champagne nv
champagne as a non vintage is all about the maisons ‘house style’. the styles vary by their
vineyard grape selection, blend, wine making process and dosage. never under estimate the
quality of the nv as this is how a champagne house is traditionally judged.

sparkling wines
traditionally made using the 'methodetraditionelle’ (how champagne is made) but referred to
as sparkling wine as the origin of the wine is outside of champagne. these wines are an
expression of their region and territory. there are many fine sparkling wines that rival champagne
quality.

italian sparkling
located in the country's far north east, veneto produces many stunning still wines, including
some very fine sparkling wines known as prosecco di valdobbiadene. these wines are generally
fresh, yet elegant and are a great aperitif. The francia corta rivals many wines from
champagne.

riesling
often mistaken as a sweet wine due to australia’s love of germany's mosels in the 70's, riesling is
one of the great aromatic white varieties of the world. riesling can presents differently
depending on region, age and winemaking, bone dry, through to beautiful sweeter styles.
australia's riesling character trends toward aromas of citrus and florals with a fresh and dry
palate. riesling is wonderfully suited to an array of food types and is also a perfect aperitif.

gewürztraminer
another beautifully aromatic wine that is often ignored by many. gewürztraminer gives up
gorgeous floral characters with luscious musk, lychee and turkish delight finishes. the majority of
good gewürztaminer’s are rich and textural on the palate, but can also be made in a finer
style by some producers. this is a wine that is beautifully suited to savoury and subtly spiced
foods.

pinot grigio & pinot gris
known as the grey grape the difference between these two wines is their origins, grigio from italy
and gris from france. grigios made in australia are similar to those of italy and lean towards a
fresher, lighter, more minerally and at times spritzy wines. whilst gris is traditionally richer and
more textural. pinot gris is quickly becoming one of the most popular all occasion white wines
and are best consumed young unless you look to alsace where the natural acidity and slight
sweetness assists them to age gracefully.

sauvignon blanc & blends
sauvignon blanc has its origins in france, however the most popular wines are being produced
in marlborough, new zealand. popular due to its tropical fruit freshness and easy drinking style
sauvignon blanc is traditionally made as an unwooded wine and best consumed young. some
of the more premium wines use partial barrel fermentation to offer greater complexity, flavour
and richness. sauvignon blanc when blended with semillon offers another refreshing and crisp
wine, the most popular and consistent quality wines come from the margaret river (wa) many of
the worlds great dessert wines are made from sauvignon blanc.

semillon
consistently well made in austral lia and regularly overlooked by most consumers, it is one of the
most underrated wines. semillon when young offers lemon freshness and crisp acidity but when
left to age can show lovely toast and honeyed characters.

chardonnay
revered when great and despised when poor, chardonnay is grown in most regions of the
world. the chardonnay grape shows its best when the expression of the territory, oak and
winemaking creates the perfect harmony and balance. it is vinified in many different styles from
the elegant flinty styles of chablis, to rich buttery mersault. also new world wines that show citrus,
tropical and stone fruit flavours.

rosé
perfect for the many humid queensland days, rosé delivers a lighter red wine that is traditionally
fragrant, with fresh red berry fruits prominent on the palate. although, the fruit sweetness is
traditionally up front each of these producers deliver different styles with great balance and a
beautifully dry finish. rosé can also be a great introduction to the world of red wine.

pinot noir
pinot noir traditionally presents slightly lighter than most reds delivering cherry and red fruit notes
when young. other characters include spice, barnyard and toasty barrel notes which deliver
greater complexity. there is nothing light about the structure of a well made pinot noir as it
gives up power, texture and a length of palate that rivals any red grape variety.

italian red wines
italy offers over 2000 different grape varieties. the reds of the centre and north of italy are the
most famous whilst the southern regions are gathering far greater interest in recent years. a core
of cherry can be seen in many italian reds however it is the regional subtlety in textures and
mouth feel that offers so much interest and enjoyment. many australian producers are now
creating some great examples of many italian varietals.

cabernet & bordeaux blends
most cabernet blends are derived from the bordeaux region in france. they commonly consist
of cabernet sauvignon and merlot, including cabernet franc, malbec and petit verdot. the
respected australian blend of cabernet sauvignon and shiraz, delivers a powerful wine, as
cabernet offers the back bone and structure whilst the shiraz delivers the weight and sweetness
derived from fruit.

cabernet sauvignon
cabernet sauvignon is a small dark grape that commonly shows cassis, violet, chocolate and
mint however it changes from region to region. australia has the coonawarra, margaret river,
and yarra valley to name a few fine regions creating exceptional cabernet sauvignon.
cabernet sauvignon will also age gracefully and for very long periods if made well. other
countries of note that make great cabernet include italy, america, new zealand, chile and
south africa.

grenache & blends
a trio of wines from two regions of australia produce the best grenache, are rhone influenced
red wines. when old vines, great seasons and fine winemaking work as one, the blend of
grenache, shiraz and mourvedre / mataro can deliver stunning unique and beautiful medium
bodied wines of red berry, confectionary and spice.

merlot
merlot still holds claim to one of the great varieties of the bordeaux region and when made well,
delivers a truly great red wine. many offerings from australia are rich and plummy with a soft and
supple mouth feel. when made similar to that of bordeaux the wine is far more intense, complex
and is backed up by supple tannins and fine acidity.

shiraz + syrah & blends
these are still australia's most popular red wines. the rich, ripe and intense characters of barossa,
mclaren vale, heathcote and the hunter valley are still driving these wines. in recent years
however those wanting wines of more subtlety, spice and finesse are enjoying the cooler
climate exponents from the margaret river, pemberton, adelaide hills and hawkes bay to name
a few. although shiraz and syrah mean the same, some producers are using the word syrah to
express their rhone valley winemaking approach.

dessert / sweet wine
dessert wines are very diverse in their styles, from fine and delicate through to rich and unctuous.
whether the wines are late picked or infected with a botrytis mould the wines are created to
display a higher sugar content and a far more intense fruit expression. these wines are best
when dry at the finish and can accompany savory foods, spicy dishes, fresh fruits and some soft
cheeses.
