Il primo a praticarla negli Stati Italiani dell’Umanesimo fu Francesco Sforza che promosse la Pace di Lodi del 1454, promuovendo l’equilibrio tra le cinque potenze del tempo: Ducato di Milano, Repubblica di Firenze, Repubblica di Venezia, Stato della Chiesa e Regno di Napoli. Una stabilità tra le parti che conta nei secoli molte cadute inesorabili, nell’egemonia ad esempio della Francia Napoleonica così come della Germania Guglielmina ed Hitleriana. Con gli effetti deflagranti che tutti conosciamo. Uno stallo virtuoso che si perpetuò nella Guerra Fredda, una condizione di conflitto latente tra le due superpotenze vincitrici della Seconda Guerra Mondiale, Usa e Urss, mai esploso per la consapevolezza del potenziale distruttivo dei rispettivi arsenali atomici. Un forte deterrente che, ai giorni nostri, dopo la caduta del muro di Berlino nell’89, ancora impedisce belligeranze convenzionali tra gli stati egemoni. Eppure i due blocchi contrapposti sembrano non esistere più: il mondo si è sfaldato ma si è arricchito di colossi in crescita economica e demografica, quali la Cina, l’India ed il Brasile. Siamo in cerca di un conclamato blocco, contrapposto alla civiltà occidentale, ormai rappresentato per ordine di importanza da Stati Uniti, Gran Bretagna ed Unione Europea. Che sia il gigante asiatico in espansione esponenziale? O magari la minaccia del fondamentalismo arabo? Oppure un ritorno di fiamma della Russia etica e cristiana di Vladimir Putin? Difficile da credere. Più probabile che la teoria dei blocchi sia naufragata nell’indistinto del mondo moderno. Lo scacchiere globale è oramai così interconnesso, convulso e frammentato che la regia fondamentale pare essere unica ed americana. Divide et impera, l’insegnamento più antico dell’Impero più grande. Degli Stati Uniti stiamo seguendo gli ultimi sviluppi della campagna presidenziale tra Hillary Clinton, eroina neo-dem un po’ frustrata e Donald Trump, tycoon dai modi spesso rozzi, concentrato del capitalismo più bieco. In palio non solo la carica di presidente. Ma l’equilibrio politico tra i generi, maschile e femminile: le dichiarazioni sessiste di Trump sulle donne – quello che gli uomini non dicono (ma pensano) – e lo sgomento da olocausto della Clinton, già peraltro offesa dai tradimenti pubblici del marito Bill. La regola dei blocchi contrapposti vale anche per questo dualismo. Non si deve permettere l’egemonia di una parte. Che la battaglia abbia inizio con questi mezzi francamente grossolani. Un deterrente forte quanto l’atomica. Ascolto consigliato www.valleylife.it In the theory of opposing blocs, or the balance of power, the aim is to prevent the emergence of an hegemonic power that could disrupt peace and harmony between states. The first to practice it – for the Italian city-states in the Humanistic era – was Francesco Sforza, who promoted the Peace of Lodi in 1454, establishing an equilibrium between the five powers of the time: the Duchy of Milan, the Florentine Republic, the Venetian Republic, the Papal States and the Kingdom of Naples. A type of relationship of stability between parties that has over the centuries witnessed many inexorable upsets, such as the hegemony for example of Napoleonic France, that of Wilhelmine Germany and Hitler’s Third Reich. With the consequent explosive effects that we are all familiar with. One virtuous deadlock was perpetuated in the Cold War, a latent conflict between the two winning superpowers emerging from the Second World War, the US and the USSR, which however never exploded because of their awareness of the destructive potential of their respective nuclear arsenals. A strong deterrent which, to this day, after the fall of the Berlin Wall in 1989, still prevents conventional belligerence between the hegemonic states. Yet the two opposing blocs do not seem to exist anymore: that world has crumbled but has been enriched by giants of economic and population growth, such as China, India and Brazil. We are looking for a full-blown bloc, to oppose Western civilisation, now represented in order of importance by the United States, Britain and the European Union. Will it be the Asian giant in exponential expansion? Or maybe the threat of Arab fundamentalism? Or a flashback to a Christian and moral Russia under Vladimir Putin? Hard to believe. More likely the theory of blocs has been shipwrecked by the vague and complex world of modernity. The global arena is now so interconnected, frantic and fragmented that the basic direction seems to be unique and American. Divide and conquer, as taught by the oldest and largest empire. From the United States we are following the latest developments in the presidential campaign of Hillary Clinton, somewhat frustrated neo-dem heroine, and Donald Trump, a tycoon with frequently crude manners, a distillate of capitalism of the most sinister kind. At stake is not only the position of president. But the political balance between genders, male and female: the sexist statements of Trump about women – what men do not say (but think) – and the mega-dismay