Gancho de metal para extraer la pala ŸŸŸ ITALIANO PRESCRIZIONI DI SICUREZZA Il presente libretto è parte integrante dell’apparecchio e deve essere letto attentamente prima dell’utilizzo poiché fornisce importanti indicazioni riguardanti la sicurezza d’installazione, d'uso e di manutenzione. Conservare quindi con cura. • Dopo aver tolto l’imballaggio assicurarsi dell’integrità dell’apparecchio. In caso di dubbio non utilizzarlo e rivolgersi a un centro assistenza autorizzato da TERMOZETA. • Non lasciare gli elementi dell’imballaggio (sacchetti in plastica, polistirolo espanso, chiodi, ecc.) alla portata di bambini o persone con capacità mentali ridotte in quanto potenziali fonti di pericolo. • La sicurezza elettrica di questo apparecchio è assicurata soltanto quando lo stesso è correttamente collegato a un efficace impianto di messa a terra come previsto dalle vigenti norme di sicurezza elettrica. Termozeta non può essere considerata responsabile per eventuali danni causati dalla mancanza di messa a terra dell’impianto elettrico. • Prima di collegare la spina alla presa di corrente verificare che la tensione di funzionamento dell’apparecchio corrisponda a quella della propria abitazione. In caso di dubbio, rivolgersi a personale professionalmente qualificato. • Si sconsiglia l’uso di adattatori, prese multiple e prolunghe. In caso di necessità utilizzare esclusivamente dispositivi omologati e conformi alle vigenti norme di sicurezza accertandosi che siano compatibili alla potenza dell’apparecchio. In caso di dubbio, rivolgersi a personale professionalmente qualificato. • Qualsiasi installazione non conforme a quanto specificato può compromettere la vostra sicurezza e fa decadere la garanzia. • L’apparecchio è destinato esclusivamente ad uso domestico per la preparazione e la cottura di cibi. • Per motivi di sicurezza fate attenzione a: - non usare l’apparecchio a piedi nudi e con mani o piedi bagnati - non usare l’apparecchio al di fuori dell’ambiente domestico - non lasciare l’apparecchio esposto ad agenti atmosferici (sole, pioggia, ecc.) - l’apparecchio non è destinato ad essere usato da bambini o persone ŸŸŸ ITALIANO con capacità fisiche o mentali ridotte oppure con mancanza di esperienza, a meno che non beneficino di sorveglianza o istruzioni riguardanti l’uso - non tirare mai il cavo di alimentazione o l’apparecchio stesso per scollegare la spina dalla presa di corrente - non immergere mai l’apparecchio in acqua o in altri liquidi. • Il cavo di alimentazione dell’apparecchio non deve essere sostituito dall’utente. In caso di necessità rivolgersi a un centro assistenza autorizzato da TERMOZETA o a persone professionalmente qualificate. • In caso di guasto e/o di cattivo funzionamento dell’apparecchio, spegnerlo e non manometterlo. Per l’eventuale riparazione rivolgersi a un centro assistenza autorizzato da TERMOZETA e richiedere l’utilizzo di ricambi originali. • Al termine del ciclo di vita rendere inoperante l’apparecchio tagliandone il cavo di alimentazione dopo avere scollegato la spina dalla presa di corrente. Per lo smaltimento attenersi alle norme in vigore nel proprio luogo di residenza. • Termozeta non può essere considerata responsabile di eventuali danni a persone, animali o cose causati da un’errata installazione o derivanti da un uso improprio, erroneo o irragionevole. ATTENZIONE! SUPERFICIE CALDA Durante il funzionamento l’apparecchio può raggiungere temperature elevate. Evitare di toccarlo a mani nude. Per evitare il rischio di scottature si consiglia l’uso di guanti da cucina. ATTENZIONE! Durante la fase di cottura, potrebbe generarsi del vapore. È, quindi, del tutto normale che fuoriesca del vapore attraverso le feritoie di sfiato del coperchio. - Non ostruire le feritoie di uscita dell’aria poste nelle parti laterali e sul coperchio dell’apparecchio. - Lasciare intorno alle pareti laterali e alla parete superiore dell’apparecchio spazio sufficiente per la dissipazione del calore. - In nessun caso l’apparecchio deve essere incassato o inserito in un mobile. - Prestare attenzione a non toccare le parti in movimento. - Si consiglia di non lasciare l’apparecchio collegato alla rete elettrica quando inutilizzato. ŸŸŸ ITALIANO ISTRUZIONI PER L’USO AL PRIMO UTILIZZO • Mettere uno dei due cestelli nell’apparecchio e premere finché il cestello si inserisce in posizione Fig.1 (vedi fig.1). • Mettere le due palette impastatrici rel ati v e al c es t el l o c he si st a utilizzando sugli alberi presenti sul fondo del cestello (vedi fig.2). • Chiudere il coperchio. • Inserire la spina nella presa a muro. S i s ente un breve bi p e l a retroilluminazione del display si accende per circa 30 secondi. Il display mostra Programma 1, ora 3:20 e temperatura 180°C. I due punti (:) fra le ore e i minuti non lampeggiano per dimostrare che l’apparecchio non Fig.2 è in funzione. • Premere ripetutamente il pulsante MENU fino a che il display mostra il programma 8 (modalità COTTURA). • Premere il pulsante AVVIO/ARRESTO e lasciare che l’apparecchio cuocia per circa 10 minuti. I due punti (:) nella visualizzazione dell’orario lampeggiano per dimostrare che l’apparecchio è in funzione. Il display dell’ orario es egue il conto al la rovescia. • Dopo circa 10 minuti, premere il pulsante AVVIO/ARRESTO per più di due secondi per interrompere il programma. Si sente un bip che indica che il programma è stato arrestato. Lasciare raffreddare l’apparecchio. • Estrarre il cestello dall’apparecchio. • Pulire il cestello e le palette impastatrici e asciugarli completamente. ŸŸŸ ITALIANO Vedere il paragrafo “Pulizia e manutenzione”. • Ripetere questa procedura con il secondo cestello. ATTENZIONE L’apparecchio potrebbe emettere un po’ di fumo e un odore sgradevole quando viene acceso per la prima volta. Assicurarsi che l’apparecchio abbia una ventilazione sufficiente. MESSA IN FUNZIONE • Porre l’apparecchio su una superficie piana e solida, per evitare che cada. • Scegliere il cestello che si desidera utilizzare con le relative palette impastatrici. • Mettere le due palette impastatrici sugli alberi sul fondo del cestello scelto. Prima della cottura, si consiglia di ungere gli alberi del cestello con del burro o dell’olio. In questo modo, la rimozione del pane dalla pala impastatrice risulterà più facile. AGGIUNTA INGREDIENTI • Pesare gli ingredienti necessari per la ricetta. Non riempire mai l’apparecchio con una quantità superiore a quella massima (un totale di massimo 1130 g (2.5 lb.) per il cestello singolo o 450 g (1 lb.) per ciascuna metà del cestello doppio); altrimenti la pasta fuoriesce dal cestello. • Aggiungere gli ingredienti nel cestello uno alla volta. Iniziare versando acqua o altro liquido nel cestello. Poi aggiungere la farina e, a seconda della ricetta, aggiungere zucchero, sale, burro e lievito. Mettere il lievito o il lievito in polvere in una cavità della farina e ogni altro ingrediente in un angolo del cestello (questo è particolarmente importante quando si usa il timer). • Mettere il cestello nell’apparecchio e premerlo in modo sicuro fino a che non si inserisce in posizione. • Chiudere il coperchio. Assicurarsi che vi sia suffi ciente spazio l ibero intorno all’apparecchio. Questo assicura che il vapore sia distribuito bene e che gli oggetti vicini all’apparecchio non diventino umidi. ŸŸŸ ITALIANO Non usare oggetti taglienti, come spatole di metallo, coltelli e forchette che potrebbero danneggiare il rivestimento antiaderente dei cestelli. IMPOSTAZIONE DEL PROGRAMMA • Inserire la spina nella presa a muro. Si sente un breve bip e la retroilluminazione del display si accende per circa 30 secondi. Il display (g) mostra Programma 1, tempo 3:20 e temperatura 180°C. I due punti (:) nell’indicatore dell’orario non lampeggiano per mostrare che il programma non è in esecuzione. • Selezionare il programma desiderato premendo il tasto MENU (a) ripetutamente fino a che il numero del programma che si desidera effettuare viene visualizzato. Vedere il paragrafo “Scelta del menu”. • Selezionare la temperatura di cottura desiderata premendo il tasto TEMPERATURA (b) ripetutamente fino a che viene visualizzata la temperatura desiderata. Vedere il paragrafo “Scelta della temperatura”. • Specificare la dimensione del pane premendo il tasto DIMENSIONE PANE (c) ripetutamente fino a che il display posiziona la freccia sotto alla dimensione richiesta per il pane (1130 g/2.5LB, 900 g/ 2.0LB; DOPPIO). Vedere il paragrafo “Scelta della dimensione del pane”. a f g e b c d ŸŸŸ ITALIANO È possibile ritardare l’orario in cui si desidera che il pane sia pronto usando il pulsante TEMPO (d). Vedere il paragrafo ‘Funzione timer’. COTTURA • Premere il pulsante AVVIO/ARRESTO (f). Si sente un breve bip e i due punti (:) nella visualizzazione dell’orario incominciano a lampeggiare per mostrare che il programma selezionato è in esecuzione. • Da questo momento, a parte il pulsante AVVIO/ARRESTO (f), tutti gli altri tasti non sono attivi per evitare modifiche non volute al programma a causa della pressione di un pulsante. • Il programma può essere interrotto premendo il pulsante AVVIO/ ARRESTO (f) per più di due secondi. Si sente un breve bip e due punti (:) nella visualizzazione dell’orario smettono di lampeggiare per mostrare che il programma è fermo. • Usare sempre l’apparecchio con il coperchio chiuso. • L’apparecchio si spegne automaticamente in caso di interruzione dell’alimentazione elettrica durante l’uso. L’apparecchio si accende di nuovo quando viene ripristinata l’alimentazione elettrica entro 5-15 minuti. L’apparecchio quindi completa il programma. Se l’assenza di alimentazione supera i 15 minuti, il programma non viene conservato in memoria. In questo caso se la pasta non ha ancora iniziato la fase di lievitazione, è possibile premere il pulsante AVVIO/ARRESTO (f) per riavviare il programma dall’inizio. Altrimenti, rimuovere gli ingredienti e ricominciare. ATTENZIONE Usare guanti da forno se è necessario toccare l’apparecchio durante o dopo l’uso. L’apparecchio e il cestello diventano caldi. • L’apparecchio lavora bene in una vasta gamma di temperature, ma ci potrebbe essere una differenza nella dimensione del pane in un ambiente molto caldo o in un ambiente molto freddo. Si consiglia di usare l’apparecchio a temperature tra 15 e 35°C. • È possibile controllare il ciclo del programma attraverso le 2 finestre sul coperchio. • Durante lo svolgimento dei programmi PANE NORMALE, VELOCE, PANE FRANCESE, SUPER RAPIDO, INTEGRALE, PANE DOLCE e ŸŸŸ ITALIANO SANDWICH si sentono dei segnali acustici. Questi segnali avvisano che è possibile aggiungere altri ingredienti. In tal caso, aprire il coperchio e aggiungere gli ingredienti necessari. Quindi richiudere il coperchio. Consultare il paragrafo “Altri ingredienti”. Fig.3 FINE PROGRAMMA • Quando il programma finisce, la macchina emette una serie di segnali acustici per avvisare della fine del programma. • L’apparecchio conserva il pane caldo per un’ora dopo la cottura. Questo Fig.4 evita la formazione di condensa sulla crosta. Se si desidera interrompere il processo di riscaldamento, premere il pulsante AVVIO/ARRESTO per più di 2 secondi. Si sentirà un bip che indica la fine del programma. ATTENZIONE L’apparecchio e il cestello sono molto caldi. Usare guanti da forno per aprire il coperchio ed estrarre il cestello dall’apparecchio (fig.3). • Rimuovere il pane dal cestello, capovolgendolo su un piano e scuotendolo delicatamente (fig.4). Se necessario, è possibile usare una spatola in legno o plastica per rimuovere il pane; prestare attenzione, però, a non danneggiare il rivestimento antiaderente. • Le palette impastatrici potrebbero rimanere nel pane. Usare il gancio in metallo (11) per rimuoverle dal pane (fig.5). Fare attenzione durante la rimozione; sono calde. • Far raffreddare il pane prima di tagliarlo (fig.6). ŸŸŸ ITALIANO Fig.5 Fig.6 11 • Prima di un nuovo utilizzo, lasciare raffreddare a sufficienza l’apparecchio. • Dopo aver completato l’uso dell’apparecchio, rimuovere la spina dalla presa a muro e lasciar raffreddare l’apparecchio a sufficienza prima di pulirlo e conservarlo. Vedere il paragrafo “Pulizia e manutenzione”. SCELTA DEL MENU L’apparecchio dispone di 11 programmi selezionabili tramite il tasto MENU. Di seguito si riportano le principali caratteristiche dei programmi con l’indicazione della relativa durata: 1. PANE NORMALE 3:20 Questo è il programma più usato per impastare, lievitare e cuocere il pane normale. 