La materia è ogni cosa fatta da atomi e da molecole. La materia è tutto ciò che ha una massa. Matter is everything around you. Matter is anything made of atoms and molecules. Cinzia Celino 2 CHANGING STATES OF MATTER CAMBIAMENTI DI STATO DELLA MATERIA Elements and compounds can move from one physical state to another and not change. Oxygen (O2) as a gas still has the same properties as liquid oxygen. The liquid state is colder and denser but the molecules are still the same. Water is another example. The compound water is made up of two hydrogen (H) atoms and one oxygen (O) atom. It has the same molecular structure whether it is a gas, liquid, or solid. Although its physical state may change, its chemical state remains the same. So you ask, "What is a chemical state?" If the formula of water were to change, that would be a chemical change. If you added another oxygen atom, you would make hydrogen peroxide (H2O2). Its molecules would not be water anymore. Changing states of matter is about changing densities, pressures, temperatures, and other physical properties. The basic chemical structure does not change. L'ossigeno (O2) gassoso ha sempre le stesse proprietà dell'ossigeno liquido. Lo stato liquido è più freddo e più denso ma le molecole sono ancora le stesse. L'acqua è un altro esempio. Il composto acqua è fatto da due atomi di idrogeno (H) e da un atomo di ossigeno (O). Ha la stessa struttura molecolare sia quando è un gas, che quando è un liquido, o un solido. Anche se il suo stato fisico può cambiare, il suo stato chimico rimane la stesso. Ti chiederai " Che cos’è uno stato chimico? " Se la formula dell'acqua potesse cambiare, quello sarebbe un cambiamento chimico. Se aggiungessi un altro atomo di ossigeno, prepareresti il perossido di idrogeno (H2O2). Solids, liquids, gases are different states of matter. Each of these states is also known as a phase. Elements and compounds can move from one phase to another phase when special physical forces are present. One example of those forces is temperature. Ci sono tre stati fisici della materia. Solido, liquido, gas sono differenti stati della materia. Ciascuno di questi stati è conosciuto anche come fase. Gli elementi e i composti possono passare da una fase a un'altra fase quando sono presenti particolari forze fisiche. Un esempio di queste forze è associato alla temperatura. Phase describes a physical state of matter. The key word to notice is physical. Things only move from one phase to another by physical means. If energy is added (like increasing the temperature or increasing pressure) or if energy is taken away (like freezing something or decreasing pressure) you have created a physical change. One compound or element can move from phase to phase, but still be the same substance. You can see water vapour over a boiling pot of water. That vapour (or gas) can condense and become a drop of water. If you put that drop in the freezer, it would become a solid. No matter what phase it was in, it was always water. It always had the same chemical properties. On the other hand, a chemical change would change the way the water acted, eventually making it not water, but something completely new. Una fase descrive uno stato fisico della materia. La parola chiave da notare è “fisico”. Le sostanze passano da una fase a un’altra grazie a mezzi fisici. Se si fornisce energia (come per esempio aumentando la temperatura o aumentando la pressione) o se si sottrae energia (come per esempio congelando qualcosa o diminuendo la pressione) si genera un cambiamento fisico. Un composto o un elemento può passare da fase a fase, ma è ancora la stessa sostanza. Puoi vedere il vapore acqueo sopra una pentola di acqua che bolle. D’altra parte un cambiamento chimico cambierebbe il modo in cui l'acqua si comporta, eventualmente trasformandola in qualcosa di diverso dall'acqua, qualcosa di completamente nuovo. Cinzia Celino 4 CHEMICAL vs. PHYSICAL CHANGES TRASFORMAZIONI CHIMICHE E TRASFORMAZIONI FISICHE It is important to understand the difference between chemical and physical changes. The two types are based on studying chemical reactions and states of matter. Physical changes are about energy and states of matter. Chemical changes happen on a molecular level. È importante capire la differenza fra trasformazioni chimiche e fisiche. I due tipi sono basati sullo studio delle reazioni chimiche e degli stati della materia. I cambiamenti fisici hanno a che fare con l’energia e gli stati della materia. I cambiamenti chimici invece avvengono ad un livello molecolare. When you melt an ice cube you have forced a physical change (adding energy). That example caused a change in the state of matter. You can cause physical changes with forces like motion, temperature, and pressure. Quando fai fondere un cubetto di ghiaccio hai prodotto un cambiamento fisico (fornendo energia). L'esempio ha causato un cambiamento nello stato fisico. Puoi provocare cambiamenti fisici con mezzi come il