Ruim 110 jaar na de uitvinding van de eerste snijmachine speelt Berkel nogmaals de absolute hoofdrol. De
nieuwe Avantgarde vervangt de beroemde, maar verouderde Berkel 800S en de Berkel 834 die reeds enkele
tientallen jaren geleden ontwikkeld en meerdere malen in hun leven aangepast zijn en welke niet meer in
staat waren te voldoen aan meest recente voorschriften en aan de hoge hygiëne-, veiligheids- en
betrouwbaarheidseisen waar klanten van over de hele wereld en Berkel zélf naar vragen. Berkel is er zéér van
over-tuigd dat er niet kan worden voldaan aan de hedendaagse, restrictieve vraag van de markt door
producten die tientallen jaren geleden ontwikkeld zijn, toen de voorschriften òf nog niet bestonden òf zéér
anders waren dan de hedendaagse. Dit geldt natuurlijk niet alleen voor de Berkel 800S en de 834, maar voor
veel van de andere producten die vandaag de dag nog verkrijgbaar zijn. Vandaar de investeringen van Berkel,
eerst in de projecten Premiere en Futura en later in de Avantgarde. De nieuwe Avantgarde is ontwikkeld om
ronduit het meest actuele en het meest bevredigende product te kunnen bieden dat vandaag op de markt te
vinden is. Na jaren studie en onderzoek door het Berkel Industrial Research Develop-ment & Design
Department dat ook heeft deelgenomen aan belangrijke en roemruchte studies in de luchtvaart-, marine- en
autosector in Italië, Spanje en Duitsland, is hier dan het definitieve antwoord op de vraag naar uitvoerbaarheid,
hygiëne en veiligheid in de hedendaagse wereld. Van de Avantgarde zijn alle delen die in contact komen met
levensmiddelen, gemaakt van roestvrij AISI 304 staal, voor een perfecte hygiëne en een onvergelijkbare
levensduur. Alle mechanismen zijn van hoogwaardige kwaliteit; de motor, IP54, heeft een zéér hoog
beschermingsniveau tegen water, de elektrische delen zijn IP65 beschermd, de bewegingstransmissie aan het
mes is volgens de allerlaatste begrippen. Alles om onverge-lijkbare betrouwbaarheid en stevigheid te
garanderen. De unieke stijl, de verfraaide lijn, de elegante afrondingen maken van de Avantgarde niet alleen
een onvergelijkbaar werktuig, maar ook een schitterend meubelstuk voor het moderne verkooppunt. Uit alles
blijkt duidelijk de zorg voor het project en de rijke passie van de mannen van Berkel. Maar liefst vier octrooien
zijn op deze modellen van toepassing, allen een duidelijke verbetering in vergelijking met de “gewone”
snijmachines en allen met het doel om het leven van de gebruikers ervan te verbeteren op het gebied van
veiligheid, gebruiksgemak en snelheid. Het nieuwe systeem met een hoge precisie in het regelen van de dikte
van de plakken, het revolutionaire automatische positioneren van de messenslijper, het zéér snelle afkoppelen
van de bescherming van het mes en het uitzonderlijke “click in&out” systeem van het opvangbord maken
Avantgarde onvergelijkbaar met iedere andere snijmachine. De algemene snijprecisie van Berkel wordt
nogmaals bevestigd en indien mogelijk verbeterd. Het enige wat minder is bij Avantgarde in vergelijking met
andere snijmachines is de uitval van het te snijden product. De precisie van het project en het monteren met
zorg staan het snijden met zéér weinig uitval en tot een dikte van 3mm van het product toe waardoor men
ongelooflijk bespaart op de kosten. Stevigheid,
betrouwbaarheid, veiligheid, hygiëne, gemaksen gebruiksvrien-delijkheid en besparing zijn dus
de sleutelwoorden die de nieuwe Avantgarde
beschrijven.