of Clinton, already offended by the public betrayal of husband Bill. The rule of the opposing blocs also applies to this dualism. We must not allow the hegemony of one party. Let the battle begin with these frankly coarse means. Quale miglior tempismo nel parlarvi del nuovo testo di Luca Mercalli edito da Aboca Edizioni per la collana ‘International Lectures on Nature and Human Ecology’. As I write this piece Hurricane Matthew is ravaging the island of Haiti and the tip of Florida; halfway around the world Typhoon Chaba is sowing death and destruction in the Ryukyu Islands (Southern Japan) and South Korea. What better time to speak about the new text of Luca Mercalli published by Aboca Edizioni in their series International Lectures on Nature and Human Ecology. Mi sento davvero la persona giusta. Una volta tanto. E le ragioni fondamentali sono due: in gioventù, quando avevo tempo (sic!), ho coltivato un orto in piena campagna. Così, negli anni, ne ho tratto insegnamenti, vissuto successi e subito fallimenti. Alterne vicende, talvolta non prevedibili, utili ad entrare in simbiosi con un tempo ciclico e circolare, diverso da quello rettilineo e cronologico al quale siamo assuefatti (intrisi come siamo di positivismo scientifico e progressismo socioeconomico). Seconda ragione, io amo la geografia. Nella mia infanzia ho passato giornate intere a sfogliare atlanti e girare mappamondi. Gioco forza da grande, sono ora appassionato di meteorologia, ecologia ed eventi I really feel like the right person. For once. So, over the years I drew lessons from the experience, straightaway had successes and failures. Questo nuovo testo del docente, meteorologo e divulgatore scientifico Luca Mercalli “Il mio orto tra cielo e terra” – appunti di meteorologia e ecologia agraria per salvare clima e cavoli – è un felice tentativo di promuovere un corretto stile di vita per combattere l’inquinamento, in particolare da combustibili fossili e fitofarmaci, al fine di contenere il conseguente global warming ed i suoi eccessi climatici (è ancora possibile!) e tutelare la salute e qualità della vita personale e collettiva. In che modo? Coltivando un orto domestico. Se tutti noi, od almeno molti di noi, coltivassero un fazzoletto di terra (magari pure in balcone, n.d.e) si giungerebbe ad una sorta di semi-autarchia alimentare in grado di invertire la tendenza di un’agricoltura intensiva ormai insostenibile, per inquinamento e costi ambientali. Ma questa operazione, avverte Mercalli, dovrà essere intellettualmente e concretamente vera, e non una moda culturale per lavarsi la coscienza – oggi si adopera il termine greenwashing. Dovrà seguire i canoni della agroecologia e della agrometeorologia. L’orto, interfaccia tra cielo e terra, tra atmosfera e litosfera, richiede procedure e scelte spesso anti-moderne (ovvero non fondate sulla mera redditività). Servirà perciò adottare un sistema di pensiero ecologico nella produzione del cibo. Vediamo di che si tratta. Anzitutto si dovrà mirare alla salvaguardia del suolo dall’impoverimento. Come? Con una lavorazione minima per mantenere il substrato naturale, con la sua preziosa complessità batterica e l’equilibrio dinamico www.valleylife.it This new text, by educator, meteorologist and science writer Luca Mercalli My vegetable patch between heaven and earth – notes on meteorology and agricultural ecology to save both climate and cabbage – is a successful attempt to promote a healthy lifestyle that fights pollution, particularly from fossil fuels and pesticides, in order to contain the resulting global warming and its climate extremes (it is still possible!) and protect the health and quality of our personal and collective life. How? By cultivating a home vegetable patch. If all of us, or at least many of us, cultivate a piece of land (maybe even on the balcony, ed.) it is tantamount to a kind of food semi-autarky able to reverse the trend of unsustainable intensive farming methods with their pollution and environmental costs. But this, Mercalli warns, must be intellectually and substantively true, and not just a cultural fashion for a clean conscience – nowadays we use the term greenwashing. We need to follow the canons of agroecology and agricultural meteorology. The vegetable garden, the interface between heaven and earth, between the atmosphere and the lithosphere, often requires anti-modern procedures and choices (i.e. not based on mere profitability). It will therefore adopt an ecological points system for food production. Let’s see what that is. First of all it must seek to protect the soil from impoverishment. How? Meglio praticare una semina quanto più possibile superficiale, senza ribaltare le zolle ma arieggiando il terreno ove possibile. In questa chiave la pacciamatura sarà determinante al fine di aumentare la sostanza organica nell’orto in modo naturale e non invasivo e per mantenere l’umidità ideale. La concimazione avverrà con compost naturale o di origine animale (letamazione). Unica falla di questo sistema è il fattore critico del fosforo, per