Quando ci si interroga sullo stato corrente della nostra vita è come se si scattasse un’istantanea di un ineffabile fascio di luce. La condizione attuale “il corredo di pensieri, valori ed aspettative che ci rappresentano hic et nunc” non è mai la semplice risultante delle azioni e delle scelte che razionalmente abbiamo intrapreso. Chi mai – in una strana proiezione extracorporea – non si è immaginato nella landa desolata della “Persistenza della memoria” di Salvador Dalì, farsi largo tra orologi molli, con le scarpe impolverate e la gola arsa? Un luogo dove le leggi cosmiche sono scardinate ed affatto immutabili. E tali son le leggi dello spirito e del cuore. Dove tempo e spazio si intrecciano liberamente e crollano le certezze granitiche di una vita convenzionale preconfezionata. Dove niente è come si è pensato o desiderato e non ci sono nozioni o logiche che scongiurino la metamorfosi iniziatica della nostra coscienza. Già perché di fronte alle grandi azioni ed ai fatti ragguardevoli della nostra vita siamo come straordinariamente incoscienti. Guidati da una legge autarchica che afferisce solo a se stessa, da un istinto primordiale che reclama tutto a sé e ad un tempo elegge la sua forza sovrana ed assoluta. Credere ed investire in se stessi. Essere un’opera d’arte, farsi capolavoro. Proclamare ed ammettere infine che abbiamo bisogno di una direzione, ma non di un senso. Che non serve ridurre il tutto in parti… e che la logica ha una funzione operativa ed evolutiva, quanto la conoscenza razionale. Ma non un valore indipendente ed incondizionato. Due millenni e passa di pensiero greco-cristiano: dall’idea platonica “ovvero il pensiero quale perfezione e compimento spirituale” alla conciliazione di libertà e necessità in Sant’Agostino e fino alla Teoria della Relatività di Einstein per comprendere quanto il prodigio dell’esistenza sia irriducibile, inafferrabile, assurdo. Ed il respiro un soffio, una scintilla, un’epifania che si genera e muore e che costante si rinnova. In questo naufragio non ci è dato di vedere d’un tratto la verità, e nemmeno la giustizia. Ma si deve anzitutto credere, ovvero tendere a ciò che più loro si avvicina. E mai dimenticare quanto vivere sia esercitare una forza ed un pensiero: “E così Narciso andò presso le acque di un lago per specchiarsi e poi fece perdere le sue tracce… E così il lago, interrogato su dove fosse andato Narciso, rispose: ‘Non lo so invero, non fu lui a specchiarsi su di me, ma io su di lui’. Our present condition – a pack of thoughts, values, and expectations that represent the here and now – is never simply the result of our rational actions and decisions. Who has never – in a strange extracorporeal projection – imagined themselves in the wasteland of Dali’s The Persistence of Memory making their way through softened watches, with dusty shoes and throat afire? A place where cosmic laws are immutable and utterly unhinged. 9 And such are the laws of the spirit and heart. Where time and space intertwine freely and crumble the granite certainties of a conventional pre-packaged life. Where nothing is as it was expected or desired, and there is no logic or notion to avert the initiate’s metamorphosis of consciousness. Yes, because in the face of the great deeds and remarkable facts of our lives we are extraordinarily irresponsible. Led by a law that is self-sufficient only to itself, a primal instinct calls everything to itself and at the same time considers its strength supreme and absolute. Believe and invest in yourself. Be a work of art, make yourself into a masterpiece. Shout out and finally admit that you need a direction, but not just one way. You do not need to break everything down into its parts... and logic does have an operational and evolutionary function as rational knowledge. But it’s not an independent and unconditional value. Two millennia and more of Greco-Christian thought; from the Platonic idea – or the idea that perfection is spiritual fulfilment – to the reconciliation of freedom and necessity in St. Augustine and up to the Theory of Relativity by Einstein to understand how the miracle of existence is irreducible, elusive, absurd. And breathing a sigh, a spark, an epiphany that is generated and dies and that constantly renews itself. In this wreck we cannot see the truth all of a sudden, nor justice. But one must above all have belief or push towards that which leads to it. And never forget how much living is to act and to think: – And so Narcissus went to the waters of a lake to see his reflection and then covered up his tracks... Sapori scontati che pur costituendo parte fondamentale di quel forziere della memoria che ognuno di noi si porta dietro, troppe volte costituisco un retaggio negativo che limita la nostra capacità e voglia di conoscenza. “Chiudi gli occhi e lasciati guidare dal gusto” – mi ha detto Alessandro mentre una brezza dispettosa ci obbligava a stringerci di più nelle rispettive giacche. Perché l’esperienza gastronomica che ognuno di noi può fare sedendosi al tavolo del ristorante della frutta che identifica ormai da anni questa realtà dell’incantevole borgo di Anghiari - che nella luce crepuscolare di questo scorcio di maggio sembra ancora più maestoso - è un viaggio sorprendente dentro il sapore autentico di ciascuna portata. Un viaggio che può cominciare soltanto nel momento in cui si è pronti a lasciarsi alle spalle archetipi precostituiti che limitano le nostre capacità percettive. E Alessandro, che gestisce “Cocomerò” assieme alla moglie Angelica – che ogni volta ci regala un sorriso generoso mentre fa capolino da dietro il bancone del chiosco dietro al quale da vita alle sue creazioni – di schemi ne ha fatti saltare fin troppi. Rivoluzionando il modo di fare ristorazione. Partendo indiscutibilmente dalla cucina del cuore: quella dei propri ricordi d’infanzia– legati a nonna Elisa che di fronte alle richieste del nipote, sfornava per merenda pane con olio extravergine e uva, la stessa che teneva appesa al soffitto e che veniva messa a seccare per fare il vinsanto, oppure con ricotta e fichi o formaggio e pere ma arricchendo ogni creazione col proprio personalissimo tocco. “L’obiettivo – mi dice Alessandro - non è inventare qualcosa di Forget