Nieuw ontwerp, spectalulaire stijl en extreem
innovatief. Avantgarde is het perfect voorbeeld
van hoe een werktuig kan veranderen in een
meubelstuk van het verkooppunt. Maar, vanaf
het begin van het project Avantgarde hebben
design en stijl nooit de functionalitett in gevaar
gebracht. Integendeel, het zijn grote vertolkers
van deze functionaliteit geweest. Een mooie lijn,
afgeronde hoeken, veel tussenruimte voor een
snelle en perfecte schoonmaak. Vormen,
materialen, ergonomie, ongeloofelijk lichte
bewegingen, aan alles is gedacht om de
gebruiker van het apparaat niet te vermoeien en
om het gebruik in alle veiligheid te kunnen
garanderen. Een mooie samenvatting van
Avantgarde is gemaakt door een professionele
gebruiker tijdens de keuringstesten, die de
Avantgarde de eerste “anti-stress snijmachine”
de op de markt, genoemd heeft.
Eén van de onopgeloste problemen van
snijmachines, het meten en herhalen van de
dikte van de plakken is eindelijk opgelost op
een geniale, maar ongelooflijk simpele
manier door de mannen van Berkel. De
opening van het blad tot 32mm voltrekt zich
door een ‘openingswet’ die speciaal bij
Berkel bestudeerd is, en die een zéér grote
precisie toestaat, oftewel een extreem fijne
regeling, speciaal in het geval van de smal,
meest gebruikte diktes met een herhaling die
eerder ondenkbaar was. De nummers op de
knop staan voor de reële dikte van de
plakken in millimeters.
Glofdnieuw octrooi van Berkel voor het
supersnelle ontkoppelen van het bord. Met
een simpel gebaar, het verplaatsen van een
hendel, kan het bord losgekoppeld worden
om te wassen. Tegelijkertijd, en zonder
andere noodzakelijke handelingen, wordt het
apparaat in veiligheid gebracht en de CE
vergrendeling geactiveerd. Omgekeerd is het
herplaatsen van het bord genoeg om de
hendel automatisch te deblokkeren en het
apparaat opnieuw te gebruiken. Een grote
innovatie die het dagelijkse leven van de
gebruikers makkelijker maakt.
Nog een octrooi van Berkel, dat een einde
maakt aan de ingewikkelde en vaak
vermoeiende handelingen, aan schroeven die
vast- en losgedraaid moeten worden (altijd
moeilijk, altijd te glad). Nu, om de
bescherming van het snijmes te verwijderen
is op een kop drukken genoeg en verder, om
deze te herplaatsen is een lichte druk
voldoende. Nog een zeer belangrijke
vernieuwing is dat de bescherming in de
afwasmachine gewassen kan worden (nét
zoals de andere onderdelen in roestvrij staal
van de Avantgarde) voor een optimale
hygiëne.

Het juist plaatsen van de messenslijper
gebeurt automatisch, door de bescherming
ervan omhoog te bewegen. Ook dit betreft
een nieuw internationaal octrooi van Berkel,
een nieuw hulpmiddel voor de gebruiker en
een exponentiële groei van de
gebruikersveiligheid. Door het automatisch
positioneren wordt tevens het perfect
scherpen van het mes, en daardoor ook zijn
levensduur, gegarandeerd. Een belangrijke
afname van het uitschot, waardoor de
verborgen onderhoudskosten sterk
verminderen en de winst van het
verkooppunt toeneemt.
De drukpers en de ketsplaat, beide in
roestvrij staal net zoals alle andere
onderdelen die in contact komenmet de
levensmiddelen, zijn makkelijk en snel af te
koppelen om vervolgens in de afwasmachine
gewassen te worden voor een onbetwiste
hygiëne. De opvanger van de plakken kan
niet alleen makkelijk afgekoppeld worden,
maar ook simpelweg verplaatst om een
snelle schoonmaak te bevorderen.

