Impianti meccanici nelle strutture ricettive Mechanical systems & receptive structures Quaderno Informativo Ricettività Premessa Premise In questa pubblicazione verranno studiati i principali nodi riguardanti gli impianti HVAC e idrico sanitari applicati alle strutture ricettive. I complessi architettonici adibiti a locali pubblici che più comunemente vengono trattati per la loro complessità sono: Centri commerciali, cinema multisala, alberghi, villaggi turistici, grandi spazi di ristorazione. Attraverso una trattazione sia normativa che applicativa, verranno dipanati i dubbi e le problematiche che più usualmente si pongono di fronte al progettista In this publication will be studied the principal crux about the HVAC systems applied to the receptive structures. The architectural complexes turned to public places that are usually treated for their complexity are: Commercial centres, multiplex theatres, hotels, tourist villages, great spaces of restoration. Through a normative and application discussion, the doubts and the problems usually found in a HVAC project will be solved. Temperatura di 20 ± 1 °C con U.R. di 4050% nella stagione invernale; nella stagione estiva temperatura operativa compresa tra 25-27 °C con U.R. di 5055% e comunque con una differenza di temperatura fra l’aria interna ed esterna non inferiore a 7-8°C. La purezza dell’aria deve essere assicurata da idonei accorgimenti (filtrazione e se del caso disinfezione) atti ad assicurare che nell’aria dell’ambiente non siano presenti particelle di dimensione maggiore a 50 micron e non vi sia possibilità di trasmissione di malattie infettive attraverso l’impianto di condizionamento. La velocità dell’aria nelle zone occupate da persone non deve essere maggiore di 0,20 m/s misurata dal pavimento fino ad un’altezza di m 2. The air purity has to be insured by proper shrewdness (filtering and if needed disinfection) actions to assure that in the environment air are not present particles greater than 50 microns and there is no possibility of transmission of infectious illnesses through the conditioning system. Engineering Company - 21047 Saronno (Va) Italy web: www.aertecno.it – Email: [email protected] Impianti meccanici nelle strutture ricettive Mechanical systems & receptive structures 1° Caso di studio: Cinema multisala Quaderno Informativo Ricettività 1st Subject of study: Multiplex (or megaplex) theatres Impianti e rumore I cinema multisala sono strutture composte da un minimo di 4 fino ad un massimo di 16 sale, con annessi locali destinati a foyer, ristoranti, bar, uffici, negozi, sale giochi e servizi vari. La tipologia classica della multisala è quella del multiplex con 8 sale, ma non mancano complessi di dimensioni ancora maggiori come i megaplex che sorgono in aree periferiche. La soluzione più diffusa per la climatizzazione si basa su impianti a tutta aria indipendenti per ogni sala e per le altre zone, in modo tale da garantire la massima flessibilità d’impiego in funzione dei diversi affollamenti e orari di proiezione e non porre in comunicazione tra loro i vari ambienti. Le unità di trattamento aria possono essere di tipo tradizionale con batterie ad acquea refrigerata e acqua calda prodotte da una centrale termofrigorifera, ma nella maggior parte delle realizzazioni più recenti sono state utilizzate unità autonome di tipo roof-top ad espansione diretta a pompa di calore. Questa soluzione viene, infatti, sempre più spesso preferita in quanto consente di concentrare in un'unica apparecchiatura tutte le funzioni, con conseguente risparmio degli spazi occupati ed una maggiore semplicità di installazione e di messa in funzione. Trattamento delle sale La diffusione di questa soluzione è dovuta anche alla disponibilità commerciale di unità concepite ad hoc per questo tipo di applicazione. Ogni sala di proiezione viene trattata da un’unità composta dalle seguenti sezioni di trattamento: Miscela aria esterna, espulsione, ricircolo: Filtrazione a doppio stadio: F5 sull’aria esterna + F9; Raffreddamento / deumidificazione e riscaldamento in pompa di calore mediante batteria ad espansione diretta; Ventilatore di mandata; Postriscaldamento estivo mediante batteria ad espansione diretta a recupero di calore; Umidificazione a vapore prodotto mediante umidificatore ad elettrodi immersi; Silenziatori su mandata e ripresa aria; Ventilatore di estrazione; Recupero di calore a flusso incrociato dall’aria espulsa; Circuito frigorifero con compressori scroll, batterie di condensazione, ventilatori assiali; Quadro elettrico di comando e controllo. Plants and noises Multiplex theatres are structures composed from a minimum of 4 to a maximum of 16 rooms, with attached places destined to hall, restaurants, cafe, offices, shops, amusing rooms various services. The classical typology of the multi-rooms theatres is the multiplex with 8 rooms, but there are also complexes of greater dimensions called megaplexes usually set in peripheral areas. From now on saying multiplex we will also intend megaplexes. The most common solution for the climate control is an all air system, independent for every room and for the other zones, in this way the maximum flexibility use is guaranteed depending on the different overcrowdings and projection schedules and the various environments are not in communication among them. The air handling units can be traditional kind with refrigerated and hot water coils produced by a heating and cooling plant, but in the greater part of the most recent realizations are used autonomous direct expansion roof-top units with pump of heat. This solution is often preferred because it allows to assemble in the same equipment all the functions, with consequent saving of spaces and a easier installation and set up. Treatment of the rooms The diffusion of this solution is also due to the commercial availability of conceived units for this kind of application. Every projection room is treated by an unit made of the followings treatment sections: External air mix, expulsion, recycle: Double stage filtration : F5 on the external air + F9; Cooling / de-humidification and heating with heat pump by a direct expansion coil; Supply air fan; Summer post-heating by direct expansion coil with heat recover; Steam humidification produced by humidifier with immersed electrode; Silencers on supply and return air; Extraction fan; Exhaust air heat recovery unit with crossed flow ; Cooling circuit with scroll compressors, condensation coils , axial fans; Electric control and comand panel Engineering Company - 21047 Saronno (Va) Italy web: www.aertecno.it – Email: [email protected] QIR Pag 3 Impianti meccanici nelle strutture ricettive Mechanical systems & receptive structures Le unità consentono quindi un completo trattamento dell’aria sia in regime estivo sia in quello invernale. L’aria immessa nelle sale risulta una miscela di aria di ricircolo e di aria esterna, quest’ultima in misura tale da garantire un ricambio minimo di 8L/s a persona. Tale valore, superiore a quello indicato dalla norma UNI 10339 pari a 20 m³/h (5,5 L/s), è quello richiesto dalla maggior parte degli utenti finali in quanto risponde all’esigenza di mantenere una concentrazione massima di 1000 ppm di CO2 in ambiente. L’impiego di un recuperatore di calore si rende necessario in base alla portata d’aria di ricambio ed al numero d’ore annue di funzionamento. Un sistema di gestione a microprocessore permette di svolgere, oltre alle normali funzioni di regolazione di temperatura e umidità relativa ambiente, anche altre funzioni quali il controllo della qualità dell’aria ambiente (mediante sonda di rilevazione CO2 ed il free-coling entalpico. Le unità sono prodotte in una serie di modelli dimensionati in funzione