conventional approaches. A journey that can begin only when you are ready to leave behind the preconceived archetypes that limit our perceptual capacities. And Alessandro, who runs Cocomerò with his wife Angelica – who gives us a generous smile every time she peeps out from behind the counter of the kiosk behind which gives she gives life to her creations – has launched a lot of schemes. Revolutionizing the way we do catering. Starting unquestionably from the cookery of the heart: that of childhood memories bound up with grandmother Elisa who responding to her nephew’s demands, churned out for a snack bread with olive oil and grapes, the same grapes that hung from the ceiling and were put out to dry to make vin santo, or with ricotta and figs or pears and cheese – and enriching each creation with her own personal touch. “The aim” – Alessandro tells me – “is not to invent something ome può nascere una rivoluzione? Alleggerendo, rinfrescando e rinnovando sapori e aromi che fanno parte della vita quotidiana di ognuno di noi in combinazioni assolutamente inusuali e intriganti”. Non è vero del resto che la frutta entra a far parte della nostra vita già dai primi mesi di vita per accompagnarci poi nel restante percorso che ognuno di noi compie? E proprio l’arrivo della bella stagione porta con sé inevitabilmente la voglia di cibi freschi, leggeri e salutari che sfruttino al meglio le infinite proprietà nutrizionali della migliore amica della nostra salute che fornisce all’ organismo vitamine, acqua, sali minerali e fibre di cui è particolarmente ricca. “Senza che questo significhi rinunciare al gusto, al colore e principalmente alla soddisfazione del palato con piatti bilanciati, eleganti e coloratissimi oltre che dal gusto ricercato e dal rilevante valore nutrizionale” dice la Dott.ssa Monica Redenti, biologa nutrizionista. Prendiamo ad esempio il “Carpaccio di manzo alle fragole ed aceto balsamico” – che Alessandro ci serve assieme a un grande classico del territorio Montalcinese, il “Rosso di Montalcino”, delle Tenute Castello Banfi che unisce l’eleganza e la solidità tipici del suo fratello più blasonato, il Brunello, ad una immediatezza e freschezza che lo rendono un vino versatile. Sappiamo che la carne rossa è povera di grassi ma ricca di proteine, ferro e vitamina B12 mentre le fragole sono un vero e proprio siero di giovinezza grazie al loro altissimo potere antiossidante e al fatto di essere ricche di vitamina C, di calcio, ferro e magnesio. Questo appetitoso frutto inoltre è particolarmente indicato nella lotta al colesterolo ed alle malattie cardiovascolari. Oppure il “Cous cous al melone”: un piatto gustoso ma dal basso livello di zuccheri e grassi saturi. And the arrival of summer inevitably brings with it the desire for fresh, light and healthy things that make the most of the endless nutritional properties of this best friend of our health that provides the body with vitamins, water, minerals and the fibre in which is particularly rich. “This doesn’t mean that we have to sacrifice taste, colour, and the pleasures of the palate when we have balanced, elegant and colourful dishes of refined taste and considerable nutritional value,” as Dr. Monica Redenti, biological nutritionist puts it. Ma la proposta gastronomica di Alessandro e Angelica - che da sempre scelgono con estrema attenzione le materie prime per rendere buono e bello quello che una volta faceva solo bene – è sicuramente una proposta culinaria completa che ha alle spalle una storia che ha nel cuore il suo custode. “Potrei dire di aver dedicato a nonna Elisa “Antipasto Lupo” – dice Alessandro che ha così rispolverato sapori e colori che fanno parte della sua infanzia con la bruschetta con cocomero fresco, con fichi secchi caprino e glassa di aceto balsamico – di loro produzione oppure con arance sedano e olive nere, con uva pizzutella e olio nuovo. Mentre in“Antipasto Angelica” potremo assaggiare le note di testa di due diverse specie di pecorino - di cui uno di grotta – abbinato alle note zuccherine della pera williams e a quelle agrodolci delle marmellate, di cipolla di Tropea a arance e fichi e pomodori verdi, fatte da Angelica. We know that this red meat is low in fat but high in protein, iron and vitamin B12 while strawberries are a true serum of youth due to their high antioxidant power and the fact that they are rich in vitamin C, calcium, iron and magnesium. Eating it – Dr. Redenti tells us – also helps us assimilate vitamin A, which fights cellular ageing and vitamin B which acts on mood, improves the eyesight and strengthens bones and teeth but it also contains calcium, phosphorus, magnesium and potassium, all of which makes this an excellent supplement in hot weather.” But Alessandro and Angelica’s gastronomic offering – and they have always chosen their raw ingredients with great care to make both wholesome and attractive something that previously was just good for you – is definitely a complete culinary proposition that has a history that lies deep in the heart of its custodian. “I could say that I dedicate Antipasto Lupo to my grandmother Elisa” – Alessandro tells me, dusting off the flavours and colours that were part of his childhood, with the bruschetta with fresh watermelon, dried figs with goat cheese and balsamic vinegar glaze – that they make themselves – or oranges with celery and black olives, grapes and new Pizzutella oil. While in Antipasto Angelica we can taste the notes of two different kinds of cheese – one cave-matured – combined with the sugary notes tel. +39 075 372 17 79 Valley Life 13 of Williams pear and bittersweet jams of Tropea onion, orange, figs and green tomatoes made by Angelica. For lovers of nuts, Barley with apples, nuts and Fontina is absolutely indispensable and it will be even more delicious when enjoyed while sipping a Greco di Tufo, a fine and harmonious wine, with delicate hints of yeast. And as the evening fades slowly and stretches its silent shadows to the majestic Apennines before our eyes, Alessandro and Angelica leave us with a dessert that joins our souls in unison: paired with a Merlot from the Colli Trevigiani, the palate is tempted by fresh notes of wild berry cheesecake and pannacotta with coconut