giusto”) taking place at Melpignano the 8th and 18th of December, enriched with meetings concerning sustainability. The 8th of December the dialogues will be dedicated to materials of plant origin, sustainable and bio-compatible, such as hemp, fabrics made from alimentary waste, prickly pear and other. A soli 24 anni, ha fondato il “Locomotive Jazz Festival” che oggi è uno dei più importanti festival nazionali di musica jazz. Raffaele, oggi, dieci anni dopo il suo esordio, è uno dei musicisti salentini più amati e apprezzati nel panorama jazz internazionale. Hai fondato il “Locomotive Jazz Festival” che eri ancora ragazzino. Cosa ricordi di quei tempi? E’ stato uno dei periodi più intensi della mia vita. Il Festival è nato nel mio paese natale a Sogliano Cavour (Le) nel 2006 grazie all’intuito dell’allora sindaco Salvatore Polimeno. E così con la mia famiglia ci siamo subito messi in moto per ideare una piccola rassegna di jazz, forse nemmeno noi credevamo potesse avere così tanto successo già nella prima edizione. E il ricordo più bello è quello di mio nonno materno, il nonno Carlo che insieme a noi nipoti e tutta la mia famiglia era sul palco a vedere come procedevano i lavori. At 24 he founded the “Locomotive Jazz Festival” which today is one of the most important jazz festivals in Italy. Today, ten years after his debut, Raffaele is one of most loved and appreciated musicians from Salento in the international panorama of jazz. You founded the “Locomotive Jazz Festival” when you were very young. What do you remember from those days? It was one of the most intense periods in my life. The festival was conceived in my home town Sogliano Cavour (Le) in 2006 thanks to the intuition of the mayor of the time, Salvatore Polimeno. And like that with the help of my family, we put ourselves into motion to create a small jazz festival, maybe not even believing ourselves that it could become such a success already from the first edition. The most beautiful memory is that of my grandfather on my mothers side, Nonno Carlo, who took the stage with all of us, his grandchildren and my entire family to see how the work was going. Partendo dalla mia esperienza ho voluto riportare ai più giovani una possibilità, quella che dal nostro sud, se si ha coraggio e anche un pizzico di rabbia nel raggiungere i propri sogni, si può! E’ nato così il Locomotive Giovani e anche questo progetto sta crescendo di anno in anno, e il livello dei ragazzi ad esempio quest’anno è incredibilmente alto. Questo a significare che nel nostro territorio pugliese e salentino ci sono realtà di giovani musicisti che hanno voglia di fare, basta dargli solo la possibilità. Qual è il consiglio che daresti ai ragazzi che sognano di fare la tua carriera artistica? Bisogna avere ostinazione e come dicevo anche un pizzico di rabbia ‘buona’ per raggiungere i propri sogni e obiettivi. E poi studiare tanto e costantemente, perché la Musica prima di tutto fa bene al cuore e alla mente. Successivamente fare esperienza andando fuori e confrontandosi con gli altri più bravi. Lo scorso 19 novembre hai suonato insieme al piccolo grande Jose Luis Montano, un bambino cieco dalla nascita, che ha suonato per Obama e insieme ai più grandi musicisti jazz americani... Si grazie a Unicef Italia sono stato ingaggiato a Roma per suonare con il piccolo Joselito. Una storia incredibile la sua. Grazie alla musica ha superato la sua disabilità ed è riuscito ad avere un contatto con il padre che prima non aveva. This means that in here in our Apulia and our Salento there is a core of musicians wanting to work for it, they just need to be handed the possibility. What advice would you give to the kids who are dreaming of a carier in music? You have to be stubborn and as i said passion in reaching your objectives. And then you have to study constantly because first of all music is good for the heart and mind. Finally you have to travel to get experience and meassure yourself with musicians more capable than yourself. On the 19th of January you played with little big man Josè Luis Montano, a boy born blind who has played for Obama and with the biggest American jazz musicians... Yes, thanks to Unicef Italiy I was engaged to come to Rome to play with little Joselito. His story is