delle più comuni capienze delle sale: si va quindi dall’unità più piccola per sale da circa 100 posti fino a quella più grande per sale da 250 posti. Per sale con capienza superiore è necessario installare due unità. In queste sale si rende spesso necessario differenziare la temperatura di mandata in funzione della zona servita. A tale scopo le unità possono essere dotate di una batteria di postriscaldamento aggiuntiva per trattare le zone vicine allo schermo, con soffitto a grande altezza , ed una seconda alla zona vicina al corridoio di proiezione, con soffitto più basso. L’installazione delle macchine avviene solitamente sulla copertura dell’edificio in modo da ridurre al minimo la lunghezza dei canali di distribuzione alle sale. L’immissione in ambiente avviene dall’alto mediante idonei diffusori a soffitto. Nelle sale a grande altezza essi sono del tipo ad alta induzione dotati di servomotori in modo da regolare la direzione e la lunghezza del lancio in funzione della temperatura dell’aria immessa. In altri casi si opta per diffusori lineari posti sui lati lunghi della sala. La ripresa viene effettuata tramite griglie complete di filtro (classe F9) poste nella parte bassa della sala sotto lo schermo. Una soluzione alternativa è rappresentata dall’immissione dal basso con diffusori a pavimento oppure a poltrona. In questo caso la ripresa può essere effettuata dall’alto QIR Pag 4 Quaderno Informativo Ricettività The units allow a full air treatment in summer and winter regime. The air introduced in the rooms is a mixture of external and recycle air, this last in such measure to be guaranteed a minimum exchange of 8L/s per person. Such value, superior to the one listed in UNI 10339 norm equal to 20 m³/hs (5,5 L/s), it is required by most of the final users because it satisfy the demand to maintain a maximum concentration of 1000 ppm of CO2 in environment. The use of a heat recover is necessary depending on the air flow exchange and the number of annual operation hours. A microprocessor management system allows to develop, besides the normal functions of regulation of temperature and relative humidity in the environment, also other functions like the control of the quality of the air in the environment (using a survey probe for CO2 and hentalpic free-cooling). The units are produced in a series of models sized for the most common rooms capacities: the range goes from the smallest unity for rooms around 100 places up to the greatest for rooms from 250 places and more. For rooms with a bigger capacity is necessary to install two units. In these rooms it is often necessary to differentiate the supply air temperature depending on the served zone. To such purpose the units can be endowed with an additional post-heating coil to handle the zones near the screen, with a great height ceiling and a second in the near zone to the projection corridor, with lower ceiling. The units are usually installed on the coverage of the building with the purpose to reduce to the minimum the length of the distribution ducts to the rooms. The air in the environment is supplied by proper ceiling diffusers. In high ceiling rooms they are high induction diffusers endowed with servomotor in a way to regulate the direction and the length of the range depending on the temperature of the introduced air. In other cases there could be linear diffusers placed on the long sides of the room. The recovery is done through grills with filter F9 class set in the low part of the room under the screen. An alternative solution is represented by the lower supply with diffusers on the floor or to the seat. In this case the recovery can be done from the high part. Queste zone vengono trattate da condizionatori indipendenti per ogni zona del tipo roof-top a pompa di calore, simili a quelli precedentemente descritti ma generalmente privi di recuperatori di calore. Il foyer è caratterizzato dalla presenza discontinua di persone e da un elevato carico termico dovuto a monitor, luci e persone nella zona biglietteria. La relativa unità è dotata di sezione di miscela con ventilatore di ripresa e funziona a tutta aria esterna (pari a 2 vol/h) nei periodi di forte affollamento. Per i corridoi di proiezione, sebbene occupati da poche persone, deve essere previsto un reintegro di aria esterna che compensi quella estratta dai ventilatori a servizio dei vari proiettori, comprese tra 400 e 1000 m³/h. I carichi endogeni sono elevati al punto da rendere necessaria l’immissione d’aria a temperatura inferiore a quella ambiente anche durante l’inverno (in regime di free-cooling). Un discorso a parte meritano il ristorante, che necessita di elevate quantità di aria esterna, e la relativa cucina, per la quale si deve prevedere un’unità di termoventilazione indipendente a tutta aria esterna con batteria ad acqua calda per il controllo delle condizioni termiche ed il reintegro dell’aria estratta dalle cappe d’aspirazione. Tale unità, se alimentata ad acqua refrigerata, potrà assicurare anche un buon raffrescamento estivo. Other zones The other zones to consider are, respectively, the projection corridor, the hall (with boxes, cafe, etc.), the offices and, where present, the restaurant and the amusing rooms. These zones are treated by independent conditioners for every zone the units are roof-top kind with pump of heat, similar to those previously described but generally without heat recover. The hall is characterized by the discontinuous presence of people and an elevated thermal load due to monitor, lights and people in the zone boxoffice. The relative unit is endowed with a mixing section with reprise fan and works with all external air (equal to 2 vol/h) in the periods of strong overcrowding. For the projection corridors, although is occupied by few people, it must be foreseen an external air reintegration that compensates the air extracted by the service fans of the various projectors, included between 400 and 1000 m³/hs. The endogenous loads are so elevated that is needed the supply air with a lower temperature than the environment air during the winter (in free-cooling regime). The restaurant is differently valued, because it needs high quantities of external air and the kitchen, there is the need to foresee an independent thermoventilant unit with all external air with hot water coil for the control of the thermal conditions and the reinstatement of the air extracted from the aspiration hoods. This unity, if fed to refrigerated water, it can also assure a good summer cooling. Rumorosità Il problema del rumore prodotto dalle unità di climatizzazione riguarda sia quello irradiato verso l’ambiente esterno sia quello verso l’ambiente climatizzato.Per quanto riguarda il primo aspetto, esso risulta particolarmente critico in caso di complessi multisala ricavati dalla ristrutturazione di cinema esistenti ubicati in zone residenziali, tenendo conto che il funzionamento avviene soprattutto durante le ore serali. In tal caso diventa fondamentale l’utilizzo di macchine concepite ad hoc per questo tipo di applicazione, dotate quindi di dispositivi di attenuazione acustica e di componenti caratterizzati da livelli di rumore e di vibrazioni molto contenuti, quali ventilatori elicoidali a bassa velocità di rotazione (6/8 poli) direttamente accoppiati ai motori elettrici e compressori di tipo scroll. Vi può essere tuttavia la situazione in cui la vicinanza di abitazioni residenziali sia tale da Noisiness The noise's problem produced by the conditioners concerns both the radiated toward the external environment and toward the climatized environments. About the first aspect, it results particularly critical in case of multiplex complexes drawn by the restructuring of existing cinema situated