il quale è ammessa una modesta integrazione chimica. Come contrastare poi l’attacco delle erbe selvatiche, delle patologie e dei parassiti? Certamente con le operazioni meccaniche della pacciamatura e della sarchiatura ma specialmente adottando la policoltura e la rotazione delle coltivazioni, in grado di mantenere la biodiversità (anche entomologica) e la fertilità del suolo. Utile a questo proposito creare delle nicchie ecologiche ad hoc per gli insetti, quali siepi vive (si pensi ad esempio all’erba morella – solanum nigrum – che uccide la dorifora della patata. Insetti antagonisti e lotta biologica (citiamo la coccinella, gran predatrice degli afidi ), smettendo l’utilizzo di qualsiasi composto chimico che poi, è inevitabile, finirebbe nei frutti che raccogliamo. Buona abitudine è inoltre la autoproduzione di semi e di piantine per contenere i costi ecologici nascosti, l’inquinamento ed i rifiuti che si nascondono dietro al loro mercato, oltre a promuovere un miglior adattamento e la conservazione della biodiversità stessa. Ma veniamo al tempo nell’orto, la agrometeorologia. L’andamento del clima è infatti una variabile determinante rispetto alla relativa stabilità dei suoli. www.valleylife.it bacterial complexity and the dynamic balance of its micro-organisms. Better to practice sowing as near the surface as possible without turning the sod but by airing the ground where possible. Helpful in this regard to create ecological niches specifically for insects, such as hedges (think for example nightshade grass – Solanum nigrum – that kills the Colorado potato beetle.) Antagonistic and biological control insects (we cite the ladybird, a great predator of aphids), halting the use of any chemical compound that then, inevitably, ends up in the fruits that we collect. A good habit is also the self-production of seeds and seedlings to contain the hidden ecological costs, pollution and waste that hide behind the marketplace as well as promoting better adaptation and biodiverse conservation. But then we come to the weather in the garden, agricultural meteorology. Climate trends are indeed a crucial variable with respect to the relative stability of soils. Unfortunately we are now subject to sudden tel. +39 075 372 17 79 Valley Life SIEPI VIVE, LA SOLANUM NIGRUM Siamo purtroppo soggetti ad eventi climatici repentini ed estremi dovuti in gran parte al riscaldamento globale – nell’ordine di +1°C negli ultimi 100 anni e si prevede fino a +5°C nel 2100. Cosa si può fare? Anzitutto essere vigili e razionali. Un buon ortolano è anzitutto un buon osservatore. Avvalendosi di una piccola stazione meteorologica e del servizio nazionale potrà ad esempio evitare inutili irrigazioni prima delle piogge o semine al momento sbagliato. L’agrometeorologia è dunque uno strumento potente per combattere il riscaldamento globale - poiché promuove la riduzione di emissioni inquinanti - e per contrastare l’utilizzo di composti chimici dannosi al territorio ed alla salute umana. Senza dimenticare il lato estetico, la contemplazione del proprio lavoro – che acquisisce un senso visibile e dove il tempo diventa ciclico e non più lineare; accettare così la complessità e l’impermanenza delle cose. E da un punto di vista etico dare valore al lavoro ed al cibo, agire con responsabilità, indipendenze ed autonomia, in armonia con la biosfera. Si guarda, in ultima analisi, alla scienza ed alla tecnologia di un’agricoltura evoluta, più informata e rispettosa delle leggi naturali. and extreme weather events due in large part to global warming – in the order of a 1°C rise over the past 100 years, expected to rise 5°C by 2100. What can we do? First of all be vigilant and rational. A good gardener is first of all a good observer. Agro-meteorology is therefore a powerful tool for combating global warming – as it promotes the reduction of pollutant emissions – and to counter the use of chemicals harmful to the land and to human health. Without forgetting the aesthetic side, the contemplation of one’s own labours – which captures in a visible way how time becomes cyclical and not linear; so helping us accept the complexity and impermanence of things. And from an ethical point of view giving value to labour and to food, acting with responsibility, independence and autonomy, in harmony with the biosphere. We must look, ultimately, to an evolved science and technology of agriculture that is knowledgeable and respectful of natural laws. With the expansion of the exhibition spaces at the former tobacco drying shed and with the exhibition Burri, the space of Matter: between Europe and the US – opened on the 24th September – the Fondazione Palazzo Albizzini Burri Collection closes the celebrations of the centenary which were characterised by notable initiatives in both access and dialogue, both nationally and internationally. Una grande attenzione è stata focalizzata sulle esigenze dei visitatori, con l’opportunità di accedere alle collezioni permanenti e all’esposizione temporanea mediante un servizio di percorsi guidati, visite