and lime, with hints of sugary baked pear in red wine with cream and ice cream with warm berries that we try along with ice cream and strawberries with cooked fruit must. Il progresso inarrestabile in tutti i settori della ricerca, dalla chimica alla psicologia, ha rafforzato la convinzione che comprendere le leggi naturali avrebbe consentito all’uomo il controllo pressoché assoluto sulla vita. La natura, però, non si sottomette a nessun ritmo creato artificialmente. E di tanto in tanto i quattro elementi – terra, acqua, fuoco ed aria – si liberano con forza incontrollata dal giogo dell’uomo (basta citare i numerosi terremoti, uragani o inondazioni). Le problematiche che ci troviamo oggi ad affrontare rispecchiano in toto l’inquietudine dell’intelletto umano e della brama di dominio sulla natura; lo stress da ritmi accelerati è onnipresente e ci ha fatto perdere l’armonia con noi stessi, senza che ce ne accorgessimo. In tutta questa frenesia, come possiamo fare chiarezza e tornare al benessere originario? Ne parliamo con Swami Virananda, insegnante di yoga, metodo Satyananda. “Lo yoga è entrato nella mia vita – ci racconta – per caso, come spesso accade per le cose più belle. Unstoppable progress in all areas of research, from chemistry to psychology, has reinforced the belief that understanding the laws of nature will allow man almost total control over life. Nature, however, does not submit to any artificially created rhythm. And occasionally the four elements – earth, water, fire and air – free themselves from man’s yoke with uncontrollable force (just think of the numerous earthquakes, hurricanes or floods that occur). The problems that we face today fully reflect the restlessness of the human intellect and its lust for dominion over nature; the stress of accelerated rhythms is ubiquitous and because of this we lack inner harmony, without our even noticing. In all this frenzy, how can we achieve clarity and return to our original well-being? We spoke with Swami Virananda, a yoga teacher of the Satyananda school. “Yoga came into my life” – he tells us – “by chance, as often happens with the most beautiful things. I had just started University and one night, walking the streets of Milan with a friend, disturbed by the difficulty of managing work and study, I noticed, in the window of a bookshop, YOGA by Carlo Patrian, the pioneer of yoga in Italy. Developing the teachings of Shivananada who – it should be pointed out – was also a doctor, the Satyananda method involves the introduction of medical and scientific aspects into Yoga and so is particularly useful for finding the solution to certain diseases such as exhaustion, anxiety, stress and paranoia which are real “cancers” of modern society. A school of Yoga and of Life, the first Satyananda Yoga Centre was founded in Milan in 1986; here anyone can learn the age-old practice of Hatha Yoga, in courses for beginner, intermediate or advanced students. In poco tempo il numero dei soci è passato da quattro a circa 50, una conferma di come l’arte fotografica trovi un largo consenso anche nella nostra zona. Tra i soci troviamo giovanissimi studenti, laureandi, impiegati, artigiani, liberi professionisti e pensionati; un gruppo, quindi, veramente eterogeneo di persone legate tra loro dalla grande passione per la fotografia. Un gruppo sia di appassionati che scattano da decenni, che giovani alle prese con la loro prima macchina fotografica. Ognuno con la propria sensibilità, con il proprio occhio fotografico e con i propri interessi. Il “Fotoclub Sansepolcro” cresce così con il contributo dell’entusiasmo e dell’ energia di tutte quelle persone che, spinte dal desiderio di raccontare attraverso le immagini, vogliono condividere le proprie esperienze e crescere fotograficamente per acquisire maturità fotografica ed ottenere immagini qualitativamente superiori. Among the members there are young students, graduates, employees, artisans, professionals and retirees; a really diverse group of people then, but bound together by their passion for photography. A real group of enthusiasts some of whom have been snapping away for decades while others are youngsters struggling with their first camera. Each with their own sensibility, photographer’s eye and own interests. The Fotoclub Sansepolcro grows with the support and enthusiasm and energy of all those people who, driven by the desire to tell a story through their pictures, want to share their experiences and develop photographically, gaining maturity and producing images of ever-higher quality. Today, of course, thanks to digital technology, photography has become more and more accessible for everyone and anyone now, if they are attracted to this world, can buy a digital camera and start shooting. This, while on the one hand has surely encouraged the spread of photographic practice, has also significantly lowered the level and quality of images. With the intent to promote the art of photography in our valley, every year the Fotoclub Sansepolcro organizes courses, meetings and discussions with photographers, photographic excursions and a collective show where members display their pictures, tackling a different theme every year. This year, from June 14 to June 26 in the Sala of the Palazzo Pretorio in Sansepolcro, you can see the latest work from the club, inspired this time by the complex and vibrant world of the passions. The collective photo show 2014 entitled Di viva passione (“With Real Passion”) presents about 45 shots taken by 15 different photographers, a journey of research and analysis for a theme full of emotion. In our current difficult socio-economic conditions, in which the rationality of the human being fights battles every day, we cannot and must not forget that most alive part of ourselves that resides in our passions. That part that disconnects itself from the ultra-rational, that recognizes that the energy of life is highly irrational and instinctive and that it can lead us to feel strong emotions. The dimension that links us inextricably to our passions. In this new collection of images passion is displayed in various of its aspects: shared and sometimes overwhelming, sometimes intimately experienced, sometimes controlled only