incredible. Thanks to music he has overcome his disability and managed to establish a contact with the father that he didn’t have before. La Musica è una vera e propria terapia, una preghiera, un modo di vivere e ci aiuta tutti i giorni (anche se non ce ne accorgiamo) a essere migliori. Tantissime le collaborazioni musicali con artisti di fama internazionale. Quale, tra tutte, ti ha emozionato di più? Una delle più recenti è stata quella con Sting all’ Olympia di Parigi. Ho la fortuna di collaborare con grandi della musica internazionale uno tra tutti il grande Manu Katché, batterista jazz di fama mondiale nonché da più di 30 anni al fianco di Peter Gabriel, ed è grazie a lui che ho potuto fare questa esperienza pazzesca. Among them Manu Katché, a world famous jazz drummer who has played alongside Peter Gabriel for more than 30 years, and it is thanks to him that I have been able to have this mind blowing experience. O FORSE NO… THE “FAST” OF THE IMMACULATE VIRGIN La celebrazione dell’Immacolata Concezione della Vergine Maria è celebrata dai cattolici di tutto il mondo, ma pochi sono consapevoli del fatto che questa tradizione, che è stata ufficialmente proclamata dogma dalla Chiesa solo nel 1854, è celebrata nel Salento sin dal 1500. Ancora oggi le confraternite della Vergine Immacolata organizzano feste in molti paesi in tutto il Salento e anche se il fervore dei festeggiamenti sta registrando una certa flessione, la tradizionale processione della Vergine con una luna crescente che calpesta un serpente, è ancora vissuta con partecipazione. In molti paesi sopravvive l’antica tradizione di distribuire “pane bianco” che simboleggia la purezza della Vergine. Le nostre nonne rispettano ancora il digiu- 30 | Dicembre 2016 The celebration of the Immaculate Conception of the Virgin Mary is celebrated by Catholics all over the world, but few are aware that this tradition, that was only officially proclaimed dogma by the Church in 1854, has been celebrated in Salento since the 1500’s. Still today the brotherhood of the Immaculate Virgin is arranging celebrations in many towns all over Salento and though the fervor of the festivities is dwindling, the traditional procession of the Virgin with a crescent moon treading on a snake, can still be experienced. Many places the ancient tradition of handing out “white bread” symbolizing the purity of the Virgin and embodying her charity, is also still observed. Our grandmothers still respect the tradition- ESPERIENZE no tradizionale la mattina della vigilia. Con i fornelli spenti e le cucine intonse, il massimo che ci si può concedere è una tazza di latte e il caffè. Il digiuno è un sacrificio a Maria, un rito per purificare il corpo e l’anima. Ma non disperate, se vi trovate nel Salento la vigilia dell’Immacolata non rimarrete a digiuno. Certo, difficilmente vi serviranno della carne, ma la tradizione prevedeva chei bambini, rientrati da scuola, trovassero comunque un pasto semplice, composta dalla tradizionale “puccia”, una forma di pane, bianco e soffice, con tonno, capperi e svizzero, e accompagnato dalla ‘scapece’, ovvero il pesce fritto bagnato col aceto e pan grattato. Tutta la famiglia si riuniva intorno al tavolo proseguendo il digiuno del mattino con una dieta di acqua e pane, anche se riccamente guarnito! In serata, la tradizione prevede la prima “pittulata” dell’anno! Ai vecchi tempi le frittelle di pasta lievitata, servite semplici o condite con baccalà, cavolfiori, pomodori o capperi, si consumavano soltanto nel periodo che andava dal giorno della Vergine Immacolata fino a Natale. Un giorno, questo, in cui era previsto anche l’assaggio del primo vino bianco. Anche ai bambini era concesso inzuppare un tarallino nel vino! Al giorno d’oggi la cena si completa con una varietà di piatti a base di pesce e verdure come le “rape nfucate”, una specialità del Salento. Per finire il pasto un po’ di frutta fresca, le prime clementine, finocchi, noci. Dopo aver osservato il digiuno in maniera “così rigorosa”, I bambini credevano che Maria li avrebbe ricompensati col dono di un dente d’oro e avrebbe partecipato alla processione con la bocca aperta. Forse c’è una buona ragione per cui questa convinzione sembra essere scomparsa, ci chiediamo quanti bambini oggi crederebbero