introduction
Ospitalità, gusto, professionalità: la qualità come marchio che unisce attività ricettive, ristorazione, strutture balneari di un territorio naturalmente portato a “fare turismo” ed anche
a vivere di turismo, risorsa fondamentale per la provincia di Savona.
La Camera di Commercio di Savona è impegnata a promuovere il progetto di un “brand” territoriale che unisca e valorizzi il patrimonio ambientale, storico e culturale, dalle risorse monumentali a quelle enogastronomiche. Un percorso che deve tuttavia essere accompagnato
dal continuo miglioramento delle strutture turistiche e di quelle terziarie attraverso interventi
rivolti ad ottimizzare la competitività dell’offerta turistica in tutti i suoi segmenti.
Dalla collaudata collaborazione della Camera di Commercio con l’Istituto Nazionale Ricerche Turistiche (ISNART) di Roma, sono scaturite la promozione e la diffusione del marchio
di qualità “Ospitalità Italiana”, assegnato a strutture che si distinguono per l’eccellenza dei
servizi turistici offerti. Un marchio oggi esteso ad alberghi, ristoranti, agriturismi, campeggi,
bed & breakfast e bagni marini, con numeri che crescono anno dopo anno.
Il marchio, intersettoriale, unico, riconoscibile e sempre più noto anche all’estero, si è confermato un valido veicolo per migliorare la visibilità dei una rete di strutture unite dal comune
impegno di riqualificare l’offerta turistica locale.
Attraverso questa guida, la Camera di Commercio presenta i risultati di un’operazione che
offre una garanzia di elevata qualità all’utenza del sistema turistico di questo territorio e che
contribuisce a rinnovare positivamente l’immagine della provincia di Savona, associandola
sempre più ad un logo internazionale di riconosciuta affidabilità.
La cultura della qualità, che la certificazione ISNART promuove, si riverbera sulla comunità
locale, migliorando l’efficienza dei servizi nel loro insieme e rendendo più efficienti le microeconomie di territorio.
A beneficiarne sono quindi non solo i turisti ma anche i cittadini residenti. La Camera di
Commercio di Savona, su questa strada, continuerà a dare il suo contributo affinché si offra
al turista un prodotto adeguato alle sue aspettative, la cui qualità sia non solo accreditata
ma anche autentica. A questo saranno orientate le iniziative dell’Ente, da realizzare sia in
modo autonomo sia in collaborazione con la Regione Liguria, Unioncamere Liguria e gli altri
attori del territorio.

to live on tourism, the vital resource for the province of Savona.
The chamber of Commerce of Savona is committed to promoting the local brand project that
associates and enhances the environmental, historical and cultural resources, starting from
the monumental ones up to food and wine. This path will be accompanied by unceasing improvement of tourist facilities creating optimizing interventions pointed to tourism competitiveness in all its sectors.
The well-tried collaboration between the Chamber of Commerce and the National Institute
for Tourism Research (ISNART) in Rome led to the promotion and diffusion of the quality
brand "Ospitalità Italiana", assigned to those structures that stand out for the excellence of
their service.
Today the brand includes hotels, restaurants, country inns, campsites, bed&breakfast and
beach resorts.
The brand is cross-sectoral, unique, recognizable and increasingly well known abroad. It
was confirmed as an effective vehicle to enhance the visibility of the facilities sharing the
common commitment to upgrading local tourism offer.
Through this guide, the Chamber of Commerce presents the results of an operation that offers a guarantee of high quality to the local tourism user base, while positively contributes
to renew the image of the province of Savona, increasingly associated with an internationally recognized logo.
The culture of quality, promoted by ISNART’s certification, influences the local community,
improving the efficiency of local services and micro-economies. Therefore both tourists
and residents take advantage of the project.
The Chamber of Commerce of Savona keeps on making its contribution to offer the tourists
a product of accredited and authentic quality, suited to their expectations.
This will be the goal of the Chamber’s initiatives, both independent and in collaboration with
Liguria Region, Unioncamere and other stakeholders in Savona and in Liguria.

