PRIMO PIANO CLOSE UP di Carlo Mocci Raspelli a ruota libera Cinque domande a un famoso gastronomo Raspelli speaking freely Five questions put to a famous gastronome Se ne parla in cento dibattiti, in occasione della pubblicazione delle guide gastronomiche, nelle scuole e nelle università, in tutti i riti della tavola, si coinvolgono dietologi e studiosi, si scomodano professoroni e pubblicitari, produttori e distributori, i media hanno tutti rubriche con cuochi, commentatori ed esperti (su questi ultimi si potrebbe magari discutere…) e non tutti la sanno lunga come vogliono far credere certi ristoratori troppo chiacchieroni che starebbero meglio un po’ più ai fornelli e un po’ meno alla tv o sui giornali: ma qual è veramente la situazione della ristorazione italiana? Edoardo Raspelli è certamente il più noto dei gastronomi italiani, un professionista senza peli sulla lingua, definito di volta in volta il castigamatti, il criticone che bastona la ristorazione, oppure il critico severo ma indispensabile, l’attento difensore dei consumatori e delle cucina italiana, il giornalista-gastronomo che sa dare indicazioni e suggerimenti con i quali un locale può crescere, con intelligenza e umiltà, nella sua offerta di tutti i giorni. Abbiamo approfittato di una antica amicizia per fargli qualche domanda. Qual è la situazione della ristorazione italiana oggi? Sono stato testimone di una storica evoluzione. Quando, nel 1975, il direttore del Corriere d’Informazione, l’edizione pomeridiana del Corriere della Sera di cui ero redattore, Cesare Lanza, mi ordinò di iniziare a scrivere i miei test sui ristoranti, i locali pubblici italiani erano un disastro: pessimi dal punto di vista anche igienico, malinconici da quello gastronomico…Fu, nel 1977, la ventata della Nouvelle Cuisine a svegliare l‘Italia dal torpore. Oggi che la Nouvelle Cuisine viene fatta da tutti, anche se magari non se ne accorgono (cotture più leggere, salse non coprenti, attenzione alle caratteristiche ipocaloriche, piatti esteticamente più ricercati ed equilibrati, piccola pasticceria e pani fatti in casa…) le cose in Italia sono molto migliorate. Le gastronomie locali o del territorio hanno ancora un ruolo e un futuro? I piatti legati a Terra, Tradizione e Territorio (cui Marco Gatti ha aggiunto la quarta T, quella di Talento) ed i locali che seguono questi principi sono in cima ai miei pensieri gastronomici. Però, anche in questo settore, comanda la pubblicità, la grande distribuzione, le marchette e le macchiette: da quando un celebre produttore di vino friulano portò, gratis, in Spagna, da Ferran Adrià un gruppo di cuochi, ristoratori e giornalisti, da quando si sono capiti i meccanismi tecnici di quella cucina che serve a gabbare i gastrodeficienti, sia come clienti sia come chef, ormai in Italia è tutto un vedersi arrivare bicchierini, piattini, cucchiaini, con sopra, dentro ed attorno, spesso, quelle cosucce che il povero Franco Tommaso Marchi avrebbe chiamato”cazzatine”. Cosa manca ai cuochi italiani per essere (tranne poche eccezioni) alla pari dei loro colleghi europei? Solo un po’ più di professionalità in sala, un po’ più di attenzione da parte del giornalismo di casa nostra che guarda troppo all’estero, una ancor più attenta ricerca della materia prima di qualità: la spesa non si fa né con il telefono né con Internet !!! Fino a che punto sono accettabili i piatti esotici, senza il rischio di compromettere la nostra cucina? I piatti esotici lasciamoli fare ai ristoratori ed ai cuochi che mandano avanti ristoranti esotici. A casa nostra parliamo cuciniamo e mangiamo come a casa nostra: è per la nostra cucina tradizionale, per i nostri grandi vini che gli stranieri ci portano un sacco di soldi… 16 There are a hundred debates about it: when new gastronomy guides are published, in schools and universities, in all the rites of the table, dieticians and experts are involved, learned professors and advertising agents, producers and distributors, and all