The Barbera grapes come from Franco Mondo’s oldest
vineyards, on the highest climbs of a south-east facing
hillside. Maceration on the skins for up to two weeks, then
fermented at 28-30 degrees with regular pumping over. The
wine is decanted from the vat then racked off repeatedly.
The wine matures in barrel for 7-8 months and in bottle for 6 months before
release.