with difficulty. Siglati con una stretta di mano e confermati dalla parola fondata sulla rispettabilità delle persone coinvolte. Una realtà di campagna che rafforza la propria identità assecondando i ritmi della natura che cambiano al volger delle stagioni: una chiesa, un locale che funge da bar e generi alimentari e un vecchio edificio scolastico utilizzato per scopi diversi e, per finire, il campo sportivo completano il quadro di questa frazione storica di Sansepolcro che, assieme a Trebbio e Gricignano, gode geograficamente di una posizione di grande pregio naturalistico che ne fa una sorta di terrazza naturale sulla Valtiberina. Da alcuni anni ormai, la locale Proloco, affiancata dall’Associazione “Amici della Musica”, ha saputo dare slancio e nuova vita a tale realtà con una serie di concerti, eventi e spettacoli che accendono i riflettori sui giovani talenti o più note realtà artistiche. Ultimamente poi ci si è riempiti la bocca a sproposito di questi temi e ognuno ha sviluppato il suo pensiero risolutore o la sua ricetta capace di trasformare il mondo. Il cambiamento è qualcosa che gli uomini hanno sempre affrontato con sofferenza. ho knows how many times have we heard talk of revolution, the future and hope. Recently mouths have been full of these terms and everyone has come up with their new thinking or formula capable of transforming the world. Change is something that men have always endured with difficulty. La componente animale ancora ben salda nel sottostrato della nostra materia cerebrale, ha prodotto, per puro spirito di sopravvivenza, riluttanza ad ogni forma di cambiamento e spesso l’essere umano si è macchiato anche di colpe orribili proprio per questa ragione nel timore del nuovo. Purtroppo, in questi tempi così complicati da una crisi che sembra non volerne sapere affatto di andarsene, chi sconta maggiormente lo scotto della depressione economica che si è generata, sono soprattutto i giovani. Quei bistrattati ragazzi che al danno dell’essere stati dimenticati dalla società, devono anche accollarsi la beffa di essere additati come sfaticati e indolenti. Purtroppo sappiamo tutti benissimo che, dopo il calcio, il parlar male degli altri è lo sport più praticato in questo Paese. Screditando gli altri sentiamo meno il peso della nostra nullità. Eppure, nonostante tutto, qualcosa si sta muovendo e lo fa dal basso a livello della terra. Proprio dalla terra i giovani stanno ripartendo, mettendosi alla prova e utilizzando l’apertura mentale del loro tempo. Lo fanno confrontandosi con gli altri “nuovi pionieri” dei posti più impensati del pianeta. Il tutto in tempo reale, dato che oggi la tecnologia lo permette. Succede in Italia, dove alcune amministrazioni illuminate hanno messo a disposizione dei giovani, appezzamenti di terreno coltivabile in disuso da tempo. Succede in Umbria, a Civitella del Lago di Terni, dove si tengono addirittura convegni su questi temi e i giovani agricoltori come i ragazzi dell’Azienda Janas di Porano, testimoniano la realtà del loro imprendere in modo sostenibile nel rispetto della qualità dei prodotti e della vita. Di fatto è stupendamente bello quando un ragazzo con orgoglio afferma che il suo mestiere è fare il contadino. Con ogni probabilità la ragazza che vi vende verdure saporitissime nei piccoli Mercati della Terra è pure laureata. È una scelta di vita importante ma è una scelta di vita che ha ricadute sulla salute e la società assolutamente più positive di quelle che potrebbe fornirvi un consulente finanziario. Slow Food si è recentemente occupata di una realtà straordinaria del territorio del nord dell’Umbria, Il Mulino dei Renzetti. Un luogo disperso non soltanto nello spazio ma addirittura nel tempo. Eppure questo luogo che portava a compimento il frutto del lavoro dei contadini montani del primo Appennino appoggiato all’Alta Valle del Tevere, non ha mai tradito il suo impegno con la dignità di quel mestiere e ha operato ininterrottamente per secoli. È qui che è accaduto un altro dei miracoli dei giovani e Stefano Piergentili, ventisei anni, ha deciso di proseguire l’attività che era dei suoi avi con lo stesso amore che suo padre Ermanno e suo nonno Nino hanno messo prima di lui, combattendo sempre tenacemente contro la fine del Mulino dei Renzetti. Un luogo della memoria straordinario, scioccamente dimenticato dagli amministratori del suo Comune. Stefano ha progetti sensati, realistici, ragionati e sapere che sta imprendendo con un mulino ad acqua del XV secolo nell’era di internet, come sentirlo affermare con orgoglio che lui di mestiere fa il mugnaio, è qualcosa che fa bene all’anima di tutti. Slow Food si è impegnata a non lasciare solo Stefano e la sua risolutezza anche perché, al biglietto di sola andata per Londra, lui ha preferito la certezza della fatica di un impegno anacronistico ma orgogliosamente legato all’altezza di un sentimento positivo di appartenenza alla sua terra. Quella stessa terra da cui ripartirà una rivoluzione costruttiva. Noi sosteniamo Stefano e tutti i ragazzi come lui perché anche se non sembra, siamo certi che il futuro del mondo è il ritorno alla terra. Youngsters are sharing, testing themselves and employing the open-mindedness of their time of life on the soil itself. They do this by meeting the other new pioneers in the most unlikely places on the planet. All in real time as today’s technology permits. It’s happening in Italy, where some enlightened local authorities 31 have made disused plots of farmland available to young people. It’s happening in Umbria in Civitella del Lago, Terni, where there are even conferences on these subjects held and the young farmers of the Azienda Janas of Porano testify to the reality of sustainable enterprise while respecting the quality of both produce and life. In fact it is amazingly nice when a youngster proudly says that their job is farming. In all likelihood, the girl who sells tasty vegetables in small “Earth Markets” is also a graduate. It is an important lifestyle choice, but a lifestyle choice that has consequences for social health definitely more positive than those that produce a financial advisor. Slow Food has recently taken over an enterprise in the territory of Northern Umbria, The Renzetti