didattiche e laboratori, disponibili tutti i fine settimana e su prenotazione in entrambe le sedi museali. I percorsi guidati hanno la funzione di far comprendere la portata della ricerca artistica del maestro, al centro del cambiamento nella pittura mondiale del dopoguerra ma, soprattutto, aspirano ad una visione collettiva che stimoli le capacità di osservare e interrogare l’opera d’arte nella sua potenza espressiva. Allo stesso modo e, se possibile, con maggior convinzione, il confronto già avviato con ottimi risultati in occasione del convegno esposizione internazionale “Au rendez-vous des amis” verrà ribadito e indirizzato a tutti gli istituti scolastici di ogni ordine e grado, con visite didattiche partecipate e attività laboratoriali, potenziate proprio in occasione della attuale mostra temporanea. Nei nuovi spazi degli ex seccatoi, infatti, saranno presto disponibili locali adibiti alle sperimentazioni laboratoriali degli studenti; un luogo protetto, polifunzionale e a stretto contatto con l’arte, in un clima di dialogo, partecipazione e totale scoperta delle proprie capacità. Questo tipo di attività, oltre che creare motivazioni positive verso il contesto museale e arricchire il bagaglio di conoscenze, metterà al centro della visita proprio gli studenti, chiamati ad essere osservatori attivi. I percorsi verranno modulati sull’età dei partecipanti, con adeguata attenzione al linguaggio e ai temi trattati e l’attenzione degli studenti più grandi sarà orientata verso il periodo storico culturale, approfondito nella preziosa sezione documentaria multimediale. Le visite potranno essere effettuate anche in lingua inglese. Ne parliamo con Leda Acquisti dell’Azienda Agricola il Faggeto. Quando si parla di olio da tavola, due sono gli attributi che solitamente lo accompagnano: vergine o extravergine, due aggettivi tanto noti quanto, nel contempo, misteriosi ai più. Leda Acquisti gestisce da anni il frantoio di famiglia nel cuore della campagna toscana, organizzando anche corsi dedicati per diffonderne una più approfondita conoscenza ed è lei stessa, oggi, a spiegarci cosa significano esattamente questi due termini. “Con la parola "vergine" – comincia Leda - si indica che il processo estrattivo dell’ olio è stato effettuato esclusivamente con metodi fisici e meccanici, senza uso di solventi come nel caso di molti oli di semi e senza miscelazione con oli di altra natura. Se un olio è extravergine invece significa che, oltre ad essere stato estratto meccanicamente, presenta un'acidità inferiore allo 0,8 % (anche se in realtà gli oli di buona qualità hanno un'acidità molto inferiore), mentre è vergine quando questa arriva fino al 2% ; oltre questa percentuale, l'olio viene definito "lampante" e non può essere commercializzato ma solo destinato alla raffinazione, deacidificato con procedimenti chimici e trasformato in olio di oliva raffinato. Sto praticamente assistendo ad una piccola lezione di agronomia, materia della quale sono totalmente a digiuno per cui seguo le parole di Leda con particolare attenzione: “Oltre a quanto sopra – aggiunge - perché un olio possa essere definito extravergine deve essere privo di difetti, giudizio solo un panel autorizzato e riconosciuto può formulare; si tratta di un gruppo da otto a dieci assaggiatori in grado di riconoscere, attraverso le tecniche di assaggio, se l'olio è o meno privo di difetti.” E continua spiegandomi che i parametri di giudizio di un olio sono rappresentati dal suo grado di fruttato, di amaro e di piccante, tutte caratteristiche che variano molto in base al tipo di cultivar, del terreno in cui sono cresciuti gli olivi, il clima e, non di meno, il metodo di estrazione dell'olio. “A contribuire alla qualità di un olio è anche la sua conservazione – prosegue la mia insegnante – per cui i suoi principali nemici sono temperatura, luce e ossigeno. Queste le regole fondamentali per un corretto mantenimento: protezione dalla luce solare, conservazione ad una temperatura compresa fra 12 e 18 gradi, niente contatto con l’ossigeno così come con l’acqua e i sedimenti solidi”. Nel corso degli anni, la vendita dei prodotti di macelleria si è arricchita della gastronomia da asporto, tante ricette sempre fresche e pronte da mangiare, ideali per chi non ama mettersi ai fornelli ma non vuole rinunciare al gusto o, più semplicemente, non ha tempo per cucinare cibi tanto prelibati quanto di lunga preparazione come il sugo d’oca, l’impasto per i crostini a base di piccione, gli ossi buchi, lo spezzatino con le patate, trippa, centopelli (oh mamma che fame!), baccalà, coniglio e agnello al tegame. “Si tratta di ricette che appartengono alla nostra cultura, preparate con amore, ricette che sopravvivono grazie a mamme e nonne e che sempre più raramente, ormai, compaiono sulle nostre tavole”. E meno male che ci pensano loro … Altro fiore all’occhiello del bancone, i salumi tipici come sambudelli e soppressata, sfiziosità come i ciccioli di suino e il meraviglioso prosciutto con venti mesi di stagionatura; e non dimentichiamo la porchetta con l’aglio e il finocchio selvatico, un altro sapore fra i più amati in questa terra. In effetti dietro ne mette molti, spesso tutti. A Pietralunga, dove vive e lavora, è una specie di eroe paesano. Tutti lo conoscono e lo incitano mentre lo incrociano per strada. Di salita, l’atleta di origine marocchina, dovrà farne ancora molta se vorrà mantenere le promesse della sua giovinezza. Local young athletics talent whose profile reads “Yasso, a whole other step!”