the media have programmes with cooks, critics and experts (about some of whom there could be doubts…) but they do not all know as much as certain restaurateurs, who talk too much and who would do better to spend more time in their kitchens than on TV and in the newspapers, would like to make out: but what really is the restaurant situation in Italy? Edoardo Raspelli is certainly the most well known Italian gastronomist, a professional who says what he thinks, defined sometimes as a bogeyman, the critic who lambastes the restaurant business, and other times as the severe but necessary critic, the shrewd defender of the consumer and of Italian cuisine, the journalist-gourmet who can give indications and suggestions that help restaurants to develop, with intelligence and modesty, what they offer everyday. We took advantage of an old friendship to ask him a few questions. What is the situation of restaurants in Italy today? I have been witness to a historic revolution. When Cesare Lanza, the director of the Corriere d’Informazione, the afternoon edition of the Corriere della Sera of which I was one of the editors, ordered me to begin to write my articles on restaurants, the Italian restaurants at the time were a disaster: terrible also from the hygienic viewpoint, melancholic as regards gastronomy… It was the surge of the Nouvelle Cuisine, in 1977, that woke Italy up from its torpor. Today everyone offers Nouvelle Cuisine, even if perhaps they don’t realise it (lighter cooking methods, sauces that no longer swamp the food, attention given to the calorie content, dishes that are aesthetically refined and well balanced, small pastries and home made bread…) things in Italy have improved a lot. Do the local or territorial gastronomies still have a role and a future? The dishes linked to the Earth (Terra in Italian), Tradition and Territory (to which Marco Gatti has added a fourth T, standing for Talent) and the restaurants that follow these principles are in the forefront of my gastronomic thoughts. But, even in this sector, it is advertising, restaurant chains, tokens and characters that call the tune: ever since a famous producer of wine from Friuli took a group of cooks, restaurateurs and journalists to Spain, free of charge, to Ferran Adrià, ever since the technical mechanisms of that cuisine that can hoodwink the gastromorons, be they customers or cooks, have been understood, the restaurant service in Italy has been swamped with all these little glasses, little plates, little spoons, often holding, containing or surrounded by all those little things that poor Franco Tommaso Marchi would have called “tiny bollocks”. What do Italian cooks lack in order to be (with a few exceptions) on a level with their European colleagues? Just a little professionalism on the floor, a little more attention on the part of our journalists who look abroad too much, and even more careful research for the best raw materials: you can’t do the shopping by phone or Internet !!! How far are exotic dishes acceptable, without the risk of compromising our cuisine? Let’s leave the exotic dishes to the cooks who run exotic restaurants. At home we should talk, cook and speak as we do in our own homes: it is for our traditional cuisine, and for our great wines, that foreigners come here and spend a load of money… La tecnologia in cucina aiuta o condiziona il professionista dei fornelli? La tecnologia può e deve essere un grande aiuto: non rimpiango il mortaio davanti al frullatore, non rimpiango il frigorifero al posto della”conservazione” sotto sale di secoli fa… però non deve essere un giochino… L’altro giorno, in un ottimo emergente ristorante friulano, il Pedrocchino di Sacile, mi hanno portato un pre-antipasto, delle”zucchine destrutturate” (anche la parola è copiata da Ferran Adrià): una buona sfiziosità, ma sarebbe stata non certo peggiore se mi avessero presentato una mousse di zucchine annunciata e fatta come una volta… (C.M.) Does technology