Mill. A place that extends not only in space but also in time. Yet this place that brought to fruition the result of the work of the peasants of the Apennines of the Upper Tiber Valley has never betrayed its commitment to the dignity of the miller’s profession and has been in continuous operation for centuries. This is where another youthful miracle occurred and Stefano Piergentili, twenty-six, decided to carry on the business of his ancestors who had the same love as his father Ermanno and grandfather Nino had before him, always tenaciously fighting against the closure of the Renzetti Mill. Opened on 12 April, Hair Corner is Gabriele Lanzi’s new hairdressing salon – for which architect Davide Gennaioli led the renovation work – in nearby Pieve Santo Stefano. We meet Gabriele one day in early June that anticipates the summer in a superb manner. The small square of Pieve is flooded with sunshine. VALLEY LIFE: Allora Giuseppe, cosa possiamo dire in termini generali sul test che abbiamo effettuato insieme… quale il suo significato e quale la sua utilità? ACTIVE LAB: Il test è uno strumento utilissimo in mano agli allenatori per avere una serie di informazioni dettagliate sullo stato di forma del proprio atleta. Il test che hai effettuato tu è diretto e preciso per calcolare i parametri di allenamento e si basa sulla misurazione del lattato ematico a diverse velocità e sull’analisi del tracciato cardiaco, al fine di valutare la soglia critica di lavoro. VALLEY LIFE: Giuseppe, what can we say in general terms about the test that we did together... what does it mean and what is it useful for? ACTIVE LAB: The test is a very useful tool in the hands of coaches who can get a detailed information set on an athlete’s fitness. The test that you’ve taken is a direct and precise way of calculating training parameters and is based on the measurement of blood lactate at different speeds and on the analysis of your cardiac trace to evaluate the critical threshold of effort. VALLEY LIFE: E’ un test adatto solo ai top runners o può dare delle indicazioni utili anche agli amatori meno agguerriti? ACTIVE LAB: Bhè, qui tocchi un argomento un po delicato. Io da trainer coscienzioso lo proporrei solo a runners esperti o a soggetti già adattati da un po’ di tempo alla corsa. Un test necessita anche di abitudine mentale al lavoro massimale, e purtroppo il runner novizio spesso ne è carente. Fatto sta che se ti vuoi allenare in VALLEY LIFE: Is it a test suitable only for top runners or can it provide useful information for less competitive amateurs too? ACTIVE LAB: Well, this touches on a topic that is a bit delicate. As a conscientious trainer I would only suggest it for expert runners or those who’ve already been running for a while. A test requires the mental habit of maximum effort and unfortunately the novice runner often lacks that. VALLEY LIFE: Quali sono i dati salienti che possiamo ricavare dal test appena effettuato? ACTIVE LAB: Soglia aerobica: rappresenta il livello di intensità al quale il meccanismo metabolico maggiormente coinvolto è quello aerobico. Il metabolismo glicolitico è, invece, scarsamente coinvolto. Tale soglia viene convenzionalmente fissata a 2 mmol/l di lattato ematico a patto che questi sia in steady state. Soglia Anaerobica: rappresenta il livello di intensità al quale il meccanismo metabolico glicolitico è già discretamente coinvolto ma ancora in steady state. Rappresenta, di fatto, il livello dal quale in poi al crescere dell’intensità di esercizio si assiste ad un repentino aumento della quantità di lattato prodotto che non viene totalmente smaltito. Si assiste quindi ad un suo accumulo con conseguente progressiva riduzione dell’intensità di esercizio (fino anche alla sua interruzione). Velocità Limite: massima velocità espressa durante il test incrementale per la determinazione della potenza aerobica. Coincide con l’interruzione del test stesso ed è correlata alla potenza aerobica attuale. Tempo e distanza limite: parametri rilevati al momento dell’interruzione del test incrementale. FC max: frequenza cardiaca massima raggiunta e misurata durante il test incrementale. Rappresenta la frequenza massima attuale raggiungibile dal soggetto. VAM: Velocità Aerobica Massima, è la velocità minima alla quale si innesca il massimo consumo di ossigeno. E’ il limite in cui il metabolismo aerobico è sollecitato al massimo in condizioni standard. www.valleylife.it Il test del lattato con lo specialista Mosè Mondonico VALLEY LIFE: What are the most important pieces of data that can be drawn from the test I just took? ACTIVE LAB: Aerobic threshold: this represents the level of intensity at which the metabolic mechanism is more involved than the aerobic one. The glycolytic metabolism is, however, scarcely involved here. This threshold is conventionally fixed at 2 mmol/l of blood lactate provided that this is in a steady state. Anaerobic Threshold: this represents the intensity level at which the glycolytic metabolic mechanism is already quite involved but also in a steady state. It represents in fact, the level from which exercise intensity develops upward where we are witnessing a sudden increase in the amount of lactate produced and not totally disposed of. Its accumulation is increased resulting in a gradual reduction in the intensity of exercise (even up to stopping). Speed Limit: the maximum speed expressed during the incremental test for the determination of aerobic strength. This coincides with the termination of the test and is related to your current aerobic strength. ACTIVE LAB: Sicuramente i risultati parlano da soli, ma io qualche consiglio te lo darei. Dal test che hai effettuato si vede bene come ad un certo punto si impenna sia la produzione di lattato ematico sia la frequenza cardiaca - che rappresenta 46 la tua velocità critica. Quello è il momento in cui cominci ad avere difficoltà a gestire la fatica; quindi un potenziale ostacolo in gara. Hai un ottimo passo ma, quando si sale oltre la velocità critica, fai ovviamente più fatica. Devo dire in tua difesa che quando hai effettuato il test non eri riposato - se ti ricordi bene quali erano state le mie indicazioni (riposo). In ogni caso dai nostri dati possiamo sviluppare un