alla storiella del dente d’oro. Rigoroso digiuno oppure no… - al fasting on the morning of the vigil. In the old days the little fried dough balls, served plain or with codfish, cauliflower or tomatoes and capers, was only eaten in the time from the day of the Immaculate Virgin till Christmas. This day would also be the first to taste the new white wine, even the children would be allowed to dip a tarallino in the glass. Nowadays the dinner is completed with a variety of dishes based on fish and vegetables like rape, a specialty of Salento. To finish off the meal a bit of fresh fruit, the first clementines, raw fennel dipped in olive oil and salt and finally nuts and dried fruits. Having observed the fast in such a strict manner, the children of the day used to believe that the Mary would reward them with a gold tooth and would attend to the procession the next day with their mouths open. Maybe there is a good reason that this belief seems to have disappeared – I wonder how many gold tooth’s might have been handed out, “strict” fasting or not… Dicembre 2016 | 31 ESPERIENZE FACIMU ‘ZZUMPARE ALL’ARIA LU PUPU! BLOWING UP MR YESTERYEAR! di Maria Thilo Dicembre è un mese ricco di tradizioni. Quelle legate al Natale, ovviamente, ma anche tante altre che riguardano il periodo successivo, fino a Capodanno. La notte di Capodanno nel Salento quasi tutti i locali organizzano serate danzanti e cenoni, ma se volete qualcosa di veramente particolare e tradizionale, dovete recarvi a Gallipoli. Solo nella stupenda cittadina sullo Jonio è possibile prendere parte all’antica tradizione de “Lu Pupu”. E’ possibile imbattersi in questa strana coppia in tutti I quartieri gallipolini. La gente si riunisce attorno a loro e, allo scoccare della mezzanotte, “lu Pupu” e la sua valigia vengono dati alle fiamme, mentre, attorno ai gallipolini che salutano festosamente il vecchio anno, scoppiano petardi e il rumore risuona in tutta la città. La tradizione prevede che ceramiche, piatti e pentole vengano gettati dai balconi nelle strade, come per liberarsi del “vecchio” presente nelle case. Fiumi di spumante vengono versati e la gente si scambia gli auguri, perchè il nuovo anno sia migliore del precedente. Nella storia dellu Pupu, anche un consiglio da seguire: se venite in vacanza a Capodanno, portate con voi un bagaglio ulteriore. Il primo presepe vivente venne realizzato nel 1223 da San Francesco D’Assisi: a metà tra tradizione cristiana e rappresentazione teatrale profana, ha origini italiane ed è proprio nell’Italia più viva del sud-est che sboccia e fiorisce, tra le campagne e i paesini del Salento. Il presepe vivente di Noha, alla sua settima edizione, avrà luogo nel giardino 38 | Dicembre 2016 Every year in December a journey in history commence in Salento: From the live nativity scene to the one made in papier mache, in sulphur or in miniature, there are many ways to relive the medieval tradition of the representation of the nativity. The first live nativity scene was realized in 1223 by Francis of Asissi, halfway between profane theatre and Christian tradition, the nativity has Italian origin and it is here in the South-East, in the countryside and small towns of Salento, that the tradition is most alive to this day. Il castello risale al XIV secolo e fu edificato dalla famiglia baronale dei De Noha, che lo abitò fino al XVII secolo; nell’800 venne trasformato in masseria. Il Castello ha una memoria fatta di affreschi, che affiorano sulle sue antiche mura, e di botti dove il brandy continua ad invecchiare, accanto alla vasca ellittica e all’ombra delle ‘casiceddhre’. A Taurisano e a San Donato di Lecce ogni anno il presepe vivente vede il coinvolgimento di tutto il paese, come una grande famiglia accogliente, in cui ognuno - bambino, adulto o anziano - ha il suo ruolo insostituibile e si prepara nei costumi tradizionali. È il paese stesso che diventa un presepe antico, che il visitatore può vivere passeggiando tra i vicoli, riscaldato da vin cotto e pittule bollenti. Walking around the village streets you see the setting sun reflecting in the sandstone walls of the houses wet with rain. As evening draw near the dampness of the night descends and the scent of roasted chestnuts rise from the street corners. The scent sweetens