Authority, the Venice Provincial Authority. Its transformation into a place for training and
dialogue between culture and experience, memory and history, constitutes an initiative that
differs from the others that exist in the lagoon and that are connected to business and the
tourism monoculture of the city".

Eating Out
Restaurants do usually post menus and price lists. Do not forget, though that the cost of the
meal will be marked up with a cover charge (pane e coperto) and a service charge
(servizio, 12-15% as a rule, it is always best to reserve a table at least a couple of hours
before you want to eat. Tipping the waiters is appreciated, but not obligatory. Do not get
disheartened those of you who have limited funds available for eating out, but who
nevertheless would like to try some Venetion specialities. Just opt for a decent BACARO or
an OSTERIA.
The Venetians have always had a place to go, anytime of the day, to drink ombra (literally “a
shadow” – in fact, a glass of white wine).
If you want a vague idea of what a bacaro is like, think of a pub with no large saloon bar or
private room. With your ombra you can eat some cicheti – hard boiled eggs with or without
mayonnaise, salty anchovies, meat-balls, seppioline (squid), sardines in breadcrumbs or in
saor (pickled with spices), tuna fish and onions to name a few.
Venice is fall of bacari (as you will discover for yourselves) and you are always likely to find
at least a few customers in every one. Apart from the exceptions, bacari are open until 1pm
and then from 5pm to 8pm.
Scampi, anguilla (eel), gamberetti (shrimps), seppie (squid) and sogliole (sole) are served
alone or in Venetian versions of risotto.
Baccalà (salted cod) can be a very sophisticated, albeit cheap, second course.
Orata (dory) and branzino (bass) are considered to be the best fish for grilling.
Fish is not only available as a second course; it is often eaten as an antipasto (hors
d’oeuvre) and is an essential ingredient of the Venetian zuppa di pesce (fish soup).
Fegato alla veneziana means “liver Venetian style”. Veal liver and onion are sliced and
cooked in olive oil.
Polenta, described by British handbooks as a porridge of cornmeal, is served as a side dish,
either freshly prepared and served mainly with game birds, or girlled and served with nearly
everything but typically with seppie in nero (squid in ink).
WINES
Veneto, the region surrounding Venice, is known as one of the best wine-producing areas in
Italy. White Tocai di Lison and red Cabernet and Merlot di Pramaggiore should be regarded
as good choices. Other reputed Tocais, Cabernets and Merlots, together with white
Sauvignon and Refosco, come from the nearby region of Friuli.
In winter, you will also find many lesser known, sweetish wines in the bacari, such as
Recioto, Ramandolo or Zibibbo.
A sparkling wine called Prosecco is also produced in Veneto; it is very enjoyable, although
not really a champagne. If you want to try a high-quality chmpagne, ask for Ferrari Brut
(nothing to do with the sports cars.)
The classic liquer in the Veneto region is grappa, a colourless, flavourless liquid, made from
distilling wine press pomace.
A very fine dividing line separates a bacaro from an osteria; in the latter a selection of hot
dishes is usually on offer, and you can eat not only at the bar, but also sit at a table, if you
prefer. In general, osterie have longer opening hours than bacari.
It is worth bearing in mind that restaurants in Venice close early in the evening, especially
in winter, so you might experience some difficulty in finding something to eat after 9pm from
October to March.
Once you have found a place to eat, here are some of the typical dishes tha you are most
likely to come across.
“PRIMO” or FIRST COURSE
Bigoi (or bigoli) in salsa: a sort of spaghetti served with a sauce.
Risotto di mare: a rice dish with mixed seafood.
Risotto di cape: a rice dish with clams and shellfish
Risotto di trevigiana: a rice dish prepared using only rice, butter, onions, salt and strange red
chicory (radicchio) from Treviso – hence the name.
“SECONDO” or SECOND COURSE
Venice’s speciality is seafood. Although some restaurants may serve frozen fish, Venetion
seafood dishes should be prepared using fresh fish so, as fisherman do not work on Sunday,
restaurants are usually closed on Mondays.

squandered, families ruined and political intrigue, which was a severe threat to Serenissima

the XIX and XX centuries, Palazzo Dandolo was assigned to host various activities. In
particular, it became a Dance Hall and Theatre and has remained so to the present day.

S. Marco 1939, Venezia
The Hotel, which overlooks the Grand Canal, is in one of Venice's most charming areas.
The Hotel Monaco has majestic views of the Church of Santa Maria della Salute and the
island of San Giorgio and it is just next to Cà Giustinian the historical site of the Biennale.
From 1638 the building, originally belonging to the Dandolo family, hosted the first "Ridotto
Pubblico", a place where nobility and people from all walks of life, (adventurers, courtesans,
swindlers,
and
travellers)
retired
for
pleasure
and
intrigue.
Giacomo Casanova considered this place the ideal backdrop for his love conquests.
The recent restoration has managed to revive, with a contemporary feel, the atmosphere of
this historic building.
The term “Ridotto” (“Refuge”) has been familiar to Venetians in every sense of the word
since 1282. It once referred to a place where any “type” of person, from aristocrats to
adventurers and travellers could “seek refuge” or retire, for various reasons, as gambling, the
attentions of the courtesans, social and political relations.
In particular, tradition would have it that gambling started as an outdoor pursuit and,
between the columns of Marco and Todaro in St. Mark’s Square, it had gained such ground
that the Government of the City of Venice heartily welcomed the “retirement” of gamblers
behind closed doors.