piano metodologico di allenamento per aumentare le performance agonistiche. Ma di questo te ne parlerò in privato:-) VALLEY LIFE: Come si devono organizzare gli allenamenti? Che cosa sono la soglia aerobica e quella anaerobica? Come utilizzarle? ACTIVE LAB: Il discorso dell’organizzazione degli allenamenti è lungo e complesso. Ed anche molto soggettivo. Sicuramente il test è un valido aiuto per l’organizzazione di un piano razionale di lavoro. Come ho spiegato in precedenza, la soglia aerobica e la soglia anaerobica sono due parametri di allenamento che si estrapolano dall’analisi dei dati e servono per calibrare il programma di allenamento. ACTIVE LAB: For sure the results speak for themselves, but I’ll give you some advice. From the tests that you have done it can be seen that at a certain point the production of lactate and the heart rate both zoom up – that is your critical speed. That’s the moment you start to have difficulty in managing fatigue, a potential obstacle in racing. You have a good pace but when it rises above the critical speed, of course, you’re making more effort. I have to say in your defence that you’ve taken the test when you weren’t rested – if you remember that had been my advice (to rest). Anyway with our data we can develop a plan to improve the training methodology and your competitive performance. But this I will tell you in private. :-) VALLEY LIFE: How should you organize your workouts? What are the aerobic and anaerobic thresholds? How can you use them? ACTIVE LAB: The argument about the organization of training is a long and complex one. And also very subjective. For sure the test is a valuable aid for the organization of a rational plan of work. As I explained earlier, aerobic and anaerobic threshold training are two parameters that are extrapolated from the data and are used to calibrate the training program. (…) Essi rappresentano uno dei più begli inni che i nostri padri abbiano mai cantato alla gloria del Salvatore, che hanno amato perdutamente (…)». Le parole di Louis Charbonneau-Lassay, contenute nel monumentale Il bestiario del Cristo (Edizioni Arkeios, Roma, 1994), esprimono bene l’importanza riconosciuta ai simboli animali e ci permettono di introdurre la figura centrale dell’agnello. Se nell’Antico Testamento rappresenta il simbolo sacrificale per eccellenza (Abramo sacrifica l’animale sostituendolo al figlio Isacco), nel Cristianesimo il Salvatore diviene egli stesso agnello, che si sacrificherà per la salvezza dell’umanità. Ma l’agnello simboleggia anche il Cristo risorto. La rappresentazione dell’agnello trionfante, portatore della croce, non a caso è tra le più diffuse e tale incisione su pietra è disseminata in tutti i centri della Valtiberina. Solitamente è raffigurato con la zampa in movimento e con la testa rivolta all’indietro, a significare che, conoscendo la strada da seguire, può rivolgere lo sguardo al gregge, che guida mostrando il vessillo. Così vediamo simboleggiato l’agnello con la croce nell’incisione su pietra ad Anghiari in Via Garibaldi, mentre lo troviamo raffigurato con la bandiera in Piazza Matteotti a Città di Castello. L’agnello è anche simbolo di luce ed è con questo significato che è posto sopra l’ingresso delle chiese. Nell’Apocalisse di Giovanni (21, 22-26) è scritto che la Gerusalemme celeste «non ha bisogno del sole né della luna che risplendano per essa; perché la gloria di Dio l’ha illuminata e la sua lampada è l’agnello (…) e le sue porte non saranno chiuse di giorno; perché non ci sarà notte colà». Dalla stessa Apocalisse (22,1) apprendiamo che alla fine dei tempi il Salvatore siederà sul «trono di Dio e dell’Agnello». Come evidenzia Maurice Cocagnac in I simboli biblici (Edizioni Dehoniane, Bologna, 1994) la docilità dell’agnello per i profeti è simbolo della perfetta obbedienza a Dio e il suo sangue ha il potere di purificare gli uomini. L’Agnus Dei compare in alcuni sigilli templari: «Dopo aver sviscerato il tortuoso percorso del sigillo con l’Agnus Dei attraverso le province templari – scrive Loredana Imperio in Sigilli Templari (Ed. But the lamb also symbolizes the risen Christ. The triumphant representation of the lamb as bearer of the cross, not surprisingly, is among the most widespread and, engraved on stone, it is found scattered across all the population centres of the Tiber Valley. It is usually depicted with the foot raised in movement with its head turned backwards, meaning that, knowing the way to go, it can turn its gaze to the flock it leads by showing the banner. Thus we see the lamb with the cross symbolized in an engraving on stone in Anghiari on Corso Garibaldi, while we find him depicted with the flag in Piazza Matteotti in Città di Castello. Si riaffermava il possibile progresso delle genti realizzabile con ragionevoli principi di pace e solidarietà. I primi anni dell’800 erano stati ancora gli anni del potere feudale esercitato da un marchesato ferreo ed implacabile; qui si governava applicando la giustizia sbrigativamente sulle povere popolazioni, col carcere duro e le impiccagioni; ed avanti così con alterne vicende tra il Granducato di Toscana e lo Stato Pontificio fino all’unità d’Italia nel 1861. Dopo cento anni, nei primi del novecento, che cambiamento si stava auspicando! … dall’ oppressione, discordia e suprema violenza della forca alla civiltà, concordia, vita e salute. Impossibile non notare, osservando la sala, come il tocco femminile abbia preso il sopravvento. Alessandro ci racconta: “Praticamente io non ho fatto altro che eseguire gli ordini di mia sorella...” Subito spiegata, quindi, la scelta del colore rosa tenue delle pareti, che unito al bianco e argento, dona al locale un effetto rilassante rendendolo luminoso ed accogliente. Il tutto accompagnato dalla festa di luci delle vetrate illuminate a led. Una vera e propria estetica della tavola, che ci prepara ad un viaggio culinario sorprendente ed affascinante bagnato, come entrée, da un Valdo Origine, brut dal gusto allegro e delicato, ottimo aperitivo. Una menzione particolare va appunto a questa nuova trovata del patron Dini che ha voluto incoronare il suo locale con una pizzeria scenografica all’aperto che, in posizione privilegiata, costituisce una sorta di