Happy Hour is the two-hour period before dinner when bars offer
discounted alcoholic beverages. The term originated in the 1920s
in the United States Navy: “happy hour” was Navy slang for the period
of entertainment on-ship. In 1919 the Volstead Act1 prohibited the
consumption of alcohol in the United States, and started the so called
Prohibition era. During that period people held “cocktail hours” or “happy
hours” at speakeasies2, before going to restaurants where alcohol could
not be served. The Volstead Act was repealed3 in 1933 but cocktail
lounges continued the custom of pre-dinner cocktails. “Happy hour”
became a common term around 1960. In the 1980s, bars started to offer
free hors d’oeuvres for Happy Hour, to lower the blood alcohol content4
of customers.
The movement against drunk driving5 and alcohol abuse has curtailed6
the rise of the Happy Hour to some extent7 and recently some cities,
such as Glasgow ad Dublin, have decided to ban8 Happy Hours in order
to reduce binge drinking9. Despite the controversy, Happy Hour is still
alive and well at bars and clubs in all corners of the globe.

is “London dry gin”, and it is produced throughout the UK and the world. Most customers drink gin

Grappa is a fragrant grape-based spirit between 40% and 60% alcohol by volume, of Italian origin. It is made
from the distillation of pomace (or marc)6, that is to say the residue of grapes7 that were pressed for the
winemaking process. It is usually drunk neat8.
Whisky, or whiskey, refers to alcoholic beverages that are distilled from grains and aged in oak casks9. It has
a standard alcohol content of 40% by volume. Different grains are used for different varieties, including
barley, malted barley, rye, malted rye, wheat, and maize or corn.
Note the difference in how the Irish (and Americans) spell “whiskey” (with an “e”) and how the Scottish
spell it – “whisky”.
– Scotch whisky is made in Scotland and it is often referred to as Scotch.
– Bourbon is an American form of whisky made from at least 51% corn (or maize), with wheat and/or rye,
and malted barley. It is aged in white oak barrels for at least two years. Bourbon comes from Bourbon
County, Kentucky. It is usually drunk on the rocks10.

A liqueur1 is a sweet alcoholic beverage – mostly
high in alcohol – often flavoured with fruits,
herbs, spices, or cream. Liqueurs were first
developed by the Christian monks of the Middle
Ages to help the sick2. The monks added secret
combinations of honey, seeds, herbs, spices
or roots to distilled-base spirits.
Liqueurs are suitable for drinking after a meal
or as part of a cocktail.
Popular liqueurs are: Amaretto, Benedictine,
Cointreau, Drambuie, Grand Marnier, Kahlua,
Kummel, Nocino, Pernod, Sambuca, Tia Maria.

• Fruit juices: sometimes freshly squeezed
at the bar (lemon, orange, grapefruit). Also
bottled and canned varieties are available.
• Syrups: made from a fruit base with no
artificial flavours. Used in making cocktails
and for long drinks. Common ones are cassis
(blackcurrant), grenadine (pomegranate),
framboise (raspberry), gomme (white sugar

The term cocktail is now recognized to mean all mixed drinks. A cocktail
is normally a short drink of up to about 10cl while anything larger is called
a ‘mixed drink’ or ‘long drink.’ Read this brief presentation of cocktails and answer these questions:

Cocktails are mixed alcoholic drinks consisting usually of a spirit (brandy, whiskey, vodka,

non-alcoholic cocktails which are suitable for customers who do not want alcohol,
and generally consist of fruit juices and syrups.
According to how they are made, cocktails can be shaken (in a cocktail shaker),

spoon), or built or poured in the serving glass, so that the ingredients do not mix

young successful bartender.
Antonio, we have a few questions to ask you.
What are the differences, between a barman
working in the sixties and today’s generation in
terms of the approach to the profession?
ANTONIO MOTTERAN In the sixties the approach to the
profession and to the clientele was very different.
The professional course was much longer and
young barmen used to work in teams of greater
numbers than today and they were under the
supervision of a highly-qualified and experienced
older barman. That way it was possible to obtain
professional experience that no school was able to
offer at the time. The clientele was very select,
they led a very refined lifestyle and they were real
connoisseurs. Today all this has changed. Also the
working conditions have changed... personnel
restrictions... cost control...
INTERVIEWER I see. You mean that these young
bartenders are not as skilled professionally as they were in the past?
ANTONIO MOTTERAN Exactly.
INTERVIEWER And what would you recommend to young people who want to become
bartenders?
ANTONIO MOTTERAN First of all they should be willing to work very hard, they should study a lot
and attend training courses. If possible, they should work side by side with an experienced
bartender. Moreover, it is indispensable to spend at least three or four years abroad,
not only to learn foreign languages – very useful for this profession – but also to learn
the art of welcoming foreign guests, that are the heart of every country’s tourist economy.

The Globe Theatre is a faithful reconstruction of the open-air playhouse2 designed
in 1599, where Shakespeare worked and for which he wrote many of his greatest

a distinctive history, ambience and customers; so if you visit some great
pubs you’ll be able to absorb the local atmophere.
You work at the Dorchester Bar. Some of your customers ask for your suggestions

Start from Leinster Arms Pub in Bayswater with memorabilia of the Second World War in the
form of pilot shirts, insignia1 and models. Finish your drink and turn left out of the pub.
Turn right into Kensington Gardens, and you’ll pass Café Diana. It is full of photographs of Diana,
Princess of Wales. She lived in Kensington Palace, and sometimes came here with her young sons.
Keep walking along the Bayswater Road. Cross the road using the subway2 of Notting Hill Gate
Tube station. Yes, this is the territory of Hugh Grant’s character in the successful film Notting Hill.
Turn left up Camden Hill Road and you arrive at the Windsor Castle Pub. It is so named because
when this pub was built in the early 19th century apparently you could see Windsor Castle from here. This is a cosy pub with low
ceilings and dark wooden panelling. There is a story that a man exchanged a human skeleton3 for a pint or two of beer here!
Turn left out of the pub, walk along Holland Street and The Elephant and Castle pub is on your left. This is a real London pub.
The panelled walls have fascinating pictures and photographs of imperial India. This is a journalists’pub, too and in the corner
to the left of the bar there is selection of front pages from the Sunday Mail, representing great moments in history – D-day,
and Man’s first steps on the Moon.
On leaving the pub turn left and take the first right. Walk down Wright’s Lane, Marloes Road