. Di recente l’atleta magrebino ha indossato i colori della neo-nata Pietralunga Runners del presidente Nadio Procacci. Ma è tesserato Fidal con la U.P. Policiano e segue i consigli tecnici di Stefano Sinatti. Yassin ha dei personali di tutto rispetto: 1.11’30’’ in mezza maratona (Arezzo 2015) e 32’30’’ nei 10000 (Foligno 2015), 15’22’’ nei 5000 e 4’04’’ nei 1500 in pista. Ha al suo attivo numerose vittorie nelle gare locali, tra le quali tre successi alla Stracastello ed uno nella Mezza di Città di Castello. Sempre brillante nel cross country, per la sua leggerezza unita ad una potenza esplosiva nelle ripartenze, dichiara il suo obiettivo stagionale: “Voglio far bene ai Campionati Italiani di Cross a Gubbio, ad inizio anno. E’ una disciplina che mi piace, mi diverte e ben si adatta alle mie caratteristiche”. Noi sosteniamo senza riserve questo simpatico ragazzo dallo sguardo sfuggente, come il vento. Ed un paese intero è con lui: “Tutti credono in me, i miei successi sono per la mia città e la mia gente, che mi saluta per strada, che mi fa un semplice cenno e non manca mai di incitarmi. Age 24 with a slender and agile physique Yassin El Khalil has lived in Pietralunga for the past 15 years with his parents and his three brothers. The father came to Italy 1978. Yassin has worked in a local engineering company since 2011... work of course always comes first! But the shifts, especially the night ones are a challenge and it’s not always easy to find the strength to train hard the next day. Strong runners know this. You have to go out every day: “It’s not easy but I have a lot of enthusiasm. I train in the hills around Pietralunga but for the practice sessions often come up to the Città di Castello athletics track.” Recently, the North African athlete has worn the colours of the new Pietralunga Runners team chaired by Nadio Procacci. But it is FIDAL registered with UP Policiano and follows the technical advice of Stefano Sinatti. Yassin’s personal best is a respectable 1.11'30'' in the half marathon (Arezzo 2015) and 32'30'' in the 10000m (Foligno 2015), 15'22'' in the 5000m and 4'04'' in the 1500m track event. DR: Actually the couples with whom I have already started organising marriages have also helped with the new styles and they’re already confirmed for next year. In fact I looked at the new trends and developed them starting from their expectations and dreams. For our Banqueting Hall some spouses preferred our new elegant minimal style with grey satin tablecloths and hung flowers; while others have gone for our garden set-up with the country chic style combined with lively colours like fuchsia. VL: What do the couples who choose your venue value the most? DR: Zero stress! The only thing our spouses have to think about is where to have the ceremony, all the rest is down us. The collaboration with Castello photographer Andrea D’Ambrosio is the icing on the cake in a much appreciated package that takes care of the overall management of the marriage, avoiding the hassle of a thousand decisions and many additional costs – such as the rent of the hall which is always a substantial expenditure. VALLEY LIFE: Buongiorno Riccardo, la prima infanzia è sempre un settore trainante dell’economia? Cosa è cambiato negli ultimi anni? RICCARDO GERMINI: Direi di no; la crisi finanziaria, unitamente al declino del tasso di natalità, ha avuto indubbiamente delle ripercussioni nel nostro settore. Anche il mutamento delle abitudini è stato importante: si compra di meno ma si acquista in maniera molto più responsabile, i neogenitori sono sempre più informati, colti ed attenti a ciò che davvero conta per i loro pargoli. Abbiamo seguito questo trend con molta attenzione ed i nostri punti vendita si sono trasformati in negozi super specializzati dove, nella selezione dei prodotti, al primo posto abbiamo messo sicurezza, qualità, impatto ambientale e provenienza certa. VL: Per i propri figli si fa davvero di tutto… è difficile far fronte alle richieste, talvolta stravaganti, della committenza? Quali sono le preoccupazioni dominanti dei neo-genitori? RG: Anche qui direi di no. L'azienda è stata creata dai miei genitori trentasei anni orsono, conosciamo bene il mercato, supportiamo i neo (o futuri) genitori nelle loro scelte, proponiamo loro la miglior selezione possibile nei settori neonatale, premaman e bimbi in crescita. I nostri collaboratori lavorano da anni nel settore e sono periodicamente aggiornati grazie anche ad un percorso interno di formazione che prevede la partecipazione a fiere ed eventi di settore. VL: Il trend negativo delle nascite