2. VELOCE 1:58 Questo programma può essere utilizzato per la preparazione del pane in un tempo ridotto rispetto al programma BASE. Il pane cotto con questo programma di solito ha dimensioni inferiori e una grana densa. 3. PANE FRANCESE 3:40 Per la realizzazione del tipico pane francese leggero, con crosta croccante e mollica soffice. Il tempo di lievitazione previsto per questo programma è più lungo. 4. SUPER RAPIDO 1:59 È un programma molto breve per impastare, lievitare e cuocere il pane. Il risultato sarà un pane duro. ŸŸŸ ITALIANO 5. INTEGRALE 3:30 Programma per la preparazione del pane integrale. Rispetto al programma per il pane bianco, le fasi di lievitazione e di cottura di questo programma sono più lunghe dato che l’impasto contiene un’alta quantità di farina integrale e tende a lievitare meno rispetto all’impasto di farina bianca. 6. PANE DOLCE 3:10 Programma per la realizzazione di ricette dolci. 7. IMPASTO 1:50 Questo programma serve a impastare e far lievitare la pasta senza cottura. La pasta può essere usata per panini, pizza, focaccia… 8. COTTURA 1:00 Questo programma prevede unicamente la cottura, senza impasto e lievitazione. Può essere usato per aumentare il tempo di cottura dopo l’utilizzo di un programma standard. 9. MARMELLATA 1:20 Si utilizza per la preparazione di marmellate e confetture di frutta fresca. 10. SANDWICH 3:00 Questo programma può essere utilizzato per la preparazione di un pane contenente ingredienti particolari (yogurt, latte). Il risultato è un pane con la mollica soffice e una crosta sottile e morbida. 11. HOME MADE (fatto in casa) Questo programma può essere adattato dall’utente. È possibile personalizzare tutte le fasi del programma: impasto, lievitazione, cottura e mantenimento del calore per realizzare una propria ricetta. Vedere ‘Programma HOME MADE (fatto in casa)’. Quando si sceglie di utilizzare il programma Rapido o Superrapido, è preferibile sostituire il lievito di birra con il lievito in polvere e intiepidire gli ingredienti liquidi. NOTA: La durata dei programmi è fissa e non può pertanto essere modificata. Programma HOME MADE (fatto in casa) Nel programma HOME MADE (fatto in casa) si ha la possibilità di regolare il tempo dei diversi elementi del programma in base alle proprie es igenze. Si possono, così , creare ric ette com plet amente personalizzate. ŸŸŸ ITALIANO I tempi di programmazione sono i seguenti: Elemento programma Tempo KNEAD1 (Impasto1) 3-14 min. RISE1 (Lievitazione1) 20-60 min. KNEAD2 (Impasto2) 8-24 min. RISE2 (Lievitazione2) 1-60 min. RISE3 (Lievitazione3) 20-120 min. BAKE (Cottura) 0-80 min. WARM (Caldo) 0-120 min. • Inserire la spina nella presa a muro. Si sente un breve bip e la retroilluminazione del display si accende per circa 30 secondi. Il display mostra Programma 1, ora 3:20 e temperatura 180°C. I due punti (:) nell’indicazione dell’orario non lampeggiano perché il programma non è in esecuzione. • Premere il pulsante MENU (a) ripetutamente finché il numero di programma 11 (HOME MADE) viene visualizzato. • Premere il pulsante PROCESSO (e) sul pannello di controllo. Sul display si vede che la scritta KNEAD1 (Impasto1) inizia a lampeggiare e il display mostra l’impostazione di tempo per questo elemento KNEAD1 del programma. Cambiare l’impostazione premendo il pulsante TEMPO (d) ripetutamente. Ogni volta che si preme il pulsante TEMPO (d), la relativa impostazione sarà aumentata di un minuto. Se si tiene premuto il pulsante TEMPO (d), l’impostazione aumenta più velocemente. Quando l’impostazione ha raggiunto il massimo, premere di nuovo il pulsante TEMPO (d) per passare di nuovo alla impostazione minima. Regolare il tempo secondo l’impostazione desiderata. • Premere il pulsante PROCESSO (e) per passare alla impostazione della fase successiva del programma (RISE1 - Lievitazione1). Cambiare l’impostazione del tempo come descritto sopra. • Premere il pulsante PROCESSO (e) ogni volta per regolare le impostazioni del tempo per le fasi rimanenti del programma: KNEAD2 (Impasto2), RISE2 (Lievitazione2), RISE3 (Lievitazione3), BAKE (cottura) oltre al tempo si può selezionare la temperatura di cottura premendo il tasto TEMPERATURA ripetutamente fino a quando viene visualizzata la temperatura desiderata e WARM (mantenimento caldo). ŸŸŸ ITALIANO • Una volta completata la regolazione delle impostazioni del programma, premere il pulsante AVVIO/ARRESTO per memorizzare il programma. • È possibile ritardare l’orario in cui si desidera che il pane sia pronto usando il pulsante TEMPO. Vedere il paragrafo “Funzione timer”. • Premere di nuovo il pulsante AVVIO/ARRESTO per riavviare il programma. • Per un’ulteriore sequenza di cottura, vedere i paragrafi “Cottura” e “Fine programma”. SCELTA DELLA TEMPERATURA La temperatura di cottura è indicata sul display in °C. Una freccia indica il tipo di temperatura: bassa, media o alta. N. Programma BASSA MEDIA ALTA 1. Premere il pulsante TEMPERATURA per spostarsi tra le impostazioni BASSA, MEDIA e ALTA. Questa funzione ci permette di definire perfettamente la doratura della crosta del pane. Selezionare il livello di doratura della crosta: • Morbida • Normale • Croccante I tempi di cottura sono normalmente impostati sul livello di doratura Normale. ŸŸŸ ITALIANO SCELTA DELLA DIMENSIONE DEL PANE Solo per i programmi PANE NORMALE, PANE FRANCESE, SUPER RAPIDO, INTEGRALE, PANE Impostazione Quantità DOLCE e SANDWICH. Premere il pulsante DIMENSIONE 1130 g. 2.5 lb. PANE per spostarsi tra le 900 g. 2.0 lb. impostazioni di quantità indicate a 2x450 g. DOPPIO lato. Le impostazioni 2.5 LB e 2 LB sono di solito usate per il singolo stampo mentre l’impostazione DOPPIO di solito è usata per lo stampo doppio. FUNZIONE TIMER Questa funzione permette di impostare l’orario in cui la macchina deve terminare il programma selezionato. È disponibile con i seguenti programmi: PANE NORMALE, PANE FRANCESE, INTEGRALE, PANE DOLCE, COTTURA, SANDWICH e HOME MADE. Il tempo massimo impostabile è di 13 ore. • Aggiungere gli ingredienti nel cestello, uno alla volta. Iniziare versando acqua o altro liquido nel cestello. Poi aggiungere la farina e, a seconda della ricetta, aggiungere zucchero, sale, burro e lievito o lievito in polvere. NOTA: Mettere il lievito o il lievito in polvere in una cavità della farina e ogni altro ingrediente in un angolo dello stampo. Il lievito non deve entrare in contatto con liquidi, sale o burro, perché questo interromperebbe immediatamente il processo di fermentazione. • Selezionare il programma desiderato, le impostazioni di temperatura e quantità. ESEMPIO: sono le 22:00 e si desidera che il pane fresco sia pronto alle 7:30. In questo caso, la differenza di tempo è 9 ore e 30 minuti. Usare il pulsante TEMPO per impostare il timer di circa 9:30. Ogni volta che si preme il pulsante TEMPO, il tempo aumenta di 10 minuti. • Premere il pulsante AVVIO/ARRESTO per avviare il timer. I due punti (:) nella visualizzazione dell’orario iniziano a lampeggiare per mostrare che l’orologio è in funzione. Il timer avvia il programma e assicura che ŸŸŸ ITALIANO il pane sarà pronto all’orario desiderato. NOTA: Se si è impostata la funzione timer, si consiglia di non usare ingredienti facilmente deteriorabili come latte, uova, frutta o puree vegetali. SPEGNIMENTO E CONSERVAZIONEDELL’APPARECCHIO • Rimuovere la spina dalla presa. • Lasciar raffreddare l’apparecchio. • Pulire l’apparecchio e tutti gli accessori (vedere paragrafo “Pulizia e manutenzione”). • Riporre l’apparecchio in un luogo asciutto, al riparo dal gelo. SCELTA DEGLI INGREDIENTI Oltre a cuocere il pane usando una delle ricette indicate, è anche possibile sperimentare nuove ricette usando diversi ingredienti. Per farlo, è utile conoscere maggiori informazioni sui vari ingredienti per la preparazione del pane. FARINA L’ingrediente principale del pane è la farina. Ci sono molti tipi diversi di farina e miscele di farina. Il tipo di farina usato fa una grande differenza per il pane. Per esempio, la farina di grano contiene molto glutine e, per questo, lievita meglio rispetto alla farina più pesante. Pertanto, c’è bisogno di meno lievito. Il glutine è un composto proteico che si trova nei cereali, come grano, avena, segale e orzo. Quando il pane lievita, il glutine forma una rete che trattiene le bolle di biossido di carbonio e questo fa lievitare il pane. ‘Patent flour’ o farine domestiche La maggior parte della farina bianca è detta ‘patent flour’ o farina domestica. Quasi non contiene fibra o semi, ma contiene molto glutine. Questa farina di solito è usata per legare zuppe e salse, ma va bene anche per preparare pane (bianco). Farina di grano e farina di frumento La farina di grano è farina di frumento bianca. La farina di frumento è un po’ più grigia e contiene una piccola quantità di fibre e semi. La farina di grano e la farina di frumento contengono anche molto glutine. ŸŸŸ ITALIANO Farina integrale La farina integrale è preparata da grano intero, non trattato. Contiene tutta la fibra e i semi del grano. La farina integrale ha, come la farina di grano, molto glutine, ma è più pesante a causa di fibre e semi. Come risultato, il pane sarà più compatto se è fatto solo usando farina integrale. Pertanto, alcuni fornai aggiungono farina di grano. Oltre a questi tipi di farina, ci sono molti altri tipi: farina d’avena, farina di grano, farina di mais e farina di segale. Miscele di farina La maggior parte delle farine può essere mescolata. La combinazione di farina di grano saraceno/farina d’avena/farina di grano è un buon esempio. È anche possibile mescolare farina di orzo/farina di grano. Varie miscele possono inoltre essere acquistate in negozi, come farina gialla, farina ai sei cereali, farina ai nove cereali o farina ai dieci cereali. Queste miscele a volte contengono esaltatori della farina e/o del pane. Miscele tutto in uno È inoltre possibile comprare miscele che contengono tutti gli ingredienti, tranne l’acqua. Queste miscele tutte in uno sono facili e veloci da usare. LIEVITO Il lievito è necessario per far crescere il pane. È possibile comprare lievito fresco (a cubetti) o lievito secco (a granelli). Il gusto del lievito fresco è leggermente più forte di quello del lievito