THIRTY YEARS AGO
THE NONINOS
CREATE
THE GRAPE DISTILLATE
It is 1984, the Noninos mark
a new turning point in the world
of distillation: they create
ÙE® Grape Distillate distilling the
skin, the pulp and the juice of grapes
in a single operation.
The Ministerial Decree of 20th October 1984,
for the Authorization to the production
of the Grape Distillate is issued
upon specific request of the Noninos.
As homage to their land they call it ÙE
(Grapes in the language of Friuli).
To celebrate the Thirtieth Anniversary of this
innovation the Nonino Family draws from its
ageing cellars

GRAPPA
It is the oldest and most traditional distillate
of Northern Italy; it is obtained distilling the
solid part of grapes: pomace.
1ST DECEMBER 1973
Benito and Giannola Nonino, respecting the
tradition, revolutionize the way of producing,
and introducing Grappa in Italy and
throughout the world. They create single
varietal Grappa, Monovitigno® Nonino,
distilling the pomace of Picolit grapes separated
from the other. The success is so great to
induce Italian and foreign distillers to follow
the Nonino model.

The Nonino Distilleries, unique in
the world, consist of five Artisanal
Distilleries, each with 12 batch
steam stills for the production of
the inimitable Nonino Distillates,
respecting the Tradition and the
rhythms of true craftsmanship.
The pomace and the grapes are
destalked and fermented under
vacuum at controlled temperature
in stainless steel tanks and they are
distilled immediately after
fermentation, at the same time of
the harvest.
The batch distillation takes place
very slowly, with head and tail
cutting, to allow the volatile
components, responsible for the
fragrances, a proper evaporation
and consequent condensation
preserving the precious
organoleptic characteristics of the
vine variety chosen.
Ageing cellars
Since 1952 the Ageing Cellars of
the Nonino Distilleries have housed
small barrels made of different
kinds of wood. Today they boast
1855 in Nevers, Limousin,
Grésigne and ex-Sherry oak, Acacia
and wild Cherry wood, which
preserve the precious Nonino
distillates: Grappa and ÙE®.

GOOD WINE
Picolit, Picolit, what grappa!
Giannola and Benito Nonino, in Percoto, on December 1st, distilled Picolit Grappa.
Good Lord, if I said I was not deeply moved, I’d lie!
(...)
At about noon on that December 1st (…) grappa got out of the still, crystalline.
I held out the glass, collected it, looked at it in transparence, up to the light, joyful just
because it lived. I warmed it long in the warmth of my hand. For long I breathed its
fragrance: exhausted and sharp, at the same time, to remind – more than illumination,
a lightning – acacia honey, ripe quince apples, and figs just picked up.
I closed my eyes and let some drops slip in my mouth.
Then I wormed it, long more, between tongue and palate: grappa spread and
invaded me.
During slow, enchanted minutes it told me again, in the rigors of winter, the summer
tale of acacia honey, ripe quince apples, and just picked up figs.