New design, dramatic and extremely
innovative style. Avantgarde is a perfect
example of how a work-tool can actually
double as a piece of furniture at the point of
sale. Since the beginning of the Avantgarde
project, however, design and style have never
taken precedence over functionality but,
rather, have been its great interpreters.
Sinuous lines, rounded corners, ample space
for quick and perfect cleaning. Shapes,
materials, ergonomics, incredible lightness of
movement, all designed to prevent fatigue of
the user who slices for hours and to ensure
utmost user safety. A wonderful description
of Avantgarde was given by a professional
user during testing who called Avantgarde "
the first anti-stress slicer " on the market.
One of the “unresolved issues” of slicing
machines, the measuring and repetitiveness
of slice thickness, has finally been resolved in
an incredibly simple but ingenious manner by
the people at Berkel. The opening of the
gauge plate up to 32mm according to an
internally designed, Berkel patented openinglaw, which allows high precision, that is to
say a very fine adjustment, especially in low
and more commonly used thickness with a
resultant repetitiveness previously
unthinkable. The numbers on the knob
represent the actual thickness of the slice in
mm.

table can be removed for washing.
Simultaneously and without need for further
action, the machine is secured and the CE
block is activated. Conversely, simply putting
the table back automatically unlocks the
lever and puts the machine in working mode.

Yet another International Patent for Berkel
puts an end to complicated and often tiring
movements, from knobs that need to be
tightened and unscrewed (always too hard
and too slippery). Now, to remove the bladecovers, just press a button and then to put it
back on, slight pressure is all that is needed.
Another important innovation is that the
blade-covers can be washed in a dishwasher
(as can the other stainless steel Avantgarde
parts) for optimum cleaning.

The correct positioning of the sharpener
happens automatically by lifting the slicer
covers. This too subject of a new
international patent for Berkel and a new aid
to the user providing an exponential increase
in security. With its automatic positioning a
perfect sharpening of the blade is also
guaranteed and accordingly the life of the
blade itself is prolonged, with a significant
reduction in waste, thereby greatly reducing
the hidden managing costs and increasing
point of sale profits.
Both the food press and slice deflector, are in
stainless steel as are all the other parts
which come in contact with food and are
easily and quickly removed to be washed in a
dishwasher for irreproachable hygiene. The
slice deflector can simply be moved, as well
as removed, to facilitate quick cleaning.

110 Jahren nach der Erfindung der ersten Aufschnittmaschine von Berkel, wird diese erneut zum absoluten
Hauptdarsteller. Die neue Avantgarde wird die bekannten, aber mittlerweile sehr veralteten Modelle Berkel

Neues Design, spektakulärer Stil und extrem
innovativ. Avantgarde ist ein perfektes Beispiel
für ein Arbeitsinstrument, welches sich in einen
Einrichtungsgegenstand der Verkaufsstelle
verwandeln kann. Dabei haben Design und Stil
im Projekt Avantgarde jedoch nie die
Funktionsfähigkeit beeinträchtigt - viel mehr
haben sie diese interpretiert. Kurvenreiche
Linien, abgerundete Ecken, viel Platz für eine
schnelle und perfekte Reinigung. Formen,
Materialien, Ergonomie, unglaubliche
Leichtigkeit in den Bewegungsabläufe: alles
wurde so entwickelt, dass der Anwender, der
stundenlang aufschneidet, nicht ermüdet, und
um die Benutzung in absoluter Sicherheit zu
gewährleisten. Ein Fachmann hat die
Eigenschaften der Avantgarde während des
Abnahmetests schön zusammengefasst, indem
er sie zur ersten, auf dem Markt eingeführten
„Anti-Stress-Aufschnit-tmaschine“ gekürt hat.
Eines der „ungelösten Probleme“ der
Aufschnittmaschinen, die Abmessung und
Wiederholbarkeit der Dicke der Scheiben,
wurde endlich von den Fachmännern der
Firma Berkel auf geniale und unglaublich
einfache Weise gelöst. Die Öffnung der
Einstellvorrichtung für die Scheibendicke
kann bis zu 32 mm betragen und erfolgt
nach einem Öffnungsgesetz, welches eigens
dafür intern entwickelt und von Berkel zum
Patent angemeldet wurde. Es ermöglicht eine
sehr hohe Präzision, d.h. eine extrem feine
Regulierung, vor allem bei den geringen
Schnittstärken, sowie eine nie da gewesene
Wiederholbarkeit. Die Zahlen auf dem
Handgriff entsprechen der realen
Schnittstärke der Scheiben in Millimetern.