secco. Ci sono varie marche di lievito secco e l’effetto che producono varia in qualche modo. Il lievito che si adatta meglio alle proprie esigenze è una questione di preferenza personale. Ad occhio, si può dire che si ha bisogno di circa metà del peso di lievito secco (detto anche lievito istantaneo) rispetto al lievito fresco. L’effetto del lievito può essere influenzato se il lievito viene a contatto con sale o grassi. Il sale asciuga il lievito e i grassi racchiudono le cellule del lievito, cosicché la pasta non lievita più. È, pertanto, importante assicurare che il lievito, il sale e il burro non siano messi troppo vicino l’uno all’altro nella macchina per il pane. SALE Il sale aggiunge il gusto al pane, ma è importante anche per la crosta e ŸŸŸ ITALIANO per la lievitazione (sebbene il sale possa interrompere la lievitazione del pane se viene a contatto diretto con il lievito). Il sale rafforza la formazione di glutine che dà forma al pane. Il sale assicura anche che il pane non fuoriesca dallo stampo e poi si sgonfi prima di essere ben cotto. È possibile cuocere pane con poco sodio o senza sale, ma sarà necessario variare gli ingredienti. LIQUIDI Il liquido maggiormente usato per la preparazione del pane è l’acqua. Per impastare il pane sono indicati anche il latte (di soia), lo yogurt, ecc. Ovviamente anche in questo caso la scelta del liquido per l’impasto dipende dal gusto personale. Inoltre, l’uso di liquidi diversi dall’acqua influisce sulla lievitazione e sulla struttura del pane. Il latte intero, per via dei grassi in esso contenuti, mantiene il pane fresco più a lungo, mentre lo zucchero in esso contenuto (il lattosio) aumenta il potere lievitante. Una buona variante al latte fresco è il latte in polvere. Incominciare con una piccola quantità (1 cucchiaio) e controllare il risultato dell’impasto. Ovviamente il latte in polvere non può sostituire il liquido: è necessario aggiungere anche acqua. ZUCCHERO Lo zucchero dà solo un piccolo contributo al processo di lievitazione, e aiuta a formare una bella crosta. Invece dello zucchero, è possibile usare miele, melassa o sciroppo. Non usare zucchero a grana grossa (zucchero duro) o zucchero a velo nella macchina per il pane. Questo potrebbe danneggiare il rivestimento antiaderente. Lo zucchero non può essere sostituito con dolcificanti artificiali nella cottura. In genere queste sostanze vengono denaturate dal calore. GRASSI Il grasso è, infatti, un esaltatore del pane. Non è necessario usarlo, ma il pane viene molto più buono se lo si usa. Il grasso rende la pasta più soffice e assicura una più facile lievitazione. Il grasso racchiude anche il glutine, in modo che il biossido di carbonio sia trattenuto. Questo ŸŸŸ ITALIANO rende il pane più leggero e lo mantiene fresco più a lungo. Sono adatti vari tipi di grasso. L’olio (olio di girasole o olio di oliva), il burro e la margarina danno un risultato eccellente. L’olio rende la crosta più morbida. La margarina produce una crosta più croccante e migliora anche il processo di lievitazione. Quando si cuoce il pane alle erbe, l’uso di una olio aromatizzato potrebbe dare sapore, ad esempio l’olio di noce, l’olio all’aglio o l’olio al basilico. NOTA: È bene che gli ingredienti siano a temperatura ambiente quando vengono messi nello stampo. Non usare mai un liquido troppo caldo, perché questo può avere un effetto negativo sul lievito. ALTRI INGREDIENTI È possibile aggiungere all’impasto ulteriori ingredienti secondo i propri gusti personali. Un pane alle erbe, con la frutta o all’aglio può essere, ad esempio, una gustosa alternativa. L’aggiunta di altri ingredienti va effettuata solo dopo il segnale acustico. Se gli ingredienti vengono aggiunti troppo presto, verranno tritati dalla lama impastatrice. In realtà non vi sono limiti all’aggiunta degli ingredienti, ma occorre ricordare che quello che viene aggiunto può avere effetto sul processo di lievitazione, e quindi sul risultato finale. Per esempio, se si aggiunge del formaggio, occorre usare un po’ meno grasso, in quanto il formaggio, fondendo, apporta già del grasso di per sé. Questo vale anche per i pomodori, le verdure e gli altri ingredienti che hanno un elevato contenuto d’acqua. Si consiglia di aggiungere ingredienti che contengano meno acqua possibile. Aggiungere, pertanto pomodori secchi, pelati o sott’olio al posto dei pomodori freschi. È possibile aggiungere ingredienti per un peso pari al 50-100 percento del peso della farina, ma occorre tenere presente che più pesante è il pane, più difficilmente lievita. Pertanto, per un pane più pesante, usare più lievito. UVETTA L’uvetta può essere aggiunta in due modi: Modo rapido: lavare, mettere in ammollo e aggiungere all’impasto. Modo migliore: lavare, lasciare in ammollo per circa quindici minuti in ŸŸŸ ITALIANO acqua tiepida, lasciare sgocciolare in un colapasta e lasciare riposare (eventualmente coperto) a temperatura ambiente per una notte intera. Con il metodo rapido, l’uvetta sottrae ancora un po’ di liquido all’impasto, rendendolo più asciutto. Ovviamente, ciò non crea alcun problema se il pane viene mangiato il giorno stesso. In ogni caso, asciugare bene l’uvetta prima di aggiungerla all’impasto. Se l’impasto è poco consistente, c’è il rischio che l’uvetta, come anche altri ingredienti pesanti, si depositino sul fondo. In tal caso può essere utile passarla nella farina prima di aggiungerla all’impasto. Alcuni ingredienti possono essere introdotti insieme alla farina (senza bisogno di attendere il segnale acustico). In linea generale si può dire che è meglio aggiungere i semi e tutti gli ingredienti ‘duri’ dopo il segnale acustico, come anche gli ingredienti che si frantumano facilmente durante l’impasto, come olive e uvetta. Invece, il formaggio, la mela grattugiata, la crusca ed altri ingredienti aggiuntivi, che devono mescolarsi completamente all’impasto, possono essere introdotti nello stampo assieme alla farina. SEMOLA La crusca viene generalmente aggiunta per ottenere un pane più consistente e ricco di fibre, ma la farina integrale contiene molta crusca già di per sé. Pertanto con questo tipo di farina non è necessario aggiungere crusca, la quale avrebbe addirittura un effetto contrario, assorbendo molta acqua e asciugando Eccessivamente il pane. Alle farine miste, composte da più cereali, invece, la crusca può essere aggiunta senza problemi. UOVA L’aggiunta del tuorlo d’uovo crea un pane più leggero. Non aggiungere più di due tuorli ogni 500 grammi di farina. Troppi tuorli rendono l’impasto troppo molle. I tuorli possono essere versati nello stampo assieme alla farina. I tuorli contengono liquido, pertanto, usare un po’ meno acqua. Si riporta un elenco, non esaustivo, degli ingredienti che è possibile aggiungere all’impasto: semi di girasole, semi di lino, semi di sesamo, semi di papavero, semi di zucca, fiocchi di grano, noci, fichi, datteri, ŸŸŸ ITALIANO crusca, farina di mais, tutti i tipi di formaggio grattugiato, prosciutto a dadini, semi di anice, cumino dei prati, chiodi di garofano ed altre spezie ed erbe fresche o secche, carote grattugiate, olive, pomodori, aglio, cipollotti tritati, cipolle soffritte, erba cipollina, basilico, pesto, pinoli, uvetta (ammollare come descritto in precedenza), frutta secca tropicale (ammollare come l’uvetta), zucchero vanigliato, muesli,succo di limone, pezzi di buccia d’arancia, mela (grattugiata), cannella, zenzero, purea di peperoncino rosso, chicchi di mais, tutti i tipi di frutta e verdura, ecc. GUARNIRE Per guarnire il pane si possono utilizzare diversi tipi di guarnizioni: Glassa all’uovo: sbattere un uovo con un cucchiaio d’acqua e applicare sull’impasto lievitato prima della cottura. Non applicare uno strato troppo spesso di uovo, altrimenti la crosta rischia di bruciarsi. Glassa al burro / glassa al latte: cospargere burro fuso/latte/panna liquida sul pane appena sfornato. Si otterrà una crosta più morbida e lucente. Glassa al formaggio: grattugiare del formaggio (emmenthal, grana..) e applicare sull’impasto prima della cottura. Semi di zucca, semi di papavero, cumino, sesamo: dopo l’applicazione della glassa cospargere questi semi sulla superficie del pane. IMPASTI E MARMELLATE Utilizzando il programma 7 (IMPASTO) si possono preparare anche diversi impasti da lavorare successivamente e cuocere nel forno. Con il programma 9 (MARMELLATA), si possono ottenere gustose marmellate. In tal caso, seguire le istruzioni riportate di seguito: • Lavare la frutta fresca • Pelare mele, pere, pesche e altri tipi di frutta con la buccia. • Usare sempre le dosi raccomandate nelle ricette altrimenti la marmellata rischia di bollire troppo o troppo poco. • Pesare la frutta e tagliarla in piccoli pezzi (1 cm max). • Aggiungere lo zucchero e la gelatina/colla di pesce nella proporzione 2:1. • Mescolare la frutta con lo zucchero e avviare il programma. • Al termine, versare la marmellata nei contenitori caldi. ŸŸŸ ITALIANO CONSIGLI E SUGGERIMENTI Per ottenere un buon risultato, specie con una ricetta mai provata prima, occorre verificare la giusta consistenza dell’impasto. Dopo circa 10 minuti dall’inizio della lavorazione, osservare l’aspetto dell’impasto attraverso la finestra di controllo (6): deve avere una superficie piuttosto omogenea e muoversi intorno al recipente senza sgretolarsi né restare attaccato alle pareti. Per avere un’idea più precisa osservare le tre immagini riportate di seguito. La prima mostra un impasto troppo secco, la seconda un impasto troppo morbido e la terza, invece, un impasto di giusta consistenza. 1 2 3 La consistenza si può correggere, aggiungendo acqua o farina, un cucchiaio alla volta e aspettando qualche minuto affinché venga incorporato, prima di aggiungerne ancora, se necessario. Visti i numerosi fattori che concorrono alla produzione del pane (il tipo di lievito, la temperatura ambiente, l’umidità dell’aria, ecc.) eventuali risultati non ottimali non sono da imputare al mal funzionamento dell’apparecchio ma ai fattori sopra citati. Si consiglia di effettuare diverse prove per acquisire l’opportuna esperienza. Raffreddare il pane su una griglia Dopo la cottura, lasciare raffreddare il pane su una griglia. Il calore può disperdersi da tutti i lati. Tagliare il pane quando diventa freddo. Il pane fatto in casa si taglia meglio quando diventa freddo. Conservazione del pane Una volta freddo, è bene avvolgere il pane fatto in casa in uno strofinaccio. Questo mantiene la crosta fresca e croccante. Sono anche disponibili buste in carta speciali per il pane. Il pane diventa morbido se viene tenuto in una busta di plastica o in frigorifero. ŸŸŸ ITALIANO Congelamento del pane Il pane fatto in casa può essere congelato quando diventa freddo. È utile congelarlo in porzioni quotidiane. È meglio scongelare il pane a temperatura ambiente, perché il forno a microonde lo asciuga troppo velocemente. Sebbene il pane possa essere congelato, questo ha sempre un effetto negativo sulla qualità. Pane più scuro Un cucchiaio di cacao in polvere può essere aggiunto alla farina per dare al pane un colore più scuro, senza influenzarne il sapore. Crosta più croccante Per ottenere una crosta più croccante, è possibile lasciare il pane nella macchina da dieci a quindici minuti durante la fase in cui viene tenuto in caldo. Se il pane fuoriesce dallo stampo È possibile guardare