La figura dell’Uno non offusca mai l’Altra e insieme hanno donato, in questi anni, ben più che semplice lustro alla Pasticceria mondiale. Per questo è nato il nostro libro: dal desiderio umile e imperioso di dirgli grazie. Ci abbiamo pensato un po’ e poi questa piccola opera ha preso forma: nei nostri cuori, prima che sulla carta stampata. Vorremmo che fosse un tributo, ma anche un piccolo album di ricordi bellissimi, in cui il grande successo si dipana apparentemente leggero, in realtà frutto di massimo impegno e immani sacrifici, tra coloro che gli sono stati più vicini. Abbiamo dato voce ai suoi amici, ai suoi allievi, al suo laboratorio, alla sua realtà. Ne è nato un volumetto fresco e prezioso, di assoluto rispetto, di affetto sincero e, insieme a questi sentimenti, ci piace pensare che possa portare a Gino l‘abbraccio affettuoso e il calore di tutto il vastissimo pubblico che lo apprezza e lo ama. a Gino A different gift for our friend Gino: a present which hides inside not only the admiration and the regard for the Pastry Chef, but also the affection, the friendship, the amazement for the human qualities, for the Man Massari. The figure of the Pastry Chef never obscures the Man. Together, they gave, during these years, even more than prestige to the Worldwide Pastry. This is the reason why our book was born: from the modest but powerful wish to tell him Thank you. We have been thinking for a while… then this little masterpiece took its shape: in our hearts before than onto paper. We’d like it became a tribute, but also a little album of awesome memories, whose great success lightly winds around those who had been closer to him. We gave voice to his friends, his pupils, his laboratory, his reality. This fresh and precious booklet was born, full of respect, affection and together with these feelings we like to think that it can bring to Gino our tender embrace and the warm of such a wide public who respects and loves him. Un racconto speciale La storia è fatta anche di eventi eccezionali. Di quelle strane e rare alchimie tra persone e situazioni che creano dei punti di svolta, tracciano nuovi percorsi, indicano nuove mete. È un privilegio poter conoscere in prima persona queste ‘eccezionalità’ perché sono ricche di emozioni e foriere di insegnamenti. Credo fermamente che il compito di chi fa il mio mestiere sia anche quello di raccogliere con entusiasmo queste testimonianze, ripercorrere le tappe di questi avvenimenti, condividerne la rarità con i lettori. E posso anche dire – oggi più che mai – che nella quasi totalità dei casi questi racconti particolarissimi e preziosi si sviluppano sempre intorno a persone altrettanto uniche, appartenenti a quella rara categoria del genere umano in cui cuore e cervello non smettono mai di essere in contatto tra loro. A special story History is made up of exceptional events; of a series of inexplicable and rare interactions between people and situations that create a turning point, forge a new pathway and signal a new destination. Being able to meet some of these exceptional people is both a privilege and an exciting opportunity to learn. I truly believe that those who do my job are here to patiently collect and record such testimonials by collating the various passages in these events and sharing this unique experience with their readers. And I can state – today more than ever – that almost all these valuable and special stories centre on people who are just as unique, because they belong to that rare category of human beings whose heart and mind always work together. Il libro che tenete tra le mani non è altro che il contenitore di una di queste storie speciali ed è proprio per questo io e la casa editrice che rappresento abbiamo sposato con entusiasmo il progetto che c’è alla base. Da un lato una donna forte e bella, così tanto piena di umanità ed entusiasmo da rendere la sua sola presenza travolgente in ogni situazione. Una donna le cui caratteristiche personali si riflettono come in uno specchio nell’azienda che conduce con piglio sicuro ed appassionato, e che anche grazie a questo è diventata una punta d’eccellenza assoluta nel settore. Dall’altro, un uomo che ha saputo essere il punto di riferimento di un settore, icona, Maestro e contemporaneamente profondamente ‘uomo’, nel senso più nobile del termine. Uno di quelli, come Corinna del resto, che entrano in una stanza e subito, senza sforzo, attirano gli sguardi su di sè. Due persone e soprattutto due amici, dunque, profondamente diverse ma accomunate – pur nelle singole specificità - da uno stesso approccio alla vita e alla professione fatto di passione, entusiasmo e capacità di ‘dare’. On one hand we have a strong, beautiful woman, full of humanity and enthusiasm whose presence has a significant impact on every situation. A woman whose personality is reflected in the company she runs with such a deft and sure hand and who for this reason has become a symbol of excellence in her sector. On the other we have a man who has become a key figure in that sector; an icon and a master of his craft who is at the same time deeply “human” in the most noble sense of the word. A person, much like Corinna, who draws all eyes to him as soon as he enters a room. Two people, above all two friends, who are profoundly different, but complimentary in their passion, enthusiasm and generosity. We have chosen words and images – beautiful and full of atmosphere – created by Gianluca Biscalchin and collected first hand accounts from those who have worked on this task Abbiamo scelto le parole e le immagini - quelle bellissime ed empatiche create da Gianluca Biscalchin -, abbiamo individuato i testimoni che negli anni hanno assistito a queste vicende, che ne sono stati testimoni e protagonisti. Li abbiamo fatti parlare, abbiamo registrato le loro emozioni, annotato dettagli. Non c’è stato bisogno di aggiungere altro. Questo libro è pieno di amore e rispetto, stima e ammirazione. Per una professione, per uomini e donne, per la tecnica, per la pasticceria, per l’innovazione. Sono questi gli elementi sempre ricorrenti, quelli che costituiscono lo sfondo per una storia imprenditoriale (quella di