Accueil, saveurs, professionnalisme : la qualité comme marque qui unit les activités d’hébergement, de restauration et les structures balnéaires d'une région naturellement portée à
"faire du tourisme" mais aussi à vivre du tourisme, ressource fondamentale pour la Province de Savone. La Chambre de Commerce de Savone s’est engagée à recevoir le projet
de création d’une "marque" régionale qui unit et valorise le patrimoine environnemental, historique et culturel, de ses monuments notoires à son œnogastronomie. Un parcours qui
doit cependant être accompagné par l'amélioration continue des structures touristiques et
des services à travers des interventions visant à optimiser la compétitivité de l'offre touristique dans toute sa diversité. La collaboration de la Chambre de Commerce avec l'institut
National de Recherches Touristiques (ISNART) de Rome a donné naissance à la promotion
et la diffusion de la marque de qualité "ospitalità Italiana", délivrée aux structures qui se distinguent par l'excellence de leurs services touristiques. Une marque étendue aujourd'hui aux
hôtels, restaurants, agritourismes, campings, bed & breakfast et plages privées avec un
nombre croissant chaque année.
La marque, plurisectorielle, unique, reconnaissable et de plus en plus reconnue à l'étranger,
s'est confirmée comme vecteur efficace pour améliorer la visibilité d’un réseau de structures liées par l'engagement commun de requalifier l'offre touristique locale.
À travers ce guide, la Chambre de Commerce présente les résultats d'une opération offrant
une garantie de haute qualité à l'usage du secteur touristique de cette région et contribuant
à renouveler positivement l'image de la Province de Savone en l'associant toujours plus à
un logo international à la fiabilité reconnue. La culture de la qualité que la certification
ISNART promeut, se reflète également sur la communauté locale, en améliorant l'efficacité
des services dans leur ensemble et en rendant plus efficaces les micro-économies de la région.
Les bénéficiaires en sont donc principalement les touristes mais aussi la population locale. La Chambre de Commerce de Savone continuera à donner sa contribution dans cette
direction afin que soit proposé au touriste un produit répondant à ses attentes et dont la qualité soit non seulement certifiée mais aussi authentique. Ainsi les initiatives de l'organisme
seront orientées vers cet objectif et réalisées de manière autonome ou en collaboration avec
la Région Ligure, Unioncamere Liguria et les autres acteurs régionaux.

von dieser grundlegenden Ressource lebenden - Landstrich der Provinz Savona, wird Qualität zu einem
Bewertungssymbol, das Beherbergungsgewerbe, Gaststätte und Badeanstalten mit einander verknüpft.
Die Handelskammer von Savona fördert das Projekt dieser im Territorium eingebundenen Marke, die alle
landschaftliche, historische und kulturelle Aspekte vereint und aufwertet, angefangen bei den monumentalen bis zu den gastronomischen Ressourcen. Zweck des Qualitätsprogrammes ist die beständige
Verbesserung der touristischen Leistungsträgern durch Optimierungsaktionen der Wettbewerbsfähigkeit
des Fremdenverkehrs und all seiner Segmente. Der bewährten Zusammenarbeit zwischen der Industrieund Handelskammer und dem Nationalen Institut für Tourismusforschung (ISNART) in Rom entspringt
die Förderung und Verbreitung des Gütesiegels „Ospitalità Italiana", das eine Reihe von Unternehmen auszeichnet, die sich durch die einwandfreie Qualität ihrer touristischen Dienstleistungsangebote hervorheben. Das Label ziert aktuell Hotels, Restaurants, Landhäuser, Campingplätze, Bed & Breakfast und
Strandbäder aus, deren Anzahl von Jahr zu Jahr zunimmt. Da die Marke branchenübergreifend, einzigartig,
leicht erkennbar und zunehmend auch im Ausland bekannt ist, hat sie sich als wirksame Maßnahme erwiesen, die die Sichtbarkeit jener Betriebe der Tourismusbranche verstärkt, deren gemeinsames Engagement darin besteht, Qualitätsbewusstsein und Dienstleistungsqualität zu steigern.
Mit diesem Katalog präsentiert die Handelskammer die Ergebnisse eines Projektes, das allen Branchennutzern in diesem Bezirk Qualitätsgewähr bietet und dessen positive Auswirkungen es der Provinz Savona ermöglichen, ihr Image zu erneuern indem sie immer mehr mit einem international als seriös
anerkanntes Label assoziiert wird.
Das durch das ISNART Gütesiegel begünstigte Qualitätsbewusstsein wirkt sich auch auf die Einwohnerschaft aus, da durch die gesteigerte Effizienz der Dienstleistungen im Allgemeinen eine verbesserte Wettbewerbsfähigkeit der örtlichen Teilbranchen erfolgt. Es profitieren folglich nicht nur die Gäste, sondern
auch die Bevölkerung.
Die Handelskammer von Savona wird in diesem Sinne auch weiterhin ihren Beitrag leisten, den Feriengästen ein ihren Anforderungen gerechtes Leistungsangebot zu gewährleisten, dessen Qualität sowohl
anerkannt als auch authentisch ist. Unter diesem Leitgedanken wird die Handelskammer, sowohl im Alleingang als auch in Zusammenarbeit mit der Region Ligurien, Unioncamere Ligure und den anderen Akteuren des Gebietes, zielgerichtete Projekte durchführen.