il processo di lievitazione attraverso la finestra. Di solito, si sconsiglia di aprire il coperchio durante il processo di lievitazione, in quanto il pane potrebbe sgonfiarsi. Tuttavia, se il pane dovesse fuoriuscire dallo stampo durante la lievitazione, attaccandosi alla finestra di ispezione (cosa che può accadere anche durante la cottura), sollevare per un attimo il coperchio. L’impasto tenderà a scendere leggermente. Pane di piccole dimensioni, compatto Troppo liquido produce un pane di piccole dimensioni, piatto. La pasta non lievita bene, perché è troppo umida. Il lievito potrebbe essere troppo vecchio. Pane troppo asciutto L’aggiunta di una quantità insufficiente di liquido genera un pane troppo asciutto. Aggiungere un po’ più d’acqua o latte. Se il pane, invece, dopo la cottura va bene, ma si secca rapidamente, aggiungere più olio o burro. Collasso del pane Se il pane lievita bene ma si affloscia durante la cottura, provare a usare il programma VELOCE. In linea di massima con i programmi lunghi il pane ha maggiori possibilità di afflosciarsi. ŸŸŸ ITALIANO SEGNALAZIONI PARTICOLARI SUL DISPLAY Se sul display (g) compare la scritta “H:HH” dopo aver acceso l’apparecchio, significa che la temperatura all’interno della macchina è ancora troppo alta per una nuova preparazione. Spegnere l’apparecchio, aprire il coperchio (4) e lasciare raffreddare. Se all’accensione dell’apparecchio sul display compare la scritta “E:EE”, significa che il sensore di temperatura è danneggiato e occorre sostituirlo. In questo caso rivolgersi a un centro autorizzato Termozeta. PULIZIA E MANUTENZIONE ATTENZIONE Prima di eseguire qualsiasi operazione di pulizia, scollegare sempre la spina dalla presa di corrente e aspettare che l’apparecchio si sia raffreddato. Pulire il cestello (2) o (3) e le palette impastatrici (8) con una normale spugna non abrasiva e detergente per stoviglie prestando attenzione a non graffiare la superficie antiaderente. Al termine asciugare accuratamente le parti. Non lavare cestelli e palette impastatrici in lavastoviglie. Pulire il corpo esterno ed interno dell’apparecchio con una spugna leggermente umida. Non utilizzare sostanze chimiche o abrasive. Non immergere mai il corpo apparecchio in acqua o altri liquidi. Conservare l’apparecchio in un luogo asciutto. WARNING! HOT SURFACE The appliance can reach high temperature during its operation. Avoid touching it with bare hands. It is advisable to use kitchen gloves to avoid the risk of burning. WARNING! Some vapour could be produced during the baking phase. Therefore, some vapour can come out through the vent holes of the lid. - Do not obstruct the air outlet holes located on the appliance sides and lid. - Leave enough space around the sides and the upper part of the appliance to allow the heat dissipation. - The appliance must not be embedded or inserted into a piece of furniture. - Be careful not to touch moving parts. - Do not leave the appliance connected to the power system when unused. ŸŸŸ ENGLISH INSTRUCTIONS FOR USE USING THE APPLIANCE FOR THE FIRST TIME • Insert one of the two baskets into the appliance and press until the basket is in the right position (see Fig.1 fig.1). • Put the two kneading blades of the basket that is being used on the shafts on the basket bottom (see fig.2). • Close the lid. • Put the plug into the wall socket. A short beep will be heard and the backlight of the display will switch on for about 30 seconds. The display will show Program 1, time 3:20 and temperature 180°C. The time display will count down. • After about 10 minutes, press the START/STOP button for more than two seconds to stop the program. A beep will be heard as a sign that the program is stopped. Let the appliance cool down. • Pull the basket out of the appliance. • Clean the basket and the kneading blades and dry them thoroughly. WARNING The appliance may emit a little smoke and a characteristic smoke when you turn it on for the first time. Make sure the appliance has sufficient ventilation. STARTING • Put the appliance on a flat, stable surface where it cannot fall. • Choose the basket that you want to use with the corresponding kneading blades. • Place the two kneading blades on the shafts on the bottom of the basket of your choice. Before baking, it is recommendable to grease the basket shafts with butter or oil. This facilitates the removal of the bread from the kneading blade. ADDING INGREDIENTS • Weigh the required ingredients for the recipe. Never fill the appliance with more than the maximum quantity (a total of a maximum of 1130 g (2.5 lb.) for the single basket to 450 g (1 lb.) for each half of the double basket); otherwise the dough will spill over the basket. • Add the ingredients one by one to the basket. Begin by pouring water or liquid into the basket. Then add the flour and, depending on the recipe, add sugar, salt, butter and yeast. Put the yeast or baking powder in a hollow in the flour and each of the other ingredients in one corner of the basket (this is particularly important when using the timer). • Place the basket in the appliance and press it firmly down till it clicks in position. • Close the lid. Make sure there is suffcient free space around the appliance. This will ensure that the vapour is distributed well and items close to the appliance will not become damp. ŸŸŸ ENGLISH Do not use sharp implements such as metal spatulas, knives and forks. This may damage the non-stick surface of the baskets. SETTING THE PROGRAM • Put the plug into the wall socket. BAKING • Press the START/STOP button (f). A short beep will be heard and the two points (:) in the time display will start blinking to show that the selected program is running. • Apart from START/STOP button (f), all other buttons are inactive from now on to avoid unwanted program changes by accidentally pressing a button. • The program can be stopped by pressing the START/STOP button (f) for more than two seconds. A short beep will be heard and the two points (:) in the time display will stop blinking to show that the program has stopped. • Always use the appliance with the lid closed. • The appliance will automatically switch off in the event of a power failure whilst it is in use. The appliance will automatically switch on again if the power is restored within 5 to 15 minutes. The appliance will then complete the program. If the power interruption exceeds 15 minutes, the program cannot be kept. If in this case the dough has not yet entered the rising phase, you can press the START/STOP button (f) to restart the program from the beginning. Otherwise, discard the ingredients and start over again. WARNING Use oven gloves if you need to touch the appliance during or after use. The appliance and the basket will become hot. • The appliance will work fine in a wide temperature range, but there may be a difference in bread size baking in a very warm room or in a very cold room. We suggest that the appliance is used at temperatures between 15 and 35°C. • You can keep track of the program cycle by looking through the 2 windows in the lid. • During the programs BASIC, QUICK, FRENCH, SUPER RAPID, WHOLE WHEAT, SWEET and SANDWICH beeps will be heard. These beeps alert you to add extra ingredients. Open the lid and add the ŸŸŸ ENGLISH required ingredients and close the TIMER FUNCTION TIMER FUNCTION lid again. See “Other ingredients”. END • When the program is finished, beeps will be heard to alert you to the program end. • The appliance will keep the bread warm for one hour once it is baked. This prevents condensation on the crust. If you want to stop this warming process, press the START/STOP button for more than 2 seconds. You will hear a beep to indicate the end of the program. Use oven gloves to open the lid and remove the basket out of the appliance (fig.3). • Remove the bread from the basket by turning it upside down and tapping it gently (fig.4). If so required, you can use a wooden or plastic spatula to remove the bread; take care however not to damage the non-stick surface. • The kneading blades may remain in the bread. Use the metal hook (11) to remove them from the bread (fig.5). Take care when removing them; they are hot. • Allow the bread to cool down before cutting it (fig.6). ŸŸŸ ENGLISH Fig.5 Fig.6 11 • Allow the appliance to cool down sufficiently before using it. • When you have finished using the appliance remove the plug from the wall socket and allow the appliance to cool down sufficiently before you clean and store it. See “Cleaning and maintenance”. MENU SELECTION The appliance has 11 programs that can be selected through the MENU button. The main features of the programs with their duration are indicated below: 1. BASIC 3:20 This is the most used program for kneading, rising and baking normal bread. 2. QUICK 1:58 This program is used to prepare the bread in less time than the BASIC program. Bread baked with this program is usually smaller with a dense texture. 3. FRENCH 3:40 This program is used to prepare the typical French bread, with a crispy crust and a light texture. The rising time with this program is longer. 4. SUPER RAPID 1:59 This is a very short program to knead, rise and bake bread. The result will be a rough bread. ŸŸŸ ENGLISH 5. WHOLE WHEAT 3:30 This program is used to prepare whole wheat bread. As to the program used for white bread, the rising and baking phases in this program are longer since the dough contains a high quantity of whole wheat and it tends to rise less than the white flour. 6. SWEET 3:10 Program to knead sweet recipes. 7. DOUGH 1:50 This program is used to knead and rise dough without baking it. The dough can be used for making bread rolls, pizza, flat bread… 8. BAKE 1:00 This program only bakes bread without kneading and rising. This program can also be used to increase the baking time after using another standard bake program. 9. JAM 1:20 This program is used for preparing jams and marmalades. 10. SANDWICH 3:00 This program can be used for preparing a type of bread containing special ingredients (yoghurt, milk). The result is a bread with a soft crumb and a thin and soft crust. 