Pavoni), di un’amicizia (tra Corinna e Iginio), di un grandissimo della pasticceria (quella di Massari). Se uno solo di questi fattori fosse venuto a mancare, il racconto che vi apprestate a leggere non sarebbe quello che è. Se personalmente sono riuscita a rendere in ‘prosa’ questo patrimonio di umanità e professionalità, ne sarò orgogliosa ed emozionata. Carla Icardi Direttore Italian Gourmet with them over the years. We have spoken to them about their impressions and feelings noting every detail. There was no need to add anything else. This book is full of affection, respect and admiration for a profession, for the men and women involved in it, for the techniques employed, for the pastry and cakes created and for the innovation achieved. We find these elements time and time again and they constitute the basis of a story of entrepreneurial excellence (Pavoni), friendship (between Corinna and Iginio) and the achievements of one of the great names in pastry preparation (Iginio Massari). If just one of these factors had been lacking, the story you are about to read would not be what it is. On a personal note I will be proud and pleased if I succeed in putting into words this heritage of humanity and professional expertise. Carla Icardi Director - Italian Gourmet La storia di un’amicizia Il mio incontro con Iginio risale al 1997. Allora la mia vita si divideva tra il ruolo di moglie e quello di mamma. Mi piaceva già molto il mondo della pasticceria, e lo seguivo anche se di riflesso. Conobbi Gino e subito lui ebbe la sensibilità di cogliere che stavo attraversando un momento non facile e seppe coinvolgermi e sostenermi, tanto da farmi avvicinare al settore, soprattutto attraverso i libri. Quando nel 2001 rimasi sola e fui improvvisamente catapultata in azienda, fu naturale concentrarmi inizialmente sull’attività editoriale, sui molti libri che editavamo. Era un ambito in cui, dati i miei studi e le mie passioni, mi trovavo a mio agio. Iginio, già allora nostro autore, lo capì immediatamente e mi spronò a impegnarmi proprio in quell’attività. Dimostrando la sensibilità che gli è propria, aveva intuito come quello fosse il mezzo migliore per facilitare il mio approccio alla pasticceria e, contemporaneamente, aiutarmi attraverso il lavoro ad affrontare quel difficile momento dopo la perdita di mio marito. A friendship story I first met Iginio in 1997. At the time I was a wife and mother with only a passing interest in pastry and baking. All that changed in 2001: now a widow I found myself catapulted into the company. Initially I concentrated on the publishing side, working on the many books we handled, it was an aspect of the business that was a good fit with my studies and personal passions and I felt well within my comfort zone. Iginio, who was already one of our authors, understood this immediately and pushed me to do more. With the sensitivity he is known for, he had realised this was probably the best approach to get me more involved in the pastry side of the business and at the same time help me to deal with the loss of my husband. That first experience allowed me to get to know him better and was the beginning of my love for pastry. I was so taken with this wonderful new world that there was no time to feel tired. Pastry is life affirming and in all these years I have come to appreciate that fact more and more, once again and above all, thanks to Iginio. To me, he is a beacon not only from a professional Quella prima esperienza mi consentì di conoscerlo e segnò l’inizio del mio grande amore per la pasticceria. Un mondo che mi ha splendidamente assorbita e per cui provo una passione che non conosce stanchezza. La pasticceria ci rende la vita migliore, in tutti questi anni l‘ho apprezzata sempre di più anche e soprattutto grazie a Iginio. Per me lui è un punto di riferimento professionale e umano. Non smette mai di spronarmi: trova sempre il modo di farlo con quella delicatezza che gli è propria e che concede a chi sa essergli vicino. E anche se le critiche non sono mancate, ho imparato ad accettarle e a farne tesoro perché ho compreso che non sono mai gratuite ma sempre mosse dalla volontà di aiutare chi le riceve. Il mio rapporto con lui è fatto di stima e affetto e comprende anche sua moglie Marì, Debora, Nicola e gli amatissimi Pietro e Lorenzo. Impossibile scegliere, tra i tanti momenti speciali che ho condiviso, quello più importante. Amo, però, particolarmente ricordare le molte volte in cui ho avuto il privilegio di scendere nel suo laboratorio, di sedermi al suo computer e di leggere, ad alta voce, con lui al fianco, brani dei suoi volumi e delle sue poesie. C’è la sensazione di essere in un tempio della pasticceria, di avere accanto un Maestro, di condividere pensieri ed emozioni con un amico. È quasi un rito che si ripe- point of view, but also as an important part of my personal life. He never ceases to push me to do better. And he always manages to do it gently and with his own personal touch – one he reserves for those who are close to him. In these years he never held back when the time came to be critical, but it was the kind of constructive criticism that is never for its own sake but is always motivated by the desire to help a person grow. My feelings for him (and his wife Mari and their family) are ones of respect, admiration and affection. I wouldn’t know how to choose the most important of the many special moments I have spent in his company. What I recall with the greatest affection, however, are the many times I had the privilege of visiting him in his workshop, sitting at his computer and reading excerpts from his many books or poems with him by my side. You get the feeling you are entering the high temple of pastry with a Master pastry chef alongside you as you share your thoughts and emotions with a dear friend. Ogni volta è una gioia per me. Sono ore di condivisione che mai gli ho chiesto e che lui sempre mi ha regalato, spesso intuendo quando ne avevo più bisogno. Perché è nei momenti di difficoltà che Iginio mostra con maggiore evidenza il suo spessore umano. Da ciò si capisce quanto sia speciale. Amare la pasticceria, lui, l’Accademia è