in Italia si ripercuote anche sull’economia locale? Cosa può dirci, dati alla mano? RG: Stavolta la risposta è sì, assolutamente sì. Nel 2015, il calo delle nascite ha toccato il -15% e l' Umbria, dove noi operiamo con 6 punti vendita, sta facendo addirittura peggio della media nazionale (-20%). Noi abbiamo intrapreso una strada fatta di dolorosi tagli ma anche stravolto il format, per cui oggi non siamo solo punti di vendita ma anche punti di informazione ed aggregazione: organizziamo gratuitamente percorsi di accompagnamento al parto ed al ritorno a casa col neonato… ed alle neomamme siamo i primi a dire quello che non serve! VALLEY LIFE: Hello Riccardo, is early childhood still a leading business sector? What has changed in recent years? RICCARDO GERMINI: I’d say not really, the financial crisis, along with declining birth rates, has undoubtedly had repercussions on our industry. Even changes in habits are important: people buy less but buy in a much more responsible way, new parents are increasingly well-informed, educated and attentive to what really matters to their babies. We have followed this trend very carefully and our stores have become super specialty stores where in product selection we put safety, quality, environmental impact and guaranteed origin in the first place. VL: You really do everything you can for your children... is it hard to cope with the sometimes exaggerated demands of the customers? What are the main concerns of new parents? RG: I would say no here too. Our company was created by my parents thirty-six years ago, we know the market well, we support new (or future) parents in their choices, we offer them the best possible selection in the neonatal, maternity and toddler areas. Our employees have been working for years in the business and are regularly updated thanks to an internal training program that includes participation in trade shows and industry events. VL: Is the negative trend of births in Italy also having an impact on the local economy? What data do you have to hand? RG: This time the answer is yes, absolutely yes. In 2015, the decline in births reached -15%. And Umbria, where we operate with six outlets, is doing even worse than the national average (-20%). GB: In functional and biological processes we can uncover, in diseases such as allergies, chronic and recurrent tonsillitis, sinusitis, in adults as well as children, the patient’s condition that led to this state, and in particular we need to examine the organs involved in the evolution of the disease, identifying possible functional and bio-energetic imbalances. For someone suffering from indigestion, constipation, candidiasis, headache, belly bloating and other conditions, there are almost never any diagnostic tests such as blood tests, x-rays, scans etc which could prove useful for a “causal diagnosis” and that’s because the disorder is often of “a functional type”. To celebrate the twentieth anniversary of the opening of Al Travato, a family-run restaurant on the acropolis of Monterchi, embedded in the mighty walls of the town, owner Laura Rondina gave the community a defibrillator – which was installed in Piazza Umberto I. Già vi abbiamo parlato nella scorsa edizione di questo ristorante storico nella piazza alta di Monterchi. Ci pareva giusto, data la valenza del gesto, rilevare Laura ed il marito Marco abbiano voluto lasciare un segno che superi la mera attività professionale e commerciale: “Siamo orgogliosi di essere abitanti del paese che, specie in estate, è meta di folle di turisti ai quali diamo accoglienza ed ospitalità. Qualche volta – rivelano – ci sentiamo tal quale un ufficio turistico poiché ci chiedono di tutto. E noi di buon grado forniamo loro informazioni sul paese e sul territorio”. Un punto di riferimento dunque che, negli anni ha avuto contatti con tutto il mondo. Relazioni in gran parte conservate e coltivate in nuovi incontri e ricorrenti. La sua proposta originalissima? La “Romanella”! Incuriosita dalla sua storia, mi faccio spiegare da lei stessa il funzionamento del talent show, dal 10 ottobre scorso in onda ogni lunedì sul Canale 83 del digitale terrestre o al 913 di Sky. Lo show ha una durata di sei settimane e prima del ciak sono state superate sei tappe in altrettante città d’Italia. I concorrenti sono stati scelti in base a criteri ben definiti: in particolare, Sonia è stata selezionata dalla giuria tecnica in occasione della tappa di Modena. La pizza che porta in gara è la Romanella, a base bianca e farcita con broccolo romanesco, purea di patate, guanciale e pecorino romano, in omaggio alla sua regione d’origine: il Lazio. All’assaggio la ricetta non ha lasciato spazio a dubbi garantendo alla tifernate l’ingresso al reality. Gli ingredienti impiegati nella sua pizzeria sono di altissima qualità e tutte le materie prime provengono dal territorio. Inoltre, il 6 settembre scorso al Napoli Pizza Village, Sonia ha presentato la Parmigiana, preparata con melanzane, polpa di pomodoro, bufala pancetta e grana… in questa stessa occasione le è