the air and relaxes the senses. Scende l’umidità, amica della sera, e per le stradine si fanno abbrustolire sulla brace le castagne, lentamente, finché diventano morbide. Un profumo caldo e avvolgente si sparge nell’aria e rilassa i sensi. Si può vedere l’artigiano che intaglia riccioli barocchi nella pietra leccese dentro la sua bottega; la massaia che prepara le bruschette caserecce per stuzzicare le pance affamate; la nonnina che tesse a mano all’antico telaio trame di fili spessi, come solo lei sa fare; i bambini che giocano attorno ai genitori, imparando a lavorare il legno; le bambine che aiutano le mamme a fare la pasta fatta in casa, giocando con l’impasto e il fil di ferro fino a fare uscire le orecchiette e i ‘minchiareddhi’ del pranzo. Si scoprono i mestieri del passato, le botteghe del fabbro, della tessitrice, del canestraio, del vasaio, del falegname e il duro lavoro dei pastori con il gregge. Quando scende l’umidità della sera, si prende posto sulle sedioline impagliate dentro il camino accogliente, grande abbastanza per entrarci tutti e godersi il calore del focolare, tra i suoi muri anneriti dalla fuliggine stratificata negli anni. Sulla costa adriatica del Salento c’è un presepe unico nel suo genere, i cui personaggi sono stati realizzati con una colata di zolfo: è il presepe della Grotta Sulfurea di Santa Cesarea Terme. Si dice che Santa Cesarea si fosse rifugiata nella grotta e nel XV secolo vi erano testimonianze della forza guaritrice delle acque sulfuree. Le pareti dell’ingresso, alte circa quattro metri, sono state scavate dalla forza atavica di un fiume nascosto; così lisce e bianche sono perfette per ospitare il presepe. L’ingresso della grotta si affaccia in una sala ellittica dove, attraverso un piccolo varco e un corridoio, si accede alla sorgente di zolfo. On the Adriatic coast of Salento you can find a truly unique manger, completely casted in sulphur: The Nativity scene of the Sulphur Cave of Santa Cesarea Terme. It is said that Saint Cesarea took refuge in this cave and from the XV century there are testimonies of the healing powers of the sulphuric waters. The walls of the entrance are almost four metres high, carved by the force of an ancient river, white and smooth and perfect for hosting the manger. Attualmente la rappresentazione plastica della Natività - con la grotta, la mangiatoia, la Vergine, il Bambino Gesù e San Giuseppe, il bue e l’asinello, i Re Magi e i pastori - viene creata dai nostri maestri cartapestai tramandando la loro arte a giovani artigiani promettenti, per lavorare con straordinaria versatilità gli stracci e la carta da macero. Ogni anno all’interno dell’Anfiteatro Romano in Piazza Sant’Oronzo viene allestito un presepe con statue in cartapesta di un metro e mezzo, costruito in tutti i dettagli dei muretti a secco e con gli alberi mediterranei, tipici del paesaggio salentino. Nella suggestiva cornice di Palazzo Turrisi, nel cuore del centro storico, verranno esposti presepi artistici del Salento a cura dell’Associazione Italiana ‘Amici del Presepio’ sede di Lecce. Infine, scendendo ancora più a Sud nel Salento, si può visitare il presepe in miniatura di Acquarica, su una superficie di 60 metri quadri che si sviluppa su cinque livelli, opera di Antonio Occhilupo presidente dell’Associazione TerrraFranca e ricostruzione fedele del borgo con le sue strade, case, chiese e piazze. Nel presepe tutto è in miniatura: i dettagli dei piccoli mobili all’interno delle case, le piccole persone che vivono nei minuscoli luoghi. Finally, heading further South into Salento, you can visit the miniature nativity scene in Acquarica. The nativity is extended over 60 m2 in five levels. It is the work of Antonio Occhilupo, President of the TerrraFranca association, who has reconstructed the village in detail with its streets, houses, churches and squares. Everything is in miniature: the details of the tiny furniture inside the houses, the small people living in minuscule spaces. The artist’s hands work eagerly to create an unique but tiny world, where everything is motionless but in the same time very lively, animated as it is by the daily life that once revolved around the work in the fields, the life connected to the ground and following the never-ending wheel of