un tutt’uno. Un filo invisibile, ma fortissimo, li lega, impossibile non averne la consapevolezza. Quindici anni fa abbiamo creato insieme il premio ‘Pasticcere dell’anno’ – poi diventato ‘Trofeo Pavoni” – ed è stato il nostro modo per rendere merito a un settore e alle sue eccellenze. Ogni anno, un nuovo premio per celebrare il pasticcere che si fosse distinto per molti meriti, fino ad arrivare ad oggi, al momento storico del ventennale. È quindi stato automatico per me – per noi – pensare anche a un premio ‘speciale’ per l’occasione e altrettanto naturale dedicarlo a Iginio Massari. Per ringraziarlo di ciò che ha fatto e continua a fare per il settore. Questa, la parte professionale, ufficiale; per quella umana gli sono grata ogni giorno. Ma con lui non c’è bisogno di parole’. Corinna Raineri Pavoni I get a feeling of excitement and anticipation. Each time I feel happy. This time spent together is a gift he gives to me without my ever having asked him to do so and one that always seemed to arrive exactly when I needed it. Because it is in the most difficult moments that Iginio shows his humanity and it is in these moments that you understand just how special he is. There is a strong yet invisible thread of affection that links him, the Academy and a love of pastry that is impossible to ignore. When we founded the “Pastry Chef of the Year” competition some years ago we wanted to showcase the merits of this sector and level of excellence it requires. Each year there has been another edition until here we are today, celebrating a 20th anniversary. It came naturally to me – to us – the mark this occasion with a special award for the outstanding pastry chef of the last 20 years and that could only be Iginio Massari. It’s our way of thanking he for all he has done and continues to do for the sector. This is the official, professional aspect; on a personal level every day Corinna is thankful for knowing him. But with Iginio there is no need for words. Luigi Biasetto Gino Fabbri Pierpaolo Magni Salvatore De Riso Paolo Sacchetti Luca Mannori I compagni di Accademia Per tutto il giorno avevamo finto di dimenticarlo. Eravamo negli Stati Uniti, il 29 di agosto di qualche anno fa e nessuno gli aveva fatto gli auguri. Iginio non aveva fatto una piega, probabilmente non sospettando nulla nemmeno quando lo avevamo trascinato in giro per l’hotel per circa un’ora. Non avevamo scordato il suo compleanno, naturalmente, anzi gli avevamo fatto preparare una torta dallo chef dell’hotel, che però tardava ad arrivare. “Di qui siamo già passati ragazzi - diceva - stiamo girando in tondo da mezz’ora!”. Che fatica tenerlo in attesa, e quante scuse. Eravamo stanchissimi e lui voleva andare a riposare, ma quando la torta è finalmente arrivata… che emozione vedere quell’emozione nei suoi occhi! Questo è il momento che mi piace ricordare, prima del brindisi che seguì... Gino Fabbri Trofeo Pavoni - Pasticcere dell’anno 2009 “We pretended to have it forgotten for all the day. We were in USA, August 29th some years ago and nobody said to him ‘happy birthday’! Iginio was impassible, he probably did not suspect anything, even when we took him around the hotel for an hour. We did not forget his birthday, obviously, we even let prepared a cake by the hotel’s chef, but this cake was late… “we already passed through here guys - he said - we are turning around since half an hour!”. How hard to keep him waiting and how many lies. We were so tired and he wanted to go to bed, but when the cake arrived… How touching was to see such emotion in his eyes! This is the moment I like to remember, before the celebration which follows”. Nell’estate del ’97, Gino venne chiamato a Montecarlo per una manifestazione denominata ‘Stravaganza Mediterranea’. Accademia era nata da pochi anni ma i tempi erano maturi per gli eventi che portavavano i grandi pasticceri in altre città, altri paesi, e io ero tra coloro che credeva fermamente bisognasse rivolgersi al pubblico. Mi chiese di andare con lui. C’erano anche Sal De Riso, Paco Torreblanca e Luca Mannori fresco campione del mondo. Scopo benefico, cena di gala… camere divise con i colleghi e tanta voglia di lavorare insieme e farsi conoscere. All’arrivo lo trovai feroce, tutte le sue monoporzioni erano state messe nel frigorifero con il pesce! Da quel momento la sua reazione mi colpì profondamente: messa da parte la rabbia, a tavolino, il dolce fu ripensato. Naturalmente a decidere fu lui: caramello, zabaione al moscato, cioccolato. Ci mise 5 minuti per elaborare un dolce che non esisteva. Non finiva mai di stupire. Mai. “Ci penso io, facciamo così”. Mantenere la calma, riorganizzarsi immediatamente, servire oltre 250 persone: serviva sangue freddo e rigore assoluto. Dimenticavo… alla fine siamo riusciti anche ad aiutare Santi Santamaria: lo chef spagnolo aveva perso una collaboratrice infortunatasi ai fornelli… Ci vuole anche cuore. E Gino ce l’ha grande. Paolo Sacchetti Trofeo Pavoni - Pasticcere dell’anno 2012 “In summer 1997, Gino was invited to Montecarlo for an event called ‘Mediterranean Eccentricity’. The Academy was just born, but it was time for great Pastry Chefs to be brought to other cities and I was that kind who believed to the importance to address to public. He asked me to go with him. There were also Sal De Riso, Paco Torreblanca and Luca Mannori, just awarded as World Champion. Beneficent event, gala dinner… rooms shared with colleagues and a the wish to work together and let ourselves known. When I arrived I found him angry. All his monoportions had been put in the fridge together with fish! From that time I was striked by his reaction: once overcome the angry, the dessert was fully thought again. Naturally he decided all: caramel, Moscato egg flip, chocolate. He took 5 minutes to elaborate a dessert never presented before. He never stopped to amaze. Never. “I take it over. Let’s do like that”. Keep calm, immediate organization, serve more than 250 guests: cold-blooded and extreme discipline… at the end we also managed to help Santi Santamaria: the Spanish chef lost a collaborator because of an accident in the kitchen… Heart is also necessary and Gino’s heart is big!”