stata conferita anche la seconda stella in di Istruttrice all’Accademia dei Pizzaioli. A confermarcelo è lo stesso Giuseppe che ci rivela come la vera anima del locale sia la mamma, impegnata sin dalle prime ore del giorno… anche la gente del paese ha eletto il Triangolo a irrinunciabile punto di ritrovo; così mentre parliamo ne vediamo sfilare diversa, di gente di Pietralunga, a scambiarsi confidenze tra una battuta e l’altra. Inaugurato nel lontano 1998 da Gianfranco, storico tartufaio come il fratello Alvaro, il ristorante della famiglia Grassini vanta un menù di tutto rispetto; La nostra entrée preferita si chiama Il Triangolo (€ 10,00), un grande classico della carta, composto da un mix di crostini, affettati di produzione locale, accompagnati da una frittellina fatta con pasta della pizza ed i salumi We have known Gianfranco Grassini and Utilia Biccheri for some time and we’re delighted to have a chat with them today – together with son Giuseppe – about the history of what seems almost a living room, such is the deep family atmosphere of the business. Giuseppe confirms this for us revealing that the real life and soul of the place is his mother, involved from the early hours of the day... the townspeople voted il Triangolo as an indispensable meeting point and as we speak we see various Pietralunga folk come by, exchanging comments and jokes. A seguire, assaggiamo la Big Pizza ( €10,00), con un impasto leggero e croccante, ricco di gusti, le cui varietà sono generalmente scelte dal pizzaiolo ma che, su richiesta, possono anche essere personalizzate; e sono sempre circa quattro gli accostamenti di sapori che compongo questa ricetta, tutti rigorosamente a km zero. Il piatto forte di stagione è sicuramente la Carbonara al Tartufo (€10,00), richiestissima e insaporita col noto tartufo di Pietralunga, ottimo anche sulle tagliatelle caserecce così come sugli gnocchi (entrambi a € 10,00) . Essendo io una habitué del posto non posso non citare il mio piatto preferito, ovvero le Mezzelune speck e porcini (€7,50), una roba da far leccare i baffi… Per gli amanti della carne, l’offerta è davvero invitante: dalla Tagliata di manzo con porcini o tartufi (€ 12,00) agli arrosti misti di oca, agnello, piccione e coniglio. L’occhio mi cade poi sull’anatra all’arancia e sull’oca in porchetta (solo su prenotazione) Una menzione speciale la merita il contorno di patate bianche di Pietralunga arrosto, con tutta l’inconfondibile dolcezza che garantisce questo prodotto eccezionale. Dulcis in fundo, Giuseppe poi ci introduce al dessert da lui preferito nonché il più richiesto: la Piadina alla crema di nocciole di Pietralunga (€ 4,00), il modo migliore per concludere un magnifico pasto in compagnia di questa famiglia affiatata. and crispy texture, rich and tasty, the toppings usually chosen by the pizza-maker but, on request they can also be personalised, and they are always about four flavour combinations that make up this dish, all strictly low food miles. The seasonal highlight is definitely Carbonara al Tartufo (€10), in high demand and flavoured with the Renowned Pietralunga truffle, great on the homemade tagliatelle as well as the gnocchi (both €10). As I am a habitué of the place I cannot but mention my favourite dish – the Mezzelune speck e porcini (€7.50), stuff to really make you lick your moustache ... Resta solo qualche grappolo sparuto, dimenticato sul terreno perché probabilmente inadatto alla vinificazione, come mi spiega Davide, erede dell’azienda agricola fondata dal padre Milton in memoria del quale nascerà presto un’etichetta molto speciale. The bare rows on the Del Gaia land bear witness to the end of the harvesting period. There remain just a few ragged bunches, forgotten on the ground because they were probably unsuitable for winemaking, as Davide explains as inheritor of the farm founded by father Milton and in whose memory a very special new label will soon be created. It’s a Monday and Davide – a graduate of the agricultural Institute – tells me that the last day of the harvest was just yesterday so I asked him about its outcome: “It was an early vintage” – he explains – “because of the mild winter, slowed by the heavy rainfall in the months of June and July, which was then followed by a summery September, characterized by a significant heat wave which, one can predict, will give the white very intense flavours.” We go down one floor to reach the winery where, by arrangement, you can go on a guided tasting with Davide himself, a delightful host, who, among other things, explains that their wine is on sale to the informazione pubblicitaria gusto persistente, esso presenta delle caratteristiche comuni a tutte le annate e che richiamano ai profumi fruttati del ribes e della fragolina di bosco, tipici del terroir valtiberino”. L’altra proprietà, Manachiara, si trova ad est del paese che, ancora nei primi del ‘900, fu un tranquillo ed ignoto borgo della campagna toscana. I finally found the time to visit Emilia and Emanuele Nardi in Casale del Bosco, near Montalcino where