in the residential zones, keeping in mind that the units are working mainly during the evening hours.. In such case it becomes very important the use of units conceived for this kind of application, endowed therefore of acoustic attenuation devices and components characterized by contained levels of noise and vibrations, like helical fans with low speed rotation (6/8 poles) directly coupled to the electric motors and scroll kind compressors. It can happen the situation where the proximity of residential residences is that close to keep the noise produced by the units excessive. In tal caso la prima opzione, spesso trascurata, è di verificare la disponibilità d’acqua per il raffreddamento del condensatore, in modo da poter alloggiare la ma china in un locale tecnico interno. Le sorgenti possono essere, per esempio, pozzi, falda (tipico è il caso di città come Milano) o laghi. In caso negativo si può prendere in considerazione la soluzione di un impianto ad anello d’acqua, con integrazione termica (mediante caldaia) e frigorifera ( mediante torre di tipo chiuso). Un’ ultima opzione consiste nell’adozione di condensatori con ventilatori centrifughi in modo da realizzare un’espulsione canalizzata. L’impiego ventilatori centrifughi, che sono dotati di un’adeguata pressione statica utile, permette di alloggiare la macchina in un locale chiuso oppure all’aperto ma dotandola di silenziatore sulla mandata. Ove nessuna di tali opzioni sia attuabile, non resta che adottare le opportune misure di attenuazione mediante l’impiego di barriere fonoassorbenti oppure di schermi che indirizzino le onde sonore in direzione opposta rispetto alle zone abitate. Una volta analizzate le soluzioni per attenuare la trasmissione di rumore verso l’esterno, non resta che affrontare il tema legato alla trasmissione del rumore verso l’ambiente interno attraverso la struttura ed i canali. Il limite di riferimento indicato dalla norma UNI 8199 è di 35 dBA ma generalmente è richiesto dagli utenti finali un valore inferiore, pari a NC30 o NR30. Anche in questo caso il punto di partenza per l’analisi è costituito dai dati prestazionali forniti dai costruttori. A tale proposito va sottolineato che la messa a disposizione da parte dei costruttori dei dati di rumorosità espressi in bande d’ottava è fondamentale in quanto soltanto in questo modo è possibile valutare il rispetto dei limiti indicati dalle curve NC o NR e studiare quindi le eventuali soluzioni di attenuazione acustica. Per quanto riguarda la costruzione dei canali di distribuzione e di ripresa devono essere osservate con particolare cura le comuni prescrizioni. Come primo provvedimento i canali di mandata e di ripresa devono presentare in prossimità dell’ingresso e dell’uscita dall’unità due curve ad ampio raggio munite di deflettori in modo da favorire l’assorbimento del rumore. I tratti di canali posti all’esterno devono essere isolati in modo accurato per evitare l’ingresso di rumore esterno (impianti e traffico) nei canali stessi. A tale scopo l’esecuzione dell’isolamento prevede un doppio strato di materassino isolante con spessore di 25 mm, con interposto un foglio di piombo di spessore di 0,5 mm e rivestimento Quaderno Informativo Ricettività availability for the condenser cooling, to consider the possibility to set the unit in a technical room inside the place. The sources can be, for example, wells, stratum (typical it is the case of city as Milan) or lakes. In negative case it can be considered the solution of a water ring plant, with thermal integration (through boiler) and refrigerators (through closed tower kind). A last option consists in using condensers with centrifugal fans so the expulsion can be canalized. The use of centrifugal fans, which are endowed with a suitable static pressure, allows to set the unit in a closed place or in a open one but equipping it with silencer on supply air ducts. Where none of such options is practicable, the only solution is to adopt the opportune attenuation measures using deadening barriers or screens that reflect the noise waves in the opposite direction of inhabited zones. Once you analyze the solutions to attenuate the transmission of noise toward the outside, the other thing to do is to face the theme of the noise transmission toward the inside environment through the structure and the ducts. The reference limit pointed out by the UNI 8199 norm is 35 dBA but generally the final users ask for an inferior value, equal to NC30 or NR30. Also in this case the departure point for the analysis is the performance data furnished by the suppliers. For this reason we have to say that these noisiness data in octave bands is fundamental because it is the only possible way to evaluate value the respect of the pointed limits on the NC or NR curves and to study the possible solutions for acoustic attenuation. About the construction of the supply and return ducts we must observe with particular attention the common prescriptions. First of all the supply and return ducts should have at the entry and the exit of the unit two bents with a huge radius provided of deflectors to simplify the absorption of the noise. The outlaying duct lines must be properly insulated to avoid the noise transmission from the outside (units and traffic). For this purpose the insulation foresees a double layer of insulating material 25 mm thick, with a lead sheet 0,5 mm thick between them and external covering in aluminium. The inside duct lines are usually installed above a soundproof false ceiling and they are endowed with insulation thermo-acoustic obtained with euphonic quilt. All the bends are endowed with deflectors, the diffusers ducts are flexible soundproof kind. The dimensioning is obtained keeping a constant air speed at the maximum of 4 m/s. In particular situations, like projection rooms might be required an insulating coverage in elastomer plates with a double lead sheet. I tratti interni vengono invece solitamente installati al di sopra di un controsoffitto afonico e sono dotati di isolamento temo acustico ottenuto mediante materassino in lana di vetro. Tutte le curve sono dotate di deflettori, mentre gli stacchi ai diffusori sono realizzati mediante flessibili di tipo fonoassorbente. Il dimensionamento è effettuato mantenendo una velocità non superiore a 4 m/s. In casi particolari come le cabine di proiezione si può rendere necessario l’impiego di un rivestimento isolante in lastre elastomeriche con interposta una doppia lamina di piombo. QIR Pag 8 Engineering Company - 21047 Saronno (Va) Italy web: www.aertecno.it – Email: [email protected] Quaderno Informativo Ricettività Impianti meccanici nelle strutture ricettive Mechanical systems & receptive structures Quaderno Informativo Ricettività 2° Caso di studio: Centri commerciali 2nd Subject of study: Malls La diffusione nei grandi ambienti La diffusione dell’aria in ambienti particolarmente vasti come centri commerciali , cinema, teatri, piscine, centri polisportivi palestre, industrie ecc.., rappresenta un problema impegnativo per la progettazione, il dimensionamento e la disposizione dei terminali di diffusione più idonei al fine di assicurare un accettabile livello di comfort. Normalmente infatti, dato l’eccessivo impegno economico per una distribuzione dell’aria attraverso diffusori da soffitto (numero elevato di canalizzazioni e terminali), si preferisce optare, soprattutto in situazioni “povere” , per soluzioni nelle quali il numero dei diffusori di mandata e le linee di distribuzione e collegamento risultino più limitati. Gli ugelli e le speciali bocchette per grandi portate/lanci , in grado di garantire una copertura elevata delle superfici, rappresentano una scelta con poche alternative. A propria volta, gli