. Iniziai a fare il pasticcere semplicemente da autodidatta. Sentii parlare di un certo Massari… come del migliore, del più grande. Una mattina partii da Minori, la mia città, diretto a Brescia, la sua. Volevo andare a vedere, capire. Mi ritrovai a fissare le sue vetrine, senza riuscire a decidermi… un giorno, e un altro. Fino a che una volta, verso le 13, mentre stavano per chiudere, fui invitato ad entrare dalla signora che poi seppi essere Marì, la moglie di Iginio. Balbettavo persino, dall’emozione. In un attimo mi ritrovai catapultato in un mondo – avevo poco più di vent’anni – che per me era il paese dei balocchi. Visitai negozio e laboratorio. Assaggiai. Iginio prese a raccontarmi tutto, ma mi chiese anche di me, della mia vita, del mio approccio alla professione. Infine mi disse ‘vivi in un posto meraviglioso, valorizza i prodotti che hai, fanne la tua bandiera’. Io che allora facevo già il profiterol al limone, capii di essere sulla strada giusta. Ma da allora compresi anche che Iginio è più di un amico. Più di un maestro. Non ti dice mai quello che devi fare, non ti risolve i problemi. Ma se lo ascolti... se impari a cogliere tra le righe, comprendere con la testa, ma anche con il cuore e con la pancia, lui riesce sempre a insegnarti qualcosa. E io di quel giorno gli sarò grato per sempre. Salvatore De Riso Trofeo Pavoni - Pasticcere dell’anno 2010 “I started doing pastry chef by my own. I heard something about a certain Massari… as the best, the greatest. One day I left Minori, my town, towards Brescia, his town. I wanted to go there, to see, to understand. I found myself watching his shop windows… without deciding… day by day. Then, once around 13 p.m. while they were going to close, I was invited to enter by a woman, I later knew she was Iginio’s wife, Marì. I was stuttering from emotion. In few seconds, I was thrown in a world (I was around 20 years old) similar to Toyland. I visited the shop, the laboratory, I tasted. Iginio started to tell me everything, but he was also interested on me, my life, my approach to pastry world. Finally he said: “you live in a handsome place, increase the value of the products you have, make them your flag”. That time I was already preparing lemon profiterol and I understood I was on the right page. From that time, I understood Iginio is more than a friend. More than a teacher. He never tells you what you should do, he does not solve the problems. But if you listen to him… if you learn to read between the lines, understand with your head but also with heart and stomach, he always manages to teach you something. And I will be ever grateful to him for that day”. Un ricordo, sopra ogni altro, mi piace raccontare qui, dei tanti, tantissimi, che mi legano a Gino. Era il 1996. Fu l’occasione per condividere un viaggio non-stop Brescia-Lussemburgo diretti alle Olimpiadi, con partenza nel cuore della notte. Uno di quei tour de force che fanno solo i pasticceri, dopo aver sistemato la produzione, preparato un evento, organizzato la squadra e coinvolto la famiglia. Mi misi al volante ma per guidare a lungo, ho bisogno di aria fresca. Gino accanto a me, soffriva in silenzio. Non diceva nulla e stava gelando! Al momento di una pausa lungo il tragitto, ci fermammo per un caffè in autogrill e lui scese dalla macchina fingendosi un ghiacciolo. Rigido e immobile, fece per cadere congelato. Se lo immagino rido ancora oggi. Fu un viaggio memorabile. Del resto, al confine con la svizzera non ci volevano far passare: la torta dipinta a mano che avevamo preparato viene scambiata per un’opera d’arte e alla frontiera volevano chiamare la soprintendenza ai beni culturali… Luigi Biasetto Trofeo Pavoni - Pasticcere dell’anno 2006 “One event, more than many others which link me to Gino, I would like to tell here. It was 1996. We shared a non-stop travel Brescia-Luxembourg to Olimpic Pastry Championship, leaving in the middle of the night. One of that tour de force only Pastry Chefs can do, after production, once prepared the event, organized the team and involved the family. I was driving, but to drive for a long time, I need fresh air. Gino, next to me, was suffering in silence. He didn’t talk, he was freezing! We stopped for a coffee and he came down from the car, pretending to be an ice lolly! Fully rigid and motionless, he pretended to fall frozen at the ground…! If I remember that image, I start laughing today again! It was an unforgettable trip. At Switzerland border, they didn’t want to let us pass: the hand painted cake was confused for an artistic masterpiece and at the border they wanted to call the Cultural Artistic Superintendence…”. Non cominciai giovanissimo a muovermi in questo mondo. Ma quando mi ci tuffai, per il mio primo concorso, a Perugia, Iginio c’era. Tutto era molto diverso anni fa, eppure oggi come allora, si partecipava, ci si confrontava, si correva alla ricerca di conferme e insegnamenti. Conobbi dunque un uomo estremamente disponibile, capace di spronare i ragazzi anche mentre li riprendeva. Io vinsi e lui fece una cosa che non mi aspettavo: mi chiamò davanti a 100 persone e disse: ‘vi prensento Luca Mannori, ricordate questo nome perché ne sentirete parlare ancora’. Rimasi senza parole: credeva in me più di quanto ci credessi io stesso! Ne trassi una grandissima carica. Da allora compresi quanto conta, quanto fosse grande il suo insegnamento. È questo che cerco di fare, quando posso, con i molti ragazzi che mi chiamano. Trasferire loro quel grande impulso che ricevetti da Gino. Luca Mannori Trofeo Pavoni - Pasticcere dell’anno 2001 “I didn’t start so young moving into this world. But when I started, for my first competition, at Perugia Iginio was there. Everything was different some time ago, nevertheless today as yesterday everybody took part, shared feelings and ran towards teachings and confirmations. I knew an extremely available man, able to push the guys even when he was chiding them. I won and he did something I didn’t expect: he called me in front of 100 people and said:” I introduce you to Luca Mannori, remember this name because you will hear it again”. I was speechless. He believed in me more than