osservatorio fortunato sulla catena appenninica ai piedi di Anghiari. Una proposta gastronomica che va ad affiancare le altre due proposte, di terra e di mare, che costituiscono l’ossatura del ristorante dove impera l’estro dello chef Gianluca Mingarini. Con cui ci lasciamo tentare inizialmente dalle proposte del menù di terra che Sefedin - che si prende cura di noi in sala - abbina ad un rosso Vino nobile “San Salvagio” (€20.00): un Montepulciano prodotto da uve di prugnolo gentile, invecchiato per almeno due anni in botti di rovere e sottoposto ad affinamento in bottiglia per circa 6 mesi, dal gusto e dall’aroma intensi e complessi. E per concludere degnamente, non lasciatevi sfuggire la tentazione di provare la“Bavarese di vaniglia su letto di fragole” con piccolo budino di arancia al profumo di cannella (4.00) o la“Frolla di crema all’arancio, ganache* al cioccolato e riduzione di ciliegie, albicocche e lime” guarnito con aceto balsamico (€4.00). *Tipica preparazione di origine francese preparata con una miscela di panna calda e cioccolato a pezzetti sciolto e amalgamato lentamente, si narra che la ganache sia stata creata accidentalmente da un apprendista pasticcere che rovesciò del latte caldo dentro ad una ciotola contenente della cioccolata in tavolette. Il capo pasticcere vedendo l’accaduto, andò su tutte le furie poiché con quell’incidente il cioccolato si era irrimediabilmente rovinato e diede dell’imbecille – “ganache”, per l’appunto!- al ragazzo che tentò di rimediare al danno miscelando gli ingredienti e creando così l’eccellente crema ganache. Ho sempre organizzato verticali curando ogni singolo dettaglio: la scelta dei millesimi, la successione degli stessi in una o più batterie di servizio, la correttezza e l’uniformità delle temperature dei vini. Questa volta tutto è nato un po’ per caso, da un veloce puorparler tra amici, scoprendo che ognuno di noi aveva in cantina un’annata diversa dagli altri di Lynch Bages, uno dei più grandi tagli bordolesi a base cabernet sauvignon al mondo. Non potevano che essere i magnifici piatti del Ristorante San Giorgio ad Umbertide il perfetto abbinamento alla degustazione. vertical tasting is the best way to get to know a wine in depth, over the different years, with all the climatic variations and changes of winemaking style. I have always held vertical tastings, with attention to every single detail: the choice of labels, the progression through the different servings, the best and consistent serving temperature etc.. This time it all started a little by chance, a quick pourparler with friends, discovering that each of us had a different Lynch Bages vintage in their cellar, this being one of the greatest Bordeaux blends based on Cabernet Sauvignon in the world. And only the wonderful dishes at Ristorante San Giorgio in Umbertide would form the perfect match to the tasting. Lynch Bages 2003: opulento e sexy. Pan di spezie, rovere dolce, strati di confetture, terra smossa, fumé, tutto in un quadro di dolce maturità ed esuberanza alcolica. In bocca è glicerico, poco fresco ed ha un tannino non perfettamente maturo, da annata calda. Per l’equilibrio manca uno squillo di acidità e sapidità. Alla cieca avrei fatto una gran fatica a non dire “CaliforniaCabernet Sauvignon”. Ruffiano. 89/100 Lynch Bages 2001: non sarà l’annata da grande invecchiamento, ma ora è in stato di grazia. Colore brillante. Al naso si apre ampio e profondo su radice di liquirizia, grafite, crema di olive nere, pepe, alloro, sottobosco, fruttini neri ed un lampo erbaceo. Bocca fresca, sapida, minerale. Scintillante ed austero al contempo. 91/100 Lynch Bages 1994: piccola annata o bottiglia sfortunata? Spezie dolci, cedro, tabacco, cioccolato al latte, carne grigliata e tanto, troppo rovere tostato. In bocca chiude corto, poco appagante, condizionato da un tannino a dir poco rustico. 84/100 Lynch Bages 1988: balsamico e speziato. Eucalipto, carne affumicata, erbe aromatiche, cacao amaro, creme de cassis, visciola selvatica e viola. Bocca vibrante, giovanile, fresca , tannino squillante e sapido. 92/100 Lynch Bages 1986: una bomba! Classico Pauillac. Goudron e ruggine, cedro e scatola di sigari, pellame nobile e tabacco, non soltanto cassis, ma anche amarena ed un lampo di arancia rossa . Bocca densa, quasi viscosa, con un’ eccezionale e sferica trama fenolica. Ricco, minerale e profondo. Durerà altri 30 anni. 95/100. Lynch Bages 2003 opulent and sexy. Gingerbread, sweet oak, layers of jam, loose soil, tinted, all in a framework of sweet alcoholic maturity and exuberance. In the mouth it is glycerine, fresh and with a little less than perfectly ripe tannin, a hot vintage. For perfect balance it lacks a little acidity and tastiness. Il Festival di Cannes giunge nel 2014 alla sua 67a edizione. La cerimonia di premiazione di questa edizione ha visto salire per primo sul palco Abbas Kiarostami per consegnare la Palma al miglior cortometraggio, che va a Leidi, un corto colombiano diretto da Simón MESA SOTO . Solo dopo entra sul palco Jane Campion, la Presidentessa del concorso ufficiale, che introduce la giuria al gran completo (Carole Bouquet, Sofia Coppola, Leila Hatami, Jeon Do-yeon, Willem Dafoe, Gael Garcia Bernal, Jia Zhang-ke e Nicolas Winding Refn). Ed ecco i premiati: La Camera d’or, premio per la miglior opera prima di tutte le sezioni viene assegnata a Party Girl, il film che ha aperto l’Un Certain Regard, diretto da tre registi: Marie Amachoukeli, Claire Burger e Samuel Theis, . Monica Bellucci presenta il premio per il miglior attore, che va a Timothy Spall per Mr. Turner (diretto da Mike Leigh). Il premio per la miglior attrice va a Julianne Moore (che non è presente) per Maps to the Stars! Lei ha il record per aver vinto a Cannes, Venezia e Berlino (con Juliette Binoche e Sean Penn). La miglior sceneggiatura è quella di Leviathan, ritratto di una Russia devastata per la regia di Andrey Zvyagintsev . Il Premio della Giuria va ex-aequo al più giovane (il canadese Xavier Dolan con il suo – apprezzatissimo - Mommy) e al più anziano (Jean Luc Godard per Goodbye to Language). Il premio per la miglior regia va, a sorpresa, a Bennett Miller per Foxcatcher (già candidato alla statuetta nel 2006 per il suo Truman