ugelli sferici orientabili sono particolarmente indicati in quei casi in cui sia necessario garantire lanci lunghi e orientati con precisione in una direzione determinata; mentre le bocchette speciali vengono impiegate per assicurare, per mezzo di alte portate , un’ampia copertura orizzontale delle aree. The diffusion in the wide environments The air diffusion in wide environments like malls, cinemas, theatres, swimming pools, multisportive centres, gyms, industries etc.., represents a binding problem for the planning, the sizing and the disposition of the diffusers with the purpose to assure an acceptable level of comfort. Normally in fact, ceiling diffusers solution results very expansive (due to elevated number of canalizations and terminals), it is preferred to chose, especially in “poor” situations, for solutions where the number of the supply diffusers the duct lines result more limited. The spherical orientable nozzles are particularly suitable in the situation where is necessary to guarantee long throwing and directed with precision in a determined direction; while the special diffusers are employed to guarantee, through high air flows, an wide horizontal coverage of the areas. Se l’aria, in locali la cui lunghezza risulti da 2.5 a 4.5 volte superiore alla larghezza o comunque oltre i 15 m , viene immessa attraverso le bocchette tradizionali, oltre ai noti problemi di direzionalità, essa non riesce a raggiungere la parete opposta. In tale situazione, la vena d’aria penetra e comincia a miscelarsi con l’aria indotta. In questo caso ha scarsa rilevanza l’incremento della velocità di immissione. La distanza di penetrazione resterà la stessa , mentre aumenterà soltanto la velocità dell’aria sia nella vena che nel locale. Una distribuzione dell’aria assicurata da opportuni ugelli sferici , in virtù delle elevate portate (oltre 3000 m³/h cadauno), può garantire una sostanziale copertura della superficie con un numero limitato di terminali, raggiungere distanze di penetrazione nel locale di 15 m (oltre , la presenza di diverse variabili ambientali rende difficile prevedere concretamente cosa possa succedere) ed evitare le condizioni di elevate stratificazioni in riscaldamento. Inoltre , proprio per la loro versatilità di orientamento, gli ugelli possono essere installati direttamente sulle canalizzazioni di distribuzione, che funzionano quindi come plenum di raccordo, ad altezze anche rilevanti (oltre gli 8 m ). Per particolari esigenze , vedi nelle cabine industriali di lavaggio e/o decontaminazione (docce d’aria) o nelle aree perimetrali confinanti, una specifica versione di questi diffusori sferici in batteria può garantire delle barriere d’aria consistenti , dando luogo a energetici getti di separazione o di contenimento. La disposizione delle griglie di ripresa nella zona occupata in questi vasti ambienti aiuta a vincere i pericoli di stratificazione e a migliorare la circolazione e l’uniformità di distribuzione dell’aria in ambiente. Rimane in ogni caso difficile stabilire con precisione gli effetti sul movimento e la direzione dell’aria. Nel caso dei villaggi turistici, soprattutto se costruiti in paesi esotici, rivestono invece analoga o addirittura maggiore importanza altri impianti quali per esempio quelli sanitari e di depurazione. A causa della carenza delle infrastrutture pubbliche dei paesi in cui vengono realizzati, spesso i villaggi devono infatti essere progettati come delle comunità autosufficienti dal punto di vista impiantistico. Per quanto riguarda il comfort è lecito domandarsi se effettivamente sia sempre necessario climatizzare le camere di un villaggio turistico. Ciò dovrebbe dipendere dal clima della località in questione, tenendo conto che le camere sono occupate quasi esclusivamente nelle ore serali e durante la notte. I villaggi costruiti negli anni ’70 e ’80 nel Mediterraneo non erano per esempi climatizzati, in quanto allora non si sentiva tale necessità. Oggigiorno invece tutti complessi turistici, sia di nuova costruzione sia esistenti ed in qualunque parte del mondo, vengono dotati di impianti di climatizzazione per rispondere ad una omai diffusa richiesta da parte dei clienti al momento della scelta del villaggio, anche se spesso tale opzione non viene poi utilizzata durante il soggiorno. Non bisogna dimenticare inoltre che esistono villaggi concepiti per una clientela internazionale, ed in particolare americana, da sempre abituata a soggiornare in ambienti condizionati. Caratteristiche costruttive dei villaggi. La scelta delle soluzioni impiantistiche ottimali è influenzata notevolmente dalla tipologia costruttiva e dalla distribuzione delle varie aree. Un tipico villaggio turistico è caratterizzato generalmente da una serie di zone ben distinte dal punto di vista funzionale: Zona alloggi clienti (camere, appartamenti , ville); Zona servizi, con uffici, alloggi del personale, cucine, magazzini, lavanderia, centrali tecniche. In the tourist villages’ case, especially if built in exotic countries, there can be more important systems like for example sanitary and purification systems. Due to the lack of public infrastructures in the countries where they are realized, the villages must be often planned like self-sufficient communities from the systems point of view. Talking about comfort it is permissible to wonder if a climate control system is always necessary for the rooms of a tourist village. This should depend on the climate of the place where the village is, keeping in mind that the rooms are most of all busy in the evening hours and during the night. The villages built during the years '70 and '80 in the Mediterranean for example didn’t have climate control systems, because such necessity wasn’t felt. Nowadays instead all the tourist complexes, both of new construction and existing all over the world, are endowed with climate control systems to satisfy to the diffused will from the clients during the choice of the village, even if such option is not often used during the vacation. We can’t forget that most of the villages are conceived for international clientele, and particularly American, used to live in conditioned environments. Constructive characteristics of the villages. The choice of the optimal planning solutions is influenced especially by the constructive typology and from the distribution of the various areas. A typical tourist village is generally characterized by a series of separated zones from the functional point of view: Clients lodges zone (rooms, apartments, villas); Services zone, with offices, the personnel's lodgings, kitchens, stores, laundry, technical plants. Le aree comuni L’edificio centrale ove sono raggruppate le aree comuni, viene climatizzato mediante una serie di impianti, ognuno dedicato ad una singola zona. A titolo d’esempio si possono quindi avere le seguenti zone climatizzate: negozi; Sale conferenze e riunioni; discoteca; Mensa e spogliatoi; cucine: magazzini. Ognuna di queste aree viene climatizzata mediante impianti a tutta aria a portata costante a zona singola o multizone, con o senza ricircolo d’aria. Il trattamento dell’aria prevede filtrazione, raffreddamento con deumidificazione e postriscaldamento, mentre non è in genere richiesto il riscaldamento. Le unità di trattamento possono essere di tipo autonomo roof-top oppure con batterie ad acqua refrigerata ed acqua calda. In questo caso i fluidi primari vengono prodotti da una centrale tecnica ove sono collocate tutte le apparecchiature (gruppi frigoriferi, caldaie, gruppi di pompaggio, bollitori). Peri i villaggi situati in località marine è opportuno prevedere batterie di scambio termico con alette in rame per una migliore resistenza alla corrosione. I locali destinati agli