movimento, la temperatura e la pressione. Chemical changes happen on a much smaller scale. While some experiments show obvious chemical changes such as a colour change, most chemical changes happen between molecules and are unseen. When iron (Fe) rusts you can see it happen over a long period of time. The actual molecules have changed their structure (the iron oxidized). Melting a sugar cube is a physical change because the substance is still sugar. Burning a sugar cube is a chemical change. The energy of the fire has broken down the chemical bonds. I solidi sono solitamente duri perché le loro molecole sono impacchettate insieme. Più sono vicine le molecole, più è duro il solido. I solidi inoltre possono mantenere la loro forma. Una roccia apparirà sempre come una roccia a meno che le accada qualcosa. Lo stesso vale per un diamante. Anche quando frantumi un solido in una polvere, vedrai piccoli pezzetti minuscoli di quel solido sotto un microscopio. I liquidi versati da un contenitore ad un altro riempiranno tutto il contenitore (cambiando forma). Ai solidi, invece, piace la loro forma. Nello stesso modo un solido mantiene la sua forma, gli atomi all'interno di un solido non possono muoversi troppo. Questa è una delle caratteristiche fisiche dei solidi. Gli atomi e le molecole nei liquidi e nei gas possono fluttuare e “galleggiare”, liberi di spostarsi dove vogliono. Le molecole in un solido sono attaccate. Gli atomi hanno ancora la possibilità di ruotare su se stessi e gli elettroni “volano” intorno, ma l'intero atomo non cambierà la posizione. I solidi possono essere formati da molte sostanze. Possono contenere elementi puri o vari composti. Quando in un solido c’è più di un tipo di composto allora si ha ciò che è chiamato miscuglio (o miscela). La maggior parte delle rocce sono miscele di molti composti differenti. Il calcestruzzo è un buon esempio di una miscela artificiale. So what is a solid? Solids are usually hard because their molecules have been packed together. The closer your molecules are, the harder you are. Solids also can hold their own shape. A rock will always look like a rock unless something happens to it. The same goes for a diamond. Even when you grind up a solid into a powder, you will see little tiny pieces of that solid under a microscope. Liquids will move and fill up any container. Solids like their shape. In the same way that a solid holds its shape, the atoms inside of a solid are not allowed to move around too much. This is one of the physical characteristics of solids. Atoms and molecules in liquids and gases are bouncing and floating around, free to move where they want. The molecules in a solid are stuck. The atoms still spin and the electrons fly around, but the entire atom will not change position. Solids can be made up of many things. They can have pure elements or a variety of compounds inside. When you get more than one type of compound in a solid it is called a mixture. Most rocks are mixtures of many different compounds. Concrete is a good example of a manmade mixture. ITST Artemisia Gentileschi prof. Cinzia Celino 6 CRYSTALS CRISTALLI On the other end of the spectrum from a mixture is something called a crystal. When a solid is made up of a pure substance and forms slowly, it can become a crystal. Not all pure substances form crystals because it is a delicate process. The atoms are arranged in a regular repeating pattern called a crystal lattice. A crystal lattice is a very exact organization of atoms. A good example is carbon. A diamond is a perfect crystal lattice while the graphite arrangement is more random. All’estremità opposta rispetto ad un miscuglio c’è ciò che è denominato cristallo. PRINCIPI FONDAMENTALI DEI LIQUIDI LIQUID BASICS The second state of matter we will discuss is a liquid. Solids are hard things you can hold. Gases are floating around you and in bubbles. What is a liquid? Water is a liquid. Your blood is a liquid. Liquids are an in-between state of matter. They can be found in between the solid and gas states. They don't have to be made up of the same compounds. If you have a variety of materials in a liquid, it is called a solution. Il secondo stato fisico di cui tratteremo è lo stato liquido. I solidi sono oggetti duri che puoi tenere in mano. I gas fluttuano intorno a te e nelle bolle. Che cosa è un liquido? L'acqua è un liquido. Il tuo sangue è un liquido. Cinzia Celino 7 One characteristic of a liquid is that it will fill up the shape of a container. If you pour some water in a cup, it will fill up the bottom of the cup first and then fill the rest. The water will also take the shape of the cup. It fills the bottom first because of gravity. The top part of a liquid will usually have a flat surface. That flat surface is because of gravity too. Putting an ice cube (solid) into a cup will leave you with a cube in the middle of the cup; the shape won't change until the ice becomes a liquid. Another trait of liquids is that they are difficult