zum ultraschnellen Entfernen des Schlittens.
Mit einer einfachen Bewegung, dem
Verstellen eines Hebels, kann der Schlitten
zum Reinigen entnommen werden.
Gleichzeitig und ohne weitere Handgriffe wird
das Gerät gesichert und die CE-Blockierung
setzt ein. Auf der anderen Seite reicht es aus,
den Schlitten wieder einzusetzen, um den
Hebel automatisch zu lösen und die
Maschine wieder in Arbeitsposition zu
bringen. Eine großartige Erfindung, die die
tägliche Arbeit der Anwender verbessert.
Ein weiteres internationales Patent von
Berkel, welches den komplizierten und oft
anstrengenden Bewegungsabläufen, den
Drehknöpfen, die gedrückt und geschraubt
werden müssen und immer zu stark
angezogen und zu rutschig sind, ein Ende
setzt. Zum Entfernen des Messerschutzes
muss jetzt einfach ein Knopf gedrückt
werden und um diesen anschließend wieder
an seinen Platz zu bringen, reicht ein leichter
Druck. Eine weitere, sehr wichtige Neuigkeit
besteht darin, dass der Messerschutz zur
perfekten Reinigung in der Spülmaschine
gewaschen werden kann (wie auch andere
Edelstahlteile von Avantgarde).

Die korrekte Positionierung des Schleifsteins
stellt sich automatisch ein, sobald der
Messerschutz angehoben wird. Auch dies ist
ein neues internationales Patent von Berkel,
eine neue Hilfestellung für den Anwender und
eine exponentielle Steigerung seiner
Sicherheit. Mit der automatischen
Positionierung wird außerdem sowohl eine
perfekte Schärfung der Schneidklinge und
somit eine längere Lebenszeit derselben
garantiert, als auch die Menge der
Produktreste und die versteckten Kosten der
Instandhaltung reduziert, wodurch eine
Erhöhung des Profits der Verkaufsstelle
gelingt.
Der Restehalter und die Scheibenablage
sind, wie alle anderen Teile, die im Kontakt
mit den Lebensmitteln stehen, aus Edelstahl
und einfach und schnell zu entfernen, um für
eine einwandfreie Reinigung in der
Spülmaschine gewaschen werden zu
können. Die Scheibenablage kann
stattdessen auch einfach verschoben
werden, um die Handgriffe bei der schnellen
Reinigung zu erleichtern.

A distanza di oltre 110 anni dall'invenzione della prima affettatrice Berkel è di nuovo protagonista assoluta. La
nuova Avantgarde rimpiazza totalmente le note ma ormai molto più che obsolete Berkel 800S e Berkel 834,
eliminate dal catalogo nel 2005, le quali, progettate alcuni decenni orsono e modificate numerose volte nel
corso della loro vita, non erano ormai in grado di rispondere agli elevati standard di igiene, sicurezza ed
affidabilità richiesti dai clienti di tutto il mondo e da Berkel stessa. Berkel è fortemente convinta che le attuali
stringenti esigenze del mercato non possano essere interamente soddisfatte da prodotti pensati decine di anni
fa quando le normative o non esistevano o erano molto diverse da quelle di oggi. Questo vale non solo per le
vecchie Berkel, naturalmente, ma per molte delle altre macchine ancora oggi in commercio. Ecco il perché
degli investimenti di Berkel prima nei progetti Premiere e Futura e poi in Avantgarde. La nuova Avantgarde
nasce con il dichiarato intento di offrire quanto di più attuale ed evoluto, quanto di più soddisfacente si possa
trovare oggi nel mondo delle affettatrici. Dopo anni di studi e ricerche effettuate dal Berkel Industrial Research
Development & Design Department e dalla collaborazione con importanti e noti studi di design e di ingegneria
nel settore aeronautico, nautico ed automobilistico, in Italia, Spagna e Germania, ecco la risposta definitiva
alla domanda di praticità, igiene e sicurezza del mondo contemporaneo. In Avantgarde tutte le parti a contatto
con il cibo sono prodotte in acciaio inox AISI 304 per una igiene perfetta ed una durata nel tempo senza pari.
Tutta la componentistica è sovradimensionata, il motore ha un grado elevatissimo di protezione dall'acqua,
IP54, le parti elettriche sono a protezione IP65, la trasmissione del moto alla lama è di comprovata validità. Il