путь, который, однако, должен сопровождаться постоянным усовершенствованием туристических структур и сферы услуг посредством
мероприятий, нацеленных на оптимизацию конкурентоспособности
туристического предложения во всех его сегментах.
Результатом отлаженного сотрудничества Торговой Палаты с Национальным Институтом исследований в области туризма (ИСНАРТ) г.
Рима стало продвижение и распространение знака качества "Итальянское Гостеприимство", которым отмечаются структуры, отличающиеся высоким качеством предлагаемых туристических услуг.
Сегодня этим знаком могут быть отмечены также отели, рестораны,
агротуристические фермы, кемпинги, структуры B&B и оборудованные пляжи, число которых растет из года в год.
Эта знак является межсекторным, единым и узнаваемым: он приобретает все большую известность также за рубежом и показывает
себя в качестве отличного инструмента для улучшения видимости
сети структур, которых объединяет общее дело по пересмотру местного туристического предложения.
В этом путеводителе Торговая Палата представляет результаты деятельности, которая дает гарантию высокого качества пользователям
туристической системы данной территории и которая вносит свой
вклад в позитивное обновление имиджа провинции Савона, все
больше ассоциируя ее с международным центром, пользующимся
признанным доверием.
Культура качества, продвигаемая сертификацией ISNART, отражается
на местном обществе и помогает улучшить эффективность услуг в их
совокупности и повысить эффективность местного малого бизнеса.
Таким образом, пользу от этого смогут получить не только туристы,

GASTRONOMIA TIPICA
Nell'interno prevalgono i sapori del bosco: funghi, tartufi, castagne, salumi e formaggi, lumache e coniglio, le torte di verdura e numerosi i tipi di frittelle con verdura, ravioli di borragine e pansotti con salsa di noci. Tra i dolci, celebri sono gli
amaretti e la torta di nocciole.
Vicino al mare troviamo la cucina mediterranea, con l'uso di olio extravergine
d'oliva e di erbe aromatiche, la cima, le verdure spesso ripiene, il pesce (acciughe
ripiene, bianchetti e merluzzo) e i frutti di mare. Tipiche della zona sono la farinata
di ceci o di grano e le focacce. Primi piatti da gustare: trofie e trenette al pesto.