the seasons. The attention to the details, the objects and the spaces reveals a work of patience and knowledge. La cura del dettaglio e l’attenzione per gli oggetti e gli ambienti rivelano un lavoro paziente e sapiente. Il lavoro del bottaio, della manifattura dei materassi, dei fichi lasciati a seccare sul terrazzo, la cofanatura della biancheria e la preparazione della salsa di pomodoro: il presepe ospita ben 250 pupi artigianali salentini, che misurano dai 15 ai 25 centimetri. Tutto sembra più vero che mai quando lo sguardo si poggia sul legno scabroso della scala a pioli in legno consunto, che regge l’insegna nitida della bottega del cappellaio o sfugge qua e là sulle luminarie dalle cui luci si irradia un calore colorato. Sulla soglia di quella Chiesa così tanto frequentata per le festività natalizie, sono tanti i volti, tante le persone in miniatura che sembrano prender vita dall’insieme di sfumature dipinte. Il mondo vivace – sebbene immobile – riesce ad imprigionare in pose statiche gli atteggiamenti pittoreschi dei personaggi del presepe. E così si inizia a percepire un fremito vivo, l’odore delle case, il sapore del pane fatto con il lievito madre, si inizia a vivere attraverso gli occhi di quei ‘pupi’ che abitano l’Acquarica dei tempi passati. Distese di vigneti ci fanno da strada maestra per giungere alla cantina Conti Zecca; quante volte ne ho sentito parlare ed oggi la sorpresa di varcare il cancello per incontrare da vicino coloro che lavorano ad un gran prodotto. Una medaglia nella sua auto cita: “Il miglior capo” e dai primi metri in auto, visitando i vigneti Conti Zecca, capisco che Dino (Valentino Caputo) è una sapiente ed appassionata guida, che condivide con noi racconti, storie, aneddoti e tanta cultura. Mi emoziono ed entusiasmo ascoltandolo e degustando i loro vini: ottimi con punte di eccellenza. Sia il pranzo che la cena mi riservano degli incontri creativi, nell’abbinamento ed accostamento di ingredienti, contrasti che si fondono alla perfezione regalando al commensale un’opera con cui cibare tutti i sensi, dal gusto innovativo e ricercato. La sperimentazione degli chef Michele Micati (Osteria 203) e di Davide Rollo (Il Vecchio Molo) mi colpisce e mi rendo conto, un’altra volta, che la passione è il primo elemento da ritrovare in ogni piatto che viene posato davanti al mio sguardo. È un’opera d’arte che ammiro e mi regala la fortuna di arricchire la mia “galleria dei sapori”. Alla cantina Apollonio ed al ristorante Scoglio di Pirro respiro la tradizione mista ad innovazione. In entrambe il racconto delle loro attività, passa attraverso la menzione della storia di famiglia. L’emozione e l’ammirazione del lavoro dei propri avi la percepisco ed è motivo di orgoglio. C’era un gran fermento il 24 dicembre di ogni anno, sin dalle prime ore del pomeriggio eravamo tutti lì, in casa dei nonni, dove si preparava la consueta ed attesissima cena di Natale. A noi ragazzini davano il compito di apparecchiare la lunga tavola, con le aggiunte, per non lasciar fuori nessuno. Con molta attenzione si disponevano sulla tovaglia ricamata ad intaglio piatti e bicchieri, quelli delle occasioni importanti. Eravamo in tutto ventotto, ed eravamo tutti, in quella grande stanza col tavolo al centro e due salottini ai lati. In un angolo, grande e maestoso, prendeva posto il meraviglioso presepe, che il nonno con la mamma ed una zia costruivano già dai primi di dicembre, mentre nel camino il ceppo bruciava già! Il profumo che veniva dalla cucina era qualcosa di straordinario. La nostra cena merita di essere raccontata, era la tipica cena della sera di Natale nel Salento. Si cominciava con le pittule, palline di pasta molto lievitata fritta, condita in vario modo, con olive, con capperi e po- 48 | Dicembre 2016 “When will the holidays commence, I feel so happy, because on Christmas Eve I will be eating more than just a salad...” There was a great turmoil every year on December 24th, already in the early afternoon we would all be there in our grandparents house where the customary and much awaited Christmas dinner was being prepared. We kids where making the long table ready, extended to the maximum to make space for everybody. We were placing the plates and glasses that were only used on special occasions