Capote). E’ Sophia Loren (in una clip in cui saluta Marcello Mastroianni, protagonista del manifesto ufficiale di questa edizione) che assegna il Gran Premio della Giuria, per molti “il secondo posto”: il premio va all’italiana Alice Rohrwacher per Le Meraviglie, una storia ambientata nella campagna umbra che racconta le vicende di una famiglia di apicoltori, un racconto che in parte prende spunto dalla vita della regista, per lungo tempo residente nella provincia ternana. Quentin Tarantino e Uma Thurman salgono sul palco per presentare assieme la Palma d’oro: 20 anni fa Pulp Fiction vinceva il premio e quest’anno la vince il turco Nuri Bilge Ceylan per Winter Sleep. Si tratta del film più lungo in concorso quest’anno, ben 3 ore e 16 minuti, che ha riscosso comunque un gran successo del pubblico durante la proiezione. The festival arrived at its 67th edition in 2014. This year’s awards ceremony saw Abbas Kiarostami mount the stage first to deliver the Palme for best short film, which went to Leidi, a short film directed by Colombian Simón Mesa Soto. It was only after this that Jane Campion, President of the official competition, had come on stage to introduce the full jury (Carole Bouquet, Sofia Coppola, Leila Hatami, Jeon Do-yeon, Willem Dafoe, Gael Garcia Bernal, Jia Zhang-ke and Nicolas Winding Refn). After a June of temperatures at the norm or slightly below average, we expect July and August to witness major heat waves. Le ultime tre stagioni confermano un trend piuttosto piovoso per l’Italia con precipitazioni sopra le medie registrate sia in autunno che nel mite inverno - nonché nella primavera in corso. Senza approfondirne troppo le cause, possiamo ipotizzare che questa tipologia di circolazione atmosferica sullo scenario euroatlantico e mediterraneo possa protrarsi anche durante la prima parte dell’estate oramai prossima; questo perché nessun fattore climatico sembra poter intervenire a rimescolare le “carte”. Le novità, probabilmente, arriveranno durante la seconda parte della stagione estiva, approssimativamente tra metà luglio ed inizio agosto, quando progressivamente il fenomeno Nino in corso sull’Oceano Pacifico meridionale inizierà ad influire anche sulla circolazione atmosferica atlantica. Assisteremo quindi ad una stabilizzazione delle condizioni atmosferiche, quindi scarse fasi piovose, e ad una maggiore ingerenza dell’anticiclone afro mediterraneo - con ondate di caldo prolungate ed anche intense. Questo nuovo schema circolatorio potrebbe protrarre il clima estivo anche per tutto il mese di settembre. Spingendoci un po’ più sullo specifico ci attendiamo un mese di giugno ancora caratterizzato da un buon numero di giornate a rischio temporali, dovuti all’arrivo sull’Italia di impulsi di aria fresca ed instabile sia dall’Oceano Atlantico che dall’Europa centro-settentrionale. Durante questo mese le fasi calde non dovrebbero risultare intense e soprattutto avranno durata limitata e saranno un po’ più probabili nel corso dell’ultima decade. Si prospetta dunque un giugno con temperature generalmente in linea od inferiori alle medie del periodo, con precipitazioni localmente superiori alla norma. Luglio invece - come anticipato - potrà risultare il mese di passaggio tra una circolazione atmosferica ancora instabile, durante la prima metà, ed una circolazione atmosferica più stabile con le prime lunghe fasi calde anticicloniche nella seconda quindicina del mese. Già dal 15 del mese, comunque, le giornate a rischio piogge o temporali diminuiranno, fino a scomparire pressoché del tutto verso la fine del mese - quando sarà probabile anche la prima intensa ondata di caldo della stagione. Il mese di agosto, infine, se le premesse climatiche a livello globale saranno confermate, risulterà il più caldo ed asciutto del trimestre estivo. Sul nostro comprensorio le fasi a rischio temporali si ridurranno a non più di due o tre mentre le giornate calde dovute all’ingerenza dell’anticiclone afro mediterraneo saranno numerose, con ondate di caldo intense e durature ad inizio come a fine mese. The last three seasons confirm a rather rainy trend for Italy with above average rainfall recorded in autumn as in the (mild) winter – as well as in the spring that is in progress. Without going too deeply into causes, we can assume that this type of Euro-Atlantic and Mediterranean atmospheric circulation will continue during the first part of the coming summer; this is because no other climatic factor seems likely to intervene to “shuffle the cards”. Something different will probably come during the second half of the summer, roughly between mid-July and early August, when the Nino phenomenon in the Southern Pacific Ocean will progressively begin to affect atmospheric circulation over the Atlantic. Then we will see a stabilization of atmospheric conditions with scarce rainy intervals and the greater influence of the Afro-Mediterranean anticyclone with prolonged and intense heat waves. This new circulatory scheme could prolong the summer weather into the whole month of September. Getting a little more specific, we expect the month of June to be still characterized by a good number of days with risk of storms, due to the arrival into Italy of pulses of unstable fresh air from the Atlantic Ocean or Central Northern Hemisphere. During this month the warm phases should not be especially intense and will be of limited duration and a bit more likely during the last ten days of the month. It therefore promises to be a June with temperatures generally in line or below the average for the period, with higher than normal rainfall locally. July though – as we anticipate – will be the month of transition between a still unstable atmospheric circulation during the first half and a more stable atmospheric circulation with the first warm long anti-cyclonic periods in the second half of the month. By the 15th of the month however the days at risk of rain or storms will diminish and eventually disappear almost completely towards the end of the month – when we will likely also witness the first intense heat wave of the season. The month of August, finally, if weather conditions at the global level are confirmed, will be the hottest and driest of the whole summer.