uffici amministrativi, in genere di piccole dimensioni, possono essere invece trattati mediante impianti più semplici ad espansione diretta oppure con fan-coil, senza aria primaria. I ristoranti, generalmente se collocati all’aperto, non vengono climatizzati. In this situation the primary fluids are produced by a technique plant where all the equipments are situated (refrigerators groups, boilers, groups of pumping). For the villages situated in sea places it is opportune to foresee thermal exchange coils with copper fins for a best resistance to the corrosion. The administrative offices, generally of small dimensions, can be treated through simpler direct expansion systems or with fan-coil, without primary air. The restaurants, generally situated outside, the climate control system is not needed. Le tipologie d’impianto sono essenzialmente tre: impianti ad espansione diretta di tipo split o multisplit; Impianti idronici decentralizzati Impianti idronici centralizzati In tutti e tre i casi, le unità interne sono sempre costituite da terminali del tipo orizzontale ad incasso posti nel controsoffitto del vestibolo d’ingresso oppure in quello dei bagni. Ove ciò non sia possibile si utilizzano unità a vista di tipo orizzontale o verticale a parete. Non è previsto un impianto di aria primaria , in quanto il rinnovo viene ottenuto mediante l’apertura delle finestre. Le unità sono regolate mediante termostati a parete oppure telecomandi a infrarossi che permettono di regolare la temperatura ambiente e la velocità del ventilatore. Where this is not possible are used sight kind terminals horizontal or vertical to wall. A primary air system is not foreseen, because the renovation air is gotten through the opening of the windows. The units are regulated through wall thermostats or infrared remote controls that allow to regulate the environment temperature and the speed of the fan. Gli impianti possono essere di tipo monosplit nel caso di piccoli bungalow con camere singole, mentre nel caso di bungalow di maggiori dimensioni e d’edifici a più camere si ricorre a sistemi multisplit con un’unità esterna collegata ad un massimo di 4 unità interne. Questi impianti sono caratterizzati da un basso costo iniziale, da una notevole efficienza energetica e da una facile manutenzione. Inoltre garantiscono una totale continuità operativa in quanto in caso di guasto di un’unità , questa può essere velocemente sostituita con una di ricambio. Una scorta di unità in numero pari al 10% del totale è più che sufficiente senza comportare un eccessivo aggravio del costo iniziale. Per contro questa soluzione presenta anche alcuni svantaggi. In primo luogo l’installazione delle unità esterne può rivelarsi critica per l’ingombro, per l’impatto estetico e per il rumore prodotto che, sia pure contenuto grazie all’impiego di componenti silenziosi, può arrecare disturbo agli occupanti dello stesso bungalow e di quelli adiacenti. Per ovviare a tali problemi in alcuni casi si preferisce collocare le unità esterne all’interno dei bungalow in piccoli vani tecnici previsti ad hoc e dotati di griglie di transito dell’aria oppure all’esterno in nicchie protette da muretti. Un altro aspetto da non sottovalutare è il fatto che l’esecuzione del circuito frigorifero che collega unità esterne ed interne deve essere effettuata da personale esperto. Infine la potenza frigorifera ed elettrica complessiva installata può raggiungere valori molto elevati in quanto risulta la somma delle potenze relative alle unità per le singole camere. Even if characterized by a smaller energetic efficiency (because of the use of an intermediary fluid and a circulation pump) and from a bigger encumbrance, compared to the preceding typology they have two advantages: first of all the chance to exploit the contemporaneity factor of the single room’s load, which means an inferior installed power, Besides they allows to install a single external unit even when the bungalow has more The systems can be monosplit kind in small bungalows with single rooms’ situations, while in bungalow of greater dimensions and buildings with more rooms are used multisplit systems with an external unit connected to a maximum of 4 internal units. These systems are characterized by a lower initial cost, notable energetic efficiency and easy maintenance. They also guarantee a total operational continuity because if there is a unity breakdown, this can be quickly replaced with another one. A stock of units in number equal to the 10% of the total is enough without being cause of an excessive increase of the initial cost. This solution has also some disadvantages. First of all the installation of the external units can be he/she critical for the encumbrance, for the aesthetical impact and for the noise produced that, even though reduced using silent components, can be annoying for the occupants of the same bungalow and those adjacent. To obviate to such problems in some cases is preferred to put the external units inside the bungalows in small technical vain foreseen and endowed with transit air grills or outside in zones protected by walls. Another aspect not to be underestimated is the fact that the execution of the refrigerator circuit that connects external and inside units must be effected from experienced personnel. Finally the cooling and general electric installed power can reach elevated values because it is the sum of the resulting powers related to the units for each room. Un altro vantaggio è quello di permettere la produzione d’acqua calda di recupero che può essere sfruttata sia per le batterie di postriscaldamento delle unità di trattamento dell’aria delle aree comuni sia per la produzione d’acqua calda sanitaria. Per contro questa soluzione comporta l’onere dello scavo necessario alla posa delle tubazioni, opera peraltro spesso necessaria per altri impianti (fognatura, antincendio ad idranti, irrigazione, elettrici). Inoltre se la rete di tubazioni è estesa vi possono essere delle elevate perdite di carico. L’aspetto più critico è comunque rappresentato dall’affidabilità: per garantire la continuità di servizio si deve prevedere un gruppo frigorifero di riserva, ma questa soluzione comporterebbe un eccessivo aggravio di costo nel caso di una riserva del 100%. Un compromesso può essere quello di suddividere la produzione di potenza frigorifera su due gruppi del tipo pluricompressore, ognuno con una potenza peri al 60-70% del fabbisogno totale. Anche in questo caso, come nel precedente, è necessario prevedere la presenza in loco di tecnici in grado di eseguire almeno gli interventi di manutenzione e le riparazioni più semplici. In tal caso i bollitori vengono dotati di due serpentini scaldanti, il primo alimentato dall’acqua calda a bassa temperatura proveniente dal gruppo frigorifero , il secondo con acqua calda a 90°C prodotta da una caldaia. In questo modo è possibile accumulare acqua calda a 60°C che viene utilizzata per tutti gli usi, in particolare per la cucina. Per quanto riguarda invece le camere, l’alternativa è tra bollitori di tipo elettrico oppure una produzione centralizzata a gas. Per il dimensionamento si deve tenere conto di un fabbisogno di 70 l/persona con un tempo di riscaldamento dell’acqua accumulata in 2 ore. Il preriscaldamento può essere realizzato anche con scambiatori a piastre. Questo processo eleva l’acqua in ingresso al suo vapore e alla sua temperatura più alta, dopo questa fase passa attraverso i vari stadi dove avviene il vero e proprio metodo “Multistade Flash”. La pressione di vapore in ognuno di questi stadi è controllata così che l'acqua salmastra riscaldata entri in ogni camera alla temperatura e pressione corretta (ciascuna più bassa dello stadio precedente) provocando