myself! I took a great motivation from that. From that time I learned how bigger and important is his teaching. And this is what I try to do with all guys who address to me: to transmit them that great impulse I got from Gino”. Diversi anni fa, a Bruxelles, ho avuto il piacere – l’onore! – di fare da secondo a Iginio Massari. Mai come in quel momento mi sono reso conto della sua grandezza, come professionista e come uomo. Per quel che riguarda la prima, mi bastò vederlo cuocere il pan di spagna alla nocciola (per la sua famosa torta ‘Nicola’) senza strumentazione: il forno non indicava la temperatura e lui procedette semplicemente testando il calore con le mani. Quanto alla seconda… ricordo che dimenticai a casa l’orologio: una mancanza importante in un concorso di pasticceria in cui il tempo è una variabile fondamentale. Iginio non mancò di prendermi in giro e rimproverarmi per tutta la durata della prova. Ma al nostro ritorno, in aeroporto, riuscì, non so nemmeno come, a distrarmi quel tanto che bastò a comprarmene uno. Un regalo tra i più preziosi, che conservo nel cuore come il ricordo di quel viaggio, di quel concorso, di quella torta al profumo di nocciola. Pierpaolo Magni Trofeo Pavoni - Pasticcere dell’anno 2004 “Many years ago in Bruxelles, I had the honour to be the second hand for Iginio Massari. Never before I realized how great is his knowledge and ability, as experteer, as well as a man. About his job, it was enough for me to see him baking nut sponge cake (for his famous Nicola Cake) without tools: oven did not show the temperature and he proceeded simply testing the heat with hands. Che condividiamo esperienze, gioie e fatiche di una professione che ci unisce nel profondo. Lo considero semplicemente il mio migliore amico, un uomo che mi ha cambiato la vita. Tante cose sono successe prima e dopo la nascita di Accademia, una grande confraternita nel segno della qualità. Mille occasioni di incontro, riunioni, condivisioni, eventi e manifestazioni. In giro per l’italia, per il mondo. Insieme. Ma una sera, a Perugia, ebbi un alterco con lui. Complici - temo - le libagioni eccessive, lo offesi pesantemente in pubblico e ad alta voce. Come si può immaginare da quel momento il nostro rapporto si ruppe. Le famiglie tentarono una ricomposizione ma a me ne mancava il coraggio. Per orgoglio, per paura. Qualche tempo dopo, in fiera a Rimini, Gino mi si avvicinò: “Come va signor Zoia?”. Non credo serva aggiungere altro per descrivere la grandezza d’animo di Iginio Massari, se non la mia commozione, che cresce ogni volta che ricordo quest’episodio. I simply consider him my best friend, a man who changed my life. Many things happened since he asked me to contribute to let the Academy born, a great brotherhood in the hallmark of quality. From that time, thousand occasions of meetings, events, sharings and exhibitions. Around Italy, in the world. Together. One night in Perugia, I had a quarrel with him (because of, I am afraid the excess of food) and I offended him in front of the public, aloud. From that moment, our relationship broke. Our families tried to reunite us but I was not enough bold. Too much pride, too much fear. Later on, during Rimini exhibition, Gino came to me: “How are you Mr. Zoia?” Not necessary to add more to describe the greatness of his soul and my emotion each time I remember that moment. Iginio Massari è unico è incomparabile. L’ho incontrato presso la Scuola Nazionale di Pasticceria, Yssingeaux, nel corso di un seminario che ha tenuto e durante il quale ci ha trasmesso i segreti della pasticceria tradizionale italiana fondamentale, di cui ha una padronanza assoluta. Per me è stata una rivelazione. Sono rimasto impressionato dalla sua conoscenza delle materie prime, della tecnica e della tecnologia del nostro mestiere, unita a una elevata sensibilità e una profonda cultura. Non ho mai incontrato una persona così erudita e me ne sono reso conto immediatamente, proprio al primo incontro. Ho imparato molto stando al suo fianco per molti anni. A ogni seminario del Relais Desserts International, è Iginio che usiamo per tutte le questioni relative al prodotto, alla tecnologia e alla sua storia. Igino è il referente mondiale nella nostra professione. Pierre Hermé “Iginio Massari is unique and uncomparable. I met him at the École Nationale Superieure de la Pâtisserie Yssingeaux, during a seminar he holded to convey us the secrets of Italian traditional pastry, whose he is a real Master. It has been a real revelation to me. I was so impressed from his raw materials knowledge, the technique and the technology of our job, mixed to a great sensibility and a deep culture. I never met a person so learned and I immediately realized at the first meeting. I have been learned so much, closed to him, during these years. During each seminars at Relais Dessert we ask Iginio for all questions related to products, technology and history. Iginio is the worldwide referent of our profession”. Erano gli anni dell’Albereta, con Gualtiero Marchesi. Sentivo parlare di Iginio Massari come di uno tra i più grandi pasticceri del paese e un giorno, credo nel ’93, gli feci visita con lo chef in laboratorio… Il ricordo che ho di lui è di un professionista che non smetteva di mostrarci cose, raccontare prodotti, condividere esperienze. Un vulcano in continua attività. E quando infine ci chiese ‘cosa posso fare per voi’… non immaginavo che ci avrebbe stupiti in quel modo. Giorni dopo al ristorante arrivò una tra le torte monumentali più bella che avessi mai visto. Un lavoro davvero pazzesco, che lasciò gli sposi a bocca aperta e ci fece fare un figurone! Carlo Cracco “It was the years of Albereta, with Gualtiero Marchesi. I heard people talking about Iginio Massari as one of the biggest pastry chefs in the country and one day, in 1993 I believe, I visited the chef in the laboratory. My memory of him is a professional who never stopped showing us things, telling us about products and sharing his experiences. A volcano in continual activity. And when, at the end, he asked us what he could do for us, I never imagined that he would have surprised us that way. The day after at the restaurant I received a monumental cake, the most beautiful cake I had ever seen. Truly an incredible job, that left the bride speechless and we looked really good!”