in the kitchen help or hinder the professional cook? Technology can and must be a great help: I do not regret the passing of the mortar in favour of the food mixer, nor do I regret the refrigerator that has taken the place of “conserving” in salt, as in the past… but it must not be a game… The other day, in an excellent new restaurant in Friuli, the Pedrocchino di Sacile, I was brought a pre-hors d’oeuvres, “destructured courgettes” (even the word has been copied from Ferran Adrià): a delicious tit bit, but it certainly would have been just as good if they had served me a courgette mousse, named and made in the same way as it used to be… (C.M.) Edoardo Raspelli Pur non essendo stravecchio come purtroppo qualche suo collega, Edoardo Raspelli, vanta un curriculum difficile da riassumere ma che testimonia il suo lungo impegno, la sicura professionalità, la dedizione alla causa della buona tavola. E sempre libero da vincoli, lontano da imposizioni, indifferente alle pressioni, con tutti i rischi connessi che corre sicuro di stare dalla parte del giusto. Che piaccia o meno. Edoardo Raspelli, nato a Milano il 19 giugno 1949; è stato definito" il critico gastronomico più severo d' Italia". Per le sue stroncature è stato querelato più di venti volte da proprietari di ristoranti, albergatori e produttori di vino ma è sempre stato assolto dai tribunali di mezza Italia " per aver svolto correttamente il diritto- dovere di cronaca e di critica". Dopo aver cominciato a scrivere ancora ragazzo sul Corriere della Sera (diretto da Giovanni Spadolini), da lui assunto nel 1971 al Corriere d' Informazione (l' edizione pomeridiana), è diventato giornalista professionista nel 1973. All' inizio si è occupato prevalentemente di cronaca, seguendo gli avvenimenti più importanti degli Anni di Piombo di Milano: accanto a lui, al secondo piano di via Solferino 28, Walter Tobagi, Vittorio Feltri, Ferruccio De Bortoli, Massimo Donelli, Gigi Moncalvo, Gian Antonio Stella, Gianni Mura, Francesco Cevasco... Si è poi specializzato in gastronomia e difesa del consumatore Dal 1977, per i primi quattro anni, è stato tra i responsabili, con Gault e Millau, della Guida d'Italia pubblicata dall'Espresso. È stato il primo responsabile della pagina dei ristoranti del Gambero Rosso, allora supplemento del quotidiano Il Manifesto. In TV, ha cominciato come consulente di Che fai, mangi? su RAI 2 (con Anna Bartolini e Carla Urban, poi sostituita da Enza Sampò). Ha condotto con Anna Bartolini la trasmissione televisiva La Buona tavola su Odeon TV; su RAI 2, con Carla Urban, il programma di educazione alimentare Star bene a tavola, ideato da Nichi Stefi. Ha collaborato anche al terzo canale della RAI, a Il Buongiorno di Radio 2 di Leda Zaccagnini, alla rubrica Eat Parade del TG2 (conduttore Bruno Gambacorta). È stato tra i conduttori di Piacere RAI 1 con Simona Marchini, Piero Badaloni e Staffan de Mistura. Ha partecipato, in prima serata, alla domenica, su RAI 2, al programma Although he is not so terribly old as some of his colleagues unfortunately are, Edoardo Raspelli can boast of a curriculum that is difficult to sum up but which testifies to his long-standing effort, his undisputable professionalism, his dedication to the cause of good cuisine. He is always free from restraint, far from impositions, indifferent to pressure, with all the risks that this involves, confident of being in the right. Whether others like it or not. Edoardo Raspelli, born in Milan on the 19th June 1949, has been defined as "the most severe food critic in Italy". He has been sued for his savage criticism more than twenty times in half the courts of Italy by the proprietors of restaurants, hotels and wine producers, but he has always been absolved, "for having carried out in a correct manner his right and duty of reporting and commenting". He started writing for the Corriere della Sera when he was still a boy, in 1971, when Giovanni Spadolini (who edited the paper at that time) took