così un’ebollizione / condensazione istantanea e violenta. L’ acqua dolce è formata dalla condensazione del vapore di acqua salmastra raccolta da ciascuno stadio e passata allo stadio successivo per ripeterne l’operazione. Ad ogni passaggio, l'acqua prodotta è bollita e condensata ed il calore in surplus recuperato per preriscaldare l’acqua pronta per lo stadio successivo. A causa del grande ammontare di acqua condensata richiesta in una pianta di MSF, spesso, una porzione (50% a 75%) dell'acqua salmastra proveniente dall'ultima tappa è mescolata col l’acqua greggia entrante e, ricircolata attraverso le sezioni di ricupero di calore del bollitore di acqua condensata e di seguito trattata di nuovo attraverso tutti gli stadi susseguenti. Questo sistema è chiamato “Brine Recycle plant”. Il metodo appena descritto riduce l'ammontare d’acqua da condizionare chimicamente che deve essere aggiunta, e può abbassare significativamente le spese d'esercizio. Di contro questa soluzione aumenta la salinità dell'acqua e di conseguenza aumenta il punto d'ebollizione, con conseguente aumento del rischio di corrosione delle tubature dell’impianto. Per mantenere una densità d’acqua salmastra corretta nel sistema una porzione dell'acqua greggia concentrata dall'ultima tappa è scaricata in mare. L’acqua dissalata prodotta dall’impianto, prima di essere immessa nei serbatoi di stoccaggio, necessita di alcuni trattamenti aggiuntivi che la renderanno idonea al consumo. Infatti, quando ristagna in serbatoi d’accumulo, può inquinarsi a causa della crescita di microrganismi patogeni quali batteri, spore, virus ed alghe. Un primo trattamento richiesto è l’eventuale aggiustamento del pH, che viene effettuato per mezzo di una pompa dosatrice che aggiunge opportune sostanze basiche al permeato. Altro trattamento è quello della disinfezione del Post-treatment and pH correction units. In entrambi i casi si utilizza l’elevata pressione cui l’acqua viene sottoposta per realizzare il processo di trattamento ottimale con membrane osmotiche. Energetic recovery system. Conversione di una parte di sala ristorante in area fumatori. La legge nazionale prescrive una “idonea separazione” tra l’area destinata ai fumatori ed il resto dell’ambiente: questo a prima vista potrebbe sembrare un a complicazione, fonte di costi non indifferenti. In realtà “idonea separazione” allo scopo previsto della legge può indicare semplicemente che in nessun caso del fumo possa migrare dall’area fumatori. In tal caso , è sufficiente prevedere un gradiente di pressione negativo tra il resto del locale e l’area fumatori per avere una separazione di fatto. Anche in questo caso , si deve innanzi tutto verificare che, in presenza di un preesistente impianto di condizionamento canalizzato; si possano raggiungere i livelli di ricambio richiesti (60 m³/h a persona). In tal caso (estremamente raro) , basterà riservare ai fumatori i tavoli in prossimità delle griglie di ripresa. In questo modo si garantirà il ricambio richiesto, evitando la possibilità che il fumo possa migrare verso i non fumatori. In tutti gli altri casi, si dovrà predisporre un impianto di ricambio con aria esterna opportunamente dimensionato sul numero degli occupanti dei tavoli per fumatori, avendo sempre l’accortezza di riprendere l’aria da espellere in modo da creare un flusso d’aria dalla zona non fumatori verso quella fumatori, in modo da impedire la migrazione del fumo (il livello minimo della “idonea separazione” sopra citata). Nella quasi totalità dei casi, l’immissione di una quantità così elevata di aria esterna può risultare antieconomica (per la necessità di doverla condizionare, vedi le norme citate), oppure fonte di fastidiose correnti d’aria (in nessun caso è ammesso di superare il valore di 0,2 m/s dal pavimento fino alla quota di due metri da terra). Anche in questo caso, è possibile ridurre le quote di immissione fino ad un terzo del valore teorico, aggiungendo depuratori in grado di ripulire efficacemente la quota rimanente dal fumo. Per esempio , per una sala ristorante da 150 coperti, si prevede di riservare ai fumatori un terzo della sala (non è un valore preso a caso, ma una stima reale della percentuale di fumatori sul totale degli avventori dei ristoranti in Italia), In tal caso, dovremo dimensionare l’impianto per 50 persone, per un totale di 3.000 m³/h di aria esterna da immettere. Si tratta di una quantità teoricamente possibile, ma poco realisticamente utilizzabile, per i motivi già visti d’economicità e comfort ambientale. Almost in the totality of the cases, the supply of a so elevated quantity of external air can result expansive (due to the necessity to condition it, see the quoted norms), or source of annoying flows of air (it is never allowed to overcome the value of 0,2 m/s from the floor up to the quota of two meters). Si può arrivare a queste situazioni anche a causa del fatto che gli impianti di cottura sono spesso considerati dalle autorità sanitarie “ attività ad inquinamento poco significativo” e quindi soggette ad intervento ( obbligo di trattamento delle emissioni) solo in caso di provata molestia olfattiva. Provare uno stato di molestia olfattiva non è semplice: sovente il tutto si trasforma in un contenzioso legale che può trascinarsi per anni, da qui l’esasperazione dei soggetti coinvolti. Da qualche tempo, però, sono comparsi anche in Italia i laboratori di olfattometria i quali hanno introdotto la quantificazione oggettiva degli odori. In questo modo , è divenuto più semplice dimostrare la molestia olfattiva, con una valutazione riportata su una scala di incontrovertibili unità olfattometriche. Di conseguenza, sono aumentati in breve tempo gli esposti presentati contro le emissioni maleodoranti, spesso con rapido esito d’obbligo al trattamento, proprio in virtù dei test olfattometrici presentati dalla parte lesa o disposti dal magistrato. In passato , solo eccezionalmente si poteva assistere all’inserimento di un dispositivo per il trattamento delle emissioni in sede di progetto. Oggi invece, quando si tratta di inserire un impianto di questo genere in un contesto fortemente urbanizzato, si comincia a pensare per un tempo al problema degli odori molesti, anche perché si è capito che è molto più semplice ed economico impostare il progetto in un certo modo piuttosto che intervenire a cose fatte con interventi di retrofitting al limite dell’equilibrismo tecnico. intervenire a livello di progetto rappresenta The exhausts treatment The sector of the collective restauration is composed from very different realities for function and dimension, from the small kitchen of the local kindergarten up to the industrial plant that can supply all the scholastic cafeterias of a great city. Anche la componentistica e gli accessori d’impianto dovranno essere di tipo particolare, quindi più costosi della norma. Per fare qualche esempio, le cappe dovranno essere del tipo a compensazione, dotate di filtri particolari; i ventilatori d’estrazione dovranno avere determinate caratteristiche di prevalenza e di affidabilità. Il lay-out stesso dell’impianto di captazione e trasporto dei fumi dovrà essere stabilito in conformità a criteri tali da privilegiare la funzionalità piuttosto dell’economia. Si dovrà inoltre tenere conto degli abbondanti spazi tecnici necessari ai dispositivi d’abbattimento, certamente voluminosi. Ultimo ma tutt’altro che trascurabile, il problema della manutenzione programmata: anche un impianto perfettamente dimensionato e realizzato a regola d’arte può essere messo fuori uso in pochi giorni a causa di una manutenzione carente, intempestiva o addirittura assente. Per fare un esempio, poniamo di dover risolvere il problema odori molesti emessi da una friggitoria