to compress. When you compress something, you take a certain amount and force it into a smaller space. Solids are very difficult to compress and gases are very easy. Liquids are in the middle but tend to be difficult. Una caratteristica di un liquido è che esso assumerà la forma del contenitore. Se versi dell’acqua in una tazza, riempirà prima la parte inferiore della tazza e poi riempirà il resto. L'acqua inoltre prenderà la forma della tazza. When pressure goes up, substances are compressed. Liquids already have their atoms close together, so they are hard to compress. Many shock absorbers in cars compress liquids in tubes. A special force keeps liquids together. Solids are stuck together and you have to force them apart. Gases bounce everywhere and they try to spread themselves out. Liquids actually want to stick together. There will always be the occasional evaporation where extra energy gets a molecule excited and the molecule leaves the system. Overall, liquids have cohesive (sticky) forces at work that hold the molecules together. Una forza speciale mantiene insieme i liquidi. I solidi sono attaccati insieme e devi forzare per separarli. Cinzia Celino 8 LOOKING FOR A GAS ALLA RICERCA DI UN GAS Gas is everywhere. There is something called the atmosphere. That's a big layer of gas that surrounds the Earth. Gases are random groups of atoms. In solids, atoms and molecules are compact and close together. Liquids have atoms a little more spread out. However, gases are really spread out and the atoms and molecules are full of energy. They are bouncing around constantly. Il gas è dappertutto. C’è qualcosa chiamato atmosfera. That is one of their physical characteristics. Think about a balloon. No matter what shape you make the balloon it will be evenly filled with the gas atoms. The atoms and molecules are spread equally throughout the entire balloon. Liquids can only fill the bottom of the container while gases can fill it entirely. Vapour and gas mean the same thing. The word vapour is used to describe gases that are usually found as liquids. Good examples are water or mercury (Hg). Compounds like carbon dioxide are usually gases at room temperature so scientists will rarely talk about carbon dioxide vapour. Water and mercury are liquids at room temperature so they get the vapour title. Potresti sentire il termine vapore. Vapore e gas significano la stessa cosa. Gases hold huge amounts of energy, and their molecules are spread out as much as possible. With very little pressure, when compared to liquids and solids, those molecules can be compressed. It happens all of the time. Combinations of pressure and decreasing temperature force gases into tubes that we use every day. You might see compressed air in a spray bottle or feel the carbon dioxide rush out of a can of soda. Those are both examples of gas forced into a space smaller than it would want, and the gas escapes the first chance it gets. Cinzia Celino 10 UNIT 3 : SOLUTIONS SOLUTIONS AND MIXTURES SOLUZIONI E MISCUGLI Prima di tuffarci nelle soluzioni, distinguiamo le soluzioni da altri tipi di miscele. Le soluzioni sono gruppi di molecole che sono state mescolate con una distribuzione completamente uniforme. Non è il modo più facile per dirlo. Gli scienziati dicono che le soluzioni sono sistemi omogenei. Altri tipi di miscugli possono avere una concentrazione un po’ più alta da una parte del liquido rispetto a un’altra parte. Le soluzioni hanno una concentrazione uniforme in tutto il sistema. Un esempio: zucchero in acqua oppure sabbia in acqua. Lo zucchero si scioglie e si distribuisce uniformemente per tutto il bicchiere d’acqua. La sabbia va a fondo. La miscela zucchero-acqua può essere considerata una soluzione. La miscela sabbia-acqua è un miscuglio Before we dive into solutions, let's separate solutions from other types of mixtures. Solutions are groups of molecules that are mixed up in a completely even distribution. Hmmm! Not the easiest way to say it. Scientists say that solutions are homogenous systems. Other types of mixtures can have a little higher concentration on one side of the liquid when compared to the other side. Solutions have an even concentration throughout the system. An example: Sugar in water vs. Sand in water. Sugar dissolves and is spread throughout the glass of water. The sand sinks to the bottom. The sugar-water could be considered a solution. The sand-water is a mixture. ITST Artemisia Gentileschi prof. Cinzia Celino 11 CAN ANYTHING BE IN SOLUTION? CHE COSA PUÒ ESSERE IN SOLUZIONE? Pretty much. Solutions can be solids dissolved in liquids. They could also be gases dissolved in liquids (such as carbonated water). There can also be gases in other gases and liquids in liquids. If you mix things up and they stay at an even distribution, it is a solution. You probably won't find people making solid-solid solutions in front of you. They start off as solid/gas/liquid-liquid solutions and then harden at room