CANNELLONE DI SFOGLIA MODENESE FARCITI CON CREMA DI PARMIGIANO CON SALSA BOLOGNESE MODENA DOUGH CANNELLONI WITH PARMESAN CHEESE STUFFING AND BOLOGNESE SAUCE INGREDIENTI: (1 pax) 50 g. di sfoglia modenese 70 g. di besciamella 30 g. di parmigiano grattugiato Sale, pepe e noce moscata: q.b. Per la salsa bolognose: 50 g. di macinato di suino 80 g. di pomodoro pelato 7 g. di olio evo 3 g. di sedano 7 g. di carote 4 g. di vino rosso 7 g. di cipolla bianca Q.b. di sale e pepe 10 g. di burro per gratinare 10 g. di parmigiano per gratinare INGREDIENTS: 50 gr Modena cannelloni dough 70 gr Béchamel (white sauce) 30 gr Grated parmesan Salt, pepper, nutmeg (to taste) For the bolognese sauce: 50 gr Pork minced meat 80 gr Peeled tomatoes 7 gr Extra-virgin olive oil 3 gr Celery 7 gr Carrot 4 gr Red wine 7 gr White ontomato pasteions Salt & pepper (to taste) 10 gr Butter 10 gr Parmesan cheese 98 BORGHI Magazine FEBBRAIO 2017 La Ricetta Recipe Preparare una besciamella con roux a 150. Appena pronta ed ancora calda, aggiungere il formaggio grattugiato, il sale ,il pepe e la noce moscata. Stendere la pasta a forma di quadrato e farcire con la crema di besciamella, quindi arrotolare. In una pentola con olio lasciare dorare il sedano, la carota e la cipolla. Aggiungere il macinato di maiale e lasciare insaporire. Aggiungere il concentrato di pomodoro ed infine sfumare con il vino rosso. Appena dealcolizzato il vino, aggiungere i pomodori pelati. Cuocere per circa 90’ a fuoco basso. Quando il sugo sarà pronto, infornare i cannelloni a 180°C. per circa 8’avendo l’accortezza di cospargere il formaggio grattugiato e di aggiungere la noce di burro. Lasciare gratinare ed impiattare caldo. Irrorare con sugo bolognese ed un filo di olio. Prepare a béchamel with roux at 150° C. Once ready and still hot, add grated cheese, salt, pepper and nutmeg. Rub the dough in a square size and stuff with béchamel, then roll it. In a pan with some olive oil, brown the celery, the carrots and the onions. Add the pork minced meat and let it flavor. Then add the tomato paste and then some red wine. Once the alcohol evaporated, add the peeled tomatoes. Cooke for around 90 minutes with low heat. Nel 2016 abbiamo inaugurato Etoile Experience, un format innovativo che prosegue tutt'oggi e il cui punto forte è una lezione-prova gratuita con i rinomati chef del Campus Etoile Academy. L'obiettivo è aiutare i giovani che hanno voglia di apprendere un mestiere a districarsi nel mondo della formazione culinaria, una "giungla" in cui è bene ricordare che sono davvero pochi gli istituti privati in grado di rilasciare una Qualifica Professionale legalmente riconosciuta e valida in tutta Europa: il Campus Etoile Academy è, naturalmente, tra questi. Etoile Experience mette al centro le reali attitudini dei ragazzi e li invita a mettersi alla prova: solo con le mani in pasta, infatti, scopriranno il corso per cui sono più tagliati, se Pasticceria, Cucina o Cucina Salutista, novità assoluta nel panorama italiano. Le giornate di Etoile Experience sono gratuite ma a numero chiuso. For this reason we have shaken up the traditional "open day", providing Chefs and Pastry Chefs with the opportunity to see first-hand the school and its structure's high quality. It has set its roots in a former monastery in the heart of Lazio, in the small town of Tuscania. In 2016 we launched "Etoile experience", a still ongoing innovation whose strong point is a free show class with the Campus Etoile Academy renowned chefs. Our challenging aim is to help young students, eager to learn a great profession, in finding their own successful way in the culinary education world, which is a demanding "jungle" to those who explore it. In this jungle, as a matter of fact, it is appropriate to keep in mind that very few private institutes are allowed to issue a legally approved professional qualification, which is also valid all around Europe. We, the Campus Etoile, are one of those who can, of course. Etoile Experience focuses on the real pupils' inclinations and invites to put themselves to the test: only committing themselves with their "hands into the dough", which in Italian is with their "Mani in pasta", they will manage to understand which training program best fits to their aptitudes. Someone could be prone to be a Cuisine Chef, some other to be a Pastry Chef, someone else to become a Health Cusine Chef, which is the absolute big news in the Italian panorama. Participating in the Etoile Experience's classes is free of charge but is limited as far as students' number.