11. HOME MADE This program can be adapted by the user. All the program phases can be customized: kneading, rising, baking and keeping warm to make a personalized recipe. See ‘HOME MADE Program’. When the Quick or Super Rapid program is used, it is better to replace the brewer’s yeast with the baking powder and to warm up the liquid ingredients. NOTE: The program duration is fixed and so it cannot be modified. HOME MADE Program In the HOME MADE program you have the possibility to adjust the timing of the different program elements to your particular wishes. On the display you can see that KNEAD1 starts blinking and the display shows the time setting for this KNEAD1 element of the program. Change the setting by pressing the TIME button (d) repeatedly. Each time you press the TIME button (d), the time setting will increase by one minute. If you keep the TIME button (d) pressed, the time setting will increase faster. When the time setting has reached the maximum setting, press the TIME button (d) again to go to the minimum time setting again. Adjust the time setting to the required setting. • Press the PROCESS button (e) to go to the setting of the next program phase (RISE1). Change the time setting in the same way as described above. • Press the PROCESS button (e) each time to adjust time settings for the remaining program elements: KNEAD2, RISE2, RISE3, BAKE; in addition to the time it is also possible to select the baking temperature by pressing the TEMPERATURE button repeatedly till the desired temperature and WARM are displayed. DOUBLE The setting 2.5 LB and 2 LB are normally used for the single basket while the DOUBLE setting is normally used for the double basket. TIMER The timer enables you to specify when the appliance must complete the selected program. It is available with the following programs: BASIC, FRENCH, WHOLE WHEAT, SWEET, BAKING, SANDWICH and HOME MADE. The maximum time that can be set is 13 hours. • Add the ingredients one by one to the basket. Begin by pouring water or liquid into the basket. Then add the flour and, depending on the recipe, add sugar, salt, butter and yeast or baking powder. NOTE: Put the yeast or baking powder in a hollow in the flour and each of the other ingredients in a corner of the basket. The yeast must not come into contact with liquids, salt or butter, since this would immediately stop the fermentation process. • Select the required program, temperature and quantity settings. EXAMPLE: it is 10.00 PM and you wish the freshly-baked bread to be ready at 7:30. In this case, the time difference is 9 hours and 30 minutes. Use the TIME button to set the timer of about 9:30. Each time you press the TIME button the time will increase by 10 minutes. • Press the START/STOP button to start the timer. The two points (:) in the time display will start blinking to show that the clock is running. The timer will start the program and ensures that your bread will be ready at the adjusted time. ŸŸŸ ENGLISH NOTE: If the timer function is set, we recommend not to use easily perishable ingredients such as milk, eggs, fruit or vegetable purées. TURNING OFF AND STORING THE APPLIANCE • Remove the plug from the plug socket. • Allow the appliance to cool down. • Clean the appliance and all accessories (see “Cleaning and maintenance”). • Store the appliance in a dry, frost-free location. INGREDIENT SELECTION It is possible not only to bake bread according to one of the recipes indicated, but also to try new recipes using different ingredients. To do this, it is useful to have much information on the different ingredients to prepare bread. FLOUR The main ingredient of bread is flour. There are many different kinds of flour and mixes of flour. The type of flour used makes a big difference for bread. For example, since wheat flour contains much gluten, it rises better than the heavier flour. Therefore, less yeast is needed. Gluten is a protein compound which is found in cereals, such as wheat, oats, rye and barley. As the bread rises, gluten creates a network that keeps in the carbon dioxide bubbles and this makes the bread rise. ‘Patent flour’ or household flour Most of the white flour is called ‘patent flour’ or household flour. It has almost no fibres or seeds, but it contains much gluten. This flour is usually used to bind soups and sauces, but also to bake (white) bread. Wheat flour and wheatmeal Wheat flour is white wheatmeal. Wheatmeal is a little greyer and it contains a small quantity of fibres and seeds. Wheat flour and wheatmeal also contain much gluten. Whole wheat flour Whole wheat flour is obtained from whole untreated grains of wheat. It conains all the wheat fibres and seeds. Whole wheat contains much gluten as wheat flour, but it is heavier because of fibres and seeds. As ŸŸŸ ENGLISH a result, the bread will be more compact if it made using only whole wheat. Therefore, some bakers add wheat flour. Besides these types of flour there are many other types of flour: oatmeal, wheat meal, maize mill and rye flour. Flour mixes Most types of flour can be mixed. The combination of buckwheat flour/ oatmeal/wheat flour is a good example. It is also possible to mix barley meal and wheat flour. Various mixes can also be bought in shops, such as cornmeal, six-grain meal, nine-grain meal or ten-grain meal. These mixes sometimes contain flour and/or bread improvers. All-in-one mixes It is also possible to buy mixes containing all the ingredients, except water. These mixes are easy and quick to use. YEAST Yeast is necessary to make the bread rise. It is possible to buy fresh yeast (blocks) or dry yeast (granules). The fresh yeast taste is slightly stronger than the dry yeast taste. There are several brands of dry yeast and the effect they have varies somehow. The yeast that suits you the best is a question of personal preference. Roughly about half the weight of dry yeast (also called instant yeast) is necessary compared to fresh yeast. The yeast effect can be affected if it comes into contact with salt or fats. Salt dries out yeast and the fats hold the yeast cells, so that the dough does not rise any more. Therefore, it is important to ensure that the yeast, salt and butter are not placed too close to each other inside the breadmaker. SALT Salt adds to the taste of bread, but it is also important for the crust and for rising (although salt can also stop the bread rising if it comes into contact with yeast). Salt strengthens the gluten formation which shapes bread. Salt also ensures that the bread does not rise out of the basket and then sinks before it is well-backed. It is possible to bake low-sodium or salt-free bread, but the ingredients must be varied. ŸŸŸ ENGLISH LIQUIDS The most common liquid used to bake bread is water. To knead bread you can also use milk (soya milk), yoghurt, etc. Of course the choice of the liquid to use for kneading depends on the personal taste. The use of liquids other than water influences the bread rising and structure as well. The whole milk keeps the bread fresh longer thanks to the fats it contains, while the sugar it contains (lactose) increases the rising power. A good variant of fresh milk is powdered milk. Start with a small quantity (1 spoon) and check the kneading result. Of course powdered milk cannot replace the liquid: some water must be added, too. SUGAR Sugar only makes a small contribution to the rising process and it helps to create the crust. Instead of sugar it is possible to use honey, treacle or syrup. Do not use coarse-grained sugar (hard sugar) or vanilla sugar in the breadmaker. This could damage the anti-stick surface. Sugar cannot be replaced with artificial sweeteners during baking. These substances are generally denatured by heat. FATS Fats are bread improvers. It is not necessary to use it but if you do bread is better. Fats make the dough softer and ensure that it can rise more easily. They also contain the gluten that keeps in the carbon dioxide. This makes bread softer and fresher for a long time. Different types of fats can be used. Oil (sunflower oil or olive oil), butter and margarine ensure an excellent result. Oil makes the crust softer. Margarine makes the crust crispier and improves the rising process. When herb bread is baked, using a seasoned oil such as walnut oil, garlic oil or basil oil could add taste. NOTE: When the ingredients are inserted into the basket they must be at room temperature. Never use a too hot liquid since it can have a negative effect on the yeast. ŸŸŸ ENGLISH OTHER INGREDIENTS Other ingredients can be used to the dough according to one’s own taste. For example herb, fruit or garlic bread can be a savoury alternative. Other ingredients can only be added after the beep. If the ingredients are added too early, they will be ground by the kneading blade. As many ingredients as you want can be added, but remember that what you add can affect the rising process and the final result. For example, if you add some cheese, fewer fats must be used since cheese already contain fats. The same goes for tomatoes, vegetables and the other ingredients that contain much water. It is advisable to add ingredients containing as little water as possible. Therefore, add dried or peeled tomatoes or tomatoes in oil instead of fresh tomatoes. It is possible to add ingredients with a weight equal to 50-100 % of the flour weight, but remember that the heavier the bread, the more difficult the rising. Therefore, to obtain a heavier bread, use more yeast. CURRANTS Currants can be added in two ways: Very rapid: wash, soak and add to the dough. Better way: wash, soak for about fifteen minutes in tepid water, let them drip in a pasta strainer and let them stand (if necessary covered) at room temperature for a whole night. With the rapid way, the currants remove some other liquid from the dough, making it drier. Of course, there are no problems if the bread is eaten in the same day. In any case, dry the currants before adding them to the dough. If the dough is little stiff, the currants as well as other heavy ingredients may settle on the bottom. In this case it can be useful to flour the currants before adding them to the dough. Some ingredients can be added with the flour (without waiting for the beep). Generally speaking it is better to add the seeds and all the “hard” ingredients after the beep, as well as the ingredients that smash easily during the kneading, such as olives and currants. On the contrary, ŸŸŸ ENGLISH cheese, grated apples, bran and other additional ingredients, that must mingle perfectly in the dough, can be inserted into the baskey with the flour. BRAN Bran is generally added to obtain a stiffer bread full of fibres, but whole wheat flour already contains much bran. Therefore, with this type of flour it is not necessary to add bran since it could have a negative effect absorbing much water and drying too much the bread. On the contrary, bran can be added without problems to blended flour, made up of several cereals. EGGS If you add an egg-yolk, bread becomes softer. Do not add more than two egg-yolks every 500 grams of flour. Too many yolks make the dough too soft. The yolks can be poured into the basket with the flour. Since the yolks contain some liquid, use less water. You will find below a non-exhaustive list of the ingredients that can be added to the dough: sunflower seeds, linseeds, sesamum seeds, poppy seeds, pumpkin seeds, cornflakes, nuts, figs, dates, bran, corn, all types of grated cheese, cube ham, aniseeds, caraway, cloves and other spices and fresh or dry herbs, grated carrots, olives, tomatoes, garlic, ground onions, fried onions, chive, basil, pesto, pine nuts, currants (soak as described before), tropical dried fruit (soak as the currants), vanilla sugar, muesli, lemon juice, pieces of orange peel, (grated) apple, cinnamon, ginger, chilli purée, maize grains, all types of fruit and vegetables, etc. ŸŸŸ ENGLISH GARNISH Different types of garnishing can be used to garnish bread: Egg icing: whip an egg with a spoon of water and apply to the risen dough before baking. Do not apply a too thick layer of egg, otherwise the crust risks burning. Butter icing / milk icing: sprinkle with melted butter/milk/liquid cream on the bread just taken out of the oven. The crust will be softer and brighter. Cheese icing: grate some cheese (emmenthal, cheese similar to Parmesan cheese..) and apply to the dough before baking. Pumpkin seeds, poppy seeds, caraway, sesame: after applying the icing spread these seeds on the bread surface. MIXTURES AND JAMS Using program 7 (DOUGH) it is possible to prepare doughs that can be kneaded later and baked. Using program 9 (JAM), you can obtain tasty jams. In this case, follow the instructions below: • Wash the fresh fruit • Peel apples, pears, peaches and other types of fruit with peel. • Use always the quantities recommended in the recipes otherwise the jam risks boiling too little or too much. • Weigh the fruit and cut it into small pieces (1 cm max). • Add sugar and jelly/isinglass in the proportion of 2 to 1. • Mix the fruit with the sugar and start the program. • At the end pour the jam into hot containers. ŸŸŸ ENGLISH SUGGESTIONS ON PREPARING THE BREAD To achieve a good result, especially with a recipe which has never been experienced before, it is necessary to check if the dough consistency is correct. After about 10 minutes from the beginning of the working, observe the dough appearance through the viewing window (6): its surface must be quite homogeneous and it must move around the basket without crumbling nor remaining attached to the walls. In order to get a more precise idea about it, observe the three pictures below. The first one shows a too hard dough, the second one a too soft dough and the third one, on the contrary, a dough with the correct consistency. 