Sebbene fino al XVIII secolo si vendesse a “rotoli”, oggi la forma tradizionale è quella a mo’ di parallelepipedo, con gli angoli smussati,dal peso variabile dagli otto ai quindici chili.È a pasta filata dal colore giallo paglierino, e il suo profumo cambia a seconda della stagionatura. Il caciocavallo palermitano,infatti,si può gustare dopo un paio di settimane dalla produzione (in questo caso si parlerà di caciocavallo “fresco”), ma è ottimo anche con una stagionatura di sei mesi:è questa l’età in cui lo si consuma quotidianamente sulle tavole siciliane,grattugiato e spolverato sulle pietanze. La lavorazione Il caciocavallo palermitano si ottiene aggiungendo del caglio al latte appena munto. La massa compatta (tuma) che si forma viene prima sbriciolata, poi ben pressata e, coperta da un telo, viene lasciata riposare. Dopo la si taglia e si mette a scolare sulle canne (cannara in dialetto), si taglia nuovamente a fette e ancora si lascia riposare per almeno 4/6 ore.Dopo un’ulteriore serie di tagli e di pressioni si ottiene una pasta piatta e omogenea che verrà appesa “a cavallo”(da qui il nome di “cacio a cavallo”) su una pertica di legno (appizza tuma) e lasciata a scolare per 24 ore. Tito Livio dice che la città venne distrutta nel 211 a.C. per essersi ribellata ai Romani; Polibio dice che questo avvenne nel 260 a.C.; Diodoro narra della sua strenua resistenza dal 263 al 262 a.C.Visto che l’unico siciliano dei tre è proprio Diodoro, noi scegliamo questa data. Impossibile,invece,chiarire la posizione geografica di questo coraggioso insediamento,dato che sia Marineo (che ha la Montagnola e che si affaccia sulla valle dell’Eleuterio con l’omonimo fiume) sia Camporeale (anch’essa con la sua Montagnola, anch’essa su una valle, quella dello Jato, sulla quale scorre il fiume Belice sinistro) corrispondono alle indicazioni tramandate. In più, anche se recentemente sono state trovate qui a Marineo delle tegole iscritte in caratteri greci che identificano l’insediamento, non bisogna dimenticare che è Camporeale quella più in linea con la marcia lungo-costa. In ogni modo, l’insediamento sulla Montagnola di Marineo sorge in una delle aree più abitate fin dalla preistoria,vista la ricchezza di acqua,la presenza di un fitto bosco e rocche adatte per la difesa.Gli scavi non sempre sono accessibili:durante i campi di lavoro vengono chiusi alle visite e vi si può accedere solo dietro autorizzazione della Soprintendenza. La ricchezza archeologica della zona è documentata presso il museo di Marineo. Si accede all’area archeologica seguendo la strada che porta al cimitero comunale, proprio sulla Montagnola. Ricca la collezione di epoca punica, alla quale si affiancano i corredi funerari ellenistici e tardo romani e pezzi risalenti al periodo arabo e normanno-svevo. Per meglio descrivere il museo, è opportuno suddividerlo in tre zone. Cominciando dall’ingresso, troviamo le sale I,V e IV, e da queste si accede alle sale VI,VII e VIII ovvero la parte centrale del museo - tutte dedicate ai reperti provenienti dall’area archeologica di Makella: tra questi, tegole con iscrizioni greche che riportano a documenti redatti in quel di Entella e ad altre testimonianze storiche. All’ala destra del museo si accede dalla sala I. È composta dalle sale II e III: qui sono esposti i reperti provenienti dal resto dell’area marinese e dal territorio dell’Eleuterio.