. Quando vediamo le opere di pasticceria di Iginio tutti i nostri sensi entrano in tensione: senza toccarle già sappiamo la loro consistenza, le loro qualità; sentiamo il bisogno di toccarle con le dita… osservando l’assemblaggio e la presentazione, vediamo l’ordine e la composizione, la forma e l’armonia. Ogni senso è coinvolto. Ricordo con grande entusiasmo la nostra prima conversazione a Bruxelles; non ci conoscevamo e ci trovammo insieme a un pranzo durante un concorso di pasticceria il cui tema era la creazione di una torta che rappresentasse l’Europa. Mentre stavamo parlando confezionò una rosa con della mollica di pane e la diede ad una signora seduta al nostro stesso tavolo… Allora non avrei immaginato che avremmo frequentato l’associazione Relais Dessert e saremmo diventati amici, ma oggi non posso fare a meno di ricordare con grande affetto le nostre discussioni durante i seminari, lo scambio di idee e opinioni che mi avrebbero arricchito professionalmente, che mi avrebbero permesso di aggiungere prodotti italiani alle mie creazioni. Una volta consideravo Igino Massari semplicemente un uomo… impegnativo, così tanto esigente con se stesso da divenire un importante banco di prova, capace di spaventare chiunque. Oggi mi piace pensare a lui come a un grandissimo conoscitore di prodotti, tecniche, abbinamenti; con grande competenza anche nel salato. Ma quella volta, diversi anni fa, che gli feci – come sempre – assaggiare un dessert, lui sentenziò: “buono, ma la panna alla lavanda non c’entra davvero niente”. Io finalmente sorrisi, certo di averlo colto per la prima volta in errore: “non c’è lavanda maestro, glielo assicuro”. E sicuro lo ero davvero. Fino al momento di tornare in cucina e accorgermi che nel frigorifero c’erano i fiori freschi di lavanda che sarebbero serviti per decorare un altro piatto, nella stessa occasione. Da allora ne ho certezza, Iginio è semplicemente un computer. Con tutti i suoi file archiviati, una memoria illimitata e la sempre puntuale capacità di analizzare, raccogliere, capire e… trovare la soluzione! Beppe Maffioli “Once I used to consider Igino Massari simply a man… challenging, so much exigent with himself to become an important test, able to scare everybody. Today I like thinking of him as a great experteer of products, techniques, mixing, with a wide competence also in salty food. That time, many years ago, when I let him taste a dessert, he said: “good, but the lavender cream has nothing to do with”. I finally smiled, sure to catch him in error: “there is no lavender, Master, I ensure you”. And I was actually sure. Until I came back to the kitchen and realize that in the fridge there were some fresh lavender flowers to decorate another dessert, for the same event”. From that time, I am certain: Iginio is like a computer. With all files archived, an endless memory and the capacity to analize, catch, understand and find the solution!”. Non ce n’è un altro come lui, lo sanno tutti in seno ai Relais Dessert! Un dubbio sul tempo di cottura? Un problema di texture? Un profumo da recuperare? Tutti si voltano verso Iginio, che ha sempre la risposta. E in francese, per favore, con quel suo accento che canta l’Italia. È allo stesso tempo alchimista e artigiano, ricercatore e creatore. Conservo un ricordo molto vivido di quell’anno in cui tutta l’associazione si ritrovò su suo invito, nella sua città, a Brescia, in occasione della nostra giornata internazionale dei Relais Dessert. Iginio e la sua squadra avevano realizzato dei buffet su delle pièce artitiche davvero impressionanti per la loro finezza, la loro eleganza e la loro creatività. Siete fortunati, voi italiani. Siamo fortunati noi tutti che condividiamo questo mestiere e la sua conoscenza: un vero e proprio tesoro per un maestro pasticcere. I still have a very vivid memory of the time he invited the entire association to his native city Brescia to celebrate our international Relais Dessert Day. Iginio and his team put on a buffet full of amazing, artistic pieces that stood out for their quality elegance and creativity. You Italians are lucky. Quando da ragazzino mi trovai di fronte a Iginio Massari, quello che vidi fu un omaccione dall’aria burbera e austera, con un vocione impressionante, apparentemente ruvido, che raccontava anche di essere stato un pugile… Ne rimasi incredibilmente colpito e intimidito, ma anche affascinato. Non appena entrato nel suo mondo, al laboratorio di pasticceria, scoprii l’altra faccia della luna. Un professionista elegantissimo, dal gusto ricercato, capace di decorare una torta con la delicatezza di un artista. Lo scoprii anche poeta e scrittore; lo ritrovai appassionato di letteratura come di chimica. Da quel giorno in avanti più volte rimasi incantato a sentirgli spiegare formule chimiche come fossero ricette, mostrare il prodigio dell’impasto per gli ‘africani’ che si inzuppa come una spugna, si strizza nelle mani fino a ridursi a una briciola e ritorna poi al suo volume iniziale. Lo sentii leggere poesie che tratteggiano gli anfratti più intimi dell’animo. Ecco chi è per me Iginio Massari, un grande professionista e un uomo di raffinatissima cultura. Enrico Cerea “When I was a little boy, I faced Iginio Massari and what I saw was a big man, with a sever face expression an a loud voice, apparently harsh, who told he was a boxer… I was incredibly impressed and cowed, but also glamoured. Soon after I entered his world, his pastry laboratory, I discoverd the other side of the moon. A refined experteer, with a sophisticated taste, able to decorate a cake with the daintiness of an artist. I discovered him as poet and writer too. Passionate about literature as well as chemistry. Since that time on, I have been many times enchanted in listening to him explaining chemical formules as they were recipes, to show the magic of dough for “Africans” which drenches like a sponge, squeezes in the hands until becomes a crumb, to come back, then, to its initial volume. I heard him reading poetries which