1 2 3 The consistency can be adjusted by adding some water or flour, one spoon at a time, and waiting for some minutes until it is blended into the dough and before adding something more, if needed. Given the many factors that contribute to make bread (type of yeast, room temperature, air humidity, etc.) any ‘bad’ results are not attributable to the malfunctioning of the appliance but to these factors. Carry out various tests to acquire suitable experience. Let the bread cool down on a grill After baking, let the bread cool down on a grill. The heat can then escape from all sides. Cut the bread when it is cold. Homemade bread can be cut better when it is cold. Storing bread Once the homemade bread is cold, it is advisable to wrap it in a teatowel. This keeps the crust fresh and crisp. Some special paper bags are also available. The bread becomes soft it is kept in a plastic bag or in the refrigerator. ŸŸŸ ENGLISH Freezing bread Homemade bread can be frozen when it is cold. Freeze it in daily portions. Defrost the bread at room temperature since the microwave oven dries it out too quickly. Although the bread can be frozen, it always has a negative effect on its quality. Darker bread A spoon of cocoa powder can be added to the flour to give bread a darker colour, without changing its flavour. Crispier crust To obtain a crispier crust leave the bread in the breadmaker from ten to fifteen minutes during the keep-warm phase. If the bread rises out of the basket The rising process can be followed from the viewing window. Avoid opening the lid during the rising process since the bread could sink. However, should the bread rise out of the basket during rising, by sticking against the viewing window (even during baking), lift the lid for a while. The dough will then sink slightly. Small, compact bread Too much liquid produces small and flat bread. The dough does not rise properly since it is too wet. The yeast could be too old. Too dry bread If an insufficient quantity of liquid is added, bread will be too dry. Add a little more water or milk. ŸŸŸ ESPAÑOL INSTRUCCIONES DE USO USO DEL APARATO POR PRIMERA VEZ • Poner uno de los dos cestos en el aparato y presionar hasta su enganche (véase fig.1). Escuchará una breve señal acústica y la luz del fondo de la pantalla se encenderá durante 30 segundos. En la pantalla aparecerá Programa 1, tiempo 3:20 y temperatura 180°C. Los dos puntos (:) entre horas y minutos no parpadean indicando que el aparato Fig.2 no está funcionando. • Pulsar el botón MENU repetidamente hasta que en la pantalla aparezca el programa 8 (modo HORNEADO). • Pulsar el botón de ENCENDIDO/ APAGADO y dejar que el aparato hornee durante aproximadamente 10minutos. Los dos puntos (:) del f orm at o de l a hora parpadean i ndic ando que el aparat o est á funcionando. La pantalla del horario inicia una cuenta regresiva. • Transcurridos aproximadamente 10 minutos, pulsar el botón de ENCENDIDO/APAGADO durante más de dos segundos para interrumpir el programa. Escuchará una señal acústica indicando que el programa ha sido suspendido. Dejar enfriar el aparato. • Extraer el cesto del aparato. • Limpiar el cesto y las palas amasadoras y secarlas bien. Consultar ŸŸŸ ESPAÑOL el párrafo “Limpieza y mantenimiento”. • Repetir este procedimiento con el segundo cesto. CUIDADO El aparato puede emitir un poco de humo y un olor particular cuando se enciende por primera vez. Esto es normal y desaparece al cabo de poco tiempo. Asegurarse de que el aparato cuenta con suficiente ventilación. PUESTA EN MARCHA • Colocar el aparato sobre una superficie plana y estable, en un lugar donde no pueda caerse. • Elegir el cesto a utilizar con sus palas amasadoras. • Poner las dos palas en los ejes en el fondo del cesto elegido. Antes de hornear, se recomienda untar los ejes del cesto con mantequilla o aceite. De esta manera se facilita el desprendimiento de las palas cuando esté listo el pan. ADICIÓN DE INGREDIENTES • Pesar los ingredientes necesarios para la receta. No llenar nunca el aparato más allá de la cantidad máxima indicada (en total, un máximo de 1130 g (2,5 lb.) para el cesto sencillo, o 450 g (1 lb.) para cada una de las mitades del cesto doble); de lo contrario la masa se desbordará sobre el cesto de horneado. • Incorporar los ingredientes, uno a uno, en el cesto de horneado. En primer lugar, verter agua u otro líquido en el cesto de horneado. A continuación añadir la harina y – dependiendo de la receta – también azúcar, sal, mantequilla y levadura. Verter la levadura o el polvo de hornear en un hueco hecho en la harina y cada uno de los demás ingredientes en una esquina del cesto de horneado (esto es importante, particularmente, si se utiliza el temporizador). • Colocar el cesto de horneado dentro del aparato y empujarlo hacia abajo hasta oír un 'clic. • Cerrar la tapa. Asegurarse de que hay suficiente espacio libre alrededor del aparato. De esta manera el vapor se distribuye adecuadamente y no se empañará ningún objeto colocado cerca del aparato. ŸŸŸ ESPAÑOL No utilizar objetos cortantes como, por ejemplo, espátulas de metal, cuchillos o tenedores que podrían dañar la capa antiadherente de los cestos. AJUSTE DEL PROGRAMA • Conectar el enchufe a una toma de pared. Se oirá una breve señal acústica y la luz del fondo de la pantalla se encenderá durante 30 segundos. En la pantalla (g) aparecerá Programa 1, tiempo 3:20 y temperatura 180°C. Los dos puntos (:) del formato de la hora no parpadean indicando que el aparato no está funcionando. • Seleccionar el programa requerido pulsando repetidamente el botón MENÚ (a) hasta que aparezca en la pantalla el número del programa deseado. Véase el párrafo "Selección del menú". • Seleccionar la temperatura de horneado requerida pulsando repetidamente el botón TEMPERATURA (b) hasta que aparezca en la pantalla la temperatura deseada. Véase el párrafo “Selección de la temperatura”. • Especificar el tamaño del pan pulsando repetidamente el botón TAMAÑO PAN (c) hasta que aparezca en la pantalla una flecha debajo del tamaño requerido (1130 g/2.5LB, 900 g/2.0LB; DOBLE). Véase el párrafo “Selección del tamaño del pan”. a f g e b c d ŸŸŸ ESPAÑOL Se puede retrasar el tiempo en el cual se desea que esté listo el pan utilizando el botón TIEMPO (d). Véase el párrafo ‘Función temporizador’. HORNEADO • Pulsar el botón de ENCENDIDO/APAGADO (f). Se oye una breve señal acústica y los dos puntos (:) del formato de la hora empiezan a parpadear indicando que el programa seleccionado está activo. • Excepto el botón ENCENDIDO/APAGADO (f), los demás botones estarán inactivos a partir de este momento a fin de evitar un cambio de programa al pulsar involuntariamente un botón. • El programa se puede interrumpir pulsando el botón ENCENDIDO/ APAGADO (f) durante más de dos segundos. Se oye una breve señal acústica y los dos puntos (:) del formato de la hora dejan de parpadear indicando que el programa seleccionado ha sido suspendido. • Mantener siempre la tapa cerrada mientras el aparato está funcionando. • El aparato se apaga automáticamente si se produce un fallo en el suministro eléctrico mientras está en uso. El aparato volverá a encenderse automáticamente si el fluido eléctrico se restablece en un intervalo de 5 a 15 minutos. En tal caso, el aparato continuará con la parte restante del programa. Si la falta de suministro eléctrico dura más de 15 minutos, el programa no podrá ser recuperado. Si, en este caso, la masa no hubiese llegado todavía a la fase de crecimiento, se puede pulsar el botón ENCENDIDO/APAGADO (f) para iniciar el programa desde el principio. En caso contrario, tirar los ingredientes y volver a empezar de nuevo. CUIDADO Utilizar guantes si se debe manipular el aparato durante o después del uso. Tanto el aparato como el cesto de horneado se calientan. • El aparato funciona correctamente en un amplio rango de temperaturas; no obstante, el crecimiento de la masa puede ser diferente si se hornea en un cuarto demasiado caliente o demasiado frío. Recomendamos utilizar el aparato a una temperatura ambiente entre 15 y 35°C. • Se puede controlar el proceso de horneado mirando a través de los visores en la tapa. • Durante los programas PAN NORMAL, RÁPIDO, PAN FRANCÉS, SUPER RÁPIDO, INTEGRAL, PANE DULCE y SANDWICH se oyen señales ŸŸŸ ESPAÑOL acústicas . Estas señales indican que se pueden añadir ingredientes adicionales. En este caso, abrir la tapa, añadi r los ingredient es requeridos y volver a cerrar la tapa. Fig.3 FIN DEL PROGRAMA • El aparato emite una señal acústica para indicar que el programa ha sido concluido. • El aparato mantendrá caliente el pan durante una hora después de haber concluido el programa de horneado. De esta manera se evita que la condensación penetre en la corteza. Si se desea suspender este proceso Fig.4 de calentamiento, pulsar el botón ENCENDIDO/APAGADO durante más de 2 segundos consecutivos. Una señal acúst ica indi cará que el programa ha sido concluido. CUIDADO El aparato y el cesto de horneado están muy calientes. Utilizar guantes de horno para abrir la tapa y extraer el cesto de horneado del aparato (fig.3). • Sacar el pan del cesto, volteando el cesto de horneado boca abajo y dándole unos golpecitos suaves (fig.4). Si fuera necesario, se puede utilizar una espátula de madera o plástico para quitar el pan; no obstante, tener cuidado de no dañar la capa antiadherente. • Las palas amasadoras podrían quedar introducidas en la masa; utilizar el gancho (11) para retirarlas del pan (fig.5). Tener cuidado al removerlas, la palas estarán calientes. • Dejar enfriar el pan antes de cortarlo (fig.6). ŸŸŸ ESPAÑOL Fig.5 Fig.6 11 • Dejar enfriar el aparato lo suficiente antes de utilizarlo nuevamente. • Al terminar de utilizar el aparato, retirar el enchufe de la toma de corriente y dejarlo enfriar completamente antes de guardarlo. Véase el párrafo "Mantenimiento y limpieza". SELECCIÓN DEL MENÚ El aparato está provisto de 11 programas que se pueden seleccionar mediante el botón MENÚ. A continuación se indican las características principales de los programas y su duración: 1. PAN NORMAL 3:20 Es el programa de mayor uso para amasar, crecer y hornear un pan normal. 