COURSE CONTENTS
Viticulture
ECTS 1. Origin and taxonomy of Vitis spp. Botany and anatomy: root system and canopy structure with specific focus
on shoot, leaf, bunch and berry. Phenology and growth cycle. Reproductive cycle: bud differentiation, blooming and
fruit-set. The concept of bud fruitfulness.
ECTS 2. Grapevine varieties and the use of rootstocks in modern viticulture. Grapevine physiology: factors affecting
plant growth, gas-exchange, water relations and leaf-to-fruit balance.
ECTS 3. Berry development and ripening: physiological and biochemical patterns. General overview on vineyard
management: design and establishment, principles of pruning, training systems, canopy and floor management,
mechanical harvesting.
COURSE CONTENTS
Enology
ECTS 4. Wine Chemistry: sugars, acids, neutral and acid polysaccharides, aminoacids and proteins, enzymes,
phenolic substances.
ECTS 5. Wine Microbiology: alcoholic fermentation, malolactic fermentation, wine spoilage and related
microorganisms.
ECTS 6. Winemaking and wine styles: fundamentals for production of white and red still wines, sparkling wines and
passito wines.

Prof. Stefano Poni
Full professor of Viticulture and Chair of the Department of Sustainable Crop Production of the Università Cattolica
del Sacro Cuore of Piacenza (Italy) since 1 November 2014.
He has authored or co-authored 207 papers, 89 of which published in international, refereed journals and 43
edited in international refereed proceedings.
Invited speaker at 31 conferences worldwide, he has been awarded of the "Perdisa" prize in 1994, the “Enotecnici”
Prize in 2004, the Rudolph Hermanns Foundation Prize in 2011. Winner of the “2013 Best Paper Award” from the
American Society of Enology and Viticulture.
Peer reviewer for 21 scientific journals, Associate editor for the Amer. J. Enol. Vitic. since 1 January 2006 and
Associate Editor for the Australian Journal of Grape and Wine Research since 1 July 2014. Currently member of the
national evaluation panel for assessment of the quality of research in Italy for the 2011-2014 time span. He is also
Chair of the Committee supervising the teaching activities at the Agricultural Faculty in Piacenza. Work package
leader in the MODEM_IVM and INNOVINE projects funded within the FP7 European framework.

Dr. Milena Lambri
Full time researcher in Food Science and Technology, Institute of Enology and Agro-Food Engineering, Facoltà di
Scienze Agrarie Alimentari e Ambientali, Università Cattolica del Sacro Cuore, Piacenza (ITALY). Appointed on course
professor of “Advances in Enology” at Viticulture and Enology specialization of the MSc Degree in Agricultural
Science and Technology, Appointed on course professor of "Food sensory analysis" and "Processes of Food
Technology" for the MSc and the first level Degrees in Food Science and Technology, Supervisor and co-supervisor
of thesis for the MSc, the Degrees in Food Science and Technology, in Agricultural Science and Technology, Tutor
for the PhD students of the Agrisystem PhD School. Responsible of research projects on wine proteins, colloids,
polyphenols, and tartrates for optimizing the use and dose of enological adjuvants and for implementing new
plants and technologies in red winemaking. Other researches regard: closures for wine bottles, sensory impacts of
alcoholic beverages and related manufacturing, Development to International Cooperation in developing Countries.
Author of 120 publications including scientific papers, technical and informative articles.