Il pesto è un condimento fondamentale nella cucina tradizionale ligure. Si prepara
con basilico, olio extravergine d’oliva, parmigiano e pecorino grat- tugiato, aglio, pinoli, noci e sale grosso.
Ottimi i vini tipici locali rossi e bianchi, DOC (Denominazione Origine Con- trollata)
"Riviera Ligure di Ponente": Rossese, Pigato, Vermentino e IGT(In- dicazione geografica tipica) "Colline Savonesi": Lumassina, Granaccia, Buzzetto, O Mataossu,
ognuno con i propri sapori e aromi caratteristici.
E’ pregiatissimo l’olio extravergine d’oliva DOP .“Riviera Ligure” prodotto con le
olive taggiasche tipiche delle coltivazioni liguri e ingrediente base per numerose e
tradizionali salse, paté e ortaggi sott’olio

In the inland prevail the tastes of the woods: mushrooms, truffles, chestnuts, meats
and cheeses, snails and rabbit, vegetable cakes and the numerous types of pancakes with vegetables, borragine (a local herb) ravioli and “pansotti” with walnut
sauce. Among the famous sweets, you can find “amaretti” and hazelnut cake.
L’arrière-pays propose surtout des plats du terroir : champignons, truffes, châtaignes, charcuterie et fromages, escargots, gibier, beignets , ravioli et pansotti à la
sauce aux noix. Et pour les desserts , amaretti et gâteau aux noisettes.
Le bord de mer nous fait savourer une cuisine méditerranéenne à base d’huile d’olives et herbes aromatiques, la cima, les légumes farcis, le pois- son (sardines farcies, bianchetti, merlan) et les fruits de mer. A ne pas manquer de goûter, la célèbre
“Farinata” à la farine de pois chiches ou de blé et les fameuses “trofie ou trenette”
au pesto.
Near to the sea we find the Mediterranean cooking, with the use of extra- vergin olive
oil and aromatic herbs, the “cima”, the vegetables often stuffed, the fish (stuffed
anchovies, “bianchetti” and codfish) and the sea fruits. Typical of the zone are the
chick-peas or wheat “farinata” and the “focaccia”. First dishes to be tasted: “trofie” and “trenette” with “pesto” sauce.

“Pesto” is a fundamental seasoning of the traditional ligurian cooking. You can prepare it with basil, extra-vergin olive oil, Parmisan cheese, grated Pecorino, garlic,
pine-kernels, walnuts and kitchen-salt.
Le pesto, préparé avec du basilique, de l’huile extra fine d’olive, du fromage (parmesan et pecorino râpés), de l’ ail, des pignons, des noix et du gros sel est une
sauce importante dans la cuisine traditionnelle ligure.
Excellent typical local red and white wines, D.O.C. (Controlled Origin Name) "Riviera
Ligure di Ponente": Rossese, Pigato, Vermentino and typical I.G.T. (Typical Geographic Indication) "Colline Savonesi": Lumassina, Granaccia, Buzzetto or Mataossu, each with its own tastes and characteristic aromas.
Excellents, les vins rouges et blancs DOC (Dénomination d’Origine Contrôlée) (Riviera Ligure di Ponente) tel que le Rossese, Pigato, Vermentino et IGT (Indication
géographique typique) “Colline Savonesi” tel que le Lumassina, Granaccia, Buzzetto, O Mataossu, chacun d’eux aux parfums et accents propres.
Of great value, the extravergine olive oil D.O.P. “Riviera Ligure” produced with the
“taggiasche” olives, typical of the cultivations liguri (near Taggia) and basic ingredient for numerous and traditional sauces, pâté and in-oil vegetables.
De grande qualité est l’huile extra fine DOP “Riviera Ligure” produite avec les olives “taggiasche” propres et typiques des cultures ligures. Elle est le principal ingrédient de nombreuses sauces et conserves.

Im Landesinneren dominieren die Aromen des Waldes: Pilze, Trüffeln, Kastanien,
Wurst und Käse, Schnecken und Kaninchen, Gemüsekuchen und verschiedene
Arten von Gemüsepfannkuchen, Borretsch – Ravioli und Pansotti mit WalnussSauce. Der Haselnusskuchen und die Mandelma- kronen zählen zu den bekanntesten Süßigkeiten.