him on to work for the Corriere d'Informazione (the afternoon edition) and he became a professional journalist in 1973. At first he dealt prevalently with news, reporting on the most important events of the years of terrorism in Milan: together with him, on the second floor of Via Solferino 28, there were Walter Tobagi, Vittorio Feltri, Ferruccio De Bortoli, Massimo Donelli, Gigi Moncalvo, Gian Antonio Stella, Gianni Mura, Francesco Cevasco… Then he specialised in gastronomy and consumer protection. From 1977, for its first four years, he was one of the editors, together with Gault and Milau, of the Guida d'Italia published by Espresso. He was the editor of the Gambero Rosso page on restaurants, which was then a supplement of the daily Il Manifesto. On TV he started as a consultant for Che fai, mangi? (What are you doing, eating?) on RAI 2 (with Anna Bartolini and Carla Urban, then substituted by Enza Sampò. He conducted the television programme La Buona Tavola (The Good Table) together with Anna Bartolini, on Odeon TV, and on RAI 2, with Carla Urban, the programme on food education Star bene a tavola (Well Being at the Table), created by Nichi Stefi. He also collaborated with the third channel of the RAI on Leda Zaccagnini's Il Buongiorno di Radio 2 (Good morning from Radio 2), and on the daily feature of the TG2 (the RAI 2 News) Eat Parade (conducted by Bruno Gambacorta). He was one of the conductors of Piacere RAI 1 (Pleased 17 Fenomeni, con Piero Chiambretti, Aldo Busi, Giampiero Mughini. Tra le sue iniziative, la più singolare fu quando riuscì a farsi assumere in incognito, come cameriere, in un albergo della Riviera Romagnola. Interpretando, appunto, un cameriere, ha partecipato al film di Piero Chiambretti, “Ogni lasciato è perso”. Dal 1996 fino all’edizione 2001 è stato curatore e supervisore della Guida dei ristoranti dell’Espresso, firmando anche la rubrica Il Goloso. Le sue critiche su ristoranti, alberghi e sui modelli alimentari appaiono tra l'altro sul quotidiano La Stampa, su periodici come Lo Specchio, Papillon. Ogni settimana una sua rubrica di commento appare anche sul Quotidiano Nazionale, il dorso comune a tre quotidiani: Il Giorno, Il Resto del Carlino, La Nazione. Per La Stampa ha pubblicato recentemente un libro, raccolta dei pezzi apparsi sul quotidiano, dal titolo Il Raspelli. Tutte le domeniche su Rete 4 conduce, per il quinto anno, con Gabriella Carlucci, Melaverde, uno dei programmi di maggior successo della Rete, con una media, in questa stagione, di oltre l’11 % di share, più di 1.700.000 spettatori e punte di oltre i 2.000.000. Dal 1995 il suo nome appare nel Who's Who in Italy. La Reale Mutua Assicurazioni ha stipulato per lui una polizza unica al mondo: il gusto e l' olfatto di Raspelli sono coperti per 500 mila euro e ne fanno “l'uomo dal palato d'oro". Nominato da Pecoraro Scanio, riconfermato da Gianni Alemanno, è consulente del ministero delle Politiche agricole quale componente del Comitato per la tutela e la valorizzazione del patrimonio alimentare italiano. È anche membro del Comitato scientifico di Qualivita, ente per la valorizzazione dei prodotti a Denominazione d’Origine Protetta e Indicazione Geografica Protetta (con lui, Paolo Massobrio, Giorgio Calabrese, Massimo Montanari, Carlo Cambi). Curiosità su Edoardo Raspelli RASPELLI E MATHAUSEN: Edoardo Raspelli da bambino era così magro che veniva chiamato Mathausen, dal nome del famigerato campo di concentramento nazista (adesso, dopo una serie di diete e un infarto, è “sceso” a 104 - 105 chili). A PARIGI IN AUTOSTOP: A 16 anni, Edoardo Raspelli andò in autostop da Milano a Parigi ed andò a dormire per dieci giorni all’ostello della gioventù a Porte d’Italie. Con i soldi delle mancette settimanali, un mezzogiorno andò a mangiare dal mitico Lasserre a Champs Elisées e la sera successiva alla celeberrima Tour d’Argent. La spesa? 