Auguri e Buon Lavoro La Cantina Italiana “Prima i conserva e poi si gode” L ast May we asked our members to answer a simple question, “What was in your father’s (grandfather’s) cantina?” and we received dozens of lists from members ready to share the treasures from their traditional storerooms–all of them proud and delicious. Our forefathers who were poor “contadini” walked out to the land, worked dawn to dusk; they harvested and preserved the fruits of their backbreaking efforts. Our ancestors were workers: some were “analfabeti, ma saggi, sempre laboriosi.” Their work was relentless, their pleasures simple. Frugality was paramount, nothing went to waste. The cantina was a treasury, a storeroom of “necessità e delizie”; it was filled with the work of human hands, there was a prudent storing away of what would be savoured in due time in another season. The contents of the “magazzino” was not only the means to nourish and enrich the table, it also held the spirit and bounty for the family. “I piatti casalinghi tradizionali sono di buon gusto e la cucina casareccia è ineguale per mondo.” “Vini, salumi, olio d’oliva, in abbondanza nella cantina.” I remember my nonna marchigana telling me: “Berto, va giu bass e pigl’ il vino del cantin.” My grandparents’ basement has a Herculean, Volcanic furnace with enormous tentacles a coal basin and then the cantina. I knew where to go, to that door behind which there were such exquisite, sharp and familiar odours. “Nella chiesa si trovano i santi. Nella cantina si trovano tante abbondanze della tavola.” You know so well that there is an incomparable pride in each family’s wine: “La vita è troppo breve, bere vini mediocri, ecco provate il mio, perche è ottimo, vero?” Allora, enjoy the following answers; they’re not listed in any order of importance or preference, all are posted with interest and respect to honour the place of our two most important household rooms: la cantina e la cucina! Angelo Venditti, suo nonno, Fortunato Iorio (Molisani): Vino, winter apples, potatoes, jars of sausages sott’olio, prosciutto, almonds dried olives. John Foglietta, nonno Pamfilio Ventresca: Vino, prosciutto, cheese, potatoes. Lewis Merolli: Tomatoes, bottled and jarred; canned peaches. Lou Filice, presidente passato (Abruzzese): Vino, alcohol, jarred tomatoes, beets, eggplant, peppers, olives, sausage, cheese, soppresatta, capocollo, prosciutto. Robert Skaljin and Guido DiCesare presidenti egregi passati: Vino è sempre il re della cantina; conserva e confettura. cont’d next page La Cantina Italiana cont’d “Prima i conserva e poi si gode” Carmine Filice, presidente passato (Abruzzese): Clay pot of vinegar, tomatoes on the vine, demijohn of wine, cigars, barrels of wine, torchio per uva. Teresa Pagliaro: Salsa, pickled zucchini, peaches, jam, sausage, prosciutto, capocollo, espresso, damigana di vino. Livio DiNello e padre (Abruzzese): 3 wooden barrels each 3000 litres, cement tank of 400 litres, 3 copper containers each 25-30 litres, demijohns and open wooden barrels. Joseph Santaguida: Salsa di pomidoro, peaches in jars, cracked olives, vino. Frank Attardo (Siciliano): Vino, aceto, “Unico” pasta in big boxes, fresh and dried sausages, Pop - Diamond beverages. Joseph Savelli cousin Ettore Silvi (Lazio): Vino, stainless steel vats of olive oil, garlic, onions, farm tools and trailer for olive grove in San Biagio, Nerola Sabrina. Larry Di Ianni (Abruzzese): Vino, preserves, sausages, fruit, cheese. Pauline Hewak grandfather’s cantina: Wine, root beer, cookies, bottled tomatoes. Louis Firmi and Enrico Firmi: Wine and salsa di pomodori. Al Genesee: Wine, tomato sauce, peppers in jars, cheese, sausage, salami, olive oil. Mauro Di Pietro: Vino, pomodori, salsicce patate, salami, frutta, prosciutto. Emilio Ventresca: Vino, pomodori, prosciutto. Eddy Della Maestra: Salami, pancetta, vino, prosciutto, grappa. Rinaldo Agostino Sartor and Jack Sartor: Wine tomato paste, equipment for fermentation. Joe Monachino, Pres. Grande Consiglio: Olives, wine, almonds. Luciano Cavallin, Trevisano incomparabile: Salami, prosciutto, pancetta, vino; in winter we would bring in empty grape cases, earth-filled to plant radicchio; cheese for aging. The “Cantina” is a place where, pride, tradition, hard work and prudence reside. – • A statue of “La Moadonna” • A rosary • A portrait of “Santo Padre Pio” • A framed reminder: “Del vino, sempre meglio bere che invecchiare.” A second edition of La Cantina: “benpresto.” Ci allegriamo in fraternità Lucas Costanzo e Bob Savelli. This list is offered in Italian for the beauty of its sounds for its poetry. The only term you might want to be clearly aware of : “Coglioni di mulo” - Testicles of the mule. A well-known, much used term in Norcia, Lazio, Italy– a type of pork sausage in the form of … Reproduce the list at your preference, most of the v=words would be found in a “cantina or cucina.” -Bob Savelli R a l p h O l i v i e r i , B rok e r O w n e r Cel l 9 0 5 5 1 5 7 7 7 1 | ral ph@ m l it r u p a r t n e r s .c a C a r m i n e C a l v i s e , CAI B , CR M , B r o k e r O w n e r cel l 9 0 5 5 1 7 3 0 4 0 | carm i ne@ mlit r u p a r t n e r s .c a 271 Queenston Road, Hamilton, Ontario L8K 1G9 T. 2 8 9 6 6 7 0 0 2 5 | F. 9 0 5 5 4 5 8 1 1 9 w w w. m l i t r u p a r t n er s . ca Photo Gallery Summer Travel 566 Rennie Street Hamilton, Ontario L8H 3P5 Event Calendar For those wishing to help with the following events, please see your Executive.