2. RÁPIDO 1:58 Este programa puede usarse para amasar, crecer y hornear pan en un menor tiempo que el programa BÁSICO. El pan horneado con este programa es, normalmente, más pequeño y de textura más densa. 3. PAN FRANCÉS 3:40 Programa que usa un tiempo de fermentación más largo. Esto da como resultado el típico pan francés, un pan de corteza más crujiente y una miga más suave. 4. SUPER RÁPIDO 1:59 Este es un programa muy corto para amasar, crecer y hornear el pan. El resultado será un pan menos suave. ŸŸŸ ESPAÑOL 5. INTEGRAL 3:30 Este programa puede usarse para amasar, crecer y hornear un pan de trigo integral. A diferencia del programa utilizado para preparar pan blanco, las fases de crecimiento y de horneado son mucho más largas ya que la masa contiene una gran cantidad de harina integral y tiende a crecer menos con respecto a la masa de harina blanca. 6. PAN DULCE 3:10 Programa para recetas dulces. 7. AMASADO 1:50 Este programa puede usarse para amasar y crecer la masa sin hornearla. La masa puede usarse para hacer rollitos de pan, pizza, focaccia, etc 8. HORNEADO 1:00 Este programa sólo sirve para hornear el pan, sin amasar ni fermentar la masa.También puede usarse para aumentar el tiempo de horneado, según el gusto, inmediatamente después de usar otro programa estándar de horneado. 9. MERMELADA 1:20 Este programa se usa para preparar jaleas y mermeladas de fruta fresca. 10. SANDWICH 3:00 Con este programa se amasa, crece y hornea pan con ingredientes especiales (yogur, leche). Este pan tiene una miga suave y una corteza más delgada y suave. 11. HOME MADE (hecho en casa) Este programa puede ser adaptado por el usuario. Se pueden adaptar todas las fases del programa: amasado, crecimiento, horneado, así como el tiempo que el aparato conserva caliente el pan; así obtendrá un pan completamente a su gusto. Véase ‘Programa HOME MADE (hecho en casa)’. Cuando se utiliza el programa Rápido o Super rápido, es mejor sustituir la levadura de cerveza con el polvo de hornear y entibiar los ingredientes líquidos. NOTA: La duración de los programas es fija y no se puede modificar. Programa HOME MADE (hecho en casa) En el programa HOME MADE el usuario tiene la posibilidad de ajustar a su gusto el tiempo de las diferentes fases del programa. Los dos puntos (:) del formato de la hora no parpadean indicando que el aparato no está funcionando. • Pulsar el botón MENU (a) repetidamente hasta que aparezca el programa 11 (HOME MADE) en la pantalla. • Pulsar el botón PROCESO (e) en el panel de control. La opción KNEAD1 (Amasado1) empezará a parpadear en la pantalla y aparecerá el tiempo correspondiente a esta fase del programa. Para modificar el tiempo pulsar repetidamente el botón TIEMPO (d). A medida que se pulsa el botón TIEMPO (d), el tiempo aumentará en un minuto cada vez. Manteniendo presionado el botón TIEMPO (d), el tiempo aumentará más rápidamente. Al llegar el tiempo máximo, pulsar nuevamente el botón TIEMPO (d) para volver a empezar desde el tiempo mínimo. Ajustar el tiempo requerido. • Pulsar el botón PROCESO (e) para pasar a la configuración de la fase siguiente (RISE1 - Crecimiento1). Modificar el tiempo siguiendo las instrucciones indicadas anteriormente. • Pulsar cada vez el botón PROCESO (e) para ajustar el tiempo de las fases siguientes del programa: KNEAD2 (Amasado2), RISE2 (Crecimiento2), RISE3 (Crecimiento3), BAKE (horneado). Además del tiempo se puede seleccionar la temperatura de hornado pulsando el botón TEMPERATURA repetidamente hasta visualizar la temperatura deseada y WARM (conservación caliente). ŸŸŸ ESPAÑOL • Al terminar de ajustar las configuraciones del programa, pulsar el botón ENCENDIDO/APAGADO para almacenar el programa. • Es posible retrasar el tiempo en el cual se desea que esté listo el pan utilizando el botón TIEMPO. Seleccionar el nivel de doradura de la corteza: • Suave • Normal • Crujiente Los tiempos de horneado normalmente programados corresponden al nivel de doradura Normal. ŸŸŸ ESPAÑOL SELECCIÓN DEL TAMAÑO DEL PAN Sólo para los programas PAN NORMAL, PAN FRANCÉS, SUPER RÁPIDO, INTEGRAL, PAN DULCE y SANDOpción Cantidad WICH. Pulsar el botón TAMAÑO PAN para 1130 g. 2.5 lb. conmutar entre las diferentes 900 g. 2.0 lb. opciones de cantidad según se in2x450 g. DOBLE dica a continuación. Las opciones 2.5 LB y 2 LB se utilizan normalmente para el cesto sencillo; la opción DOBLE se utiliza normalmente para el cesto doble. FUNCIÓN TEMPORIZADOR Esta función permite especificar en qué momento el aparato debe haber concluido el programa seleccionado. Se puede utilizar con los programas: PAN NORMAL, PAN FRANCÉS, INTEGRAL, PAN DULCE, HORNEADO, SANDWICH y HOME MADE. El tiempo máximo que se puede programar es de 13 horas. • Incorporar los ingredientes, uno a uno, en el cesto de horneado. En primer lugar, verter agua u otro líquido en el cesto de horneado. A continuación añadir la harina y – dependiendo de la receta – también azúcar, sal, mantequilla y levadura o polvo de hornear. NOTA: Incorporar la levadura o el polvo de hornear en un hoyo hecho en la harina y cada uno de los demás ingredientes en una de las esquinas del cesto. La levadura no debe hacer contacto con líquidos, sal o mantequilla ya que en tal caso se iniciará de inmediato el proceso de fermentación. • Elegir el programa, la temperatura y la cantidad requerida. EJEMPLO: son las 10 de la noche y usted desea que el pan esté listo a las 7:30 de la mañana. En este caso la diferencia de tiempo es de 9 horas y 30 minutos. Utilizar el botón TIEMPO para ajustar el retraso de tiempo aprox. a las 9:30. Cada vez que se pulsa el botón TIEMPO, el tiempo aumenta 10 minutos. • Pulsar el botón ENCENDIDO/APAGADO para activar el temporizador. Los dos puntos (:) del formato de la hora parpadean indicando que el temporizador está funcionando. El temporizador activa el programa y ŸŸŸ ESPAÑOL se encargará de que usted tenga listo el pan a la hora ajustada. NOTA: Cuando la función temporizador está programada, aconsejamos no utilizar ingredientes que se deterioran fácilmente como leche, huevos, fruta o purés de verdura. APAGAR Y GUARDAR EL APARATO • Retirar el enchufe de la toma de alimentación. • Dejar enfriar el aparato. • Limpiar el aparato y todos los accesorios (véase párrafo “Limpieza y mantenimiento”). • Guardar el aparato en un lugar seco, libre de temperaturas bajas extremas. SCELTA DEGLI SELECCIÓN DEINGREDIENTI LOS INGREDIENTES Se puede hornear inmediatamente un delicioso pan con cualquiera de estas recetas. Sin embargo, será divertido experimentar con otros ingredientes diferentes. Por eso es muy útil tener conocimiento acerca de los diferentes ingredientes que pueden emplearse para elaborar el pan. HARINA El principal componente del pan es la harina. Hay muchas clases de harina y mezclas de harina. La clase de cereal que se emplee para hacer el pan será de gran importancia. La flor de harina de trigo, por ejemplo, tiene tanto gluten que fermenta mejor que una harina 'pesada' y, por lo tanto, requiere menos cantidad de levadura. Gluten son complejos de proteína contenidos en cereales como trigo, avena, centeno y cebada. Durante la fermentación, el gluten forma una especie de red que retiene las burbujas de gas carbónico. Esto hace que el pan aumente de tamaño. ‘Patent flour’ o harinas caseras La mayoría de las harinas blancas se llaman también harinas caseras. Casi no contienen fibras o germen, pero sí mucho gluten. Esta harina se usa principalmente para espesar sopas y salsas, sin embargo, también es apta para hornear pan (blanco). Flor de harina de trigo y harina de trigo La flor de harina de trigo es harina de trigo blanca. La harina de trigo es de un color pardusco y contiene un poco de fibras y germen. Tanto la flor de harina de trigo como la harina de trigo tienen alto contenido de gluten. ŸŸŸ ESPAÑOL Harina integral La harina integral se muele del grano de trigo entero, sin procesar. El grano aún contiene las fibras y el germen. Igual que la harina de trigo, la harina integral es rica en gluten pero es más 'pesada' por lo que contiene fibras y germen. Por eso el pan será más compacto si se hace sólo de harina integral. Esta es la razón por la que la mayoría de los panaderos añaden harina de trigo a la mezcla. Existen además muchas otras clases de harinas: harina de avena, alforfón, maíz y centeno. Mezclas de diversas clases de harina La mayoría de las harinas se prestan muy bien para mezclarlas. Ejemplo de ello es la combinación de harina de alforfón, avena y trigo. O la de harina de cebada y de trigo. También hay muchas otras mezclas de harinas en el mercado como harina amarilla o harinas que contienen seis, nueve y hasta diez clases de cereales diferentes. Estas mezclas ya incluyen, a veces, un mejorador de harina o de pan. Mezclas completas También hay mezclas en el mercado que contienen todos los ingredientes, excepto el agua. Estas llamadas 'mezclas completas' son fáciles de usar y muy rápidas, pero más caras. LEVADURA Para hornear pan se requiere levadura. Hay levadura fresca ('bloquecitos') y levadura seca (granos). El sabor de la levadura fresca es un poco más marcado que el de la levadura seca. El efecto de la levadura seca en el pan puede variar entre una marca y otra. Cuál es la mejor levadura es un asunto de gusto personal. Puede decirse que si se usa levadura seca (llamada también levadura instantánea) se requiere la mitad de la cantidad que se requeriría si se usara levadura fresca. El efecto de la levadura puede verse afectado si ésta entra en contacto con sal o grasas. La sal 'mata' la levadura y la grasa 'aisla' las células de fermentación por lo que la masa no crece. Por eso es importante que la levadura, la sal y la mantequilla no queden muy cerca una de la otra en el horneador. SAL La sal, por supuesto, se encarga de darle sabor al pan, sin embargo, ŸŸŸ ESPAÑOL también es importante para la formación de una corteza crujiente y el crecimiento de la masa (aunque si hace contacto con la levadura puede anular el proceso de fermentación). La sal fortalece la estructura del gluten que da forma al pan. Además, la sal se encarga de que el pan no se salga del recipiente y se asiente antes de que esté bien asado. Es posible hornear pan con poca sal, o pan que no contenga sal en absoluto; para ello hay que variar un poco los ingredientes. SUSTANCIAS LÍQUIDAS El líquido más común usado para preparar pan es el agua, sin embargo, también se puede usar leche (de soya), yogur, etc. Cuál es el mejor ingrediente es un asunto de gusto personal. Esto incide tanto en el sabor como en el crecimiento y la estructura del pan. La leche entera, por las grasas, tiene una influencia positiva en la frescura del pan; además, los azúcares contenidos en la leche (lactosa) favorecen el poder de crecimiento. En vez de leche fresca, es posible utilizar leche en polvo. Empezar añadiendo una pequeña cantidad (1 cucharada) y controlar la masa. Por supuesto, la leche en polvo no puede sustituir la líquida: se debe añadir agua. AZÚCAR El azúcar sólo es importante parcialmente en el proceso de fermentación y contribuye en la formación de una corteza gruesa. En lugar de azúcar se puede usar también miel de abejas, almíbar o jarabe. No