industriale. In questo caso, veicolo degli odori è l’aerosol oleoso che si solleva dalle friggitrici, inquinante che è possibile abbattere in modo molto efficace. Se ogni friggitrice industriale consuma circa 200 litri di olio al giorno, dei quali solo il 50% rimane nel prodotto finito, operando con filtri ad alta efficienza ci ritroveremmo con poco meno di 100 litri d’olio abbattuto per ogni friggitrice. Considerando un laboratorio medio piccolo, che consuma a pieno regime 1000 litri d’olio al giorno, troveremo ogni 8 ore di lavoro circa 500 litri di condensato depositati a vari livelli nell’impianto di captazione e di abbattimento. Per operare correttamente, dovremo innanzi tutto fare in modo che la frazione più grossolana dell’aerosol condensi nella cappa, dove può essere facilmente recuperata, possibilmente spillata in continuo. Ipotizzando che dei 500 litri il 30% rimanga nelle cappe e il 10% nelle canalizzazioni (valori in media vicini al vero), ci ritroveremo ogni giorno con circa 300 litri di condensato nei filtri. Ci si rende subito conto che il vero problema non consiste tanto nell’abbattimento, quanto nell’eliminazione del condensato, che deve avvenire nelle pause di funzionamento o addirittura in continuo per le lavorazioni su più turni. I depositi devono essere rimossi velocemente per ovvi motivi di funzionalità, ma anche perché rappresentano essi stessi una fonte notevole di cattivi odori e possono rapidamente vanificare tutti gli sforzi di deodorizzazione, oltre a rappresentare, in alcuni casi, un rischio intollerabile d’incendio. In casi come questi non è ovviamente possibile ricorrere a filtro tipo medio ad alta efficienza o carboni attivi , da soli o in varia combinazione: ci troveremo ogni giorno con dei filtri intrisi d’olio, da buttare, o meglio, da smaltire. Dovremo quindi orientarci verso soluzioni in grado di sequestrare l’aerosol oleoso con grande efficienza, e nel contempo capaci di eliminare i condensati in modo efficace ed affidabile. Una volta eliminato l’aerosol, avremo risolto gran parte del problema ma, in ogni caso, non avremo eliminato del tutto gli odori. Questo perché le molecole odorose contenute nella frazione grassa depositata possono essere “strippate” dal flusso d’aria in transito: inoltre, esiste una frazione di molecole odorose non lipofile, che rimane comunque allo stato di gas o si trova disciolta nel vapore acqueo. Queste molecole residue rappresentano percentualmente una frazione minima dell’emissione ma possono essere responsabili di una quota importante della molestia olfattiva. Quindi, è spesso necessario ricorrere ad uno stadio rifinitore per la completa eliminazione degli odori. Dal punto di vista pratico, per l’abbattimento dell’aerosol sono state proposte in passato varie soluzioni: condensazione per mezzo di piastre, batterie di tubi o di multicicloni refrigerati con circolazione di acqua fredda , filtri a tasche o a pannello in fibra di vetro, filtri elettrostatici, abbattitori ad umido tipo scrubber. La maggior parte di queste non ha dato sul campo buona prova di sè. We immediately that the true problem doesn't consist so much in the demolition, but in the elimination of the condense, that must happen in the working breaks or even continuously for the works on more turns. The deposits must be quickly removed for obvious motives of functionality, but also because they represent a notable source of bad odours and they can quickly frustrate all the efforts of taking out the smell, besides representing, in some cases, an intolerable risk of fire. In cases as these it is obviously not possible to use filters of middle to high efficiency or active carbons, alone or in various combination: we will find us every day with some filters soaked with oil, to throw, or better, to get rid of. We will have therefore to direct toward solutions able to seize the oily aerosol with great efficiency, and at the same time able to eliminate the condense in effective and reliable way. Once eliminated the aerosol, we will have solved big part of the problem but, in every case, we won't have completely eliminated the odours. This because the contained fragrant molecules in the deposited fat fraction can be "stripped" from the flow of air in transit: besides, a fraction of fragrant molecules not lipofile exists, that remains however to the state of gas or it is found dissolved in the aqueous vapour. I filtri a pannello non possiedono una sufficiente capacità di accumulo, a differenza dei filtri a tasche, tecnicamente efficienti e dotati di buona capacità, ma penalizzati dal costo notevole (non possono essere rigenerati, quindi quando sono saturi devono essere rimossi e sostituiti con filtri nuovi) : inoltre, proprio per la quantità di condensato che sono in grado di accumulare, sono facilmente esposti a rischio di incendio. Il filtro elettrostatico, mutuato dall’abbattimento delle nebbie d’olio in ambito industriale, si è dimostrato molto efficiente e soprattutto dotato della preziosa possibilità di permettere la colatura e l’eliminazione in continuo del condensato. Tuttavia, anche il filtro elettrostatico tradizionale si è dimostrato problematico in questa applicazione, perché il condensato, se la temperatura dell’aria non è abbastanza elevata, non riesce a scorrere e si accumula all’interno del filtro, dove può creare ostruzioni difficili da eliminare ed in ogni caso a rischio d’incendio. I cicloni non refrigerati e gli abbattitori ad umido non possiedono una efficienza all’altezza della situazione, essendo incapaci di agire sulle particelle di calibro più fine. Sembrerebbe un problema senza soluzione, ma naturalmente non è così: le soluzioni efficaci esistono, pur comportando qualche complicazione impiantistica. Innanzitutto, in presenza di centri di cottura molto estesi , occorre frazionare le canalizzazioni di raccolta dei fumi in più zone, ognuna servita da un dispositivo di abbattimento separato: questo allo scopo di mantenere più alta possibile la temperatura dell’aria da trattare, senza dover ricorrere a dispendiosi sistemi di postriscaldamento (se possibile, si devono coibentare efficacemente i canali). In questo modo si minimizza anche la quantità dei depositi tra cappa ed impianto di trattamento, sempre fonte di spiacevoli inconvenienti. La suddivisione in zone dell’impianto comporta anche dei vantaggi in caso di fermo macchina per manutenzione straordinaria, consentendo il funzionamento nelle frazioni non interesse dall’intervento. Naturalmente, i costi di installazione sono superiori rispetto ad un impianto centralizzato ma, in ogni caso, questo approccio si è dimostrato vincente sotto il profilo dell’efficienza e del ridotto onere di manutenzione. The not refrigerated cyclones and the dampness demolitors don't have enough efficiency for the situation, being incapable to work on the particles of thinner calibre. It would seem a problem without solution, but naturally it is not: the effective solutions exist, also behaving some plants complication. First of all, in presence of wide cooking centres, it is necessary to divide the canalizations of harvest of the smokes in more zones, each served by separate demolition device: this has the purpose to maintain the temperature of the air to treat as high as possible, without having to resort to expensive systems of post-heating (if possible, the ducts should be properly insulated). In this way the quantity of the deposits is minimized and also between hoods and treatment pants, always source of disagreeable drawbacks. The division of the plant in zones also involves some advantages in case of block of the unit for extraordinary maintenance, allowing to the other zones to work during the maintenance operation. Naturally, the installation