29.000 lire da una parte, 33.000 dall’altra (moltiplicate per 30 per avere la cifra di oggi). FACCINO NERO 1: Nel 1975, l’allora direttore del Corriere d’ Informazione, Cesare Lanza, lo obbligò ad occuparsi di ristoranti:”Vai, mangi, paghi che poi ti rimborsiamo noi, ma voglio anche i ristoranti cattivi, quelli dove si è serviti male e si mangia peggio…”. Così nasce il ”faccino nero”, un pezzo incorniciato, contraddistinto da un viso di disgusto di color nero, dedicato al ristorante pessimo della settimana. FACCINO NERO 2: Non a tutti piacque il “faccino nero” del Corriere d’Informazione, il riquadrato ideato da Edoardo Raspelli e dedicato al ristorante peggiore della settimana. Una ristoratrice (o un ristoratore?) del centro di Milano gli fece trovare sotto casa una corona da morto con la scritta “Al nostro caro Edoardo”. Era il 1 maggio 1979. Edoardo Raspelli rispose sulla prima pagina del Corriere d’Informazione: “Volevo ringraziare chi mi ha mandato la corona di fiori ma anche rassicurarlo: la sua cucina è sicuramente fetente ma non mortale”. IL PIATTO PREFERITO: Edoardo Raspelli adora i salami, i formaggi stagionati, tutti i crostacei, in particolare i gamberi di grosse dimensioni (crudi o in padella) e la cassoeula, il bottaggio, l’umido di ogni pezzo possibile del maiale cucinato con le verze. IL VINO PREFERITO: Edoardo Raspelli adora i grandi vini bianchi messi ad invecchiare nelle barrique, che gli permettono un abbinamento ideale dagli antipasti fino alle carni leggere. Poi, un goccio di vino rosso. Non ama i vini dolci: sui formaggi preferisce un grande rosso e sui dolci acqua o un superalcolico. IL PIATTO DETESTATO: Edoardo Raspelli detesta i pomidori gratinati (gli ricordano le pensioncine della sua infanzia al mare), le rape rosse, il fegato di vitello grigliato. ACQUA DETESTABILE: Edoardo Raspelli adora l’acqua, ne beve in grande quantità, in particolare la minerale con Ph alto, tendente all’8,ideale contro… gli acidi urici. Detesta l’acqua filtrata, offerta oggi da molti ristoranti e spacciata come “minerale”. RISTORANTE IDEALE: Per Edoardo Raspelli è piccolo, romantico ma non galeotto, mandato avanti da una famiglia intera, con una cucina che si ispiri prevalentemente a Terra Tradizione e Territorio, con un servizio buono ma non opprimente, con un’atmosfera elegante ma, anche, cordiale, raccolta. ALBERGO IDEALE: Di tono, elegante, immerso nel verde, tranquillo, intimo, anche mandato avanti da una famiglia, con angoli dove stare “appartati” e nascosti, non troppo piccolo (detesta i Bed and Breakfast ed il patron o uno sconosciuto che fanno colazione al suo stesso tavolo…), ma raccolto. 18 to see you RAI 1) with Simona Marchini, Piero Badaloni and Staffan de Mistura. He has taken part in the programme Fenomeni (Phenomona), early Sunday evening on RAI 2, with Piero Chiambretti, Aldo Busi, Giampiero Mughini. The most unusual of his initiatives was when he managed to get a job, in incognito, as a waiter in a hotel on the Riviera Romagnola. Taking the part of a waiter, in fact, he also acted in Piero Chiambretti's film, “Ogni lasciato è perso” (All left is lost). From 1996 until the 2001 edition he was the editor and supervisor of the Espresso Restaurant Guide, and also wrote personally the regular column Il Goloso (the Gourmand). His criticisms on restaurants, hotels and eating habits also appear in La Stampa, in magazines like Lo Specchio, and Papillon. Every week there is also an article of his in the daily paper Nazionale, the supplement of all three daily papers Il Giorno, Il Resto del Carlino, La Nazione. He has recently published a book for La Stampa, a collection of articles that have appeared in the daily newspaper, entitled Il Raspelli. Every Sunday on Rete 4 he conducts, for the fifth year now, together with Gabriella Carlucci, Melaverde (the Green Apple), one of the channel’s most successful programmes, with an average audience share this season of over 11%, over 1,700,000 viewers with peaks of over 2,000,000. Since 1995 his name has appeared in Who's Who in Italy. He has stipulated a