tell the deepest man’s secrets. This is what Iginio Massari is to me: a great Master and a man with a very fine culture”. Io, così giovane, circondato dal gotha della pasticceria italiana. Un sogno che si realizzava. E poi c’era lui, Iginio Massari, il Maestro dei Maestri. Il tema di quell’anno con cui tutti noi Accademici dovevamo confrontarci era quello della torta nuziale. Io ne avevo realizzata una decorata con delle rose in zucchero. Mi ricordo perfettamente che si avvicinò e ne osservò ogni dettaglio in silenzio. Ero preoccupatissimo, il suo giudizio è quello che tutti temiamo e contemporaneamente aneliamo. Poi si girò e disse che erano le più belle rose in zucchero che avesse mai visto. Posso sentire quell’emozione ancora adesso. Quel complimento è stato probabilmente uno dei più belli e significativi di sempre. Per me ha tutt’oggi il valore di un podio importante. Davide Comaschi “It was my first Symposium. The emotion was high. I, so young, surrounded by Italian greatest Pastry Chefs. A dream becoming truth. And then, he was there, Iginio Massari, the Teacher among all Teachers. That year’s theme was Wedding Cake. I did one decorated with sugar roses. I perfectly remember he came to me and observed each details in silence. I was so worried… His judgement is the the thing we are mostly afraid with, even we yearn it so much. He turned and said those were the most beautiful roses he had ever seen. I can feel that emotion right now. That compliment was probably one of the best for me. It has the same value of an important award”. Avevo vent’anni o poco più e Iginio Massari, per me che lavoravo nella pasticceria di papà, era già un mito. Fu proprio mio padre a portarmi a una sua dimostrazione pratica organizzata dall’allora Associazione Pasticceri di Vicenza. Mostrò a una platea estasiata la decorazione al cornetto. Era leggendario il suo saperlo fare con entrambe le mani contemporaneamente. Nella mia postazione cominciai a provare. Lui ci raggiunse, mi osservò e disse a mio papà: ‘Questo ragazzo farà strada’. Non mi è servito altro per decidere che quello era il mio futuro. Quando, ad anni di distanza, ho deciso di dedicarmi esclusivamente alla consulenza, lui è stato il mio supporto, la mia guida. Le sue parole sono insegnamento e motivazione. Sempre. Il rapporto che si è creato tra noi è una delle cose più belle che mi siano mai capitate. Diego Crosara “I was around 20 years old, working at dad’s pastry shop, and Iginio Massari was a myth for me. My father brought me to one of his practical demonstration organized by Vicenza Pastry Association. He showed to an enthusiastic public his cornetto decorating. It was like a legend… he managed to decorate with both hands simultaneously. I started to try from my position. He reached us and said to my dad: “This guy will lead the way”. Nothing else was necessary to me to decide this was my future. When, after years, I started to dedicate myself exclusively to consultancy, he was my support, my leader. His words are teaching and motivation to me. Ever. The relationship between us is one of the most beautiful thing I have ever happened”. Da ragazzo i miei coetanei seguivano i cantanti rock. Io i grandi Maestri, Iginio Massari sopra tutti. Così, quando a 26 anni, lo ritrovai come presidente di giuria in un concorso di pasticceria a cui partecipavo l’emozione fu grandissima. Ricordo che dovevamo entrare singolarmente in una stanzetta per fare assaggiare la nostra torta. Arrivato il mio turno, mi fece presentare il dolce e mi chiese di assaggiarlo. Dopo avere ascoltato i pareri dei commissari tornò su di me chiedendomi una parere sul mio operato. Risposi con un timido: ‘Spero di aver fatto bene’. Lui mi guardò e mi disse che dovevo avere la consapevolezza di non essere un mezzo pasticcere ma un pasticcere a tutti gli effetti, un pasticcere che stava crescendo a grande velocità. Simili parole dette da Iginio Massari mi colpirono profondamente, le ricordo ancora perfettamente e amo rievocarle ogni volta che devo affrontare una sfida. Furono determinanti allora come oggi. Emmanuele Forcone “When I was a kid, my friends used to follow rock singers and I was following the great Teachers, Iginio Massari above all. So, at 26 years old, I found him as Jury President during a pastry competition I was involved. My emotion was so strong. I remember we had to enter one by one in a little room to let our cake be tasted. It was my turn, he let me present my cake and asked me to taste it. After having listened to the comments of all other jurymen, he came to me and asked me an opinion on my job. I shyly answered: “I hope I did well”. He looked at me and told me I had to have to awareness to be not a half pastry chef, but a complete pastry chef, growing up fast. Such words, said by Iginio Massari touched me deeply. I perfectly remember them right now and love to think about them when I have to face a challenge. Those words were “key words” that time and today”. Ho avuto la possibilità di lavorare a stretto contatto con lui a partire dalla nascita dei Campionati Mondiali Juniores di Pasticceria. Mi ha insegnato cosa significa allenare dei ragazzi, trasmettergli passione e tecnica. Mi ha fatto crescere. Ciò che ha di unico Iginio è che il suo livello di professionalità è pari al suo valore umano: è impossibile scindere i due aspetti. Lui è stato uno dei primi cui ho detto che avrei messo radici sposandomi. Andai a Brescia, nel suo laboratorio per dargli l’annuncio, come fosse un padre. Mi parlò con voce decisa dicendomi che era ora che la mia vita cambiasse, che non smettessi di rincorrere cose o obiettivi ma iniziassi a farlo in modo diverso. Un modo che può essere perseguito solo se si hanno affetti veri. E ci si può riuscire solo avendo una famiglia alle spalle. Mi sono commosso alle lacrime. Iginio utilizza la pasticceria per darti insegnamenti di vita. Questo in lui è unico. Gianluca Fusto “I had the chance to work closed to him since the born of Juniores Worldwide Pastry Competition. He taught me what it means to train guys, to convey them passion and technique. He helped me to grow. The unicity of Iginio is his high level of experteer