La TENUTA DI FRASSINETO ha impiantato 30 ettari di vigneti in provincia di Arezzo, al centro della Val di Chiana, con l’obiettivo di produrre vini d’altissima qualità e valorizzare un territorio che fino ad oggi non ha mai espresso il suo reale valore. I vigneti della Tenuta di Frassineto vedono nel particolare la coltivazione di 18 ettari di uve a bacca bianca (Semillon, Chardonnay, Sauvignon, Traminer, Pinot Bianco e Vermentino) e 12 ettari di uve a bacca rossa (Merlot, Cabernet Franc e Petit Verdot). La scelta di impiantare queste varietà è scaturita dopo anni di attento studio delle caratteristiche pedo-climatiche del territorio. I vigneti sorgono ad un’altitudine media di 250 metri s.l.m. e hanno impiantato le loro radici in un terreno limo-argilloso con presenza di scheletro abbastanza importante. Queste caratteristiche hanno rivolto la scelta a delle varietà che si esprimono al meglio in queste condizioni: Chardonnay come base per produrre Spumante Metodo Classico d’altissima qualità; Vermentino, Semillon e Traminer per la produzione di bianchi aromatici con spiccata mineralità e struttura; Merlot, Cabernet Franc e Petit Verdot per la produzione di rossi d’eccellenza, con lo scopo di valorizzare ed identificare un territorio d’altissimo pregio vitivinicolo. The TENUTA DI FRASSINETO has planted out 30 hectares of vineyards in the province of Arezzo, in the centre of the Val di Chiana, with the aim of producing wines of the very highest calibre and valorising a territory that up to now has not expressed its real value. More specifically, 18 hectares of the vineyards of the Tenuta di Frassineto are devoted to the growing of white grapes (Semillon, Chardonnay, Sauvignon, Traminer, Pinot Bianco and Vermentino) and 12 hectares to red grapes (Merlot, Cabernet Franc and Petit Verdot). The decision to plant out these varieties was taken after years of careful study of the soil and climate characteristics of the territory. The vineyards are situated at an altitude of 250 metres above sea level, and have spread their roots in a silty-clay loam with a fairly significant rocky component. These characteristics have focused the choice on varieties that express themselves at their best in these conditions: chardonnay as the base for producing top quality spumante metodo classico; vermentino, semillon and traminer for the production of aromatic whites with distinctive mineral tones and structure; merlot, cabernet franc and petit verdot for the production of excellent reds, with a view to identifying and valorising a terroir with an exceptional winegrowing vocation. Toscana Affinamento: 4-5 mesi in bottiglia. Profumo: complesso, intenso e persistente, molto fruttato con note di mela, pera e frutta tropicale come ananas e banana. Sapore: fresco con un ottimo equilibrio fra struttura e acidità dotato di una lunga intensità e persistenza. Accostamenti: per la sua complicità ed armonia tra freschezza e morbidezza permette svariati abbinamenti a tutto pasto cominciando da antipasti a base di pesce, primi piatti con verdure, formaggi freschi e pesce al forno. Ottimo con maltagliati al nero di seppia, astice e pomodorini freschi conditi semplicemente con un olio extravergine d’oliva fruttato. Temperatura di servizio: 10-12° C. Perfume: complex, intense and persistent, very fruity with notes of apple, pear and tropical fruits such as pineapple and banana. Flavour: fresh, with an excellent balance of structure and acidity; lengthy intensity and persistence. Food matches: given the complicity and harmony between freshness and softness, it offers versatile accompaniments throughout the meal, starting with fish-based hors d’oeuvres, first courses with vegetables and fresh cheeses, and with baked fish. Excellent with maltagliati with cuttlefish ink, lobster and fresh cherry tomatoes garnished simply with a fruity extra-virgin olive oil. Serving temperature: 10-12° C. Alcohol content: 12,5% vol. Denomination: Spumante di Qualità Grape varieties: Chardonnay. Ageing: minimum 24 months on yeasts in the bottle. Perfume: rich and intense, persistent bouquet, with pleasant fruity and floral notes, delicate aromas of yeast and bread crust. Flavour: full-bodied, clean and harmonious, with a pleasant and decisive fruity and acidulous note. Food matches: excellent as aperitif and to be enjoyed throughout the meal, it is ideal with delicate risottos and fish-based dishes. Serving temperature: 8° C.. Alcohol content: 13% vol. MAESTRO DELLA CHIANA FONTARRONCO Denominazione: Cabernet Franc I.G.T. Toscana Affinamento: 9-10 mesi in tonneaux poi in bottiglia. Profumo: ricorda piccoli frutti a bacca rossa maturi come mirtilli, amarene e visciole che si spingono fino alla confettura per poi aprirsi su speziature dolci e di grande intensità. Sapore: si presenta caldo e avvolgente, un susseguirsi di morbide sensazioni legate ad un tannino