costs are superior compared to a centralized plant but, in every case, this approach is better looking at the efficiency and the minimum burden of maintenance. Abbiamo detto in precedenza che è preferibile fermare la maggior quantità possibile di condensato in cappa: in passato, invece , si tendeva a ad evitare il più possibile il formarsi di depositi, proprio per minimizzare gli interventi di manutenzione ed il rischio d’incendio, sempre in agguato per la vicinanza dei fornelli. Questi problemi ora possono essere evitati con l’adozione di cappe particolari, progettate allo scopo di trattenere il condensato in tutta sicurezza e dotate di meccanismi per la raccolta dei depositi. Esistono diversi modelli in commercio, basati su uno schema costruttivo che prevede un percorso a labirinto nel quale l’aeriforme è costretto più volte a cambiare bruscamente direzione, realizzando un filtro di tipo inerziale: le particelle più pesanti in sospensione non riescono a seguire il cambiamento di direzione ed impattano sulle superfici metalliche del filtro, condensando e confluendo per gravità in un recipiente di raccolta. Lo scorrimento del condensato è reso possibile dalla temperatura relativamente elevata della cappa, mentre il rischio d’incendio è neutralizzato dalla presenza di una rete metallica rompifiamma posta all’ingresso del filtro inerziale. L’adozione di queste cappe comporta delle perdite di carico maggiori rispetto ai dispositivi tradizionali, il che si ripercuote sul dimensionamento del ventilatore d’estrazione. Anche il tipo di canalizzazioni (diametro ridotto ad alta velocità di scorrimento dell’aeriforme) e la non trascurabile prevalenza dell’apparato finale di abbattimento impongono l’adozione di un ventilatore in grado di esercitare elevate pressioni d’aspirazione (proprio il sottodimensionamento del ventilatore costituisce l’errore più comune nel quale può incorrere il progettista alle prime esperienze con questa tipologia d’impianto). Hoods We take a step back to examine the problems that the concern the hoods, another important element of the plant. We have said in precedence that is preferable to stop the greatest quantity possible of condense in hoods: in the past, there was the tendency to avoid instead, the formation of deposits, to minimize the maintenance interventions and the risk of fire, always in present due to the proximity of the stoves. These problems can be now avoided with the adoption of particular hoods, projected to the purpose to hold back the condense in safety and endowed with mechanisms for the harvest of the deposits. Different models exist in commerce, based on a constructive scheme that foresees a labyrinth where the aeriform is forced more times to change direction, realizing a inertial type filter: the heaviest particles in suspension can’t in follow the changes of direction and hit on the metallic surfaces of the filter, condensing and flowing for gravity in a container of harvest. The slide of the condense is made possible by the elevated temperature of the hood, while the risk of fire is neutralized by the presence of a flame trap metallic net set at the entry of the inertial filter. The adoption of these hooks involves some losses of load increased compared to the traditional devices, which strikes on the sizing of the fan of extraction. Also the type of ducts (diameter reduced to high speed of slide of the aeriform) and the prevalence of the final device of demolition can impose the adoption of a fan able to practice elevated pressures of aspiration (the under sizing of the fan constitutes the most common error where the planner can incur in the first experiences with this typology of plant). The malodorous exhaust were sent in atmosphere in the centre of a structure contained by the various environments, in such way that even in the days of strong wind it was not possible to reach to a satisfactory dispersion. The kitchen is endowed with five stations of cooking: three endowed with gas stoves and electric plates of various potentiality; one turned only for the cooking of the pasta with six boilers of great dimensions; one devoted to the grills of the meats and the vegetable. Alle cappe preesistenti sono stati applicati dei filtri inerziali, come descritti in precedenza; l’impianto canalizzato di estrazione è stato suddiviso in tre parti, ognuna asservita ad una macchina speciale composta da un filtro elettrostatico e da una sezione di trattamento ad umido con ozonizzazione, completa di ventilatore. Mentre le emissioni maleodoranti delle postazioni dedicate alla cottura su fornelli ed alla bollitura della pasta sono di carattere discontinuo e di bassa intensità , quelle derivanti dalla grigliatura hanno carattere continuativo e sono molto intense e fastidiose. Per questo motivo, alla postazione di grigliatura è stata riservata una macchina (da 6000 m³/h nominali declassata a 4000 m³/h per aumentare il tempo di transito dell’effluente), dotata di un dispositivo supplementare per la nebulizzazione di un agente neutralizzante a base di tensioattivi. Questo perché, in presenza di sostanze odorose dotate di soglia olfattiva molto bassa, occorre operare con rese di abbattimento quasiquantitative, estremamente difficili da ottenere (è relativamente facile abbattere il 95% degli effluenti odorosi ma, per eliminare la sensazione olfattiva di certe sostanze, occorre raggiungere il 99,99% di efficienza, il che, in termini tecnici ed economici, rappresenta un traguardo molto impegnativo). In un ambito industriale si potrebbe intervenire sbrigativamente con un combustore una soluzione incompatibile però con una cucina ospedaliera. Sulle emissioni rimanenti, meno problematiche, sono state impiegate delle macchine di serie da 6000 m³/h , rispettivamente sui due gruppi a fornelli e sulla coppia formata dal gruppo cuocipasta e dal terzo gruppo fornelli. Per consentire il funzionamento di queste macchine per l’abbattimento degli odori, è stato necessario portare in copertura le tubazioni per l’acqua fredda (necessaria al riempimento della vasca d’alimentazione della sezione ad umido), e per l’acqua calda (necessaria per il lavaggio automatico giornaliero del filtro elettrostatico). Le acque di scarico prodotte durante il lavaggio dei filtri e quelle impiegate per il trattamento dell’aria sono state convogliate al preesistente pozzetto di separazione dei grassi dove confluiscono gli altri scarichi di cucina (lavelli, lavastoviglie ecc..). In a industrial circle it could be easily possible to use a burner, an incompatible solution however with a hospital kitchen. On the remaining exhausts, with less problems, have been employed some stock units with 6000 m³/hs, respectively around two stoves groups and on the couple formed by the group pasta cooker and from the third stoves group. To allow the operation of these units for the demolition of the odours, it has been necessary to bring in the coverage floor the pipelines for the cold water (necessary to the filling of the supply tub of the dampness section), and for the hot water (necessary for the daily automatic washing of the electrostatic filter). The discharge waters produced during the washing of the filters and those used for the treatment of the air have been carried to the pre-existing grit of separation of the fats where the other discharge of kitchen meet (sinks, plate washer etc..). In this kind of installations it is necessary to give particular attention to the problems of ordinary maintenance, generally submitted to the same personnel of kitchen, not used to follow complicated prescriptions: in the specific case, the plant has been completely automated with the interventions of washing planned for every night time turning off.