which is equal to his value as a man. It is impossible to divide both aspects. He was one of the first I told I was going to get married. I went to Brescia, to his laboratory to tell him this thing, as he was a father to me. He talked to me fairly, saying it was time for me to change my life, not to stop looking for things and goals, but starting doing that in a different way. A way which can be followed up just when you have real love. You can do that only with a family behind you. I was really touched, closed to tears. Iginio uses pastry to teach life. This is unique to him”. Ero poco più di un ragazzino, con una chioma indisciplinata e gli orecchini. Mentre mi allenavo per il World Chocolat Master, Iginio Massari venne a vedermi per darmi qualche consiglio. Dall’emozione credo di non avere nemmeno dormito la sera prima. Mi ricordo che osservò il lavoro e che un solo sguardo posato sui miei lobi portò alla definitiva decisione di chiudere in un cassetto gli orecchini. Lo rincontrai anni dopo, sempre in occasione di un allenamento, questa volta per il campionato del mondo. Alla prove di degustazione di cioccolatini, assaggiò i miei e con voce calma disse: ‘Complimenti ragazzo. Hai fatto una bella schifezza’. Iginio è così, non ha mezze misure. È profondamente sincero. È il suo modo di insegnare a chi vuole imparare. Ma che sia una la ‘stroncatura’ di un prodotto o il commento su un atteggiamento o un modo di fare, si tratta sempre di indicazioni volte al miglioramento. Io ho imparato a capirlo, a interpretarne il linguaggio e da lui continuo ad apprendere come pasticcere e come uomo. Ogni giorno. Fabrizio Galla “I was just a little bit older than a boy, with matted hair and earrings. While I was training for World Chocolate Master, Iginio Massari came to see me to give me some advices. I was so excited, that I didn’t sleep the night before. I remember he watched my job and just a look at my earlobes pushed me to the definitive decision to close my earrings in a drawer. I met him some years later, during the same trainings, this time for Worldwide Championship. During the tasting trial, he tried my pralines and with calm voice he said: “Congratulations guy, you did a real filth!”. Iginio is like that, no half measures. He is deeply sincere. It’s his way to teach to anybody wants to learn. But, if a product’s stricture, or a comment about an attitude, his indications are always goaled to an improvement. I learned to understand him, to read his language and I am going on to learn from him, as a pastry chef and as a man. Each day of my life”. Guarda tutto tre volte: due per vedere il giusto e una per vedere il bello’. Questa frase che mi disse Iginio ha cambiato la mia visione nel fare e pensare i pezzi artistici. La porto nel cuore, è il mio faro. Mentre preparavamo il Mondiale di zucchero artistico ci allenavamo in modo estenuante. L’opera migliorava continuamente ma lui non era mai soddisfatto, diceva che l’espressione non era quella giusta, che dovevo riuscire a fare la donna più bella del mondo. La figura femminile è il vero banco di prova dello zucchero artistico e io non raggiungevo l’obiettivo. Poi ho messo a punto la tecnica giusta. Quando Iginio la vide mi disse che sì, ci ero riuscito, quella era la più bella di tutte. Avevo trasformato un suo desiderio artistico in realtà. Quando sono salito sul gradino più alto del podio i nostri sguardi si sono incrociati. Io lo avevo fatto felice e lui mi aveva portato sin li, non c’era bisogno di altro. Davide Malizia “Watch everything three times: twice to see what is “right” and once to see what is “handsome”. “This Iginio’s sentence changed my vision in creating and thinking the artistic pieces. I bring it in my heart, it’s my lighthouse. During the training to prepare the Artistic Sugar Worldwide Championship, we used to work very hard. The pieces improved day by day, but He was never satisfied. He said the expression was not the right one; I had to create the most beautiful woman in the world… Female figure is the real challenge inside artistic sugar art. I didn’t manage to achieve the goal. Then, I settled up the correct technique. When Iginio saw it, he told me that yes, she was the most beautiful! I managed to transform one of his artistic wish into reality. When I climbed the highest step of the podium, I crossed His glance. I made him happy and he brought me until there… nothing else mattered”. Ai mondiali di pasticceria di Nashville eravamo andati per vincere. Ero il capitano della squadra e avevo la responsabilità della scultura in pastigliaggio. Iginio era lì nella doppia veste di nostro allenatore e giurato per l’Italia. Ci aveva spinto al massimo e per me essere allenato da lui era una magia. Dovevamo vincere per noi e per lui. La scultura era alta due metri, un’assoluta novità rispetto a tutte le altre che si aggiravano da sempre intorno ai 40 cm. Lui mi si avvicinò a lavoro finito dicendo che la giuria era entusiasta. Era felice. Appena finito di parlare ci raggiunse il rumore secco della pièce che crollava. Avevamo perso il titolo. Non c’è stato bisogno di aggiungere altro. Con Iginio spesso non occorre. Basta uno sguardo e un abbraccio. Certe cose posso accadere solo con lui, come uomo e come Maestro. Senza di lui noi ‘ragazzi’ dove possiamo andare? Roberto Rinaldini Trofeo Pavoni - Pasticcere dell’anno 2013 “During Nashville’s Worldwide Pastry Championship, we went there to win. I was the team’s captain, and had the responsibility of sugar paste sculpture. Iginio was there as our trainer and juryman for Italy. He pushed us strongly and it was so magic for me to be trained by Massari! We had to win! For us and for him. The sculpture was 2 mt high, totally new in comparison with all the others around 40 cm high. Once finished, he came closed to me saying that jury was astonished! He was happy. Just soon after talking, we heard the sharp sound of the cracking sculpture… We had lost the title. Nothing more to add. With Iginio it is mostly of the time not necessary. Just a look and a hug are enough. Some events can happen just with him, as man and as Teacher. Without him, we “guys” where should we go?”.
