the Rome Cavalieri boasts two beautiful pools
that are nestled deeper in the picturesque
Mediterranean park: one pool is designed for
children and the other is for parents to overlook
their little ones while enjoying a massage
in the whirlpool. To keep children happy and
cool in the summer heat, one of our IT Club
team members will lead activities and games
in and around the pool each weekend.

shopping: tante sono le attività per i vostri piccoli
per vivere ed esplorare la Città Eterna!
Se invece opteranno per la lezione di gladiatori,
sotto lo sguardo vigile di Nerone, potranno
sperimentare in prima persona la vita di un vero
gladiatore con tanto di elmetto, scudo, spada e
tunica tradizionale.
La lezione potrà tenersi sia al Rome Cavalieri che
alla Scuola Gladiatori Romana sull’Appia Antica.

homemade souvenirs, treasure hunts in Villa
Borghese and a Roman safari await your kids, not
to forget the shopping tour designed with your
little fashionistas in mind: there is so much for
our little guests to explore in the Eternal City!
Let them put on a red cloak and helmet
and pick up a sword and shield, and they
will become fearsome figures under Nero’s
supervision. The gladiator lesson can be
arranged both at the hotel’s ground or in the
Rome Gladiator School on the Appian Way.

di Carrara, un’ampio salotto e vista sull’area residenziale,
garantiscono la sistemazione ideale per una vacanza nella Città
Eterna con tutta la famiglia.
The new family rooms at the Rome Cavalieri offer two separate
units, each accessible via a shared entrance and a private
connecting foyer. They can conveniently accommodate two
adults and two children with 950 sq.ft. of living space and 170
sq.ft. of balconies. With two spacious bathrooms with Carrara
marble, a comfortable sitting area and views over the residential
area of Monte Mario, they guarantee the ideal accommodation
for a memorable family holiday in the Eternal City.

Gelatina ai frutti rossi
Unire tutti gli ingredienti e portare ad ebollizione. Colare con
uno chinoise a pistone nei piatti.
Red fruits jelly
Mix all the ingredients and bring them to a boil. Filter through
a chinoise and spread into plates.
Cremoso al lampone
Mescolare i tuorli con lo zucchero. Portare ad ebollizione la
panna e la purea di lampone. Unire i due composti e cuocere
a 82°C. Aggiungere la colla di pesce e filtrare sulla copertura
Ivoire fusa. Emulsionare e far cristallizzare per 12 ore.
Creamy raspberry
Mix yolks with sugar. Bring the cream to a boil together with
the raspberry purée. Combine the two and cook at 82°C. Add
the isinglass and strain over the melted coating. Emulsify then
crystallise for 12 hours.
Spugna allo yogurt
Unire tutti gli ingredienti nel bicchiere del Bimby e frullare per
3 minuti. Versare il composto in un sifone, inserire 3 cariche
di gas e spruzzarne 30 gr in un bicchiere di plastica. Cuocere
al microonde per 30 secondi alla massima potenza. Porre in
abbattitore a -18°C e congelare.
Yogurt sponge
Mix all the ingredients in a thermomix for 3 minutes. Pour the
mixture in a siphon, insert 3 charges of gas and flows 30gr in
a plastic glass. Cook at maximum power in microwave for 30
seconds and blast at -18°C.
Pinoli caramellati salati
Portare acqua e zucchero ad ebollizione, aggiungere i pinoli a 45°C
miscelati con il sale e cuocere su fiamma fino al colore biondo.
Versare su un foglio di carta da forno, far freddare e tritare.
Gelato ai pinoli salati
Portare il latte e la panna a 40°C, unire tutte le polveri
precedentemente mescolate tra di loro, i tuorli e portare il tutto
a 82°C. Freddare rapidamente, aggiungere i pinoli caramellati e
mantecare nella gelatiera.
Salty caramelised pine seeds
Bring water and sugar to a boil, add pine seeds melted with salt
at 45°C and cook over low heat until golden. Pour on a baking
paper sheet, allow to cool and mix.
Salty pine seeds ice cream
Blend the egg yolks with the sugar. Mix the milk with the
cream, bring them to a boil and add to the mixture. Use the
bain-marie whisk to get a crème anglaise. Let it cool, add the
salted pine nuts caramel and pour into an ice-cream machine.

Distribuire il cremoso al lampone sopra la gelatina
precedentemente colata nei piatti, ricoprire con ribes, mirtilli
freschi, spuntoni di yogurt bianco e adagiarvi sopra la spugna
allo yogurt. Completare il piatto con una quenelle di gelato ai
pinoli salati, qualche pinolo salato e fiori eduli.
Spread the creamy raspberry over the red fruits jelly previously
placed in dishes, cover with ribes, fresh blackberries, drops of
white yogurt and complete with yogurt sponge. Garnish with
a quenelle of salty pine seeds ice cream, few pine seeds and
edible flowers.