temperature. Praticamente quasi tutto. Le soluzioni possono essere solidi disciolti in liquidi. Potrebbero anche essere gas disciolti in liquidi (come l’acqua gassata). Ci possono anche essere gas in altri gas e liquidi in liquidi. A simple solution is basically two substances that are going to be combined. One of them is called the solute. A solute is the substance to be dissolved (sugar). The other is a solvent. Cinzia Celino 12 MAKING SOLUTIONS FARE SOLUZIONI So what happens? How do you make that solution? Mix the two liquids and stir. It's that simple. Science breaks it into three steps. When you read the steps, remember...Solute=Sugar, Solvent=Water, System=Glass. Che cosa accade? Come si fa una soluzione? Metti insieme i due liquidi e mescoli. E’ semplice. La scienza divide il processo in tre passaggi. Quando leggi i passaggi, tu ricorda: Soluto = zucchero, Solvente = acqua, Sistema = bicchiere 1. Il soluto è versato nel solvente e il soluto concentrato si rompe lentamente in piccole parti. 1. The solute is placed in the solvent and the concentrated solute slowly breaks into pieces. 2. The molecules of the solvent begin to move out of the way and they make room for the molecules of the solute. Example: The water has to make room for the sugar molecules. 2. The solute and solvent interact with each other until the concentration of the two substances is equal throughout the system. The concentration of sugar in the water would be the same from a sample at the top, bottom, or middle of the glass. 3. CAN ANYTHING CHANGE SOLUTIONS? Sure. All sorts of things can change the concentrations of substances in solution. Scientists use the word solubility. Solubility is the ability of the solvent (water) to dissolve the solute (sugar). Usually when you heat up a solvent, it can dissolve more solid materials (sugar) and less gas (carbon dioxide). Sicuramente. Tutti i generi di fattori possono cambiare la concentrazione delle sostanze in soluzione. Gli scienziati usano la parola solubilità. La solubilità è la capacità del solvente (acqua) di sciogliere il soluto (zucchero). Cinzia Celino 13 PRINCIPI FONDAMENTALI DEI MISCUGLI MIXTURE BASICS Mixtures are absolutely everywhere you look. Mixtures are the form for most things in nature. Rocks, air, or the ocean, they are just about anything you find. They are substances held together by physical forces, not chemical. I miscugli si trovano ovunque tu guardi. I miscugli sono la forma in cui si trova la maggior parte delle cose in natura. Le rocce, l’aria, o l'oceano, sono solo alcuni di tutti gli esempi che puoi trovare. That statement means the individual molecules enjoy being near each other, but their fundamental chemical structure does not change when they enter the mixture. When you increase the heat in a system, you are really increasing the amount of energy in the system. Now that you understand that fact, you can see that the study of thermodynamics is the study of the amount of energy moving in and out of systems. If you have two identical systems with equal amounts of energy, there will be no flow of energy. When you have two systems with different amounts of energy (maybe different temperatures) the energy will start to flow. Air mass of high pressure forces large numbers of molecules into areas of low pressure. Areas of high temperature give off energy to areas with lower temperature. Atoms have a specific amount of energy when they are at a certain temperature. When you change the system by increasing pressure or temperature, the atoms can get more excited. That increase in excitement is called entropy. Atoms move around more and there is more activity. That increase in activity is an increase in entropy. Much of that heat is the result of the friction and inefficiency in the running motor. When you lift something and your muscle contracts, you are only 25% efficient. The forces could be big, such as the pull of a star on a planet. The forces could also be very small, such as the pull of a nucleus on an electron. Physicists might not study them all at the same time, but even if you were standing still, you would have many forces acting on you. Those forces would include gravity, air pressure, wind speed, the strength of your skeleton, the strength of your muscles, and many other smaller forces. On a molecular level, the surface of the ball was holding itself together as the gas inside of the ball tried to escape. There may have also been small forces trying to push you as the wind blew. Those forces were too small to get you rolling, but they were there. And you never know what was under the ball. Maybe an insect was stuck under the ball trying to push it up. That's another force to consider. If there is more than one force acting on an object, the forces can be added up (or subtracted). After coming up with a value, scientists use the value of a Newton to measure the amount of force. The force applied to the soccer ball (from the kick) could be equal to 12 Newton.
