Questa ricetta prevede l’impiego di due prodotti tipici della Val Borbera e della Val Curone: il formaggio Montebore e la patata quarantina. La patata quarantina é una varietà precoce che si raccoglie a settembre, é a pasta bianca, di medie dimensioni, molto soda, è coltivata tradizionalmente nelle valli del Monte Antola e in alcune altre valli limitrofe. È un prodotto che per la sua consistenza e la poca acquosità della sua pasta é adatto soprattutto alla preparazione di gnocchi. Il Montebore é un formaggio a latte crudo vaccino con aggiunta di un 25% di latte ovino. Questo formaggio, dalla forma caratteristica a cilindri sovrapposti, viene consumato semi-stagionato, in questo caso é meglio impiegarlo fresco. Il condimento di questi gnocchi non é quello di una fonduta classica perché non prevede la fusione del formaggio con aggiunta di tuorli d’uovo; é una salsa calda ottenuta dalla fusione del formaggio con il burro, il latte o la panna ed è addensata con il parmigiano grattugiato. Nella versione tradizionale tale formaggio può essere sostituito con lo stesso Montebore molto stagionato o con tome stagionate. This recipe calls for two products from our area’s Appenine zone, Montebore cheese and the “quarantina” potato from the Curone and Borbera Valleys. The “quarantina” potato is an early maturing species which is harvested in September. Its flesh is white. It is usually of average size and very firm and it is traditionally grown in the valleys at the foot of Mount Antola and the immediate vicinity. Given its compactness and its low water content, it is ideally suited for making gnocchi. Montebore is a cheese made from unpasteurised cow’s milk to which a further 25% in volume of goat’s milk is added. This cheese, which has a characteristic “wedding cake” shape, is best eaten when half matured. However, when used in this recipe, it should be fresh. The sauce used to top the gnocchi is different from the classic Alpine fondue as it does not envisage the addition of egg yolk to the melted cheese sauce. It is obtained by adding butter, milk or cream and subsequently thickened up with grated Parmesan cheese. If we are to follow the traditional recipe to the letter the Parmesan is replaced by fully mature Montebore or mature regional Toma cheeses. Gnocchi di patate al Montebore Potato dumplings with Montebore cheese INGREDIENTS (serves 6) INGREDIENTI (per 6 persone) - 1,5 kg di patate quarantine possibilmente raccolte da qualche mese - 2 tuorli d’uova - un cucchiaio di olio extravergine d’oliva - 250 g di farina bianca - 50 g di burro 66 MONFERRATO CON GUSTO primi piatti - 1,5 kilos of quarantina potatoes (possibly picked a few months earlier) - 2 egg yolks - a spoonful of extra virgin olive oil - 250 g of white flour - 50 g of butter - 180 g of Montebore cheese - several spoonfuls of grated Parmesan cheese - 3 tablespoonfuls of unskimmed milk or whipping cream - salt and pepper - 180 g di Montebore - alcuni cucchiai di parmigiano - 3 cucchiai di latte intero o di panna da montare - sale e pepe Lessate le patate per 30 o 40 minuti (secondo le dimensioni) con la loro buccia. Sbucciatele ancora calde e passatele nello schiacciapatate; appena tiepide, aggiungete i tuorli d’uovo, un pizzico di sale, la farina e il cucchiaio d’olio. Impastate energicamente per pochi minuti e lasciate riposare per 15 minuti. Preparate gli gnocchi dividendo l’impasto in palline grandi come un uovo e formate dei bastoncini della grandezza di un dito. Tagliateli della lunghezza di un paio di centimetri e passateli su una spianatoia di legno esercitando una leggera pressione sui rebbi della forchetta per conferire loro una rigatura che favorirà la cottura. Alcune famiglie preferiscono fare degli gnocchi più grandi e segnarli appena con la pressione di un dito. In questo caso si può ridurre la quantità di farina, ottenendo un prodotto più buono ma che rischia di disfarsi in cottura. Preparate la crema di formaggio tagliando il Montebore a fettine sottili e mettendole in una larga casseruola assieme al burro e al latte o alla panna. Fate fondere il formaggio a fiamma bassissima mescolando continuamente con un cucchiaio di legno descrivendo degli “otto” sino a completo scioglimento. Regolate la densità della salsa aggiungendo, se necessario, poco latte per renderla più fluida o una manciata di formaggio da grattugia per renderla più densa. Lessate gli gnocchi in una grande pentola di acqua salata, prelevateli con una schiumarola appena vengono a galla e versateli nella casseruola ove avete preparato la salsa facendoli insaporire e saltare delicatamente. In this case, the quantity of flour in the recipe may be reduced. This makes them lighter but they may not survive boiling. Prepare the cheese sauce by cutting the Montebore cheese into slender slices and then putting them into a wide saucepan along with the butter and milk or cream. Melt the cheese on a very low flame, taking care to constantly stir in a figure of eight to avoid lumps. Continue stirring until the cheese is completely melted. The thickness of the sauce can be altered according to taste. A little milk will make it more liquid, a sprinkling of grated cheese will make it denser. Boil the gnocchi in a big pan of salted water. Remove them as soon as they come to the surface with a skimming spoon. Put them into the saucepan containing the cheese sauce and stir very gently to coat all the gnocchi.
