Gin was born around the middle of the 17th century in the Netherlands. It was developed by Doc. Francisco Della Boe (also known as Franciscus Sylvius) of Leiden University as a medicine to cure Dutch soldiers who fell sick with fever in the East Indies. The production of gin eventually flourished and reached its peak in England. This was the result of a ban on imported spirits that was lifted in 1690 by William III to prevent his French foes from selling their cognac in Britain and therefore encouraging the use of spare cereal supplies to produce liquor. Gin became so popular that it was even given to workers as a part of their salaries, but this policy soon had dramatic social consequences. Alcoholism among the poor became endemic posing a threat to public order. The British government tried unsuccessfully to address the problem by issuing the “Gin Acts”. Vodka has its origin in Eastern Europe. As its creation is contended between Poland and Russia, the noun vodka can be found in many Slavic languages( “вода” [voda] in Russian and “woda” in Polish) as an abbreviation for several synonyms of the word “water”, thereby indicating a limpid, colourless drink. When Lenin seized power in 1917 during the Russian Revolution , aristocracy was forced to flee the country in order to escape the communist purge. Many of those noblemen who mastered the art of distillation moved to France. Piotr Smirnoff, whose family’s distillery was established in 1860 and confiscated by the Bolsheviks, made his way through Turkey and reached Poland, where he re-established his distillery before moving to Paris in 1925. Many other Russian noblemen shared the same fate, like Romanov, count Keglevich and the Prince Nikolaj Alexandrovich whose family owned the Eristoff distillery since 1806. chf RUM SELECTION 4.5 cl 1.5 fl oz. Rum’s recipe is an ancient one. The practice of making drinks out of fermented sugarcane is believed to have originated in distant times in China or India. For example, the Malayan “brum” has been existing for thousands of years and, in a document dating back to the 14th century, the traveller Marco Polo also reports of a delicious “sugar wine” that was offered to him during his stay in a location corresponding to the modern Iran. The first distillation of rum in its modern substance took place in London around the 15th century using Indian sugarcane that was then replaced with another kind brought to England from the New World. As for the Americas, the first distillation took place in the Caribbean in the 17th century. The slaves working in the plantations were the first to discover that alcohol could be produced from fermented molasses, which are a by-product of sugar refinement. There are no accurate sources concerning the first production of whiskey and its very same origin is the object of a long-running rivalry between Scotland and Ireland. The trade of whiskey dates back to the 15th century even though a conventional date of 1494 is set as a connection to the Scottish monk John Cor. There is plenty of reference to Scotch Whiskey in Scottish historical documents. In 1707, whiskey became the symbol of the American call for independence from the United Kingdom. During a 150-year long ban in Scotland, whiskey has however been produced in the woods by night and that is why it is also known as “moonshine”. At the present day, whiskey is the top liquor in the world both in terms of consumption and production, with an ever-growing market volume (1 million bottles per year approx.). Cognac is a French brandy produced from white wine distillation which quality requirements are set by Appellation d’Origine Contrôlée (AOC – Controlled Designation of Origin). The original cognac is only produced in the regions of Charente in Western France, and in a small portion of Dordogne and Deux-Sèvres and it is named after its most important trade market. The first accounts concerning its production date back to 1622, when Dutch merchants who used to buy salt and wine in the region by sailing the river Charente. They taught the locals how to make wine, as it would easily go bad during their long travels by sea to reach Northern Europe. Tequila and Mezcal are spirits originally produced in Mexico from distilled agave. Differently from the widely known Tequila, Mezcal is obtained by using the central part of the plant only. 40 135 15 JOSÈ CUERVO REPOSADO (Mexico) 10 DON JULIO REPOSADO (Mexico) 15 DON JULIO BLANCO (Mexico) 15 MEZCAL MONTELOBOS (Mexico) 15 chf BIRRE chf Birra Poretti, 7 Luppoli, Stagionale / A rotazione Poretti, 7 Hops, Seasonal BEER L’Ambrata, Invernale, 33 cl (Grad. (AVB 11.5°) La Chouffe Blonde, 33 cl (Grad. Alc. 8,0°) 11 fl oz. (AVB 8.0°) 9 La Chouffe Blonde, 75 cl (Grad. Alc. 8,0°) 25 fl oz. It presents itself in an elegant opaque gold shade with an orange glare, best appreciable in the backlight. This beer offers a wide range of fragrances: a spicy tone ( coriander, nutmeg, clove), a citrusy, flowery scent ( orange zest) and a sweet reminiscence of fudge. A palatable balance between the warmth given by its considerable strength and the hop’s bitterness results in a fruity but sour aftertaste. 9 Kwak, Biere du Cocher, 75 cl (Grad. Alc. 8,5°) 25 fl oz. . Kwak’s distinctive feature is an intense, light amber tone and a creamy foam. It presents a delicate fruity malt aroma with a spicy twist of coriander and hop, eventually revealing an earthy smell and a subtle banana fragrance. An enjoyable sweet nougat top note leads the way for a base tone with a reminiscence of caramel and liquorice. Chimay Bleue, 33 cl (Grad. Alc. 9,0°) 11 fl oz. (AVB 9.0°) 9 Chimay Bleue, 75 cl (Grad.