usar ningún tipo de azúcar gruesa (en 'piedra') ni azúcar en polvo en el horneador. Esto puede dañar la capa antiadherente. No utilizar edulcorantes artificiales para hornear. Por lo general éstos no son resistentes al calor. GRASAS La grasa es realmente un mejorador del pan; no es un ingrediente indispensable pero hace que el pan quede mejor. Las grasas dan suavidad a la masa y hacen que crezca más fácilmente. Además, las grasas envuelven la estructura de gluten 'atrapando' el gas carbónico que se forma. Esto hace que el pan sea más tierno y dure más tiempo. Hay gran variedad de grasas aptas para hornear pan. El aceite (de ŸŸŸ ESPAÑOL girasol o de oliva), la mantequilla y la margarina proporcionan excelentes resultados. Cuando se usa aceite la corteza queda un poco más blanda. Con margarina se obtiene una corteza más crujiente y, además, favorece el proceso de fermentación. Cuando se hornea pan con especias se puede usar un aceite que tenga sabor, por ejemplo, a nueces, ajo o albahaca. NOTA: Los mejores resultados se obtienen cuando todos los ingredientes están a temperatura ambiente al verterlos en el recipiente. No usar nunca un líquido demasiado caliente. Esto puede anular el efecto de la levadura. OTROS INGREDIENTES Se pueden incorporar otros ingredientes a la masa, según los gustos personales. Un pan con especias, fruta o ajo puede ser una alternativa sabrosa. Otros ingredientes se deben añadir después de la señal acústica; de lo contrario, serían triturados por la cuchilla amasadora. Se pueden añadir ingredientes sin límites; sin embargo, cabe recordar que los mismos pueden afectar el proceso de crecimiento y, por consiguiente, podrían alterar el resultado final. Por ejemplo, si se utiliza queso, se debe utilizar menos grasa ya que el queso, derritiéndose, proporciona grasa por si mismo. Lo mismo pasa en el caso de tomates, verduras y otros ingredientes que contienen una cantidad elevada de agua. Se aconseja añadir ingredientes que contienen la menos agua posible. Por lo tanto, añadir tomates secos, pelados o en aceite en vez de tomates frescos. Se pueden añadir ingredientes por un peso correspondiente al 50-100 por ciento del peso de la harina, pero hay que considerar que cuanto más pesado es el pan, más dificil va a ser su crecimiento. Por lo tanto, en el caso de pan más pesado, utilizar más levadura. PASAS Las pasas se pueden añadir de dos modos: Módo rápido: lavarlas, remojarlas e incorporarlas a la masa. Modo mejor: lavarlas, remojarlas unos quince minutos en agua tibia, escurrirlas en un escurridor y dejarlas reposar (eventualmente cubiertas) a temperatura ambiente durante una noche entera. ŸŸŸ ESPAÑOL Con el método rápido, las pasas quitan un poco más de líquido a la masa, volviéndola más seca. Esto no crea problemas si el pan se come ese mismo día. De todas formas, secar bien las pasas antes de incorporarlas a la masa. Si la masa no es consistente, las pasas, como otros ingredientes pesados, podrían depositarse en el fondo. En este caso, se podrían pasar las pasas por la harina antes de incorporarlas a la masa. Algunos ingredientes se pueden introducir junto con la harina (sin esperar la señal acústica). Generalmente, es mejor añadir los gérmenes y todos los ingredientes “duros” después de la señal acústica, así como los ingredientes que se frantuman fácilmente durante el amasado como aceitunas y pasas. En cambio, queso, manzanas ralladas, salvado y otros ingredientes que se deben incorporar completamente a la masa, se pueden introducir en el cesto junto con la harina. SALVADO Normalmente, se añade salvado para obtener un pan más consistente y rico en fibras, pero la harina integral ya contiene mucho salvado en sí misma. Por lo tanto, cuando se utiliza este tipo de harina, no es necesario añadir salvado que podría tener un efecto contrario al esperado absorbiendo mucha agua y secando excesivamente el pan. En cambio, se puede añadir salvado a las harinas mixtas compuestas de varios cereales. HUEVOS Es posible obtener un pan más ligero añadiendo yemas de huevo. No añadir más de dos yemas cada 500 gramos de harina. Una cantidad excesiva de yemas vuelve la masa demasiado blanda. Las yemas se pueden verter en el cesto con la harina. Las yemas contienen líquido, por lo tanto, utilizar menos agua. A continuación se indica una lista no exhaustiva de ingredientes que se pueden incorporar a la masa: pipas de girasol, semillas de lino, semillas de sésamo, semillas de amapola, pipas de calabaza, copos de trigo, nueces, higos, dátiles, salvado, harina de maíz, todos los tipos de queso rallado, jamón en daditos, semillas de anís, alcaravea, clavos de ŸŸŸ ESPAÑOL olor y otras especias y hierbas frescas o secas, zanahorias ralladas, aceitunas, tomates, ajo, cebollas picadas, cebollas sofritas, cebollino, albahaca, salsa pesto, piñones, pasas (remojarlas según descrito anteriormente), fruta tropical desecada (remojarla como las pasas), azúcar vainillado, muesli, zumo de limón, trozos de corteza de naranja, manzana (rallada), canela, jengibre, puré de guindilla roja, granos de maíz, todos los tipos de fruta y verdura, etc. DECORAR El pan se puede decorar de varios modos: Glaseado de huevo: batir un huevo con una cucharada de agua y pintar la masa crecida antes del hornado. No poner una capa excesiva de huevo, ya que la corteza del pan podría quemarse. Glaseado de mantequilla / glaseado de leche: poner mantequilla derretida/leche/nata líquida sobre el pan recién horneado. Se obtendrá una corteza más suave y brillante. Glaseado de queso: rallar queso (emmental, grana..) y ponerlo sobre la masa antes del horneado. Pipas de calabaza, semillas de amapola, alcaravea, sésamo: después de haber puesto el glaseado, esparcir estos ingredientes sobre la superficie del pan. MASAS Y MERMELADAS Utilizando el programa 7 (AMASADO) se pueden preparar varias masas a elaborar sucesivamente y a hornear. Con el programa 9 (MERMELADA), se pueden obtener mermeladas sabrosas. En este caso, seguir las instrucciones indicadas a continuación: • Lavar la fruta fresca • Pelar manzanas, peras, melocotones y otros tipos de fruta con piel. • Utilizar siempre las dosis indicadas en las recetas; de lo contrario la mermelada podría hervir demasiado o de manera insuficiente. • Pesar la fruta y cortarla en trozos pequeños (1 cm max). • Añadir azúcar y gelatina/cola de pescado en la proporción 2:1. • Mezclar fruta y azúcar y arrancar el programa. • Por último, verter la mermelada en los contenedores calientes. ŸŸŸ ESPAÑOL CONSEJOS Y SUGERENCIAS Para obtener buenos resultados, sobre todo si una receta nunca ha sido probada antes, es necesario verificar la consistencia correcta de la masa. Después de unos 10 minutos del inicio de la elaboración, observar el aspecto de la masa mediante el visor de control (6): debe tener una superficie bastante homogénea y debe moverse en el contenedor sin desmigarse y sin quedarse pegada a las paredes. Para ricavar una ídea más precisa, observar las tres imágenes indicadas a continuación. La primera muestra una masa demasiado seca, la segunda una masa demasiado blanda y la tercera una masa de la consistencia adecuada. 1 2 3 La consistencia se puede corregir añadiendo agua o harina, una cucharada a la vez y esperando algunos minutos para que se incorpore antes de añadir nuevamente un ingrediente o el otro, si fuera necesario. Considerados los numerosos factores que intervienen en la producción del pan (el tipo de levadura, la temperatura ambiente, la humedad del aire… etc.), si se producen algunos resultados no muy buenos no habrá que imputarlos al mal funcionamiento del aparato, sino a los factores anteriormente citados. Se aconseja efectuar varias pruebas para adquirir la oportuna experiencia. Enfriar el pan sobre parrilla Después de hornear el pan, dejarlo enfriar colocándolo sobre una parrilla. De esta forma el calor puede escapar por todos los lados. Cortar el pan cuando se vuelve frío. El pan horneado en casa sólo se deja cortar bien después de haberse enfriado. Guardar el pan El pan horneado en casa se conserva mejor si se envuelve en un paño de cocina después de que se haya enfriado completamente. De esta forma la corteza permanece crujiente. También existen bolsas de papel ŸŸŸ ESPAÑOL especiales para el pan. En bolsas plásticas el pan se ablanda; igual ocurre si se guarda en la nevera. Congelar el pan El pan horneado en casa se puede congelar cuando se haya enfriado completamente. Es muy práctico congelarlo en porciones. La mejor forma de descongelarlo es a temperatura ambiente ya que en el microondas el pan se deshidrata con rapidez. Aún cuando es posible congelar el pan, éste pierde calidad. Pan más oscuro Para que el pan quede más oscuro puede añadirse 1 cucharada de cacao en polvo a la harina. Esto no afecta su sabor. Corteza más crujiente Para obtener una corteza más crujiente, se puede dejar reposar el pan durante diez o quince minutos en el recipiente después de hornearlo. Si el pan se sale del recipiente El proceso de crecimiento se puede seguir a través del visor. No se recomienda levantar la tapa del horneador mientras la masa está creciendo porque esto hace asentar el pan. Sin embargo, si la masa crece tanto que se sale del recipiente y se pega contra el visor (esto podría pasar también mientras se hornea), levantar un momento la tapa. La masa bajará ligeramente. Pan compacto y pequeño Si se añade demasiado líquido, el pan quedará plano y pequeño. La masa no puede crecer bien porque está demasiado húmeda. También puede ser debido a que la levadura está demasiado vieja. Pan demasiado seco Si se añade muy poco líquido, el pan quedará muy seco. Añadir un poco más de agua o leche. Si el pan está bueno después de hornearlo pero se reseca rápidamente después, añadir más aceite o mantequilla. Pan asentado Si el pan crece bien pero se asienta durante el horneado, utilizar el programa RÁPIDO. Normalmente, el pan se asienta más fácilmente con programas largos. ŸŸŸ ESPAÑOL INDICACIONES ESPECIALES EN LA PANTALLA Si en la pantalla (g) aparecen las letras “H:HH” después de haber encendido el aparato, significa que la temperatura en el interior de la máquina todavía es demasiado alta para una nueva preparación. Apagar el aparato, abrir la tapa (4) y dejar enfriar. Si en la pantalla aparecen las letras “E:EE” después de haber encendido el aparato, el sensor de temperatura está dañado y habrá que sustituirlo. Dirigirse a un centro autorizado Termozeta. LIMPIEZA Y MANTENIMIENTO CUIDADO Antes de realizar cualquier operación de limpieza, quitar siempre el enchufe de la toma de corriente y esperar a que el aparato se enfríe. Limpiar el cesto (2) o (3) y las palas amasadoras (8) con un estropajo normal no abrasivo y detergente para vajillas prestando atención a no rayar la superficie antiadherente. Sucesivamente, secar bien las piezas. No poner los cestos ni las palas amasadoras en el lavavajillas. Limpiar el cuerpo externo e interno del aparato con un estropajo ligeramente húmedo. No utilizar sustancias químicas o abrasivas. No sumergir nunca el cuerpo del aparato en el agua o en otros líquidos. Conservar el aparato en un lugar seco. ŸŸŸ ESPAÑOL RECETAS Considerar las unidades de medida siguientes: Cup = vaso pequeño = 250ml Tbsp (tablespoon) = cuchara grande = cuchara de mesa = 15ml Tsp (teaspoon) = cucharilla = cucharilla de café = 5ml.