elegante e vellutato, sopportate da una nota di fresca acidità. Colore, complessità e persistenza fanno presagire da subito che questo vino è destinato ad una lunga ed affascinante evoluzione. Accostamenti: ottimo in abbinamento con pecorini stagionati e mostarde di frutta. Primi piatti di pasta fresca all’uovo con ragù di agnello e lepre. Anatra arrosto e arrosti in genere, sublime su un filetto di maiale in crosta di prosciutto con castagne o visciole con riduzione di vino rosso. Temperatura di servizio: 18° C. Grado alcolico: 13,5% vol. Denominazione: Spumante di Qualità Vitigni: Chardonnay. Affinamento: minimo 24 mesi sui lieviti in bottiglia. Profumo: bouquet ricco e intenso, persistente, con piacevoli note fruttate e floreali, delicati aromi di lieviti e crosta di pane. Sapore: pieno, pulito e armonico, con piacevole e decisa nota fruttata e acidula. Accostamenti: ottimo come aperitivo e da provare a tutto pasto, è ideale con risotti delicati e piatti a base di pesce. Temperatura di servizio: 8° C. Grado alcolico: 13% vol. Perfume: redolent of ripe small red-berry fruit such as blackberries, amarena and morello cherries verging towards jam before opening into sweet and very intense spiciness. Flavour: warm and caressing to the palate, a succession of soft sensations linked to an elegant and velvety tannin sustained by a note of fresh acidity. Colour, complexity and persistence immediately predict that this wine is destined to a long and fascinating evolution. Food matches: excellent served as an accompaniment to mature sheep’s milk cheeses and fruit chutney. First courses of fresh egg pasta with lamb or hare sauce. Roast duck and roasts in general; sublime on a pork fillet in ham crust with chestnuts or morello cherries with reduced red wine. Serving temperature: 18° C. Alcohol content: 13,5% vol. Denominazione: Rosso I.G.T. Toscana Vitigni: Cabernet Franc, Petit Verdot. Affinamento: 18 mesi sia in Barrique che in Tonneaux e 12 mesi in bottiglia. Profumo: esprime al naso una piacevole concentrazione di note che vanno dalla frutta rossa matura, ribes nero e ciliegia, allo speziato, con sentori di vaniglia e dolci note tostate che compongono un bouquet di grande persistenza ed eleganza. Sapore: avvolgente, vellutato, ricco di tannini dolci con un finale lungo e un buon retrogusto di frutta a bacca nera matura. Mostra un’armonia gustativa ed una raffinatezza che lo rendono un vino di indubbia personalità da godere nel tempo. Accostamenti: indicato con primi piatti con ragù di selvaggina, arrosti di carni rosse, scottiglia di manzo, brasati. Il suo sapore pieno si armonizza bene con i formaggi stagionati. Ageing: 18 months in barrique and tonneaux followed by 12 month in bottle. Perfume: the fragrance offers a pleasant concentration of notes ranging from ripe red fruit, blackcurrants and cherries to spicy, with hints of vanilla and sweet toasted notes that go to make up a bouquet of great persistence and elegance. Flavour: velvety and caressing, rich in sweet tannins with a long finish and a good aftertaste of ripe black berry fruit. It displays a harmony of flavour and a sophistication that make it a wine of distinctive character to be enjoyed over time. Food matches: perfect with first courses with game sauce, red meat roasts, stewed beef and pot roasts. Its full flavour also goes well with mature cheeses. Serving temperature: 18° C. Affinamento: 14 mesi in tonneaux e 10 mesi in bottiglia Profumo: inebriante l’impatto olfattivo, mela candita e albicocca disidratata la fanno da padrone, alternate da note più fresche di ananas. Poi zucchero filato per scendere su affascinanti note di spezie dolci. Sapore: si presenta aromaticamente dolce anche al palato, morbido, caldo e setosamente avvolgente. Tornano anche in bocca piacevoli note fresche che invogliano di nuovo all’assaggio. Accostamenti: perfetto con biscotti secchi a base di mandorle, noci e pinoli profumati al traminer. Da provare a fine pasto con albicocche disidratate e formaggio erborinato. Temperatura di servizio: 12-13° C. Grado alcolico: 12% vol. Denomination: Vendemmia Tardiva I.G.T. Toscana Grape varieties: Traminer, Semillon. Ageing: 14 months in tonneaux and 10 months in the bottle Perfume: intoxicating olfactory impact, candied apple and dried apricot holding sway, alternating with fresher notes of pineapple. Then candy floss to descend to intriguing notes of sweet spices. Flavour: aromatically sweet even on the palate, soft, warm and silkily caressing. Returning in the mouth too are delightful fresh notes that invite further tasting. Food matches: perfect with dry biscuits based on almonds, walnuts and pine kernels perfumed with Traminer. Well worth trying at the end of the meal with dried apricots and blue-veined cheese. Serving temperature: 12°-13° C. Alcohol content: 12% vol. FRASSINORO BARDINI Denominazione: Bianco I.G.T.