“click in&out” del piatto rendono Avantgarde imparagonabile a qualsiasi altra affettatrice. La precisione di
taglio è, naturalmente, quella proverbiale di sempre. La sola cosa inferiore in Avantgarde rispetto ad altre
affettatrici è lo scarto di prodotto tagliato. La precisione di progetto e la cura di assemblaggio consentono
infatti di tagliare con pochissimo sfrido e di ridurre notevolmente la parte finale di prodotto non utilizzabile con

Nuovo disegno, stile spettacolare ed
estremamente innovativo. Avantgarde è il
perfetto esempio di come uno strumento di
lavoro si possa trasformare in un pezzo
d'arredamento del punto vendita. Dall'inizio
del progetto Avantgarde però, disegno e stile
non hanno mai prevaricato la funzionalità
ma, anzi, ne sono stati grandi interpreti. Linee
sinuose, spigoli arrotondati, ampi spazi per
una pulizia rapida e perfetta. Forme,
materiali, ergonomia, incredibile leggerezza
di movimenti, tutto è pensato per non
affaticare l'operatore che passa ore ad
affettare e per garantire l'uso in massima
sicurezza. Una bella sintesi di Avantgarde è
stata fatta da un operatore professionale
durante i test di collaudo che ha definito
Avantgarde “ la prima affettatrice anti-stress”
introdotta sul mercato.
Uno dei “problemi irrisolti” delle affettatrici, la
misurazione e la ripetitività dello spessore
fetta, finalmente risolto in maniera geniale
ma incredibilmente semplice dagli uomini
Berkel. L'apertura della vela fino a 32mm
avviene secondo una legge di apertura appositamente studiata internamente, brevettata
da Berkel, che consente una altissima precisione, ossia una regolazione estremamente
fine, in particolare negli spessori bassi e più
utilizzati con una ripetitività impensabile prima. I numeri sulla manopola di regolazione
rappresentano lo spessore reale della fetta in
millimetri.
Nuovissimo Brevetto Internazionale di Berkel
per lo sgancio ultra rapido del piatto. Con un
semplice movimento, lo spostamento di una
leva, il piatto può essere rimosso per il lavaggio. Contemporaneamente e senza necessità
di ulteriori azioni, la macchina viene messa in
sicurezza ed il blocco CE attivato. Viceversa,
basta mettere nuovamente il piatto per sbloccare automaticamente la leva e riportare la
macchina in condizioni di lavoro. Una grande
innovazione che migliora la vita quotidiana
degli operatori.
Ancora un Brevetto Internazionale di Berkel
che mette fine a movimenti complicati e
spesso faticosi, a manopole da stringere e da
svitare (sempre troppo dure, sempre troppo
scivolose). Ora per rimuovere il copri-lama
basta premere un pulsante e poi, per rimetterlo, è sufficiente una leggera pressione.
Un'altra importantissima novità è che il coprilama può essere lavato in lavastoviglie (come
anche altre parti in acciaio inox di Avantgarde) per una pulizia ottimale.

