Our goal is to offer a selection of wines highlighting winemakers and producers whose
practices, standards, and juice compliment and relate to the true food produced under
this roof. In this list are wines representing an array of both Italian and international
offerings to intrigue the consumer and pair with the food seamlessly. Some of these
wines are from unusual regions or grapes but are sure to be exceptional selections:
simply refer to the glossary in the back of this book for a quick bit of information. You
may also look to the indications to the right of the wines listed for symbols
representing:

-An ancient technique for producing wine dating back to 3000 BC, white grapes are left in contact with
their skins for an extended period of time resulting in a fuller, more tannic, & pleasantly unusual wine
with an amber hue. While this wine, modernly known as ‘orange wine’, took on great popularity in the
Friuli region of Italy where producers such as Josko Gravner and Radikon embraced the historic style, it
has now spread throughout the world’s wine producing regions. This organic vineyard north of Rome is
lovingly tended by a small group of Cistercian nuns. With the assistance of noted ‘natural’ winemaker
Giampiero Bea, they produce an intriguing and beautifully peculiar wine bursting with notes of orange
rind, saffron, cherry, dried mango, and Crenshaw melon with a firm mineral backbone & spritely acidity.
A long lightly tannic finish with a hint of salty savoriness allows this wine even to pair with roasted meats
and game.

pairing wine.

-An international varietal has found a home nestled between the Austrian border to the north and the Dolomiti
Mountains to the south in one of the northernmost regions of Italy. A cool climate and high elevation allows for a
beautiful development of gravel-like minerality with an elegant balance of dried cranberry, red currant, & mulled
cherry.

-Produced with the delicate touch of a woman. Nicoletta chooses to make her wines without manipulation,
allowing for true harmonization of the grapes and the land of Dogliani. Dolcetto, a grape still unfamiliar to
most, has not received the recognition of its neighbors Barbara & Nebbiolo, but has the capability to
produce a wine of structure and finesse. Notes of fresh cherry pie and dried sage, complimented by a fine
tannin and approachable acidity.