lie the family estates that have produced Brunello since 1954. The other property, Manachiara, is located east of the town and even in the early 20th Century it was still a quiet and hidden village of the Tuscan countryside. Mentre lanciamo lo sguardo oltre i filari ad occidente il giovane Nardi ci confessa: “L’estate settembrina ci ha salvato, con le sue brezze, il suo clima mite e la giusta escursione termica. A fine agosto si temeva per la qualità del raccolto a causa del caldo eccessivo prima e la pioggia troppo abbondante poi. Per fortuna è andata così. L’annata Mediterranean scrub, whose boundaries are broken by slopes, vineyards and cultivated plateaus, like tears in the dominant wilderness. Biodiversity in this landscape is immediately evident as it condenses, as if by magic, an ancestral harmony between the primordial environment and human activities. Anche se i vini, si sa, si valutano dopo il primo gelo. Il Brunello prodotto in questa composita biosfera è ricco ed elegante, restituisce la varietà del territorio in struttura, potenza e complessità. L’azienda agricola ha selezionato i migliori cloni di Sangiovese. Migliori nel senso di adattamento e resa qualitativa: “Il miglior grappolo è piccino, con acini piccoli e distanziati (spargolo) ma buccia spessa”, ne è certo Emanuele mentre, tra una parcella e l’altra prendiamo confidenza con il paesaggio rotolante di Montalcino. L’incredibile diversità dei vigneti, in genere piccoli appezzamenti, rende la quadratura del cerchio (e della botte!) ancora più difficile. Ad ogni singola particella la sua determinata coltivazione e vinificazione: “Se è vero che taluni professano l’infallibilità della chimica in cantina, io dico che tutto non si può fare ed aggiustare… Occorre indovinare la formula giusta sin dall’impianto del vigneto”. Per questo il lavoro di ricerca e sperimentazione è assolutamente fondante ed essenziale. Scambiamo le ultime parole mentre visitiamo la barricaia, dove avviene l’affinamento del Brunello in piccole botti di legno. Scavata nella roccia, o come si dice nello scoglio, sotto il Casale, qui la temperatura di 14°C è costante tutto l’anno. In questo locale affinano le migliori masse di Brunello. Un segreto alchemico che trasmuta e si avvera solo quando il tempo e la sorte sono propizi. The Brunello produced in this various biosphere is rich and elegant, displaying the variety of the territory in structure, power and complexity. The vineyard selected the best clones of Sangiovese, best in the sense of adaptation and quality of performance: “The best bunches are small, with small berries and spaced (sparse) but with thick skin”, Emanuele is sure of this and as we go from one parcel of land to another he takes confidence from the rolling landscape of Montalcino. The incredible diversity of vineyards, typically small plots, makes squaring the circle (and the barrel!) even more difficult. For each plot has its own approach for cultivation and vinification: “If it is true that some profess the infallibility of chemistry in the cellar, I say that all you can do is adjust... You have to predict the right formula from the first planting of vines.” This is why research and experimentation is absolutely fundamental and essential. We exchange our last words visiting the barrel room, where the Brunello is aged in small wooden barrels. Carved into the rock, or as they say “in the rock”, under the house, here the temperature of 14°C is constant throughout the year. Only for the best years do we proceed to this type of aging. Ma come si fa a riconoscere un tartufo “vero”, nostrano, da un volgare tubero di importazione? Ci spiega Marco Volpelli che nei panieri vengono mescolati quelli buoni, che emanano profumo intenso, a quelli che sono meramente delle “patate”; questi si impregnano lì per lì dell’odore intenso, ma quando si giunge a casa ci si ritrova con… una patata… che nel frattempo ha perso tutta la fragranza che aveva preso da quello “vero”. Per questo ci mette in guardia anche da chi in cucina fa troppo uso delle creme al tartufo o di barattolini che contengono il 3% di tartufo… c’è il rischio di pagare per tartufo vero ciò che è il frutto di sapienti manipolazioni. La riprova si ha quando, dopo aver mangiato quello vero, si digerisce senza farsi ricordare. Falso allarme? di Fabio Pauselli Terminata una prima fase fredda autunnale per il rapido indebolimento - o per meglio dire esaurimento - del sistema depressionario sopra l'Italia, non sarà una fase stabile e soleggiata a prevalere con il suo anticiclone ma altresì una nuova fase perturbata, segnata da condizioni atmosferiche instabili. Con una differenza: le temperature saranno solo di poco più elevate. Ad inizio periodo, sul nostro territorio avremo così nubi e piogge a fasi alterne con temperature in linea o poco inferiori alle medie del periodo. L'ultima decade del mese di ottobre invece sarà molto probabilmente caratterizzata da una fase più stabile anticiclonica, con prevalenza di sole sull'Italia ma anche nebbie nelle valli del nostro comprensorio.