Il corretto posizionamento dell'affilatoio avviene automaticamente sollevando il copriaffilatoio. Anche questo un nuovo Brevetto

Pressa-merce e deflettore para fette, entrambi in acciao inox come tutte le altri parti
a contatto con il cibo, sono facilmente e rapidamente asportabili per essere lavati anche
in lavastoviglie per una igiene ineccepibile. Il
parafette oltre che essere asportato può essere semplicemente spostato per agevolare
le operazioni di pulizia veloce.

110 ans après l'invention de la première trancheuse, Berkel est de nouveau sur le devant de la scène. La
nouvelle Avantgarde remplace entièrement les fameuses Berkel 800S et Berkel 834, qui ont été éliminées du
catalogue en 2005 et sont malheureusement devenues aujourd'hui obsolètes. Celles-ci avaient été projetées
il y a quarante ans et avaient été modifiées plusieurs fois au cours de leur vie, mais n'étaient plus capables de
répondre aux plus hauts standards concernant l'hygiène, la sécurité et la fiabilité requis par les clients du
monde entier et même par l'entreprise Berkel. Berkel est convaincue que les exigences actuelles et
rigoureuses du marché ne peuvent être complètement remplies par des produits pensés quand les normes
n'existaient pas, ou étaient complètement différentes de celles d'aujourd'hui. Et ceci vaut non seulement pour
les Berkel 800S et 834, bien évidemment, mais aussi pour beaucoup d'autres machines encore aujourd'hui
présentes dans le commerce. Voici les raisons des investissements de Berkel dans le developpement Premiere
et Futura, après d'Avantgarde. La nouvelle Avantgarde naît de la ferme intention d'offrir ce qu'il y a de plus
actuel et évolué, et satisfaisant qu’on puisse trouver aujourd'hui dans le monde des trancheuses. Après des
années d'études et de recherches effectuées par Berkel Industrial Research Development & Design
Department et avec la collaboration de cabinets importants et réputés de design et d'ingénieurs dans le
secteur aéronautique, nautique et automobile, en Italie, en Espagne et en Allemagne, voici la réponse définitive
à la demande de fonctionnalité, d'hygiène et de sécurité du monde contemporain. Chez Avantgarde, toutes les
pièces en contact avec les aliments sont fabriquées en acier inox AISI 304 pour une hygiène parfaite et une
durée de vie inégalée. Tous les composants sont surdimensionnés, le moteur possède un degré élevé de
protection à l'eau, IP54, les parties électriques ont une protection IP65 et la transmission est extrêmement
fiable. Le tout pour garantir fiabilité et robustesse inégalées. Le style unique, la recherche des lignes,
l'élégance des courbes, font d'Avantgarde, un instrument de travail incomparable, et un magnifique objet

facilité et de rapidité d'utilisation. Le nouveau système de réglage de l'épaisseur de la tranche à haute
précision, le révolutionnaire positionnement automatique de l'affiloir, le décrochement ultra-rapide du couvrelames et l'extraordinaire système « click in&out » du plat, rendent Avantgarde incomparable avec n'importe
quelle autre trancheuse. La précision de la coupe reste celle légendaire de Berkel. Le seul point inférieur
d'Avantgarde par rapport aux autres trancheuses réside dans les déchets de produit coupé. La précision du