with care on the embroidered tablecloth. We were in 28, all fitted into that big room with the table in the middle and the two parlors on the sides. In a corner you would find the marvelous nativity, big and majestic, that granddad had prepared already in the first days of December with mummy and an aunt. In the fireplace the log was already burning! The fragrances coming from the kitchen where out of this world. Ours was a dinner worse talking about, the typical Christmas dinner of Salento. We would begin with the pittule, little fried balls of leavened dough GUSTAVAGANDO modorini “scattarisciati”, con il cavolo, le acciughe, la patata dolce. I primi tipici erano due: una minestra di pan cotto con fagioli cannellini e cime di rape, il tutto ripassato con aglio e olio sfumati, in cui in fine si mettevano cozze o vongole, o tutte e due; oppure una minestra di “gnocculi”, piccola pasta di semola, con il brodetto di baccalà. Tra l’allegria ed il buon appetito di tutti, insieme all’ottimo vino delle uve della campagna della nonna, Negramaro e Malvasia insieme, si proseguiva con i secondi piatti: baccalà in brodetto, capitone fritto o in umido con l’uvetta, accompagnati da “rape nfucate”, finocchi e cicorie crudi. In fine tanta frutta secca, datteri, e poi i fichi d’India e mandarini, sempre dalla campagna di famiglia. A questo punto il momento solenne: ci si alzava, i piccoli avanti, e tutti insieme si faceva un corteo con le scintille accese cantando: “tu scendi dalle stelle”, si metteva Gesù Bambino, che emozione ancora oggi a ricordare! Si finiva il pasto con i dolci della vigilia, diversi da quelli del pranzo di Natale : le “pittule cu lu cuettu”, decotto di uva, le chinuliddre, cestini di pasta semi dolce ripieni di mostarda di uva, cartiddhrate al miele, con bucce di arancia candita, cornule o mustazzoli e taraddrizuccarati. Tutto bagnato da un vino dolce di produzione locale, il moscato. Finita la cena ci si recava tutti alla Santa Messa di mezzanotte, e si lasciava la tavola imbandita, per i “santi morti di famiglia”, che sarebbero venuti a consumare il loro Natale alla nostra tavola. To this day I am still moved thinking about it! The dinner was finished with the deserts of the vigil, different from the ones of the Christmas lunch: pittule with decoction of grapes, the “chinuliddre” were little baskets of semi sweet dough stuffed with grape chutney, “cartiddhrate” with honey with candied orange peel, “cornule” or “mustazzoli” and “taraddrizuccarati”. All of it washed down with a sweet wine of local production, the moscato. At the end of this lavish dinner we would all go to the midnight mass leaving the table set for the “blessed dead of the family”, that would come to celebrate their Christmas at our table. Christmas was beautiful like that, there was no need for big trees or expensive presents, we had the warmth and the love of a big family. Dicembre 2016 | 49 GUSTAVAGANDO I PURCEDDHRUZZI DI NONNA ANNA LA RICETTA DI UN DOLCE TIPICO SALENTINO THE RECIPE FOR THE TYPICAL CHRISTMAS SWEET OF SALENTO Ingredienti: 1 kg di farina 200 gr di olio extra vergine d’oliva 1 kg di miele 150 gr di zucchero semolato 5 arance (spremute) e buccia Ingredients: 1 kg of flour 200 gr of extra virgin olive oil 1 kg of honey 150 gr of granulated sugar Juice and peel of 5 oranges Per la decorazione: Zucchero a velo, granellini di zucchero colorato, noccioline tritate, arancia candita, cannella, pinoli. Riponeteli tutti su un vassoio ben separati l’uno dall’altro e lasciateli riposare un paio d’ore. Trascorso il tempo, potete passare alla frittura. Versate l’olio d’oliva extra vergine in una pentola e quando comincerà a fumare mettete dentro la buccia di arancia. Versare poco per volta i vostri purceddhruzzi, friggeteli fino a che non saranno ben dorati. Poi lasciateli raffreddare. Una volta fritti, asciugati completamente dall’olio e lasciati raffreddare sono pronti per essere conditi con il miele. Prendete il barattolo di miele, versate metà del barattolo, circa 500 gr, in una padella che avrete riscaldato prima sul fornello. Attendete che il miele cominci a bollire, quando formerà la schiumetta, versate un cucchiaio di zucchero e un pochino di acqua. Mescolate per bene finché il miele non sarà tutto sciolto e liquido.