policy with the Reale Mutua Assicurazioni Company, which is unique in the world: Raspelli's sense of taste and of smell are covered for 500 thousand euros, making of him "the man with the golden palate". Nominated by Pecoraro Scanio, re-confirmed by Gianni Alemanno, he is consultant to the Ministry of Agricultural Policies as a member of the Committee for the protection and valorisation of Italy’s alimentary heritage. He is also a member of the Scientific Committee of Qualivita, the organisation for the valorisation of products of Protected Denomination of Origin and of Protected Geographic Identification (together with Paolo Massobrio, Giorgio Calabrese, Massimo Montanari, Carlo Cambi). About Edoardo Raspelli RASPELLI AND MATHAUSEN: Edoardo Raspelli was so thin as a child that he was nicknamed Mathausen, after the infamous Nazi concentration camp (now, after a series of diets and a heart attack, he has “reduced” his weight from 104 to 105 kilos). HITCH-HIKING TO PARIS: When he was 16 years old, Edoardo Raspelli hitchhiked from Milan to Paris where he slept in the youth hostel at Porte d’Italie for 10 days. With what he had saved up from his weekly pocket money, he went one lunch time to the mythical Lasserre in the Champs Elisées and the following evening to the renowned Tour d’Argent. The cost? 29,000 liras for one, 33,000 for the other (multiply by 30 to get the equivalent sum today). FACCINO NERO 1 (THE LITTLE BLACK FACE): In 1975, the then editor of the Corriere d’ Informazione, Cesare Lanza, made him write about restaurants. “Go, eat, pay, and we’ll reimburse you, but we want the bad restaurants, too, where the service is bad and the food worse…” This was how the “faccino nero” began, a framed article, distinguished by a disgusted black face, dedicated to the worst restaurant of the week. FACCINO NERO 2: Not everyone appreciated the Corriere d’Informazione’s “faccino nero”, the framed article thought up by Edoardo Raspelli and dedicated to the worst restaurant of the week. The owner of one restaurant in the centre of Milan had a funeral wreath with the words “To Our Dear Edoardo” delivered to his house. It was the first of May 1979. Edoardo Raspelli replied on the first page of the Corriere d’Informazione: “I would like to thank the person who sent me the wreath of flowers, but also to reassure him: his cooking certainly stinks, but it is not deadly”. HIS FAVOURITE DISH: Edoardo Raspelli loves salamis, seasoned cheeses, all shellfish, but especially large sized red prawns (raw or fried), the “cassoeula” or “bottaggio”, and a stew made from every possible part of the pig cooked with Savoy cabbage. HIS FAVOURITE WINE: Edoardo Raspelli adores the great white wines aged in oak casks, which are a perfect accompaniment to hors d’oeuvres on up to the light meats. Then a drop of red wine. He doesn’t like sweet wines: with cheese he prefers a great red and with desserts, water or a high-proof liquor. THE DISH HE HATES MOST: Edoardo Raspelli hates tomatoes au gratin (they remind him of the little seaside boarding houses of his childhood), red turnips, grilled veal liver. WHICH WATER HE HATES: Edoardo Raspelli loves water, and drinks great quantities, especially mineral water with a high Ph, even as much as 8, ideal against… uric acid. He hates filtered water, offered today in many restaurants and passed off as “mineral”. HIS IDEAL RESTAURANT: For Edoardo Raspelli it is small, romantic but not seductive, run by the whole family, with a cuisine that is inspired prevalently by the Earth, Traditions and Territory, with good service but not oppressive, with an atmosphere that is elegant but also friendly and welcoming. HIS IDEAL HOTEL- High class, elegant, immersed in the green countryside, quiet, personal, also family run, with corners where the guest can get away from everything and hide himself, not too small (he hates Bed and Breakfasts and having breakfast at the same table as the owner or a complete stranger), but snug.