Nouveau design, style original et extrêmement
innovant. Avantgarde représente l'exemple
parfait d'un instrument de travail se
transformant en une pièce de décoration pour
le point de vente. Depuis le début du projet
Avantgarde, le design et le style n'ont jamais
prédominé sur la fonctionnalité ; ils en sont
même été les principaux interprètes. Lignes
sinueuses, coins arrondis, et grands espaces
permettent un nettoyage rapide et impeccable.
Formes, matériaux, ergonomie, incroyable
légèreté de mouvement, tout a été pensé pour
que l'opérateur ne se fatigue pas s'il doit
trancher pendant des heures, mais aussi pour
garantir une utilisation très sécurisée. Un
opérateur professionnel a fait une très belle
synthèse d'Avantgarde pendant les essais, en
définissant Avantgarde comme "la première
trancheuse antistress" introduite sur le marché.
L’un des “problèmes irrésolus” des trancheuses, c’est a dire, la mesure et le
caractère répétitif de l'épaisseur de la
tranche, a été finalement résolu ingénieusement et de manière très simple par
Berkel. L'ouverture de la plaque-butoir
jusqu'à 32 mm se fait selon une loi
d'ouverture qui a été spécialement étudiée
en interne, brevetée par Berkel et qui permet
une très grande précision, c'est-à-dire un
réglage extrêmement fin pour les épaisseurs
fines et les plus utilisées. Les chiffres sur la
poignée de réglage représentent l'épaisseur
réelle de la tranche en millimètres.
Tout Nouveau Brevet International de Berkel
pour le démontage ultra rapide du plat. Par
un simple mouvement et l'utilisation d'un
levier, le plat peut être retiré pour être lavé.
Au même tèmps et sans qu'il y ait besoin
d'actions ultérieures, la machine est
sécurisée et le bloc CE activé. Inversement, il
suffit de replacer le plat pour débloquer
automatiquement le levier et remettre la
machine en condition de travail. Une grande
innovation qui permet d'améliorer le travail
quotidien des opérateurs.
Encore un Brevet International de Berkel qui
met fin à l'ère des mouvements compliqués
et souvent fatigants ainsi qu'à des poignées
à serrer et à desserrer (toujours trop dures,
toujours trop glissantes). Maintenant, pour
retirer le couvre-lame, il suffit d'appuyer sur
un bouton, puis, pour le remettre, d'effectuer
une légère pression. Autre nouveauté très
importante: le couvre-lame peut être lavé
dans un lave-vaisselle (tout comme les
autres parties en acier inox d'Avantgarde)
pour un nettoyage optimal.

Le positionnement correct de l'affiloir se fait
automatiquement en soulevant le couvreaffiloir. Cela correspond également à un
nouveau Brevet international de Berkel, à une
nouvelle aide pour l'opérateur et à une
amélioration significative en ce qui concerne
la sécurité. Le positionnement automatique
permet de garantir un parfait affilage de la
lame, prolongeant ainsi la durée de vie de la
lame, de réduire de manière significative les
déchets, réduisant fortement les coûts
occultes de gestion et augmentant les profits
du point de vente.
Le pressoir et le déflecteur pare-tranches,
tous les deux en acier inox comme les autres
parties en contact avec les aliments, sont
facilement et rapidement démontables pour
être lavés, même en lave-vaisselle, et
permettant une hygiène irréprochable. Le
pare-tranches, peut être et démonté, peut
être simplement déplacé pour faciliter les
opérations de nettoyage rapide.

Tras 110 años desde la intervención de la primera cortadora de fiambres Berkel, vuelve a ser la protagonista
absoluta. El nuevo Avantgarde reemplaza totalmente las cada vez más obsoletas Berkel 800S y 834, ya
eliminadas del mercado, diseñadas hace décadas y modificadas varias veces durante su vida, ya no estaban
en condiciones de satisfacer las últimas regulaciones y altos estándares de higiene, seguridad y fiabilidad que
demandan los clientes de todo el mundo y la Berkel misma. Berkel está firmemente convencida de que las
actuales estrictas exigencias del mercado no pueden ser satisfechas por productos diseñados hace décadas,
cuando las reglas o no existían o son muy diferentes de las de hoy. Esto no es sólo para Berkel 800S y 834,
por supuesto, sino que también para muchas de las máquinas del mercado. Esta es la razón de la inversión en
los primeros proyectos Berkel Futura y Premiere y luego en Avantgarde.
La nueva Avantgarde nace con el propósito expreso de proporcionar el más actual y evolucionado, la mayor
satisfacción que usted puede encontrar hoy en el mundo de las máquinas de cortar fiambres.
Después de años de estudios e investigaciones llevados a cabo por el Departamento de Investigación del
Desarrollo Industrial y el Diseño de la Berkel, que también colaboró en los importantes y muy conocidos
estudios de ingeniería aeronáutica, naval y de automoción, en Italia, España y Alemania; ésta es la respuesta
definitiva a la cuestión de practicidad, la salud y la seguridad del mundo contemporáneo.
En Avantgarde todas las partes en contacto con los alimentos están fabricadas en acero inoxidable AISI 304
para una higiene y una durabilidad incomparable. Toda la mecánica es de gran tamaño, el motor, IP54, tiene
un alto grado de protección del agua, los componentes eléctricos de protección IP65, la transmisión del

Nuevo diseño, estilo espectacular y muy
innovador. Avantgarde es un ejemplo
perfecto de cómo una herramienta de trabajo
se puede transformar en un mueble de la
tienda. Desde el inicio del proyecto
Avantgarde, sin embargo, el diseño y el estilo
no han transgredido la funcionalidad, sino
que fueron los grandes intérpretes. Líneas
sinuosas, los bordes redondeados, espacios
abiertos, ideal para una limpieza rápida y
perfecta. Formas, materiales, la ergonomía,
la ligereza increíble de movimientos, todo
está diseñado para no cansar al operador
que se pasa horas cortado y para garantizar
la máxima seguridad de uso. Un buen
resumen de Avantgarde lo ha hecho un
profesional durante las pruebas, ha definido
Avantgarde “la primera cortadora contra el
estrés”, introducida en el mercado.
Uno de los “asuntos sin resolver” de las
máquinas de cortar, la medición y el grosor
de corte repetitivo, finalmente fue resuelta
por el equipo de Berkel de una manera
simple pero genial. La apertura de las alas es
de hasta 32 mm de acuerdo con la ley de
apertura especialmente diseñada
internamente, patentada por Berkel, que
permite una alta precisión, es decir, un ajuste
extremadamente fino, especialmente en los
espesores bajos y más utilizados con una
repetición impensable antes. Los números en
el mando de control representan el grosor de
corte real en milímetros.
Nueva Patente internacional de la marca
Berkel para poder retirar la tabla de una
manera rápida y fácil. Con un simple
movimiento, el movimiento de una palanca,
la placa se puede quitar para ser lavada.
Simultáneamente, y sin ninguna acción
adicional, la máquina se mete en modo
seguro y el bloqueo CE se activa. Por el
contrario, cuando se recoloca la tabla la
machina se pone en condiciones de trabajo
de forma automatica. Una gran innovación
que mejora la vida cotidiana de los operarios.
Otra patente internacional de Berkel que
pone fin a los movimientos complicados y, a
menudo fatigosos, a los botones de apretar y
desenroscar (siempre demasiado duros,
siempre demasiado resbaladizos). Ahora,
para retirar la cubierta de la hoja, sólo se
necesita pulsar un botón y, a continuación,
para volver a ponerla, sólo un poco de
presión. Otra novedad importante es que la
cubierta de hoja se pueden lavar en el
lavavajillas (así como otras piezas de acero
inoxidable de Avantgarde) para una limpieza
óptima.

El posicionamiento correcto del afilador
sucede automáticamente el levantamiento de
la cobertura del afilador. Incluso esta es
nueva patente internacional de Berkel, una
nueva ayuda para el operario y un aumento
exponencial de su seguridad. Con el
posicionamiento automático se garantiza una
perfecta nitidez de la hoja para así ampliar su
vida, una reducción sustancial de la brecha
que reduce considerablemente los costes
ocultos de la gestión y aumenta las
ganancias del punto de venta.
Prensa-mercancía y deflector para lonchas,
ambos de acero inoxidable, como todas las
otras partes en contacto con los alimentos
son rápidas y fácilmente extraíbles para
lavarlas en el lavavajillas, para mantener una
higiene impecable. La tabla para apoyar las
lonchas cortadas además de poder retirarse
también se puede mover con facilitar para
